Abstract

Food products with beneficial health effects are increasingly attracting public interest, in line with growing health awareness. Red beetroot (Beta vulgaris L.) is one such food that contains many bioactive compounds and exhibits high antioxidant activity. However, the bioactive compounds in red beetroot are susceptible to degradation, leading to color fading, reduced antioxidant capacity and bioavailability, and shorter shelf life during processing and storage. To enhance their stability, a microencapsulation process using specific coating materials can be applied. This study optimized the wall-material ratio for spray-drying beetroot extract microcapsules, prioritizing the stability/retention of bioactives, encapsulation efficiency, and instant solubility. Microcapsules were produced with soy protein isolate (SPI) : maltodextrin (MD) ratios of 0:1, 1:3, 3:7, 2:3, and 1:1 at a total wall concentration of 10% (w/w) using spray-drying under fixed conditions, inlet temperature 150°C; outlet temperature 82°C; feed rate 5.1 mL·min⁻¹. Betalains were quantified spectrophotometrically; total phenolics by Folin–Ciocalteu; total flavonoids by the aluminum-chloride method; and antioxidant activity by DPPH. Encapsulation efficiency was calculated as the ratio of retained betalains to the initial amount. Microencapsulation of red beet extract using soy protein isolate (SPI) and maltodextrin (MD) as wall materials significantly affected the physicochemical and functional properties of the microcapsules. Antioxidant activity, flavonoid content, phenolic compounds, and encapsulation efficiency increased when SPI and MD were combined at a 1:1 ratio.

Abstract

The management of Hajj funds constitutes a public trust involving a substantial amount of pilgrims’ funds and a long-term management horizon. The complexity of fund management, exposure to moral hazard, and high public expectations make Hajj funds vulnerable to fraud if not supported by governance with strong integrity and an adequate accounting system. This study aims to examine the role of Islamic accounting in embedding the values of integrity and amanah (trustworthiness) as mechanisms for fraud prevention in the management of Hajj funds. The research employs a qualitative descriptive approach through a literature review of regulations governing Hajj fund management, particularly Law Number 34 of 2014, policies of the Hajj Financial Management Agency (BPKH), and Islamic accounting standards (Sharia Accounting Standards/PSAK Syariah). The findings indicate that Islamic accounting functions not only as a financial reporting system but also as an ethical instrument, an internal control mechanism, and a form of moral accountability grounded in Sharia values. The synergy between BPKH regulations and the implementation of PSAK Syariah plays a strategic role in narrowing opportunities for fraud and enhancing the trust of Hajj pilgrims as the rightful owners of the funds.

Abstract

Penelitian ini dilatarbelakangi oleh meningkatnya kasus penyalahgunaan narkotika yang melibatkan anggota Kepolisian Daerah Jawa Barat (Polda Jabar), yang berdampak serius terhadap citra institusi dan kepercayaan publik. Tujuan penelitian ini adalah menganalisis mekanisme penegakan kode etik terhadap anggota kepolisian yang terlibat penyalahgunaan narkotika serta mengidentifikasi faktor penyebab dan efektivitas sanksi yang diterapkan. Penelitian ini menggunakan pendekatan hukum normatif-empiris dengan metode deskriptif-analitis untuk mengkaji ketentuan hukum yang berlaku sekaligus menganalisis implementasinya. Data yang digunakan data sekunder berupa bahan hukum primer seperti perundang-undangan, bahan hukum sekunder berupa buku, jurnal ilmiah dan juga bahan hukum tersier seperti kamus. Kemudian data primer diperoleh melalui wawancara dengan pihak Polda Jabar. Teknik pengumpulan data dilakukan melalui studi kepustakaan dan wawancara semi-terstruktur, kemudian dianalisis secara kualitatif dengan metode normatif-komparatif untuk membandingkan ketentuan hukum dengan praktik pelaksanaannya. Penelitian ini dilaksanakan di Kepolisian Daerah Jabar. Hasil penelitian menunjukkan bahwa pelanggaran dipengaruhi faktor internal seperti lemahnya kontrol diri dan integritas moral, serta faktor eksternal berupa lingkungan sosial dan pengawasan internal yang belum optimal. Kebaharuan penelitian ini terletak pada analisis integratif antara regulasi terbaru dan praktik empiris di Polda Jabar. Kontribusinya memberikan rekomendasi penguatan sistem pengawasan, pembinaan etika berkelanjutan, dan penerapan sanksi tegas guna menjaga profesionalisme Polri.

Abstract

Enhancing post-harvest handling is crucial to boost productivity, preserve product quality, and enhance the competitiveness of food commodities. One effective approach to maintain product quality is by using edible coating, and in this case, alginate-based edible coating has been employed. The alginate-based edible coating exhibits a deficiency in terms of its inadequate mechanical properties. The addition of starch could improve the mechanical properties of alginate-based edible coating. Jackfruit seed starch has the potential to valorize as a cost-effective source of starch. Jackfruit seed flour has unique starch characteristics related to acid resistance, thermal properties, and mechanical properties when compared with starch from other sources. This study aims to optimize the concentration of alginate and jackfruit seed flour in the preparation of tomato edible coating using Response Surface Methodology (RSM). The effect of alginate concentration (1-2% b/v) and jackfruit seed flour concentration (1-2% b/v) on mass loss (%) and color difference (ΔE) were investigated. The optimum condition was obtained at an alginate concentration of 1.5% b/v and jackfruit seed flour concentration of 1.0% b/v with the resulting tomato quality value of mass loss of 5.43% and color difference (ΔE) of 0.70.
