Abstract

Kue Tetu Mandar adalah jajanan tradisional Mandar dibuat dengan tepung terigu, gula merah, dan santan. Tujuan penelitian ini untuk menentukan formula tepung daun kelor (Moringa oleifera) dan kacang merah (Phaseolus vulgaris) pada kue Tetu Mandar untuk meningkatkan nilai gizinya sebagai cemilan alternatif untuk mencegah dan menangani anemia pada remaja putri. Penelitian ini adalah percobaan faktor tunggal (formula tepung komposit daun kelor (DK) dan kacang merah (KM)) yang disusun dalam Rancangan Acak Lengkap. Formula tepung komposit yang dicobakan adalah 2,5-7,5 g masing-masing untuk DK dan KM. Parameter yang diamati adalah sifat sensoris hedonik, serta kandungan protein dan zat besi kue Tetu Mandar. Data sifat organoleptik dianalisis dengan uji Kruskal-Wallis, sedangkan data kandungan protein dan besi dianalisis dengan ANOVA. Dilakukan pemilihan formula kue dengan perangkingan, dan perhitungan Angka Kecukupan Gizi (AKG) dari kue Tetu Mandar. Hasil penelitian menunjukkan bahwa formula tepung komposit daun kelor dan kacang merah berpengaruh tidak nyata terhadap sifat organoleptik untuk atribut warna, tekstur dan aroma, serta kandungan protein dan zat besi kue Tetu Mandar, tetapi berpengaruh nyata terhadap sifat organoleptik untuk atribut rasa dan keseluruhannya. Formula 2,5 g DK dan 7,5 KM (F1) menjadi formula terpilih. Panelis memberikan respons organoleptik hedonik keseluruhan suka pada kue Tetu Mandar yang diperoleh dari F1. Kue tersebut mempunyai kandungan protein dan zat besi berturut-turut 4,82% dan 1,12%. Kadar protein ini memenuhi syarat mutu untuk biskuit (SNI 2973:2022). Konsumsi dua potong kue Tetu Mandar (@ 50 g) mencukupi AKG zat besi untuk remaja putri.

Abstract

The purpose of this study was to evaluated the impact of giving coconut water and watermelon juice on fitness level athletes fitness. This research used a Quasi Experimental Design with a pre- and post-test design with 22 teenage basketball athletes from SMA Negeri 3 Samarinda as subjects. The treatment is given to provide 200 ml of coconut water every 15-20 minutes during a moderate intensity training session for 3 consecutive days. Measurement of fitness levels was carried out by measuring the athlete's VO2max. VO2max was measured using the Bleep Test method at the beginning and the end of treatment. The results of the bivariate analysis using the Wilcoxon statistical test showed that giving coconut water to the fitness level of teenage basketball athletes from SMA Negeri 3 Samarinda had a significant effect with a p-value of 0.011 (p <0.05). and giving watermelon juice had a significant effect on the fitness level of teenage basketball athletes from SMA Negeri 3 Samarinda with a p-value of 0.024 (p <0.05). The results of the bivariate analysis using the Mann Whitney statistical test showed that there was no difference in the fitness level of teenage basketball athletes from SMA Negeri 3 Samarinda in the coconut water treatment group and the watermelon juice treatment group with a p-value 0.607 (p>0.05).

Abstract

Muscle fatigue was very influential on the performance of athletes during training and competition. Muscle fatigue occured due to activities that require more energy in a short time. Bananas and dates contain carbohydrates and potassium are high enough to be used to provide energy quickly and store muscle glycogen reserves. This study aims to determine the impact of banana smoothies on the index of muscle fatigue in athletes. This study used Quasi-experimental design of pre-posttest control group design. The subjects were martial arts athletes SKOI Samarinda totaling 42 people. The treatment given was to give as much as of date banana smoothies as 200 ml 60 minutes before post-test testing. Measurement of muscle fatigue index using Test Running - based Anaerobic Sprint Test (RAST). Giving date banana smoothies significantly affected the muscle fatigue index of martial arts athletes SKOI Samarinda (p<0.05). The results of bivariate analysis using Mann - Whitney test showed that there was a significant difference in muscle fatigue index of martial arts athletes SKOI Samarinda between the water treatment group and the treatment group of date banana smoothies after treatment (p<0.05). Intervention of date banana smoothies proved to be effective in preventing muscle fatigue in martial arts athletes.

Abstract

Community-based interventions are necessary to reduce the number of children under five who experience weight faltering, underweight, and wasting in the Mesjid subdistrict of Samarinda City to prevent them from developing stunting. This activity aimed to train health cadres in Infant and Young Child Feeding (IYCF) and provide supplementary food based on local foods to children under five with nutritional problems. The activity was conducted in two stages: the first was IYCF training for cadres with a total of 63 participants, and the second was providing supplementary food to 28 target children. The activities were evaluated using knowledge questionnaires for the cadres and weight measurements after one week of supplementary feeding interventions and IYCF education for the children. The results of the community service showed an increase in cadre knowledge related to IYCF, with the majority previously in the poor category (60.3%) improving to a majority in the adequate category (65.1%) after the training. There was also an increase in the weight of children who received local food-based supplementary feeding, with the average weight increasing from 10.15 kg in the pretest to 10.54 kg in the posttest. This activity proved beneficial in improving the knowledge of cadres and the weight of children, and it is hoped that the subdistrict, health centers, and cadres will commit to being responsible for monitoring and evaluating the sustainability of the activities.

Abstract

Background: To ensure sufficient iron intake while addressing nausea in pregnant women, innovative food products utilizing local ingredients are needed. The health benefits of Moringa leaves, ginger, and dragon have been well-documented; however, there is limited research on the combined effects of these ingredients in functional food formulations specifically designed for pregnant women.Objectives: This study aims to develop a jelly candy formulation combining moringa leaves, ginger, and dragon fruit as an alternative source of iron and anti-nausea remedy for pregnant women.Methods: This research employs an experimental design with a Completely Randomized Design, using jelly candy formulations from combinations of moringa, ginger, and dragon fruit. The research was conducted at Organoleptic Laboratory Health Polytechnic of East Kalimantan and Politani Laboratory from July to Augustus 2024. The study involves one factor: variations in moringa powder concentration, which are 0.5% (F1), 1% (F2), and 1.5% (F3), with three replications. The jelly candy formulations were subjected to 33 untrained panelist to hedonic testing for color, taste, aroma, and texture, followed by chemical characteristic testing. Data analysis was performed using one way ANOVA and post hoc Duncan Multiple Range Test.Results: The study results indicate that the three formulations showed a significant difference only in texture attributes (p = 0,033), while color, taste, and aroma remained at comparable levels. The formulation with the most preferred taste, aroma, and texture was F3, with a taste score of 3,5, aroma score of 3,,3, and texture score of 3,8. Meanwhile, the most preferred color attribute was observed in F1, with a score of 3,9. A significant difference was found among the three formulations in terms of moisture content (p = 0,030), ash content (p = 0,010), sucrose content (p = 0,000), and iron (Fe) content (p = 0,002).Conclusion: The F3 jelly candy can be used as an alternative snack providing both iron supplementation and anti-nausea benefits for pregnant women. It can be consumed in addition to iron tablets or other multivitamin.

Abstract

Indonesian eating patterns have shifted to more fast food, which is high in fat and free radicals. Free radicals are unstable and highly reactive molecules and will react with surrounding molecules to obtain electron pairs. Angkak and kidney bean flour contain bioactive compounds such as alkaloids, phenols, terpenoids, triterpenoids, flavonoids, isoflavonoids, flobatananis, coumarins, and saponins that could act as antioxidants. Both food ingredients can be modified into functional instant drinks to increase their benefits in providing daily antioxidant intake. Instant powder drinks are one of the alternative ways to get the benefits of plants or food. They have a pharmacological effect health, as they are used or consumed more easily and practically. This study aimed to contribute to producing an instant functional drink high in bioactive compounds and antioxidants as an alternative functional food. The research design used was a single-factor Complete Randomized Design (CRD) with four treatments, each repeated 3 times, so that 12 experimental units were obtained. The treatment in the study of making instant powder drinks consisting of the ratio of angkak and kidney bean flour was P1 (50:50%), P2 (40:60%), P3 (30:70%), and P4 (20:80%). Phenol, flavonoid, and antioxidant activity values were highest successively in the F4 treatment of 31.895 mg/L, 47.800 mg/L, and 60.996 μg/ml. The results show that instant powder drinks of kidney bean flour and angkak are included in the strong category and can be used as functional drinks high in antioxidants.

Abstract

The research aims to determine the correlation between the knowledge and attitudes of female adolescents toward compliance with consuming iron supplements at the Junior High School of SMPN 01 Long Bagun. This research was quantitative design research with a cross-sectional approach with a sampling technique using proportionate stratified random sampling. In selecting samples for each class, simple random sampling was used. The number of samples in this study was 79 female students at SMPN 01 Long Bagun, using questionnaires and interviews. Bivariate results show no significant relationship was found between knowledge and compliance with consuming iron supplements with a p-value of 0.2560 with r 0.129; also, no significant relationship between attitude and compliance with consuming iron supplements with a value of 0.0280.05 with r = 0.248. It is suggested that schools be able to carry out activities for drinking iron supplements together at school so that female adolescents can be controlled at predetermined and scheduled times and that the Community Health Center can provide counseling to young women on an ongoing basis and supervise schools regarding the implementation of drinking iron supplements together, as well as making efforts to carry out hemoglobin checks for them at school

Abstract

Indonesia is still in a nutritional emergency. Undernutrition or overnutrition is a health problem that is often found in adolescence. Nutritional problems that occur are influenced by an imbalance between physical activity and macronutrient intake in adolescents. This study aims to determine the relationship between physical activity, energy intake, and protein intake with nutritional status in adolescent girls.  Observational study with a cross-sectional approach conducted in July – August 2023 at Junior High School 2 Long Bagun, Mahakam Ulu Regency, East Kalimantan. A total of 42 adolescents were included as samples based on purposive sampling by setting inclusion and exclusion criteria. Physical activity variables were measured in the International Physical Activity Questioner (IPAQ) while energy and protein intake were obtained through a 24-hour food recall form. The BMI / U formula measures nutritional status-data analysis using the Spearman Rank correlation test. Our findings show the majority of adolescents with moderate physical activity (76.2%), adequate energy intake (66.7%), and adequate protein intake (66.6%). The results of the relationship analysis showed physical activity (p = 0.001, r = 0.512), energy intake (p = 0.001, r = 0.503), protein intake (p = 0.002, r = 0.459) with the nutritional status of adolescents at Junior High School 2 Long Bagun. There is a significant relationship between physical activity, energy intake, and protein intake with the nutritional status of adolescents at Junior High School 2 Long Bagun. These findings are empirical evidence for the formation of better adolescent health programs

Abstract

The aim of this research is to analyze the effectiveness of educational media on knowledge, eating patterns, and compliance with the Iron supplement consumption in anemic teenagers at Senior High School, SMKN 15 Samarinda. The type of research used was quasi-experimental, and the research design used a pre-test and post-test with a control group research design. The population was all 621 female students, and 72 people were screened; then, the sample was obtained from about 30 respondents by hemoglobins quick check. The sample was determined as 15 people for the flipchart media group with leaflets and 15 people for the leaflet media group. Data were analyzed using univariate and bivariate analysis. The results of the research were that anemic teenagers consisted of teenagers aged 12-16 years with a percentage of 73.3%. Educational media influenced knowledge (p 0.008) and compliance with iron supplement consumption (p 0.028) of anemic adolescents. There was no effect of educational media on the diet of anemic adolescents as sources of animal protein (p 0.217), vitamin C (p 0.217), and Fe inhibitors (p 0.217). This study concludes that education using flipcharts and leaflets has an effect on increasing knowledge and consumption of iron supplement tablets

Abstract

This study aims to know the effectiveness of leaflets and video educational media in the knowledge of type 2 diabetes mellitus patients in the inpatient room of RSUD Beriman Balikpapan. The methodology used is a quasi-experimental study with a pretest and posttest research design with control group. The intervention group used video media and the control group used leaflet media. The results obtained were that the average patient knowledge increased in the experimental group, which was 50.90, ± 8,228 SD before the intervention, increasing to 81.37, ± 9,615 SD after the intervention. In the control group, the mean knowledge of patients before the intervention was 55.75, ± 7,036 SD, increasing after the intervention to 84.18, ± 9,895 SD. The P-Value value is 0.000 < 0.05 from the results of the analysis of the difference in knowledge between the experimental group and the control group after the intervention shows that there is a significant difference between the two; so that H0 is rejected and Ha is accepted. This means that nutritional counseling using video and leaflet media can increase knowledge about Diabetes Mellitus and video media is more effective than leaflet media. The providing nutritional counseling using video media was more effective than using leaflet media in increasing the knowledge of Diabetes Mellitus patients in the inpatient ward of the Beriman Balikpapan Regional Hospital.
