Abstract

Proses menghilangnya kemampuan jaringan untuk memperbaikai diri merupakan suatu proses yang terjadi secera perlahan pada setiap manusia ketika sudah memasuki usia lanjut. Keadaan ini menyebabkan lanjut usia sulit untuk menghindari berbagai kerusakan sel-sel tubuhnya serta berkurangnya kemampuan untuk bertahan terhadap berbagai serangan mikro organisme pathogen yang menyebabkan terjadinya infeksi. Proses menua tidak saja berdampak pada faktor fisik melainkan menimbulkan berbagai masalah kesehatan lain seperti kondisi psikologis, social maupun kemampuan kognitifnya. Semakin lanjut usia seseorang akan semakin mengalami penurunan kemampuan kognitif yang berdampak pada kemunduran terhadap daya fikir dan penalarannya. Kondisi ini bisa bertambah buruk ketika lingkungan sekitar tidak dapat mengupayakan berbagai cara untuk memperlambat proses tersebut. Terkait hal tersebut penulis ingin mengetahui lebih jauh adakah hubungan antara umur, jenis kelamin, pendidikan dan status kesehatan terhadap kemampuan kognitif lansia melalui penelitian kuantitatif dengan pendekatan cross sectional di UPTD Dinas Perlindungan Sosial provinsi Banten. Dari jumlah responden sebanyak 55 lansia, setelah dilakukan uji chi-square di dapatkan nilai p value sebesar 0,024 yang berarti ada hubungan antara jenis kelamin dengan fungsi kognitif. Hubungan antara pendidikan dengan fungsi kognitif didapatkan nilai p value 0,011 yang berarti juga ada hubungan antara pendidikan dengan fungsi kognitif lansia, sementara antara umur dengan fungsi kognitif didapatkan nilai p value sebesar 0.582 yang berarti tidak ada hubungan antara umur dengan fungsi kognitif, sedangkan hubungan status kesehatan dengan fungsi kognotif didapatkan nilai p value 0,98 artinya tidak memiliki hubungan yang bermakna antara status kesehatan dengan fungsi kognitif. Saran untuk peneliti selanjutnya, dapat meneliti lebih jauh keterkaitan status kesehatan terhadap fungsi kognitif agar dapat ditemukan solusi yang tepat untuk mengatasinya.

Abstract

Menua adalah suatu proses menghilangnya secara perlahan-lahan kemampuan jaringan untuk memperbaikai diri/mengganti dan mempertahankan fungsi normalnya sehingga tidak dapat bertahan terhadap infeksi dan memperbaiki terhadap kerusakan yang diderita. Proses menua tidak saja berdampak pada faktor fisik akan tetapi menimbulkan berbagai masalah lain baik secara biologis, mental, maupun sosial termasuk ekonomi. Semakin lanjut usia seseorang akan semakin mengalami penurunan kemampuan dalam berinteraksi social yang berdampak pada kemunduran terhadap peran-peran sosialnya di masyarakat. Kondisi ini bisa bertambah buruk ketika lingkungan sosial tidak mendukungnya. Terkait hal tersebut penulis ingin mengetahui lebih jauh adakah hubungan antara umur, jenis kelamin, pendidikan dan status kesehatan terhadap kemampuan interaksi social lansia melalui penelitian kuantitatif dengan pendekatan cross sectional di UPTD Dinas Perlindungan Sosial provinsi Banten. Dari jumlah sampel sebanyak 43 lansia, setelah dilakukan uji chi-square di dapatkan nilai p value sebesar 0,35 dengan OR 1,034 yang berarti tidak ada hubungan antara umur dengan interaksi social. Hubungan antara jenis kelamin dengan interksi social didapatkan nilai p value 0,96 dengan OR 1,007 yang berarti juga tidak ada hubungan antara jenis kelamin dengan interaksi social, sementara antara pandidikan dengan interaksi social didapatkan nilai p value 0.35 dengan OR 1,144 yang berarti tidak ada hubungan antara pendidikan dengan interaksi social, sedangkan untuk hubungan status kesehatan dengan interaksi social didapatkan nilai p value 0,008 dengan OR 1,397 artinya memiliki hubungan yang bermakna antara status kesehatan dengan interaksi social. Saran untuk peneliti selanjutnya, dapat meneliti lebih dalam keterkaitan status kesehatan terhadap interaksi social agar dapat ditemukan solusi yang tepat untuk mengatasinya

Abstract

Instant noodles are a popular food and are often consumed by the community as a fulfillment of food needs in high activity, especially in the people of the capital city. The level of consumption of instant noodles always increases every year. Mangrove fruit with good nutritional content can potentially be used as mangrove fruit flour to be used as fortification of raw materials for making instant noodles. The advantage of mangrove fruit flour as an ingredient for instant noodles is that it is richer in nutrients. Whole wheat flour has a risk of gluten content in wheat flour, the impact can be detrimental to health. So it is necessary to have other alternatives that can reduce the use of wheat flour with risk. One of them is making noodles with various flour mixtures or with a mixture of fish meat to increase the protein value and essential fatty acids in it. One example of fish that is good for health is mackerel. The research method used was Completely Randomized Design (CRD) with 3 factors (F1, F2, F3, and control). Data analysis using SPSS 22 software with analysis of variance (ANOVA) 95% confidence level. Further tests were carried out using Duncan's test to determine the significant difference between each variable. The study showed that instant noodles could be produced from the formulation of wheat flour, mangrove fruit flour, and fish meal. There was an increase in the total ash total; crude fiber and crude protein content of instant noodles and there is an increase in the carbohydrate and fiber content of instant noodles, the use of mangrove fruit flour and mackerel fish meal has the potential to be a source of protein and fiber in the production of healthy instant noodles and is lower in gluten. The best results was obtained instant noodle formulation F2 (200 grams of wheat flour + 50 grams of mackerel fish meal + 50 grams of mangrove fruit flour). However, noodles produced from 100% wheat flour (control) were the most preferred instant noodles with a value of 4.75.

Abstract

Instant noodles are the most popular substitute for rice in the world, the consumption rate of instant noodles has increased from year to year, in addition, many new innovations have been made by instant noodle manufacturers to increase the selling value of the product. Instant noodle innovations that are widely produced include instant noodles without preservatives, artificial flavorings, and innovations in terms of variants and presentation methods. Indofishme is an instant noodle that has a PIRT permit and is produced with the fortification of fish, seaweed, shrimp waste and seaweed as an effort to reduce gluten content in the use of wheat flour. In this study, the author wants to improve the quality of instant noodles by using CMC. CMC treatments were K0(0%), K1(0.5%), K2 (1%), and K3 (1.5%) with 3 formulations (F1, F2, and F3). The research method is an experimental design using a completely randomized design (CRD) with parameters tested for water absorption, proximate levels, and calorific value. The results of testing water content (8.28-9.94%), fat content (1.57-2.58%), protein content (7.46-14.76%), ash content (1.52-1, 88%), carbohydrate content (75.88-83.75%), water absorption (237.77-364.22%) and calorific value (147.78-278.46 ccal). The results showed that the use of CMC (Carboxyl methylcellulose) can improve the quality of instant noodles (Indofishme). In addition, Indofishme as a new innovative instant noodle based on processed seafood can be used as an alternative to healthy instant noodles because it is richer in nutrients compared to commercial instant noodles.

Abstract

UMKM make a sizeable contribution to the country's economic development. In Indonesia, one type of business that is developing in society is UMKM, which is a business activity engaged in various specific business fields. Because of its rapid development and its contribution to the welfare of society. In Merlung District, UMKM play an important role in reducing unemployment because the existence of UMKM can open up great job opportunities thereby increasing the welfare of the people. One of the UMKM that is often run by the community is Livelihood Activities which are small and medium enterprises that are used to make a living, for example, such as street vendors.

Abstract

Waste has become a critical issue in the Special Region of Yogyakarta (DIY). The overcapacity of the Piyungan landfill (TPA) has triggered disruptions in waste management in Yogyakarta City, Sleman Regency, and Bantul Regency. Sleman was designated as an alternative landfill site utilizing Sultanate ground land. However, this initiative, including waste management through Village-Owned Enterprises (BUMKal), has not successfully changed the public's tendency to litter. Although Sendangtirto already has attention to the waste problem, it needs the active participation of the community. In response to this challenge, the Nuryo Setiko Clan established the Maju Lestari Waste Bank in 2022 to promote self-reliant waste management behavior through the empowerment of clan members. This study employed an action research method supported by participant observation, focusing on 90% of clan members residing in Sendangtirto Village. The study used a qualitative approach and Participatory Action Research method. The results show that the Maju Lestari Waste Bank successfully provides scheduled waste weighing services, transforms behavior from littering to waste sorting, attracts customers from both the clan and the general public, and increases income through waste savings. In conclusion, the Maju Lestari Waste Bank successfully established a waste bank institution, raised awareness, and provided an effective self-reliant solution for community-level waste management.
