Abstract

Lack of waste management of oil palm empty fruit bunches and the lack of utilization of oil palm empty fruit bunches (EFB). Based on this, the researcher wants to use empty bunches as paving blocks that meet the quality standards of SNI 03-0691-1996 which include the requirements for appearance, size, compressive strength, and water absorption. This research was conducted for 3 months and the sample to be used was obtained from the Pagar Merbau Palm Oil Mill. Oil palm empty fruit bunches are obtained from the process of soaking with the chemical NaOH for a while so that the fibers do not get moldy. Empty bunches of fiber, water, cement, and sand are mixed and stirred evenly which is then printed on a 21.5 x 11 x 6 cm size mold. The research was conducted at the ITSI campus (Indonesian Palm Oil Technology Institute) Medan and the Civil Engineering Laboratory of the Medan State Polytechnic. This research is experimental. Variable testing using ANOVA test with a confidence level of 95% or with a significance level of 5% (α = 0.05). The results showed that the appearance and size of paving blocks with fiber composition of 0%, 5%, 10%, 15%, and 20% oil palm empty fruit bunches met the requirements according to SNI 03-1091-1996. There is a relationship between the weight of paving blocks and the fiber composition of 0%, 5%, 10%, 15%, and 20% of the compressive strength of paving blocks and there is no relationship between the weight of paving blocks and the fiber composition of 0%, 5%. , 10%, 15%, and 20% of the water absorption of paving blocks.

Abstract

Coffee is a popular beverage that is consumed worldwide. Flavor is an important aspect of excellent coffee. Fermentation was applied in the wash coffee processing to degrade the mucilage layer and to improve the flavor quality. Fermentation in non-washed gayo arabica coffee processing has not been widely reported. This study aims to analyze the effect of anaerobic fermentation on non-washed Gayo arabica coffee processing to obtain coffee with the highest sensorial score. Coffee fruit were processed and fermented for 0-48 hours. Sensorial score, volatile, and non-volatil compounds were observed at roasted bean. A significant increase in sensory test scores was obtained in the Pulped Natural (PN) process which was fermented with a score of 85.58 ± 1.01. Concentrations of citric, malic, succinic, lactic, and acetic acids are varied between the treatments. Volatile analysis using SPME-GCMS produced 20 compounds with an Odor Active Value OAV> 1 consisting of aldehydes, furans, ketones, phenols, pyrazines, and terpenes. β-Damascenone was a compound that has the highest OAV values with honey-like, fruity, apple, and rose aroma characteristics that dominate PN and Black Honey (BH). Fermentation for 48 h in the PN process is suitable for use in Gayo with humid conditions and high altitudes. Keywords: Coffea arabica, SPME-GCMS, Volatile compounds, HPLC, Non-volatile components, Coffee processing.

Abstract

Oil palm processing is one of the factors that determine the success of an oil palm plantation business. The Palm Oil Mill (PKS) in the context of the palm oil industry in Indonesia is understood as the unit of extraction of Crude Palm Oil (CPO) and palm kernel from the Fresh Fruit Bunches (FFB) of oil palm. The Palm Oil Mill (PKS) is the most upstream processing unit in the palm oil processing industry and is a critical point in the economic life cycle of palm fruit in particular and the palm oil industry in general. The purpose of this study was to find out how much percentage of palm oil loss was contained in the dregs of the press and to find out the optimal conditions for the screw press. The high or low percentage of oil loss in the process that occurs is influenced by several factors, namely the condition of the working pressure on the screw press and the capacity of the diluent water. The average percentage of loss of palm oil in the pressing process obtained from the data is June 5.07% with the norm of losses of pressed waste oil of 0.64%, the average of July is 4.92% with the norm of losses of pressed oil of 0, 64%, and an average of 4.98% in August with a normal loss of 0.64% of pressurized oil losses.
