Abstract

Latar Belakang: Kedelai (hitam dan kuning) mengandung antosianin dan isoflavon yang dapat menurunkan kadar kolesterol LDL dan meningkatkan kadar kolesterol HDL. Selain itu ubi jalar ungu juga mengadung antosianin. Penelitian ini bertujuan mengetahui pengaruh pemberian snack bar ubi jalar ungu dicampur kedelai terhadap kadar kolesterol LDL dan HDL pada wanita hiperkolesterolemia. Metode: Desain peneitian ini  adalah quasi-experimental dengan pre-post test control group design. Subyek penelitian adalah wanita dewasa dengan kadar kolesterol LDL > 130 mg/dl dan kadar kolesterol HDL < 50 mg/dl yang dibagi menjadi 3 kelompok. Kelompok kontrol tidak diberi snack bar, kelompok 1 diberikan snack bar kedelai hitam, dan kelompok 2 diberikan snack bar kedelai kuning. Snack bar yang diberikan sebanyak 2 buah snack (40g) selama 28 hari. Asupan makan dipantau dengan metode food recall 24 jam. Kadar kolesterol LDL dan HDL diukur sebelum dan sesudah intervensi. Data yang diperoleh dianalaisis menggunakan paired t-test, fisher’s exact, dan annova . Hasil: Terdapat penurunan kadar kolesterol LDL 6,47% pada konsumsi snack bar kedelai hitam dan penurunan kadar kolesterol LDL 13,02% pada konsumsi snack bar kedelai kuning. Pada kelompok kontrol terjadi peningkatan kadar kolesterol LDL sebesar 2,25%. Tidak terdapat peningkatan kadar kolesterol HDL pada kedua kelompok perlakuan dan kontrol. Ada perbedaan penurunan kadar LDL hanya pada kelompok snack bar kedelai kuning (p=0,049).Kesimpulan: Penurunan kadar kolesterol LDL karena pemberian snack bar kedelai,  terutama snack bar kedelai kuning yang paling banyak menurunkan kadar kolesterol LDL dengan pemberian 80 g/hari selama 28 hari.

Abstract

This research aims to determine the organoleptic properties and nutritional value of the biskuit formulation by substituting Moringa leaf flour and breadfruit flour as a modified form of PMT biskuits for pregnant women. The breadfruit flour which has a high carbohydrate and fiber content and moringa flour have rich in iron can be used in substituting biskuits as supplementary food for pregnant women. This study used a completely randomized design with four variations of biskuit formulation with breadfruit and moringa flour substitutions, namely F0 (kontrol), F1 (20 g moringa flour: 40 g breadfruit flour), F2 (15 g moringa flour: 30 g flour. breadfruit), F3 (10 g moringa flour: 20 g breadfruit flour). Data were analyzed using ANOVA and followed by Mann Whitney at the 95% confidence level (α: 0.05). The results showed that difference based on the supplementary food biskuit formulation of pregnant women with Moringa leaf flour and breadfruit flour on color, aroma, texture, and taste. The results of the organoleptic test on biskuits showed that F0 was the most preferred in terms of color, taste, aroma, and texture. The higher of moringa flour and breadfruit flour substitution , the lower the overall preference for the resulting biskuits. Based on the results of the proximate biskuit test, it is known that the F1 formulation has the highest energy content, protein content, fat content, ash content, and iron content compared to other formulations. The water content and carbohydrate content of F1 formulation biskuits had the lowest levels.

Abstract

Obesity is among the world's top 10 health problems and the top five in developing countries like Indonesia. The prevalence of central obesity based on Basic Health Research in 2018 was 31%. This means that more than a quarter of people aged ≥15 years were centrally obese in 2018. Factors that influence obesity are the habit of eating high index glycemic food, fast food, less physical activity, and socioeconomics. This research aims to determine the relationship between high glycemic index food consumption with the incidence of central obesity in young adults. The research method used a cross sectional approach. The sample of 108 respondents was obtained using proportional random sampling technique. Data were collected by measuring hip waist circumference, body weight and height, while for glycemic index intake using modified FFQ (Food Frequency Questionnaire). Bivariate analysis used the contingency coefficient test analysis method with a significance level of 5%. The prevalence of central obesity in young adult was 56 (51.9%), young adult who often consume food with a high glycemic index were 84 young adult (77.8%). There is a relationship between high glycemic index food consumption and the incidence of central obesity in young adults (p = 0.001). There was a correlation between high glycemic index food consumption with incidence of central obesity in young adults.

Abstract

Exclusive breastfeeding provides a protective effect by improving the nutritional status of toddlers. Inadequate complementary foods can lead to malnutrition and cause developmental delays and decreased body immunity. The research aimed to determine the relationship between exclusive breastfeeding and the accuracy of giving complementary feeding (MP-ASI) to the incidence of stunting in toddlers aged 6-23 months in Bansari District. The research design used was analytical observational with a cross-sectional approach. The research was conducted in Bansari District with a sample of 85 toddlers in June 2023. The independent variables used were exclusive breastfeeding and complementary feeding while the dependent variable was stunting. Data collection were done using observations, questionnaires, and anthropometric measurements. The instruments used were characteristic questionnaires, exclusive breastfeeding, complementary feeding, and recall forms. Data analysis used Chi-Square (α = 0.05). The prevalence of stunting in toddlers aged 6-23 months in Bansari District is 25.9%. There are 37.6% of toddlers in Bansari District who do not receive exclusive breastfeeding. 62.4% of toddlers in Bansari District were given complementary feeding incorrectly. The results of the analysis test showed no relationship between exclusive breastfeeding and the incidence of stunting in toddlers aged 6-23 months in Bansari District (p = 0.518) and there was no relationship between the accuracy of giving complementary feeding and the incidence of stunting in toddlers aged 6-23 months in Bansari District ( p = 0.718). There is no relationship between exclusive breastfeeding and the incidence of stunting in toddlers aged 6-23 months in Bansari District and there is no relationship between the accuracy of complementary feeding and the incidence of stunting in toddlers aged 6-23 months in Bansari District.

Abstract

Abstract One of the problems that often occurs in the community is the problem that is often experienced in preparing healthy food for children and their families. Various ways can be done by processing existing food ingredients so that the fulfillment of consumption can be fulfilled. Fast food or better known as fast food is food that is served in a short time and can be consumed quickly. Oyster mushrooms have a chewy and soft texture and are rich in fiber, so they have the potential to be a source of dietary fiber and protein as a substitute for meat. Efforts have been made to overcome problems in preparing healthy and fast food as well as being economical, including by innovating food products that are easy to obtain. For this reason, it is necessary to provide an approach with the counseling method by demonstrating the content of shredded oyster mushrooms so that it can add to community education to be applied to their respective families. The processing of mushrooms that do not vary is actually one of the causes that has not been used optimally, for this community service activities This community has the potential to be able to add to the public's insight regarding the content of shredded oyster mushrooms which are rich in nutrients.

Abstract

Latar Belakang : Data hasil Survei Status Gizi Indonesia tahun 2022, prevalensi stunting di Indonesia sebesar 21,6%. Provinsi Jawa Tengah pada tahun 2022 memiliki prevalensi stunting sebesar 20,8%, Kabupaten Temanggung sebesar 28,9%. Tujuan : Mengetahui gambaran umum kejadian stunting pada balita usia 24 – 59 bulan di Desa Bansari Kabupaten Temanggung. Metode Penelitian : Observasional dengan pendekatan cross sectional. Populasi penelitian adalah seluruh balita usia 24 – 59 bulan di Desa Bansari. Sampel 59 orang dengan metode purposive sampling. Pengambilan data tinggi badan menggunakan microtoise. Hasil : Prevalensi stunting pada balita usia 24 – 59 bulan di Desa Bansari sebesar 37,3%. Simpulan : Prevalensi kejadian stunting di Desa Bansari Kabupaten Temanggung terbilang tinggi. Abstract

Latar Belakang Stunting adalah permasalahan gizi yang masih menjadi target prioritas di negara berkembang, termasuk Indonesia. Berdasarkan Peraturan Menteri Kesehatan No. 2 Tahun 2020 tentang Standar Antropometeri Anak, seorang anak 0-59 bulan dikatakan stunting jika tinggi badan (TB) menurut usia di bawah -2 standard deviation. Hasil Survei Status Gizi Indonesia (SSGI) menunjukkan bahwa prevalensi stunting di Indonesia telah turun, dari 24,4% pada tahun 2021 menjadi 21,6% pada tahun 2022. Kemenkes mentargetkan untuk menurunkan angka stunting dari 24% menjadi 14% pada tahun 2024. Akselerasi penurunan kasus stunting butuh keterlibatan tenaga dan kader kesehatan terlatih serta kerjasama seluruh sasaran program stunting. Kader kesehatan menginformasikan harus melakukan pendampingan kepada ibu hamil dengan door to door dengan media edukasinya adalah Buku KIA. Pemberian edukasi di era digital diperkirakan akan lebih efisien secara online seperti aplikasi stunting. Perlu adanya penelitian terbaru terkait aplikasi stunting sebagai langkah guna mempercepat deteksi dini kejadian stunting. Metode: Penelitian ini menggunakan metode penelitian dan pengembangan level 1. Instrumen yang digunakan berupa lembar kuisioner untuk mengetahui kelayakan produk. Analisis yang digunakan yaitu analisis data kuantitatif. Aplikasi “Gosting” memiliki desain yang sederhana dan pada menu utama terdapat  menu info “stunting” dan menu kalkulator status gizi. Materi pada aplikasi ini berupa informasi mengenai stunting, penyebab, penanggulangan, dan yang berkaitan dengan terjadinya stunting.

Abstract

Background: The incidence of overnutrition in adults over 18 years old, based on the 2023 Indonesian Health Survey, is 14.4% overweight and 23.4% obese. Overnutrition in Indonesia is estimated to continue to increase. Factors that influence overnutrition are unhealthy eating habits and low physical activity. This study aims to analyze the incidence of overnutrition and is caused by the consumption of sweet drinks and sedentary lifestyle on the incidence of overnutrition in the young adult age group in Ungaran. Method: The research was conducted from January to March 2024 in Ungaran with an observational design and cross-sectional approach. This research involved 104 respondents who were selected using proportional random sampling, with the inclusion criteria being between 18-25 years old and willing to be respondents. The exclusion criteria include individuals who are sick, have an infectious or chronic disease, or were hospitalized a week before data collection. Respondents' nutritional status data were obtained based on height and weight measurements, which were then categorized based on body mass index. Interviews were conducted to obtain data on the consumption of sweet drinks using the Semi-Quantitative Food Frequency Questionnaires (SQ-FFQ), while interviews regarding sedentary behavior were conducted using the Sedentary Behavior Questionnaire (SBQ). Bivariate analysis used Kendall Tau analysis (α=0.05). Results: A total of 60 respondents (57.7%) experienced overnutrition. There were 57 respondents (54.8%) who consumed sweet drinks in the high category, and 82 (78.8%) respondents had sedentary behavior in the high category. Consumption of sweet drinks and sedentary behavior are related to overnutrition in young adults in Ungaran. (p 0.05). Conclusion: Consumption of sweet drinks and sedentary behavior are risk factors for overnutrition among young adults in Ungaran.Keywords: overnutrition; sweet drinks; sedentary behavior; young adult

Abstract

Hipertensi merupakan permasalahan kesehatan yang masih menjadi perhatian karena angka kejadian hipertensi terus meningkat dan merupakan faktor risiko penyebab kematian di Indonesia terutama pada lansia. Peningkatan tekanan darah pada lansia seringkali disebabkan pola makan yang tidak tepat seperti kebiasaan konsumsi makanan dengan rasa asin. Kebiasaan konsumsi makanan asin juga dipengaruhi karena berkurang sensitivitas kemampuan Indera perasa pada lansia. Sehingga perlu adanya upaya pengendalian asupan untuk dapat mengendalikan tekanan darah pada lansia. Kegiatan pengabdian kepada masyarakat yang dilakukan di Posyandu Desa Klepu Kecamatan Pringapus dengan sasaran lansia yang berlangsung pada Desember 2023. Kegiatan yang dilakukan meliputi skrining gizi, pemeriksaan tekanan darah, edukasi gizi tentang penatalaksanaan dan pengelolaan diet hipertensi pada lansia, dan demonstrasi contoh menu. Contoh menu yang didemonstrasikan adalah pembuatan jus dan infused water dengan bahan buah dan sayur. Pemilihan buah dan sayur karen merupakan bahan makanan yang mengandung tinggi air, vitamin, mineral, dan serta serta diharapakan dapat meningkatkan asupan buah dan sayur serta untuk mengontrol tekanan darah pada lansia. Diharapkan bahwa kegiatan ini dapat meningkatkan pemahaman dan praktik lansia tentang pengelolaan diet guna mengontrol tekanan darah sehingga dapat meningkatkan kualitas hidup.
