Abstract

Beneng taro is an indigenous tuber that grows in Pandeglang, Banten. People of Pandeglang only use it in form of fried and steamed. The weakness of beneng taro is the oxalate content is very high, to reduce it, people of Pandeglang soak it in 1% salt solution for 1 hour. Another effort to utilize beneng taro that has been done is to process it into flour. Beneng taro contains functional compounds including carotenoid pigments and dietary fiber. The use of  beneng taro in food can increase product functionality and as a form of food diversification. The purpose of this study was to evaluate the effect of adding beneng taro flour to muffins on the physical and sensory characteristics. This study used a completely randomized design (CRD) with one factor, namely the concentration of substituted beneng taro flour (0%, 15%, 20%, 25%, and 30%). This research was carried out in two duplicates. The result of this research are the increase of beneng taro flour substitution in muffins decrease the expansion ratio, water content, lightness (L*) of the crust and crumb, a* chromaticity of the crust, b* chromaticity of the crust and crumb, hue (oh) of the crust and crumb, and sensory acceptance. However, The increase of beneng taro flour substitution increased density of dough, density of muffin, and a* chromaticity of the crumb. Based on the results of sensory analysis, the muffin formula substituted with 15% beneng taro flour was the best formula because it was close to the control muffin.

Abstract

Persentase penduduk lanjut usia (lansia) terus meningkat dari tahun ke tahun. Seiring bertambahnya usia, kesehatan lansia menurun dan lebih berisiko terkena penyakit degeneratif seperti diabetes, hipertensi, dan penyakit kardiovaskular. Selain itu, lansia juga mengalami perubahan fisiologis pada tubuhnya seperti fungsi sistem pencernaan dan sistem metabolisme tubuh yang semakin melambat. Kondisi ini membuat lansia memiliki kebutuhan asupan nutrisi berbeda-beda yang harus disesuaikan dengan kondisi kesehatannya. Untuk memenuhi kebutuhan gizi seimbang pada lansia dan membatasi jumlah asupan kalori, lemak, garam dapat diperoleh dengan mengonsumsi makanan nabati salah satunya labu kuning. Labu kuning telah diteliti memiliki kandungan nutrisi, vitamin, mineral, antioksidan, dan serat makanan tingkat tinggi yang diketahui memberikan manfaat kesehatan. Namun sangat disayangkan, potensi dan manfaat labu kuning yang tinggi belum dimanfaatkan secara maksimal oleh masyarakat menjadi berbagai produk olahan pangan. Saat ini pengetahuan masyarakat masih terbatas pada pengolahan labu kuning secara sederhana seperti pembuatan kolak, pembuatan wajit, atau bahkan dikukus. Kegiatan pelatihan ini bertujuan untuk meningkatkan pengetahuan dan keterampilan masyarakat mengenai pengolahan labu kuning menjadi berbagai produk olahan pangan yang baik dikonsumsi oleh lansia. Pelatihan ini diberikan kepada 13 kader yang memiliki rentang usia 40-58 tahun dengan pendidikan terakhir SMA-S1 dengan pengalaman lebih dari 3 tahun bekerja di Posbindu, Kelurahan Pondok Benda, Kecamatan Pamulang, Kota Tangsel pada bulan Maret. 2022. Pelatihan ini dibagi menjadi tiga sesi. Kegiatannya yaitu pengisian pre-test, praktek pembuatan aneka produk olahan pangan, dan pengisian post-test. Capaian pelatihan ini diukur dengan menggunakan pendekatan analisis kuantitatif melalui desain One-Group Pre-test Post-test yang dianalisis menggunakan uji normalitas Komlogorov-Smirnov dan Shaporo Wilk, kemudian dianalisis menggunakan uji Wilcoxon. Hasil analisis menunjukkan terdapat perbedaan yang signifikan pada pengetahuan dan keterampilan peserta sebelum dan sesudah pelatihan, dibuktikan dengan persentase peserta yang menjawab benar pada angket pre-test sebesar 43,85% dan meningkat menjadi 97,69%. pada angket post test dengan nilai signifikansi p = 0,000. (p<0,005).   The percentage of the elderly population (elderly) continues to increase from year to year. With age, the elderly decline in health and are more at risk for degenerative diseases such as diabetes, hypertension, and cardiovascular disease. In addition, the elderly also has physiological changes in the body such as the function of the digestive system and the body's metabolic system which is increasingly slowing down. This condition makes the elderly have different nutritional intake needs that must be adapted to their health conditions. To meet the balanced nutritional needs of the elderly and limit the amount of calorie, fat, salt intake, it can be obtained by consuming plant foods, one of which is pumpkin. Pumpkin has been studied to have high levels of nutrients, vitamins, minerals, antioxidants, and dietary fiber which are known to provide health benefits. However, it is very unfortunate, the high potential and benefits of pumpkin have not been used optimally by the community into a variety of processed food products. Currently, public knowledge is still limited to simple pumpkin processing, such as making compote, making “wajit” or even steaming it. This training activity aims to improve the knowledge and skills of the community regarding the processing of pumpkin into a variety of processed food products that are good for consumption by the elderly. This training was given to 13 cadres who have an age range of 40-58 years with the latest education being SMA-S1 with more than 3 years of experience working at Posbindu, Pondok Benda sub-district, Pamulang District, South Tangerang City in March 2022. This training was divided into three sessions. activities, namely filling out the pre-test, the practice of making various processed food products, and filling out the post-test. The achievement of this training was measured using a quantitative analysis approach through the One-Group Pre-test Post-test design which was analyzed using normality test Komlogorov-Smirnov and Shaporo Wilk, then analyzed using the Wilcoxon test. The results of the analysis showed that there was a significant difference in the knowledge and skills of the participants before and after the training, as evidenced by the percentage of participants who answered correctly on the pre-test questionnaire of 43.85% and increased to 97.69% on the post-test questionnaire with a significance value of p = 0.000. (p<0.005).

Abstract

Identifying factors affecting students’ success is important. This is a study on creativity of biology students to solve their learning problem. The participants are biology students at Universitas Terbuka (UT), the only single mode distance learning university in Indonesia. conducting online tutorial in introductory biology. Descriptive and bivariate correlation statistics data are collected, including one dependent variable about improvement of problem-solving skill and six independent variables. The six independent variables are problem identification, information searching, idea generation, analogy, integrating different concepts, and idea testing. Demographic data are age, gender, and length of daily online activities. There are 73 students returned the survey with 23.4% response rate. Most students (more than 60%) agree to some extent in all the variables. There are different levels of agreement about the use of online tutorial regarding gender, age and length of daily online activities. There are only two out of six independent variables that have significant correlation (0.05 significance level, two-tailed) with improvement of problem-solving skill, which are analogy and idea testing. Abstract

Antioxidants are compounds that can capture free radicals. Green tea is an herbal beverage that contains antioxidants. Non-dairy creamer is an additive made from vegetable oil. Green tea can be made into powdered instant beverages with the addition of non-dairy creamer. This study aimed to determine the effect of the addition of green tea extract on organoleptic properties, acceptability, antioxidant content, nutritional content, and the results of the economic value of non-dairy creamer functional beverage products. The research design used was a complete randomized design (CRD) using three treatments, namely the addition of 0.8 g, 0.9 g, and 1.0 g of green tea extract, with three replications. Organoleptic test was conducted on each treatment to determine the best treatment in terms of taste, color, and aroma. Antioxidant activity test was also performed on each treatment. A proximate test was then conducted on the best treatment to determine the nutritional content. The results reveal that the addition of green tea extract has generated a significantly different effect on organoleptic properties and antioxidant activity in non-dairy creamer functional beverages. The best treatment was F1, namely the addition of 0.8 g green tea extract, which has generated results in the form of color 4.05, taste 5.67, aroma 4.15 on a scale of 1–7, then antioxidant activity of 4,973.53 ppm, water content 1.42%, ash content 1.35%, protein content 2.30%, fat content 2.13%, and carbohydrates 90.52%.

Abstract

Peanut sauce is a product made from peanuts with some seasonings and processed into paste form. Previous research results have showed that “cilok” (a traditional condiment made of tapioca starch) and the peanut sauce in Surakarta city are unfit for consumption. The addition of a few kinds of lime juice is expected to inhibit the growth of microbial pathogens in the sample. This study was conducted to determine the capability of lime extract to inhibit the growth of microbial contamination on peanut sauce from the 10 street vendors. Total Staphylococci, total coliform, total Salmonella-Shigella, total plate count (TPC), and total yeast were counted before and after the addition of lime extract. The results showed that the addition of kaffir lime gives the best results in inhibiting the growth of bacteria compared with the addition of key lime and lime. The results of TPC in the samples with the addition of kaffir lime after incubation of 4 hours was 3.5 × 104 CFU/mL. Kaffir lime gives the highest percentage of inhibiting TPC at 91.86%, yeast 40.51%, coliform 21.31%, Salmonella-Shigella 78.09%. The addition of key lime and lime gives the highest percentage of inhibiting the Staphylococci with each result 93.97% and 92.54%m respectively. The pH value of the peanut sauce with the addition of kaffir lime was 3.5, the titratable acidity was 0.31%, the RSA DPPH was 29.9 %, and total phenolic content 161.9 mg GAE/g sample. The lime extract either lime, key lime, or kaffir lime, has the potential to be added to peanut sauce as a natural antimicrobial agent. Keywords: Lime juice, microbiological contamination; peanut sauce ABSTRAK Saus kacang merupakan produk dari kacang tanah yang ditambah beberapa bumbu dan diolah menjadi bentuk pasta. Hasil penelitian sebelumnya menyebutkan bahwa cilok dan saus kacang yang beredar di kota Surakarta belum layak dikonsumsi. Penambahan air perasan beberapa jenis jeruk diharapkan mampu menghambat pertumbuhan mikroba pathogen pada saus kacang cilok. Penelitian ini dilakukan untuk menentukan jenis jeruk terbaik dalam menghambat pertumbuhan mikroba cemaran pada saus kacang dari 10 penjual cilok. Pengujian yang dilakukan yaitu menentukan jumlah mikrobia dari Staphylococcus, Koliform, Salmonella-Shigella, total plate count (TPC) dan total yeast sebelum dan sesudah penambahan air perasan jeruk. Hasil menunjukkan bahwa penambahan air perasan jeruk purut memberikan hasil terbaik dalam menghambat pertumbuhan bakteri dibandingkan dengan penambahan jeruk nipis dan jeruk limau. Hasil TPC pada sampel dengan penambahan jeruk purut setelah diinkubasi 4 jam adalah 3,5 × 104 CFU/mL. Saus kacang dengan penambahan jeruk purut menghasilkan persentasi tertinggi dalam menghambat TPC yaitu 91,86%, yeast 40,51%, Koliform 21,31%, Salmonella-Shigella 78,09%. Penambahan jeruk nipis dan jeruk limau menghasilkan prosentase tertinggi dalam menghambat Staphylococcus aureus yaitu 93,97% dan 92,54%. Hasil analisa kimia dari sampel saus kacang dengan penambahan air perasan jeruk purut yaitu nilai pH sebesar 3,5, total asam tertitrasi sebesar 0,3057%, aktivitas antioksidan sebesar 29,9 % dan total fenol sebesar 161,9 mg GAE/g sampel. Penambahan air perasan jeruk nipis, jeruk purut dan jeruk limau memiliki potensi ditambahkan dalam saus kacang sebagai senyawa antimikrobia alami. Abstract

Insufficient protein intake in children during the growth period is one of the causes of the increasing prevalence of stunting children in Indonesia. Fish has been researched to contain high levels of protein which is good for children's growth and development. In general, fish is only processed simply so it is not liked by children, whereas it can be processed into various processed products, such as nuggets. This community service aimed to determine the effect of providing fish nugget processing training on the knowledge of training participants. An increase in knowledge was measured using a one group pretest posttest design, which was then carried out with a real difference test to see the difference in the average pretest and posttest scores using the non-parametric Wilcoxon test. This training activity was given to 16 housewives and parents of Early Childhood Education School students in Situ Udik Village, Cibungbulang District, Bogor Regency with age characteristics ranging from 20-60 years and the latest education level was Elementary School-Senior High School. The results of this community service showed that providing training has a significant effect on increasing the knowledge of training participants in processing fish nuggets. The average pretest score of training participants (74.38%) showed a value that is significantly different from the average posttest score (95.63%) with significance value (Asymp. Sig.) 0.000. It is hoped that the results of this community service can be implemented by the community in producing fish-based nuggets for family consumption and sale to consumers.Keywords: Fish nuggets, food processing training, processed fish products, Situ Udik village, stunting.

Abstract

Cookies are preferred by many people of all ages but are poor in dietary fiber. Gembili (Dioscorea esculenta L.) is a high-fiber local food ingredient, which is quite abundant in Indonesia but has not been utilized optimally. The purpose of this study was to determine the effect of gembili flour substitution on dietary fiber contents and chemical and sensory characteristics of cookies. This study used a one factor completely randomized design with three treatment levels of gembili flour substitution (0%, 50%, and 100%), which were repeated three times. Gembili flour substitution significantly increased the ash content and dietary fiber but significantly decreased the sensory quality and protein content of cookies. Based on the sensory evaluation, cookies with 50% substitution of gembili flour were the selected product because these did not differ significantly from the control cookies (0% gembili flour) for all sensory attributes tested, except for aroma. Although the hedonic ratings of gembili flour cookies were still lower than those of the control cookies, they contained a higher content of dietary fiber. Therefore, gembili flour, which is high in dietary fiber content, can be used as a functional ingredient in cookies and in other bakery products. These findings are expected to provide new insights for research and bakery industries in developing high fiber cookies from local food sources.

Abstract

Cookie is a popular and well-liked food but is high in calories and low in fiber. Replacing sugar by artificial sweeteners in cookies is expected to reduce the calorific value of cookies. This study aimed to evaluate the effect of adding artificial sweeteners on the physical, sensory, microbiological characteristics, and functional benefits of cookies. A completely randomized design with sweeteners (stevia and erythritol) and concentrations (0.2%, 0.4%, and 0.5%) was used. The results showed that stevia and erythritol had significantly affected all test parameters, except in the mold/yeast parameters of cookies. The adding of stevia and erythritol significantly decreased L*, a*, b*, hedonic scores, caloric values, dietary fiber contents, total microbial values but significantly increased hardness and antioxidant capacities (IC50) of final cookies. All sensory ratings of the sucrose and formulated cookies were >3 points, which demonstrated that stevia and erythritol can be sugar replacers that can reduce calorie cookies. The findings can guide in the reformulation of low-calorie, high-fiber, and non-gluten cookies.

Abstract

Unpasteurized avocado juice is a popular food product, considered natural, fresh, and healthy. Microbial contamination in unpasteurized juice is high and can pose health risks to humans. Such processing technology is applied to reduce the level of contamination, such as pasteurization, adding preservatives, cooling/freezing temperature, or adding antimicrobial compounds. Honey has a high sugar content, low pH, contains hydrogen peroxide, and organic acid that can inhibit the growth of pathogenic bacteria. This research aims to determine the antibacterial activity of honey in avocado juice using different types of honey types including honey produced by Apis dorsata (AD), Apis mellifera from wildflowers (AMW), Trigona sp (TG) and A. mellifera from kapok (Ceiba pentandra) (AMC) flowers). The second factor was honey concentration (5, 10, and 15%). The results showed that after 2h of incubation, AD honey inhibited the total coliform bacteria by 98.84% at a concentration of 10%, AMW honey effectively inhibited total Staphylococci by 99.04% at a concentration of 15%, and TG honey successfully inhibited total Salmonella-Shigella bacteria at a concentration of 15%. Therefore, using honey in avocado juice can inhibit the growth of pathogenic bacteria, although it has not reached the minimal limits of fruit juice quality standards. Further research is needed to determine the minimum inhibitory concentration of honey required to inhibit pathogenic bacteria in avocado juice.

Abstract

Bogor Regency has vast and diverse ecotourism potential. One ecotourism in the Bogor Regency area is Ciwaluh Village, Wates Jaya Village, Cigombong District, Bogor Regency. This village produces yellow pumpkins that need to be optimally processed to attract tourists. In improving the skills of ecotourism cadres, training is carried out to enhance skills in processing yellow pumpkins (Cucurbita moschata) into snacks. The methods used in this training were surveys, identification of snack characteristics, demonstrations, and snack processing practices. The training provided is to improve skills in processing yellow pumpkin into various snacks. Based on the results of the pretest and posttest before and after the training for ecotourism cadres in Ciwaluh Village, it was found that skills in processing types of snacks increased by 66.67%. The skill improvement in processing various yellow pumpkin snacks for cadres can still be improved, considering that the variety of yellow pumpkin snacks is still growing in line with the research of yellow pumpkin’s product still being carried out
