Abstract

Nata de ocha produced from fermentation of kombucha is considered an innovative product to enhance its function for food consumption. Nata de ocha, a secondary metabolite product of sweet green tea kombucha fermentation using scoby starter, composes of cellulose produced during the fermentation. This study aimed to characterize nata de ocha production as affected by the sugar addition and fermentation time. The study arranged in a Complete Randomized Block Design factorially with 2 factors: sugar addition in the level of 0, 10, 15, and 20%; and fermentation time in the level of 0, 7, 14, and 21 days. The parameters measured were yield, thickness, total microbes, moisture, ash, and crude fibre content. The results showed that sugar addition and fermentation time significantly affected the yield and fibre content of nata de ocha. The high increase of yield (5.723%) and of crude fibre content (1.353%) was produced when the treatment was 15% sugar for 21days and for 144 days, respectively. It was concluded that nata de ocha may consider as food consumption; however, further research was needed for its possibility as an alternative of dietary fibre.

Abstract

Robbani Snack was a micro, small, and medium enterprise (MSME) located in Gading Rejo District, Pringsewu Regency, Lampung. It was established in 2010 and operated in the snack food sector. At the time, Robbani Snack’s cassava chips experienced a decline in sales (slow-moving), and in some cases, they were sold close to their expiration dates. This condition indicated the need for an analysis of the importance and performance level of product attributes, as well as consumer satisfaction, in order to determine improvement priorities and enhance competitiveness. The study aimed to identify consumer characteristics, analyze the importance and performance levels, and assess consumer satisfaction with Robbani Snack's cassava chips product based on the 4P marketing mix (product, price, promotion, and place). This research employed descriptive analysis, Importance Performance Analysis (IPA), and Customer Satisfaction Index (CSI) to achieve its objectives. The results based on the IPA showed that the attributes in quadrant I (top priority) included uniformity of shape, packaging design, and ease of product availability. Attributes in quadrant II (maintain performance) included taste, crispiness, halal label, expiration date, price, and the location and convenience of purchase. Attributes in quadrant III (low priority) included flavor variants, color, packaging size, social media advertising, and specific discount offers, while quadrant IV (excessive) included thickness and discount offers during certain events. The Customer Satisfaction Index (CSI) calculation showed a consumer satisfaction level of 77.02%, indicating that the product had met consumer expectations. Keywords: Cassava chips, IPA, CSI

Abstract

Anjosia Coffee merupakan UMKM yang bergerak di industri pengolahan kopi, yang berlokasi di Kecamatan Kemiling, Kota Bandar Lampung. Anjosia Coffee pada saat ini menghadapi tantangan yaitu harga bahan baku biji kopi yang sangat tinggi serta tantangan pemasaran seperti penjualan yang tidak stabil dan promosi yang belum optimal. Tujuan dari penelitian ini adalah untuk mengidentifikasi faktor internal dan eksternal, serta merumuskan strategi pemasaran kopi bubuk Anjosia. Metode yang digunakan dalam penelitian ini adalah metode deskriptif. Data dalam penelitian ini dianalisis menggunakan analisis IFAS, EFAS, SWOT, Grand Strategy, dan QSPM. Berdasarkan hasil analisis IFAS dan EFAS, masing masing analisis medapatkan nilai yaitu 1,56 dan 1,65 sehingga dapat diketahui posisi dalam analisis berada pada kuadran I. Strategi yang harus diterapkan dalam posisi ini adalah mendukung kebijakan pertumbuhan yang agresif (growth oriented strategy) dan menghasilkan 6 alternatif strategi pemasaran. Hasil Analisis QSPM didapatkan prioritas strategi pemasaran kopi bubuk Anjosia yaitu membuat website untuk memungkinkan pelanggan memesan produk dan mendapatkan informasi produk secara mudah dengan nilai TAS sebesar 14,30.

Abstract

Sertifikasi halal merupakan kewajiban hukum bagi pelaku usaha sebagaimana diatur dalam Undang-Undang Nomor 33 Tahun 2014 tentang Jaminan Produk Halal. Namun, tingkat pemahaman pelaku usaha warung makan di Kampus Universitas Lampung terhadap kewajiban ini masih bervariasi. Penelitian ini bertujuan untuk mengkaji sejauh mana literasi pelaku usaha terhadap kewajiban sertifikasi halal dengan menggunakan metode kualitatif dan pendekatan normatif-empiris. Teknik pengumpulan data meliputi observasi, wawancara, kuesioner, dan dokumentasi. Hasil penelitian menunjukan bahwa dari 15 responden hanya 3 responden (20%) yang sudah memiliki sertifikasi halal. Mayoritas pelaku usaha tidak mengetahui adanya regulasi halal tersebut sebanyak 13 responden (87%). Hal ini menggambarkan bahwa rendahnya literasi halal, sebagian besar responden menyampaikan belum ada sosialisasi ataupun keharusan dari pihak kampus untuk bersertifikasi halal, menganggap keterbatasan informasi, persepsi biaya yang tinggi serta kerumitan proses administrasi menjadi faktor hambatan. Oleh karena itu, dibutuhkan edukasi langsung bagi pelaku usaha mikro dan pelaku usaha harus memiliki kesadaran dalam memenuhi regulasi halal. Kata kunci: literasi halal, pelaku usaha, sertifikasi halal, warung makan.

Abstract

Bakpia is a traditional round-shaped pastry filled with mung beans, wrapped in dough, and baked. This study aimed to determine the formulation of wheat flour and kepok banana flour that produced dry bakpia with the best sensory and chemical characteristics. A Completely Randomized Design (CRD) with a single factor was used, involving six formulations of wheat flour and kepok banana flour: P1 (100:0), P2 (90:10), P3 (80:20), P4 (70:30), P5 (60:40), and P6 (50:50), each replicated four times. Sensory evaluations (color, texture, taste, and aroma) and chemical analyses (moisture, ash, protein, fat, carbohydrate, and crude fiber contents) were conducted. The results showed that the P2 formulation (90% wheat flour : 10% kepok banana flour) produced bakpia with the best sensory characteristics, including a slightly dark white color, moderately layered crumbly texture, and a distinctive banana flavor and aroma. The chemical characteristics of the P2 formulation included 11.40% moisture, 2.6% ash, 14.85% protein, 13.02% fat, 58.13% carbohydrate, and 3.13% crude fiber. Keywords: dry bakpia, kepok banana flour, sensory evaluation, chemical analysis

Abstract

Kopi memiliki senyawa kimia seperti kafein dan asam klorogenat. Kandungan senyawa kimia dalam kopi dipengaruhi oleh beberapa faktor seperti tingkat kematangan, tempat tanam, dan penanganan pasca panen. Tujuan penelitian ini adalah untuk mengetahui perbedaan ketinggian lokasi tanam terhadap kadar senyawa asam klorogenat dan kadar kafein kopi robusta serta untuk mengetahui perbedaan suhu roasting terhadap kadar asam klorogenat dan kadar kafein kopi robusta. Penelitian disajikan secara deskriptif dengan menggunakan 2 faktor. Faktor pertama yaitu perbedaan ketinggian lokasi tanam, yang terdiri K1 (Lampung Barat), K2 (Tanggamus), dan K3 (Way Kanan). Faktor kedua adalah suhu roasting, yang terdiri dari 2 level yaitu T1 (180oC), dan T2 (240oC). Hasil penelitian menunjukan bahwa semakin tinggi lokasi penanaman maka akan semakin tinggi kandungan kafein dan asam klorogenat biji kopi yang dihasilkan, sedangkan semakin tinggi suhu penyangraian maka kandungan kafein dan asam klorogenat biji kopi yang dihasilkan akan semakin rendah
