Abstract

Rumah makan merupakan tempat usaha komersial yang ruang lingkup kegiatannya menyediakan makanan dan minuman untuk umum di tempat usahanya. Hal ini perlu didukung dengan pengolahan makanan yang higiene dan kondisi sanitasi yang baik. Tujuan. Penelitian ini bertujuan untuk mengetahui hubungan higiene dan sanitasi dasar rumah makan dengan kepadatan lalat yang ditemukan pada rumah makan di Terminal Bus Pematangsiantar. Penelitian ini bersifat survei analitik dengan menggunakan pendekatan cross sectional study. Penelitian ini dilakukan dengan pengamatan langsung keadaan bangunan, fasilitas rumah makan, penerapan higiene penjamah makan dan sanitasi makan dengan menggunakan lembar observasi serta data yang diperoleh dari hasil pengukuran kepadatan lalat pada rumah makan. Hasil penelitian menunjukkan bahwa terdapat hubungan yang signifikan antara tingkat higiene dan sanitasi serta kepadatan lalat di rumah makan. Rumah makan dengan tingkat higiene dan sanitasi yang rendah cenderung memiliki kepadatan lalat yang lebih tinggi dibandingkan dengan rumah makan yang menjaga kebersihan dengan baik. Penetapan kebijakan dan prosedur yang ketat terkait kebersihan ruang makan, dapur, dan peralatan memasak, praktik kebersihan dan higiene dalam penyediaan makanan dapat menjadi tolak ukur keberhasilan rumah makan.

Abstract

Food consumption is one of the direct causes of nutritional status. The Ministry of National Development Planning in 2019 reported that almost half of the population or 45.7 percent of the population is very poor in energy allowances and 36.1 percent of the population is low in protein allowances. Meanwhile, the North Sumatra Provincial Health Office in 2019 presented the results of monitoring nutritional status which showed the three districts with the highest stunted of children under five, namely Gunung Sitoli, West Nias, and Samosir. The districts with the most underweight of children under five are West Nias, Central Tapanuli, and North Nias. The purpose of the study was to determine the relationship between food consumption and the nutritional status of children under five at Pasar Lahewa Village, Lahewa Sub-District, in North Nias District, which was selected purposively. This type of research is descriptive analytic, cross sectional design. The food consumption data of sixty children under five were collected using the 24-Hour Food Recall Method for three non-consecutive days, anthropometric nutritional status with Body Weight Index according to Height or Body Length. The results showed that the largest contribution of energy and protein samples came from rice, powdered milk, chicken, fish, eggs, tofu, tempeh, potatoes, noodles, and biscuits. Most of the samples were categorized as well consumption and normal nutritional status. The Chi-Square test produces a p-value of 0.003 (p<α (0.05) which means Ho is rejected so that it can be stated that there is a relationship between food consumption and the nutritional status of children under five at Pasar Lahewa Village, Lahewa District in North Nias District. The results are expected can be used by the leadership and staff of the Lahewa District Health Center to plan nutrition improvement programs. Similar research needs to be carried out in other villages within the working area of the Lahewa District Health Center, to obtain and enrich data in planning program to improve food consumption and nutritional status of children under five.

Abstract

Kajian Management Pengelolaan dampak Pabrik Es dan Cold Storage terhadap kesehatan masyarakat perlu dilakukan untuk memastikan bahwa operasi pabrik tidak membahayakan kesehatan masyarakat di sekitarnya. Penelitian ini bertujuan untuk menganalisis kualitas air di sekitar sungai dan tanah di rencana lokasi pabrik es dan cold storage Pesisir Selatan dan mempertimbangkan potensi dampaknya terhadap kesehatan manusia dan membuat kajian Management Pengelolaan Dampak Lingkungan Kegiatan Pabrik Es dan Cold Storage. Data dikumpulkan dari pengukuran 12 parameter kualitas air di sungai dan 9 parameter kualitas air tanah di lokasi rencana pabrik es dan cold storage. Hasil pengukuran menunjukkan bahwa semua parameter kualitas air di sungai dan tanah masih berada di bawah baku mutu yang ditetapkan oleh peraturan yang berlaku. Namun, perlu diingat bahwa pabrik es dan cold storage dapat berpotensi menimbulkan dampak negatif terhadap kesehatan masyarakat melalui limbah udara, limbah cair, dan limbah padat yang dihasilkan selama proses produksi. Oleh karena itu, perlu dilakukan pengawasan dan pengendalian secara ketat terhadap limbah yang dihasilkan oleh pabrik agar tidak menimbulkan dampak negatif terhadap kesehatan masyarakat. Dalam hal ini, peran pemerintah dan masyarakat sangat penting dalam memastikan bahwa pabrik es dan cold storage beroperasi dengan mematuhi standar kualitas lingkungan yang berlaku dan meminimalkan dampak negatif terhadap kesehatan manusia.

Abstract

Dengue fever cases in Indonesia, with a total of 71,633 cases as of July 2020, where Medan City experienced a 20% increase in cases in 2020. The main vector of dengue fever is Ae. Aegypti, usually prefers to suck human blood rather than animals (arthrophilic) and is usually active during the day. One way to control Ae. Aegypti mosquitoes is to break the mosquito life cycle by using insecticides. Reports from the Medan City Health Office and several studies have found an increase in cases due to the resistance of Ae. Aegypti mosquitoes to chemical insecticides. This resistance prevents mosquitoes from dying but has an impact on public health. People tend to use insecticides with the active ingredient Cypermethrin, which if used for a long time can cause problems with the upper respiratory tract, skin and eye irritation. Therefore, natural insecticides are needed that are relatively safe for humans and environmentally friendly, such as bay leaf juice (Syzygium Polyanthum) and Lavender Leaf Juice (Lavandula Angustifolia). The purpose of this study was to obtain a natural insecticide formula that can be found in the community environment and can be used by the community because it is cheap, easy and efficient and does not interfere with public health. This type of research is experimental, with the design of The Post Test Only Controlled Group Design. The population in this study was Ae. Aegypti mosquitoes located in the Jalan Durung area of ​​Medan City. The sample in this study was 20 adult Ae. Aegypti mosquitoes in each of the 3 treatments and 2 controls, namely negative control (Aquades) and positive control (Cypermethrin) totaling ± 640. The results of the study that have been obtained are that there is a statistically significant effect on the number of mosquitoes that died between the Bay Leaf Juice (Syzygium Polyanthum) group and the Lavender Leaf Juice (Lavandula Angustifolia) group. Abstract

Stunting adalah salah satu masalah gizi yang berkaitan dengan masa pertumbuhan anak. Stunting disebabkan oleh asupan gizi yang tidak mencukupi dalam waktu yang lama sehingga mengalami tinggi badan yang tidak sesuai (kerdil) dengan umurnya. Tujuan dari penelitian ini adalah untuk melihat hubungan karakteristik ibu dan pemberian makanan pendamping ASI terhadap kejadian stunting. Metode penelitian ini menggunakan metode cross sectional dalam melakukan wawancara, observasi, dan pengisian kuesioner. Data dianalisis dengan menggunakan aplikasi SPSS dengan uji α=5% chi-square dan populasi dalam penelitian ini adalah 59 ibu yang memiliki bayi di bawah usia dua tahun. Ukuran sampel adalah 59 ibu. Hasilnya, ditemukan bahwa terdapat hubungan yang signifikan antara makanan pendamping ASI dengan kejadian stunting (p=0,005), hubungan antara tingkat pendidikan ibu dengan kejadian Stunting (p=0,167), hubungan antara pekerjaan ibu dengan kejadian stunting (p=0,948), usia ibu dan kejadian stunting (p=0,288).

Abstract

Hospital Occupational Health and Safety (OHS) encompasses a range of activities aimed at ensuring and protecting the safety and health of all hospital personnel, patients, patient companions, visitors, and the hospital environment. These efforts are undertaken through the prevention of workplace accidents and occupational diseases. This research aimed to analyse the relationship between nurses' behaviour and the implementation of Occupational Health and Safety (OHS) in the Emergency Department (ED) of Hospital X, Central Tapanuli, in 2025. This study employed a quantitative method with a cross-sectional design. A sample of 31 nurses participated in the research, and data were collected via questionnaires. The collected data were subsequently analysed using univariate and bivariate tests, specifically the Chi-Square test. The bivariate test results indicated a significant association between nurses' knowledge and the implementation of OHS in the ED (p-value = 0.002 < 0.05). Similarly, a significant association was found between nurses' attitudes and the implementation of OHS in the ED (p-value = 0.001 < 0.05). Based on these findings, it can be concluded that there is a relationship between the actions of nursing staff and the implementation of OHS in the ED of Hospital X, Central Tapanuli, in 2025. The implications of this research highlight the need for enhanced understanding and knowledge of OHS implementation among healthcare professionals in the ED of Hospital X, Central Tapanuli.

Abstract

Hasil perikanan Indonesia pada umumnya disajikan dalam dua bentuk, yaitu segar dan olahan. Penyajian ikan secara olahan meliputi olahan tradisional dan olahan modern. Kegiatan pengolahan ikan secara tradisional dapat dilakukan dengan cara pengeringan dan penggaraman. Limbah industri pengolahan produk ikan banyak mengandung bahan organik yang terlarut maupun yang tersuspensi. Banyaknya jumlah bahan organik ini dapat meningkatkan nilai COD, BOD, nitrogen, kadar lemak dan minyak pada air limbah perikanan. Banyaknya limbah dari pengolahan ikan yang mencapai ± 300 Kg per hari akan menimbulkan permasalahan berupa pencemaran lingkungan. Saat ini pengelolaan limbah ikan dari pengolahan ikan asin atau tawar hanya di buang dan di timbun sehingga menimbulkan bau kurang sedap dan dapat mengganggu kesehatan masyarakat sekitar, serta produksi ikan asin atau tawar menjadi kurang higienis. Prosedur Operasi Standar Sanitasi (SSOP) adalah sistem prosedur untuk menerapkan standar kebersihan yang diadopsi dalam unit pemrosesan seperti pabrik pengolahan makanan. Bisnis makanan di sektor makanan laut untuk mencegah kontaminasi silang pada produk olahan. Kesehatan lingkungan adalah keadaan lingkungan yang optimal yang berdampak positif terhadap kesehatan. Penelitian ini memakai desain penelitian cross-sectional yang menggabungkan analisis deskriptif dan kuantitatif. Subjek penelitian berjumlah 120 orang. Sampel penelitian terdiri dari 92 partisipan yang menggunakan pengambilan sampel acak sederhana. Variabel penelitian ini yaitu pengetahuan, sikap, perilaku, dan SSOP. Data dikumpulkan menggunakan kuesioner dan dianalisis memakai metode univariat dan bivariat. Berdasarkan uji chi-square, variabel tindakan (p-value = 0.024), variabel sanitasi lingkungan (p-value = 0.003). Penelitian ini memperoleh simpulan yaitu ada hubungan signifikan antara tindakan dan sanitasi lingkungan dengan industri ikan di Kota Sibolga.

Abstract

Pada penelitian ini bertujuan meneliti pengalaman hidup ibu dalam merawat anak stunting merupakan penyakit kronis tidak menular tetapi berlangsung dalam waktu lama menghambat tumbuh kembang anak. jenis penelitian kualitatif dan menggunakan metode pendekatan fenomenologi pada Informan berjumlah 5 orang diperoleh hasil wawancara langsung diwilayah kerja Puskesmas terjun Medan Marelan. Terdapat 3 tema utama yaitu pertama pengalaman ibu merawat anak stunting Kedua kesadaran keadaan karakteristik anak stunting ketiga kesadaran kebutuhan kesehatan lingkungan. Hasil penelitian ini diketahui memiliki kesamaan pada ciri anak Stunting pertumbuhan tinggi badan anak lambat, berat badan anak tidak naik seiring bertambahnya usia anak saat balita juga lebih kurus, anak stunting kurang nafsu makan dan kurang cepat dalam berpikir. Pada anak stunting dengan riwayat penyakit bawaan seperti taksemia maka hal ini menganggu penyerapan nutrisi perkembangan dan pertumbuhan anak. Dan permasalahan juga muncul pada lingkungan tempat tinggal yang rutin terjadi air pasang menimbulkan kesadaran akan kebutuhan air bersih dan sanitasi lingkungan karna berdampak penyakit berulang pada anak. Saran, Ibu yang memiliki anak Stunting diharapkan berperan aktif dalam aspek kesehatan melalui layanan dari beberapa program puskesmas untuk anak stunting, menerapkan pola hidup sehat serta menjaga sanitasi lingkungan untuk mencegah resiko stunting pada anak berikutnya.

Abstract

Food safety is a crucial aspect of public health, aiming to prevent diseases resulting from the consumption of contaminated food or beverages. This study employed a quantitative research design with an analytical observational approach. The analytical observational method was used to determine the relationship between two independent variables—kitchen utensils and food handler hygiene—and the dependent variable, the microbial count in jumbo iced tea beverages sold along Ayahanda Street, Medan. The quantitative approach was chosen for its ability to measure data numerically and statistically analyze the relationships among variables. Data collection was conducted through direct observation using standardized assessment sheets. The kitchen utensil variable included evaluation of the cleanliness of plastic cups, straws, cool boxes, and cup sealer machines; washing procedures; equipment storage; cleaning methods for stainless steel, glass, and food-grade plastic tools; as well as cleaning frequency. The food handler hygiene variable was assessed based on hand hygiene before and after beverage preparation, nail cleanliness, cleanliness of clothing and aprons during work, and the use of personal protective equipment such as masks and gloves. Microbiological testing involved determining the Total Plate Count (TPC) and comparing the results with established safety standards. Observational and laboratory data were processed and analyzed statistically using the Chi-Square test with a 5% significance level (α = 0.05) to evaluate the effect of kitchen utensil conditions and food handler hygiene on microbial counts. The results showed that the majority of jumbo iced tea samples contained microbial levels within safe limits. Of the 30 samples tested, only 4 samples (13.3%) contained detectable microbes, while 26 samples (86.7%) showed no microbial growth based on the Total Plate Count method. There was no significant association between kitchen utensil cleanliness and microbial counts in jumbo iced tea sold on Ayahanda Street, Medan (p-value = 0.507). However, a significant relationship was found between food handler hygiene and microbial counts in the same products (p-value = 0.024).
