Abstract

Community participation related to nutritional problems on Mandangin Island is caused by a lack of public appreciation of health because they think that if their babies / infants are fully immunized, they don't need to be weighed again like they were when they were babies. Busy mothers as housewives also affect the low participation of the community, so the nutritional problem in Mandangin is still a priority for health care. The purpose of this community service is to increase the knowledge of mothers of infants and toddlers about balanced nutrition because if the related knowledge is still lacking, then the practice of a balanced nutrition diet for infants and toddlers is not implemented properly which results in the nutritional status of infants and toddlers being less can even be bad. The stages of the method used in this activity are as follows: 1) Increasing cadre knowledge. 2) Increase knowledge of mothers of infants and toddlers. 3) Making media in the form of balanced nutrition games. 4) Simulation of balanced nutritional eating practices for infants and toddlers using a balanced nutrition game. 5) Evaluation of results in the form of an intelligent balanced nutrition mother race. The results of this activity are knowledge of cadres and mothers of infants / toddlers about nutrition before training is lacking but after being given training is sufficient. Training must be carried out on nutrition for mothers and cadres.

Abstract

The potential of freshwater fisheries in Bangka Regency, Bangka Belitung Province, is sufficient to support fisheries activities in this area. An activity that is quite prominent is catfish farming using swamps and tarpaulin ponds on limited land. In this study, the analysis of cultivation activities was carried out on the Bukit Dempo community group who became partners in the national community service activities, in cooperation with Universitas Airlangga and Bangka Belitung University. Characteristics of the pond using a combination of fixed nets with a net diameter of 0.5 cm. In the pond also found water plants in the form of water hyacinth which is expected to be able to make a symbiotic use of the organic material that has been left behind from feed and catfish waste. The cultivation system is classified as semi-intensive with a combination of commercial feed with high protein (31-33%).  The main problem in this cultivation system is low productivity and the lack of technology applied in an effort to increase production efficiency Furthermore, high production yields are marketed to Pangkal Pinang City and also to local areas around the Belinyu sub-district. Technical constraints include Motile Aeromonas Septicemia (MAS) due to the bacterium Aeromonas hydrophylla, which causes about 10% of mortality in commodities before harvest. There has been no treatment action in overcoming the disease, so it is necessary to be careful in avoiding death due to disease by observing catfish at the change of seasons.

Abstract

Analisis nilai gizi dan prilaku konsumen merupakan aspek penting untuk peningkatan nilai jual dari produk baru. Perbaikan pada kemasan dan informasi nilai gizi adalah salah satu cara untuk meningkatkan branding sebuah produk dan meningkatkan nilai jual produk terutama di masa pandemic Covid-19. Oleh sebab itu, peneltian ini bertujuan untuk menganalisis nilai gizi dan perilaku konsumen pada produk otak-otak dan bandeng presto yang diolah oleh salah satu UMKM di Surabaya. Metode yang digunakan yaitu dengan analysis nilai gizi produk yang diolah oleh UMKM dlabolatorium dan analisis prilaku konsumen dengan menyebar kuisioner ke 50 responden dengan berbagai latar belakang Pendidikan. Hasil uji analisis nilai gizi kedua produk untuk bandeng presto yaitu kadar air sebesar 61%, kadar abu 7.64%, kadar lemak 6%, dan kadar protein 8.79%. Sedangkan untuk otak-otak bandeng mengandung kadar air 58.20%, kadar abu 3.12%, kadar lemak  13.42%, dan kadar protein 7.69%. Hasil analisis prilaku konsumen menunjukkan bahwa konsumen memilih produk yang menggunakan kemasan yang menarik yang dilengkapi kemasan sekunder dan primer dengan teknologi vakum dibandingkan dengan kemasan mika untuk produk bandeng presto atau daun pisang untuk produk otak. Pengaruh penggunaan kemasan juga tentunya akan bepengaruh terhadap nilai tambah dan umur simpan produk. Hasil riset menunjukan juga bahwa konsumen lebih memilih belanja online sebanyak 94% responden dengan mempertimbangan beberapa informasi seperti nilai gizi yang disajikan dalam kemasan. Oleh sebab itu, penjualan produk diversifikasi perikanan memupnya potensi pemasaran yang lebih luas menggunakan platform online dibanding penjualan langsung dipasar. Hal ini juga akan berpengaruh terhadap omzet dan peningkatan perekonomian UMKM jika terus didampingi dalam pengembangan penjualan secara digital.

Abstract

Stunting is a condition of failure to grow and develop in children due to lack of nutritional intake for a long time. This is a major threat in realizing quality Indonesian human resources. The consumption of animal protein in Indonesia is at least 6 kg/capita/day. Therefore, a food diversification program is needed to meet the needs of animal protein, especially those sourced from fish. One of the aquaculture commodities that has a very large opportunity to be developed in the context of fulfilling the nutrition of the Indonesian people is catfish. Therefore, the use of oversized catfish as an ingredient for the manufacture of local products in the form of cendol has the potential to be developed to increase protein content. This study aims to determine the formulation of a dessert (cendol) based on wet protein isolate (surimi) of catfish. The concentration of surimi used in the preliminary study was 0%, 10%, 20%, 30%, 40%, 50% and 60%. The resulting product is then characterized by organoleptic, chemical, and biological characteristics. The results of the proximate test in the main study showed that the higher the percentage of surimi used, the higher the protein content of cendol products. The results of the commercial cendol proximate test, and surimi-based cendol with the addition of 25%, 30%, and 35% surimi percentages were 1.24%, 4.13%, 4.74% and 5.47%, respectively. During 8 days of storage at 6oC there was a decline in product quality as seen from all test parameters on cendol products.

Abstract

Stunting adalah salah satu masalah kesehatan masyarakat sehingga pemerintah mentargetkan prevalensi stunting turun menjadi 14 % pada tahun 2024. Jumlah keluarga berisiko stunting juga masih tinggi yaitu mencapai 21,9 juta berdasarkan pendataan keluarga (PK 21). Stunting adalah anak balita dengan nilai z-score kurang dari -2.00 SD/standar deviasi (stunted) dan kurang dari -3.00 SD (severely stunted). Keluarga berisiko stunting adalah keluarga yang memiliki satu atau lebih faktor risiko stunting yang terdiri dari keluarga yang memiliki anak remaja puteri/calon pengantin/Ibu Hamil/anak usia 0 – 23 bulan/anak usia 24 – 59 bulan berasal dari keluarga miskin, pendidikan orang tua rendah, sanitasi lingkungan buruk, dan air minum tidak layak. Untuk menurunkan stunting diperlukan intervensi spesifik sebesar 30 % dan intervensi sensitive sebesar 70 %. Penelitian ini bertujuan menganalisis faktor pendukung dalam upaya percepatan penurunan stunting dengan pendekatan keluarga berisiko stunting di Kabupaten Jombang Jawa Timur. Desain penelitian yang digunakan adalah deskriptif dengan rancangan studi kasus dan jenis data adalah primer dan sekunder. Sasaran program adalah ibu hamil, ibu menyusui, anak usia 0-23 bulan, remaja putri dan wanita usia subur serta anak usia 24-59 bulan. Hasil dari penelitian menunjukkan bahwa terjadi penurunan kasus stunting dari tahun 2020 ke tahun 2021 di Kabupaten Jombang dengan strategi yang diterapkan adalah edukasi kesehatan melalui kemandirian keluarga, gerakan masyarakat hidup sehat, gerakan seribu hari pertama kehidupan dan revitalisasi Posyandu. Keberhasilan program ini berkat dukungan dari kebijakan Pemerintah Kabupaten Jombang dan melibatkan berbagai Organisasi Perangkat Daerah (OPD).

Abstract

Stunting adalah kondisi gagal pertumbuhan pada anak balita (pertumbuhan tubuh dan otak) akibat kekurangan gizi dalam waktu yang lama, sehingga anak menjadi lebih pendek dibandingkan dengan anak seusianya. Kekurangan gizi kronis terjadi sejak bayi dalam kandungan hingga anak berusia dua tahun. Periode 1000 hari pertama kehidupan harus mendapat perhatian khusus karena menjadi penentu tingkat pertumbuhan fisik, kecerdasan, dan produktivitas seseorang di masa depan. Penelitian ini dilakukan sebagai upaya untuk mengetahui bagaimana Implementasi Dana Desa sebagai Intervensi pendukukung penurunan Stunting di Desa Pandan Wangi Kecamatan Diwek Kabupaten Jombang. Penelitian ini merupakan penelitian deskriptif kualitatif dengan mengambil data primer melalui wawancara dari informan yang sudah dipilih berdasarkan kepakaran yang dimiliki sebanyak 5 orang responden dan juga mengambil data sekunder untuk di analisis. Hasil penelitian menghasilkan temuan bahwa Implementasi dana Desa sebagai upaya mendukung Intervensi penurunan Stunting sesuai dengan indikator capaian intervensi gizi spesifik dan intervensi gizi sensitif berhasil menurunkan jumlah balita stunting sebanyak 56 balita stunting di tahun 2021 dan berkurang sehingga bisa diturunkan menjadi 35 bayi stunting di bulan Nopember 2022.

Abstract

Most of the residents in Keputih have a livelihood as milkfish farmers. Milkfish has the potential to be easily contaminated by microorganisms due to its high water content. Another problem related to milkfish is a large number of thorns in the meat, making it difficult to diversify its derivative products, therefore the Meat and Thorn Separator (MT-Separator) is an innovation to separate meat from thorns. Aim of the study is introduced and applied of MT separator to milkfish product from Ayah Olala's SMEs. Community service activities have been carried out from June to October 2022 which took place at the Chemistry Laboratory, Faculty of Fisheries and Maritime Affairs, Airlangga University, Surabaya. Processing of milkfish brains is carried out at Keputih Sukolilo, Surabaya. Community service activities begin with assistance to partners starting from the production process, the storage process, to the packaging process. Particularly emphasis on training the operation of the MT-Separator tool. UMKM Ayah Olala is an UMKM that focuses on processing milkfish brains which are located in Keputih Tegal Gang III No. 2, Sukolilo District, Surabaya City. The implementation of this community service begins with analyzing the problems faced by MSMEs such as business capital, production and managerial. The results of the analysis will then be evaluated to determine the output target to solve the problem. In this activity, partners received assistance from an MT-separator machine. Apart from that, partners also understand how to use the MT separator and the importance of using the tool. Based on the implementation of community service activities, it can be concluded that this activity was successful and provided insight regarding the introduction of product diversification of processed milkfish brains and the introduction of the Meat and Thorn Separator tool. More intensive assistance is needed for Ayah Olala's UMKM starting from the production process, business capital assistance, managerial and operational as well as training in the operation of the MT-Separator tool.

Abstract

Kondisi ekonomi nelayan tertinggal merupakan salah satu alasan utama yang mendorong para istri nelayan untuk bekerja dan mencari nafkah untuk keluarga. Hal ini menjadi problematika yang dihadapi oleh keluarga nelayan di Kenjeran, Surabaya. Kondisi perekonomian nelayan salah satunya dipengaruhi oleh kurangnya fasilitas dan edukasi terkait proses pengolahan dan diversifikasi komoditas perikanan yang memadai. Oleh sebab itu, untuk membantu meningkatkan perekonomian di keluarga nelayan perlu dilakukan penyuluhan diversifikasi produk olahan hasil perikanan. Kegiatan pengabdian masyarakat ini bertujuan untuk memberikan pelatihan dan pengayaan informasi terkait keterampilan pengolahan produk hasil perikanan. Pelaksanaan pengabdian masyarakat ini diawali dengan survei pendahuluan, kemudian dilanjutkan dengan penyuluhan dan pelatihan pembuatan olahan produk hasil perikanan. Pada proses penyuluhan untuk data primer yang diambil dengan melakukan wawancara pengisian kuesioner. Hasil kegiatan menunjukkan bahwa sebagian besar peserta sudah memahami terkait informasi gizi dan metode pengolahan produk perikanan dengan benar. Peserta kegiatan juga mendapatkan pemahaman terkait penggunaan kemasan sebagai salah satu cara melindungi dan meningkatkan harga jual produk olahan perikanan. Evaluasi kuesioner menunjukkan bahwa istri nelayan memerlukan pendampingan lebih lanjut terkait pengolahan produk ikan yang lebih variatif, beserta pendampingan cara pemasaran, dan penerapan sanitasi serta hygiene selama produksi untuk menghasilkan produk olahan perikanan yang bernilai jual tinggi. Masyarakat nelayan Kenjeran memahami pentinggnya  diversifikasi produk perikanan. Hal ini sebagai upaya peningkatan nilai ekonomi produk sebagai sumber ekonomi warga.

One of the main waste in pangasius fillet industry is the skin, which reached to 6% of body mass. Fish skins are alternative for making collagen because it has no restrictions for certain religions and ethnicities. Collagen is a protein biomaterial which acts as the main component of connective tissue. Extracting collagen using organic acids such as acetic acid is the most common extraction method. Herein, we report the effects of different immersion time of acetic acid to collagen properties from pangasius skin. In this study, pangasius skin was treated using 10% alcohol with the ratio 1:10 (w/v) for defatting and 0.1M NaOH with the ratio 1:10 (w/v) for eliminating non-collagenous protein. The immersion of 0.5M acetic acid was carried out on pangasius skin with the ratio of 1:20 (w/v), for 24, 48, and 72h at temperature less than 15oC. The sample was salted-out for 24 hours with NaCl until the concentration reached 2.5M, then the sample was freeze-dried at -40oC. This study investigated that longer immersion time affected the properties of pangasius skin collagen. Different immersion time significantly affected the yield of collagen from pangasius skin (p<0.05). Pangasius skin has a potential to be used as collagen raw material, and 72h of immersion time (P3) is suggested to produce pangasius skin collagen with the highest yield and protein content (6.15 % and 9.26 %). Production of collagen from the fish skin will contribute to increase pangasius waste valorization in pharmaceutical industry.

Abstract

Highlight Research The optimal condition for production of water-soluble collagen from Alaska pollock fish skin was the pretreatment with 0.15 M acetic acid followed by hydro-extraction at 40oC with 150 rpm for two hours. Higher acetic acid concentration at a pretreatment step enhanced the higher yield of water-soluble collagen via hydro-extraction process. Hydro-extraction was an environmentally friendly method for converting Alaska pollock fish skin to water-soluble collagen. Alaska pollock fish skin could be used as an alternative source for collagen production. Abstract To date, there is no information on skin of Alaska Pollock (Theragra chalcogramma) being used as a source for collagen. In order to produce water-soluble collagen from the skin of Alaska Pollock, a process known as hydro-extraction is utilized. This technique does not need a long extraction time or a large amount of chemical reagent. The purpose of this study was to investigate the effect of acetic acid pretreatment on hydro-extraction of water-soluble collagen from Alaska Pollock skin. The skin samples were pretreated using acetic acid at different concentrations (0.01 M; 0.05 M; 0.1 M, 0.15 M) for two hours at chilling temperature. The pretreated skin samples were further processed to produce water-soluble collagen using the hydroxy-extraction method. The obtained collagen was analyzed for proximate compositions, yield, and amino acids compositions with high performance liquid chromatography. It was found that the proximate compositions of the collagen products, specifically the protein content (75%) and fat content (1%), met the requirements of the Indonesian National Standard (SNI 8076:2014). The collagen yield ranged from 2.6 to 3.13%. The predominate amino acids in collagen were glycine, arginine, proline, glutamic acid, serine, and alanine. Pretreatment of skin sample with 0.15 M acetic acid resulted in the highest yield of water-soluble collagen (3.13%) and protein content (91.13%). The skin of Alaska Pollock fish could be used as an alternative raw material to produce water-soluble collagen for medical, pharmacy or food processing applications.
