Abstract

Buah strawberry merupakan salah satu buah klimaterik dan tergolong perishable food, kerusakan pada buah disebabkan kehilangan kandungan air pada buah dan nutrisi-nutrisi penting yang ada didalam buah seperti vitamin C. Penelitian ini bertujuan untuk mengetahui pengaruh perbedaan konsentrasi pati kulit singkong pada edible terhadap sifat fisiokimia pada buah strawbery selama penyimpanan. Desain penelitian yang digunakan adalah Rancangan Acak Kelompok (RAK) Sederhana dengan 4 level perlakuan yaitu A0 (kontrol), A1(2%), A2(4%), A3(6%) dengan 3 kali ulangan. Hasil penelitian menunjukkan bahwa penggunaan edible berpengaruh nyata terhadap kadar vitamin C, susut bobot, aktivitas antioksidan dan intensitas warna. Perlakuan terbaik didapatkan pada penambahan pati kulit singkong dengan konsentrasi 4% dengan karakteristik yaitu dapat mempertahankan penurunan aktivitas antioksidan pada hari ke-11 sebesar 91,21%, susut bobot sebesar 35,54% dan intensitas warna (b+) sebesar 8,7. Penggunaan edible coating pati kulit singkong terbukti dapat memepertahankan umur simpan buah strawberry hingga 11 hari penyimpanan, dibandingkan tanpa penggunaan edible yaitu 7 hari masa simpan.

Abstract

UMM Bakery sebagai salah satu Industri Kecil Menengah (IKM) yang bergerak di bidang pangan masih mempunyai kendala yaitu belum semua produk UMM Bakery mempunyai Sertifikat Halal dari LPPOM MUI. Berdasarkan permasalahan ini, perlu dilakukan pendampingan dalam hal penerapan Sistem Jaminan Halal (SJH).  Tujuan penerapan Sistem Jaminan Halal (SJH) di UMM Bakery adalah menjamin kehalalan produk melalui sertifikasi halal. Sistem Jaminan Halal (SJH) merupakan sistem kepengurusan yang terintegerasi, disusun, diterapkan, dan dipelihara untuk mengatur bahan, proses produksi, produk, sumber daya manusia, dan prosedur yang menjamin keberlangsungan proses produksi halal menurut persyaratan LPPOM MUI melalui dokumen standar jaminan halal. Kegiatan pendampingan penerapan SJH ini terdiri dari penyampaian materi mengenai SJH, pendampingan implementasi 11 kriteria SJH, dan pendampingan pengajuan dokumen sertifkasi halal ke LPPOM MUI Jawa Timur secara on line (Cerol-SS23000). Kegiatan pendampingan penerapan SJH di UMM Bakery berhasil mendaftarkan pproduk-produknya sampai mendapatkan sertifikat halal dari LPPOM MUI.

Abstract

Brown cane sugar is a traditional sugar product manufactured without removing the molasses component. Non-enzymatic browning occurred through Maillard reaction when heated in the caramelization process involving complexes between amino acids and sugar reducer possessing important effects on food properties, such as: nutritional value, color, texture, and taste. This study was conducted to analyze the pH effect and caramelization conditions towards the quality of brown cane sugar and the correlation to sensory properties by Partial Least Squares (PLS) Regression by using four treatments: 440 (40-minute caramelization : 0.3% NaHCO3), 710 (40-minute caramelization : 0.7% NaHCO3), 240 (40-minute caramelization : 0% NaHCO3), and 460 (60-minute caramelization : 0.3% NaHCO3). Water content, ash content, color (L, a*, b*), sensory attributes (color, taste, texture) as well as the level of consumer acceptance were investigated. The results showed that texture was positively correlated with moisture, ash, and b* values. The color intensity and taste were negatively correlated with these parameters but positively correlated with pH. Color intensity was also positively correlated with (L*). A caramelization duration and concentration of NaHCO3 given effected the quality of brown cane sugar. In other words, the longer of caramelization duration, the darker of color (blackish brown), with a slightly soft texture, high water content, and strong caramel flavor. Besides, the higher of the concentration of NaHCO3 given, the brighter of the product with hard and sandy textures, which many consumers preferred.

Abstract

Frozen vaname shrimp is one of the leading export products from the Indonesian fishing industry sector. Soaking is an important step in the frozen shrimp processing chain to increase the yield and quality of the final product. This study aims to determine the effect of adding additives (STPP and Turbo) at various concentrations in soaking shrimp on the physical-sensory quality of frozen white vaname shrimp. This study used factorial RAK with factors I: (1) STPP 3%; (2) STPP 5%, and factor II: (1) Turbo 2%; (2) Turbo 4%. The quality parameters observed included physical quality (net recovery, step loss, drip loss, cooking loss, increase in check size) and sensory quality (appearance, smell, taste, texture). Data were analyzed by analysis of variance (ANOVA) and DMRT follow-up test (for physical quality), and Dunnet follow-up test (for sensory quality) at 95% confidence level. Descriptive statistical analysis was used for data that did not meet the ANOVA test. The results showed that the addition of STPP and Turbo at various concentrations had no significant effect (α> 0.05) on net recovery, step loss, cooking loss, and product sensory quality. The percentage of stage losses is influenced by the net recovery and gross recovery of shrimp, and all the treatments tested were acceptable to all panelists.

Abstract

Abstract. Chutney is a native Indian processed product, made from cuts of fruits or vegetables and nuts cooked in a sweet, sour and spice mixture. The quality requirements of chutney are influenced by the use of raw materials herbs and spices. The purpose of this study was to determine the response of three varieties of mango and its interaction with concentration of apple vinegar towards physicochemical characteristics of mango chutney. The experimental design of this study used a nested design with two factors. The first factor was three varieties of mango consisting of podang mango, gadung, and kweni and the second factor was the concentration of apple vinegar (5%: 10%: 15%).Parameters analyzed were moisture content, ash content, vitamin C, total soluble solids, total titrated acids, pH, crude fiber, antioxidant activity, color intensity, topicality and hedonic test (flavor, aroma, and appearance). The study showed that differences in mango varieties and apple vinegar concentration did not interact with moisture content, ash content, total soluble solids, total titrated acids, vitamin C, crude fiber, antioxidant activity, pH, color intensity, topicality and hedonic test. The differences in mango varieties significantly affected on water content, color intensity (L and a+), topicality, and hedonic test, whereas the difference of apple vinegar concentration had no significant effect on ash content, pH, total soluble solids, total titrated acids, vitamin C, crude fiber, and antioxidant activity. The optimum composition based on De Garmo test chutney made from gadung mango and 5% apple vinegar (G2C1) with moisture content 23,50 %, ash content 3,15 % vitamin C 0,10 %, total titrated acid 0,75 %, crude fiber 7,05 %, total soluble solids 4,60 ºbrix, ph 4,31 %, antioxidant activity 93,67 %, colour intensity: lightness (L) 36,13, redness (a+ ) 4,67 and yellowness ( b+) 10,00, Topicality 10,67 cm, and hedonic test : appearance 2,13 %, aroma 3,30 % and flavor 2,97 %.

Abstract

Bakso daging sapi merupakan lumatan daging sapi yang mudah mengalami kerusakan. Berdasarkan data yang dihimpun oleh BPOM pada tahun 2005 bahwa bahan tambahan pangan yang paling sering di gunakan untuk bakso adalah boraks dan formalin. Mengingat bahaya boraks dan formalin apabila dikonsumsi, maka perlu dilakukan penelitian mengenai metode pengawetan bakso secara aman yaitu pelapisan edible coating dengan penambahan oleoresin dari rimpang jahe sebagai senyawa antibakteri. Penelitian ini bertujuan untuk mengetahui apakah pemberian edible coating dapat meningkatkan umur simpan bakso daging sapi pada penyimpanan suhu ruang. Penelitian ini bersifat eksperimen di laboratorium dengan rancangan acak lengkap sederhana dengan faktor penelitian yaitu konsentrasi oleoresin dari rimpang jahe emprit yang terdiri dari lima level yaitu 0%, 0,5 %, 1 %, 1,5 %, dan 2 % dengan 3 kali pengulangan. Umur simpan bakso daging sapi dilihat melalui TPC, pH, kadar air, kadar protein, susut bobot dan uji tekstur. Data penelitian dianalisis ANOVA dan uji lanjut menggunakan uji Duncan (DMRT). Bakso berpelapis edible coating berbasis pati jahe dengan dengan penambahan 2% oleoresin dan penyimpanan suhu ruang menghasilkan umur simpan 48 jam, sementara bakso tanpa pelapis (kontrol) hanya bertahan 24 jam. Perlakuan oleoresin sebanyak 2% berpengaruh nyata (p<0,05) terhadap karakteristik bakso dengan nilai TPC yaitu 7,3 x107 cfu/g, nilai kadar air 69,62 %, susut bobot 0,172 %, kadar protein 5,08 %, pH sebesar 6,050 dan tekstur 0,030 N/m2.

Abstract

The edible film is one of the innovations used to overcome the food packaging problem. Components of edible films are hydrocolloids, lipids, and composites. Glycerol belongs to the hydrocolloid group which serves to maintain the solidity of the film sheet. The edible active film allegedly can inhibit physical, chemicals, and microbiology problems in the packaging which will affect the decline of food quality during storage. With the active compounds contained in red ginger it is expected to inhibit the growth of Salmonella bacteria. The purpose of this study was to determine the effect of the addition of different concentrations of glycerol and red ginger extract on the physical, mechanical, and inhibitory zones in the resulting edible film produced. This research used a nested design with 2 factors. The first factor was the addition of 20% glycerol concentration; 25%; 30% while the second factor is the addition of 0% red ginger extract; 0.5%; 1%; 1.5%. The treatments were 12 treatments with 3 replications. The parameters of this study include thickness, tensile strength, elasticity, WVTR, transparency, moisture content, solubility, density, and edible inhibition zone against Salmonella bacteria. The results showed that edible active red ginger film with the addition of glycerol had a significant effect on thickness, transparency, tensile strength and inhibition zone. On the addition of red ginger extract, 1.5% can inhibit the growth of Salmonella bacteria up to 34.17 mm.

Abstract

The current pattern of public consumption leads to practical food products in the presentation, such as noodles, bread, and other snacks. This consumption pattern has resulted in increased demand for starch-based foodstuffs. The use of wheat flour that makes Indonesia continues to increase the percentage of imported food every year. The use of natural and modified starch is functioning as a substitute for wheat flour. The starch has a resistant starch. Resistant starch is a starch that can not be digested by digestive enzymes and resistant to stomach acid so it can reach the large intestine to be fermented by probiotic bacteria. This study aims to determine the effect of substitution of natural and modified starch by adding red bean flour to the physical-chemical characteristics of sweet bread. The research was conducted by using Rancangan Acak Kelompok (RAK) two factors. The factor I is the composition of wheat flour and garut starch with 6 levels of natural garut starch 90%: 10%, 80%: 20%, 70%: 30% and modified starch 90%: 10%, 80%: 20%, 70%: 30%. Factor II is the added red kidney bean flour with 2 levels is 5% and 10%. The parameters of this research are texture, pore uniformity, proximate analysis, and organoleptic test.

Abstract

Noodles are consisting of main high protein flour. Data consumption of noodles in 2014 in Indonesia gain 2,2 million ton, this number was going high gradually in every next year. The substitute material which has similarities with what has been used in the last decade is sorghum starch. The aim of this study was to determine the effect of the composition of sorghum starch with seaweed pulp. The research method in is factorial Randomized Block Design (RBD). The first factor used was the difference in the ratio of wheat flour with sorghum starch which was added at 80:20; 60:40; 50:50 Factor II is the addition of seaweed which is 10%, 20%, and 30%. Quality starch noodles within analysis: water content, ash content, protein content, fat content, crude fiber content, and organoleptic (texture, taste, color, and aroma (smell)). The best results were obtained in the T1R1 treatment which got rank 1 with water content 33.38%, ash content 2.05%, protein content 8.31%, fiber content 12.92%, fat content 1.22%, organoleptic aroma 2.94 with aroma value "Quite tasty", organoleptic texture 3.76 with a value of "springy", color organoleptic 3.73 which is "attractive", organoleptic taste 3.76 that is "delicious".

Abstract

The use of tofu dregs flour, red bean flour and chopped soybeans alarms to enrich the fiber and protein nutrition from the snack bar. The purpose of this study was to determine the interaction and effect of the addition of tofu pulp and red bean flour with soybeans on the physicochemical and organoleptic snack bars. The research used factorial randomized block design (RBD), the first factor was the ratio of the addition of tofu pulp flour and red bean flour with treatment T1 (14%; 86%), T2 (29%; 71%), T3 (43%; 57%) and the second factor was the addition of soybeans treated with K1 (10%), K2 (20%), K3 (30%). The results of the treatment of tofu dregs flour and red bean flour showed that the ash content in the T1 treatment (14%; 86%) was 3.20%, the fiber content in the T3 treatment (43%; 57%) was 6.54%, the protein content in T1 treatment (14%; 86%) namely 5.01%, organoleptic aroma test on T1 treatment (14%; 86%) namely 5.47 (delicious) and organoleptic taste test in T1 treatment (14%; 86%) namely 5.13 (delicious). The highest yield of chopped peanut treatment was at K1 (10%), namely 46.56 N.
