Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh penambahan gelatin ceker ayam terhadap sifat fisik edible film pati talas dan mengetahui lama penyimpanan ‘bareh randang’ terbaik menggunakan edible film dari pati talas dengan penambahan gelatin ceker ayam. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 4 taraf perlakuan dan 3 kali ulangan. Data hasil pengamatan dianalisis menggunakan ANOVA dan uji lanjut DNMRT pada taraf nyata 5%. Perlakuan pada penelitian ini adalah lama penyimpanan ‘bareh randang’ yang dilapisi edible film (2, 4, 6, dan 8 hari). Hasil penelitian menunjukkan bahwa lama penyimpanan ‘bareh randang’ yang dilapisi edible film berpengaruh berbeda sangat nyata terhadap kadar air, kadar lemak, dan uji kapang. Berdasarkan hasil uji organoleptik yang sesuai dengan syarat mutu, dan hasil uji organoleptik beberapa panelis terhadap ‘bareh randang’ yang dilapisi edible film menunjukkan perlakuan terbaik yaitu pada perlakuan A (2 hari) dengan kadar air (8,65%), kadar lemak (14,50%), dan uji kapang (2,7 X 101 CFU/g) dan lama penyimpan 2-4 hari.

Abstract

Bahan pangan merupakan suatu produk yang mudah mengalami kerusakan. Wajik yaitu makanan semi basah yang diolah dari beras ketan, gula, dan santan kelapa. Tujuan dari penelitian ini adalah untuk mengetahui masa simpan wajik yang dilapisi edible film kitosan PVA hingga mencapai kerusakan. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 5 taraf perlakuan dan 3 kali ulangan. Data hasil pengamatan dianalisis menggunakan ANOVA dan uji lanjut DNMRT pada taraf nyata 1%. Perlakuan pada penelitian ini adalah lama penyimpanan wajik yang dilapisi edible film kitosan PVA (0, 5, 10, 15, 20 Hari). Hasil penelitian menunjukkan bahwa Edible film kitosan udang windu berpengaruh sangat nyata terhadap karakteristik wajik berdasarkan uji asam lemak bebas. Berdasarkan uji asam lemak bebas, edible film kitosan PVA dapat memperpanjamg umur simpan wajik hingga 10 hari (perlakuan C) dengan nilai asam lemak bebas 0,06% dan nilai ini memenuhi syarat SNI pada wajik 01-4272-1996.

Abstract

Tujuan dari penelitian ini adalah untuk mengetahui pengaruh lama penyimpanan terhadap mutu pempek dengan kemasan antimikroba lengkuas dan untuk mengetahui efektivitas kemasan antimikroba lengkuas pada pempek selama penyimpanan. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) sederhana dengan perlakuan 4 taraf dan 3 kali ulangan. Data hasil pengamatan dianalisis menggunakan ANOVA dan uji lanjut DNMRT pada taraf nyata 1%. Perlakuan pada penelitian ini adalah lama penyimpanan pempek  dengan kemasan antimikroba lengkuas berupa edible film selama 0, 1, 2, dan 3 hari. Hasil penelitian menunjukkan bahwa lama penyimpanan pempek dengan kemasan antimikroba lengkuas berpengaruh nyata terhadap kadar air, kadar protein dan jumlah kapang. Kemasan antimikroba lengkuas kurang efektif dalam menghambat pertumbuhan kapang. Pertumbuhan kapang masih terjadi hingga hari ke 3 dengan jumlah 3,0 x 104 cfu/gr.

Abstract

Handling the layang fish (Decapterus sp) cold chain is an effort to maintain the freshness of fish until it reaches consumers in a fresh condition. Added ice flakes are the method for applying low temperatures in storage so that fish are durable and long-lasting. The purpose of this study was to analyze the freshness level of layang fish after being stored for 0, 2, 4, and 6 hours. The study used an experimental method with four treatments and three replications. Fish samples were taken directly from Tempat Pelelangan Ikan (TPI) Bungus, Padang, and transported to the laboratory using a cold box. On arrival at the laboratory, the fish samples were separated into several cold boxes which had been given ice flakes with the ratio of fish to ice 1:1. Then, the organoleptic test was carried out using 25 semi-trained panelists. The organoleptic parameters were eyes, gills, mucus, fish cutlet, odor, and texture of layang fish. The results showed that chilled storage for 2-4 hours found that layang fish was still categorized as fresh and received a score of 6.00 – 7.48 from the panelists, meaning that fish was highly favored by consumers. After 6 hours of chilled storage, the quality of fish began to decline with an average score ranging from 4.72-5.20 with the characteristics of fish eyes turning red and the fish flesh becoming mushy. Handling chilled temperatures is necessary to maintain the quality and freshness of layang fish. The best-chilled storage temperature was about 2-4 hours.

Abstract

This study aimed to determine the effect of edible coating of breadfruit starch on the quality of cayenne pepper and to find out how long the optimal storage of cayenne pepper coated with an edible coating breadfruit starch and stored at room temperature. This study used a complete randomized design with 5 treatments and 3 data tests. The observation results were analyzed using ANOVA and the continued test DNMRT at the rate of 1%. The treatment in this study was the duration of storage of cayenne pepper coated with edible coating for 3, 6, 9, 12, and 15 days. The results showed that the length of storage of cayenne pepper coated with edible coating had a significant effect on water content, vitamin C, pH, and weight loss. Based on the color and texture test results of cayenne pepper coated with edible coating, it was shown that storage up to day 3 was most preferred by the panelists, with a moisture content of 85.32%, vitamin C content of 268.36 mg/100 g, pH of 3.35, and weight loss of 22.44%. Abstract

Tujuan penelitian ini adalah untuk mengetahui pengaruh jumlah penambahan gula aren terhadap karakteristik dan cita rasa selai lembaran dan mengetahui perlakuan yang paling disukai oleh panelis. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 5 taraf perlakuan dan 3 kali ulangan. Data hasil pengamatan dianalisis menggunakan ANOVA dan uji lanjut DNMRT pada taraf nyata 1%. Perlakuan pada penelitian ini adalah jumlah penambahan gula aren: A (30%), B (35%), C (40%), D (45%), E (50%). Hasil penelitian menunjukkan bahwa penambahan gula aren pada selai lembaran berpengaruh berbeda sangat nyata terhadap nilai pH, kadar air, kadar gula total, kadar serat kasar dan uji lipat. Berdasarkan uji organoleptik diperoleh selai lembaran yang paling disukai oleh panelis adalah pada perlakuan C (penambahan gula aren sebanyak 40%) dengan nilai pH 4,18, kadar air 19,91%, kadar gula total 44,28%, kadar serat kasar 2,08%, uji lipat 3,00 memenuhi syarat mutu SNI 01-3746-2008 dan kriteria mutu selai buah SII No 173 Tahun 1978 kecuali kadar gula total 44,28%.

Abstract

Abstract Nugget is a processed meat products which mixed or without other ingredients and permitted food additives. In its manufacture, the nugget is formed and then steamed and fried before being consumed. One of the most widely grown horticultural crops in the Nagari Ladang Panjang area is corn. Corn can be used as nuggets which are rich in fiber and added tofu as its protein. The purpose of this activity is to provide knowledge to the community about making sweet corn-based nuggets. The results of the implementation of this service were successful in processing and the community was very enthusiastic. This corn nuggets product can be used as an alternative in consuming vegetable protein and fiber. If these corn nuggets are developed properly, they can become one of the superior products in the form of frozen food from Nagari Ladang Panjang. Keywords: nuggets, sweet corn, tofu, frozen food

Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh perbandingan tepung bengkuang modifikasi dan tepung ubi jalar putih terhadap mutu biskuit. Penelitian ini menggunakan Rancangan Acak Lengkap sederhana (RAL) satu factor dengan 5 perlakuan 3 kali ulangan. Data pengamatan dianalisis menggunakan Analysis of Varian (ANOVA) dan uji lanjut Duncan’ New Multiple Range Test (DNMRT) pada taraf nyata 1%. Perlakuan pada penelitian ini adalah perbandingan tepung bengkuang modifikasi dan tepung ubi jalar putih pada pembuatan biskuit. Hasil penelitian menunjukkan bahwa perbandingan tepung bengkuang modifikasi dan tepung ubi jalar putih berpengaruh terhadap kadar air, kadar abu, kadar serat kasar, dan kadar protein biskuit yang dihasilkan. Biskuit yang dibuat sudah memenuhi syarat mutu biskuit yang ditetapkan oleh SNI kecuali untuk kadar air dan kadar protein. Biskuit yang paling disukai oleh panelis adalah biskuit dengan perbandingan tepung bengkuang modifikasi dan tepung ubi jalar 20:80 (perlakuan E).

Abstract

Donuts are a snack made from wheat flour and are popular among various groups. However, wheat flour contains gluten, which can cause the immune system of a person with celiac disease to react to gluten and attack the small intestine lining. Therefore, wheat flour needs to be substituted with alternative ingredients, one of which is sweet potato flour. This research aims to determine the effect of different types of sweet potato flour in making donuts on their chemical and organoleptic characteristics. The research design used was a Completely Randomized Design (CRD) with five treatments and three replications. Observation data were analyzed using ANOVA and Duncan's New Multiple Range Test (DNMRT) at α = 1%. The treatment in this study was the addition of variations of sweet potato flour (A = 50% white sweet potato, B = 50% purple sweet potato, C = 50% yellow sweet potato, D = 50% orange sweet potato, E = 50% cilembu sweet potato). Further test results showed that the addition of various variations of sweet potato flour had very significantly different effects on moisture, ash, fat, protein, carbohydrate content, and antioxidant activity. Based on organoleptic tests, the best treatment was treatment E (cilembu sweet potato flour) with an average value of 5.93 (very like), where the resulting donuts had the following chemical characteristics: moisture content (24.18%), ash content (2.10%), fat content (10.87%), protein content (14.96%), carbohydrate content (56.74%) and antioxidant activity (64.75%). Donuts with cilembu sweet potatoes have the most fragrant aroma, golden brown color, slightly sweet taste, and soft texture.

Abstract

Noodles are one of the carbohydrate alternatives to rice. To get healthy noodles, you need additional vegetables or fruit. Dragon fruit skin is high in antioxidants that function to ward off free radicals. The addition of tuna bone meal as an additional nutritional value in the form of potassium and mineral. The purpose of this study was to determine the best characteristics of red dragon fruit skin dry noodles with the addition of tuna fish bone meal which were the best in making dry noodles that the panelists liked. This study used a Completely Randomized Design (CRD) with 5 treatment levels and 3 replications. Observational data were analyzed using Duncan’s New Multiple Range Test (DNMRT) at 1% level. The treatment in this study was the addition of tuna fish bone meal to dried red dragon fruit skin noodles (A=2%, B=4%, C=6%, D=8%, E=10%). The results showed that the addition of tuna bone meal had highly significant different, ash content, protein content, antioxidant test and calcium content. Based on the organoleptic test, dry noodles with treatment B (Addition of 4% tuna fish bone meal) were most preferred by the panelists and met the quality requirements of SNI No 8217-2015 with a composition of water content (11,47%), ash content (0,45%), protein content (16,24%), antioxidant test (34,38%) and calcium content (30,79%).
