Abstract

The type of coffee processing has a direct impact on the microbial community it contains and the quality of the coffee it produces. Coffee processing with a wet process (wet) is known to produce coffee with a good aroma and taste profile. This study aims to determine the dynamics of the bacterial and yeast community during the postharvest process and to determine the dominant microbes involved in the processing of Robusta coffee using a wet process. The method used was the isolation of bacteria and yeast using selective medium with the addition of antibiotics, then morphological identification and calculation of the index of diversity (H), dominance (D) and evenness (E) were carried out based on the bacterial and yeast isolates obtained, as well as screening of dominant isolates based on results of dominance analysis and enzymatic activity. The isolation results obtained by the yeast community (51.7%) with a higher number than the bacterial community (48.3%). The microbial community in the wet processing of Robusta coffee had a species diversity index (H') = 2.48, evenness (E) = 0.74 and dominance (D) = 0.17. The results of isolates screening through enzymatic tests showed bacterial isolates B10 and yeast Y2 were selected as dominant isolates and could be used as starter cultures in a controlled fermentation process.

Abstract

Hotong (Setaria italica (L.) P. Beauv) is a type of food plant that is used by the people of Buru Island, Maluku. The hotong is a plant whose contents are similar to the rice plant. Hotong seeds have quite high nutritional content, namely containing 11.18% protein, 2.36% fat, 73.36% carbohydrates, 11.78% water, and 1.32% ash. The energy produced per 100 grams of hotong seeds is 359 calories. Hotong plants can be used as an alternative commodity in a carbohydrate-produced food diversification program. Various local carbohydrate source commodities can be produced into flour to substitute wheat needs, save the country's foreign exchange and increase food security. Based on the availability of raw materials and prices, hotong has the most potential to be processed into flour. Hotong research results are the most numerous among carbohydrate source commodities. Until now, the name has not been able to be utilized by the public, compared to rice and wheat. This is one consideration that hotong flour can improve the image and interest of users. Hotong flour, with various technological variants, can be used for various flour-based food products, but nationally the real impact on reducing wheat consumption is still not significant. Therefore, it is necessary to discuss the prospects and potential for its use in the food industry.

Abstract

Backgraound: Medicinal plants are the biodiversity that exists around us, both those that grow wild and those that are deliberately cultivated. For generations, plants have been used as medicinal plants. The largest part of medicinal raw materials derived from plants is still not cultivated, while opportunities for agribusiness have the potential to increase the opportunities and possibilities open for medicinal products. Methods: The aim of the research is to find out the types of medicinal plants and find out how the community perceives the benefits of medicinal plants in the village of Negeri Lima. Maluku. The material used in this research is a questionnaire or questionnaire. The research uses the Guttman scale by distributing questionnaires to respondents which are used to find scores, percent scores, total scores, and percent ideal scores, the results of which are converted into score interpretation criteria. Results: The research results showed that the criteria distributed to respondents were very good with the highest total score being 90% and the lowest being 10%. Conclusion: As a result of the identification carried out, 20 types of medicinal plants were identified which were spread across Negeri Lima Village, Central Maluku. Analysis of questionnaires distributed to the public to measure public perceptions by distributing questionnaires used the Guttman scale from question no. 1 - 5, it is known that the highest percentage is 90% and the lowest percentage is 10%. Meanwhile, the results of the analysis of attitude question items to measure public perception from question no. 6 - 10 has the highest percentage, namely 80% and the lowest percentage, namely 20%.

Abstract

The community service activity with the title "Knowing the Other Side of Mayang Tree for Human Life" is a form of concern for academics in the field of Biology for the spread of society and the development of home industry products that have an impact on improving the health and economy of the community. The transfer of information in the form of processing techniques, ways of utilisation, manufacturing procedures, and marketing techniques is carried out to educate the community in order to increase knowledge about the products and its biological processes. Scientifically, in the procedure of utilisation and processing of palm fruit (mayang), there are many science studies found in everyday life. In addition, indirectly, community students as recipients of information can apply it and become home industry producers. This is very helpful for the community in the utilisation of local wisdom in the area considering kolang kaling is a by-product of palm fruit (mayang) processing.

Abstract

Alang Asaode Village is one of the villages in West Seram Regency that has a large mangrove forest. Sonneratia caseolaris is one type of mangrove that has a fruit called pedada fruit. Pedada fruit has nutritional content that can be utilized into food products such as jam and syrup because of its high vitamin C content and can also be processed into antiseptic liquid soap. Community service activities in Alang Asaode village in the form of socialization of pedada fruit processing using the fermentation process into economically valuable products such as liquid soap to increase family income.
