Abstract

Goat milk contains beneficial nutrients that supposedly improve the performance and health of athletes. The objective of this research was to discover the benefits of goat milk on anthropometric (weight, height, body mass index (BMI)), blood pressure (BP), leg muscle strength (LMS), and calcium in junior footballers. This research was a quasi-experimental design (one group pretest-posttest). Subjects: 22 football athletes, male, 12-16 years old, regular training, and healthy. The sampling technique was purposive sampling. The treatment was fresh goat's milk, a dose of 250 ml/day, given at 04.00-06.00 p.m, throughout 21 days. The subject examination includes measurements: weight, height, BMI, BP, LMS, and serum calcium using a weighing scale, microtoise, BMI formula, sphygmomanometer and stethoscope, leg dynamometer, and Cresol Phtalein Complex. Data were analyzed by paired sample t-test (p<0,05). Results, there were significant differences in weight (p= 0,000) and BMI (p= 0,033) before and after treatment. Conversely, there was a significant enhancement of LMS (p= 0,000), systolic (p= 0,005), without a diastolic increase (p= 0,143), significantly decreased hypocalcemia percentage (p= 0,001) after treatment. In conclusion, consumption of fresh goat milk regularly increased LMS, regulates diastolic within normal limits, as well as reduces weight, BMI, and percentage of hypocalcemia therefore it is highly recommended to consume 2-3 glasses of goats milk per day for junior footballers.

Abstract

Pletok beer is a spice drink originating from the Betawi tribe. Spices used in pletok brewing include ginger, cloves, lemongrass, cinnamon, secang.  This research aims to formulate Bir Pletok which produces high antioxidant activity and high acceptance from panelists. Bir Pletok formulated in the form of a variety sugar concentration, that is 4%, 8%, 12%. This research will be examined the antioxidant activity and the sensory analysis of Bir Pletok to find out the panelists’ acceptance of its color, smell, and taste. This research will be conducted at STIKes Mitra Keluarga with 30 panelists. This research uses the experimental Descriptive method. The independent variable in this research is the sugar concentration, while the dependent variable is the antioxidant activity. Measurement of the antioxidant activity will use the DPPH test and the hedonic (preference) test using questionnaires. The results showed that the combination treatment of the addition of sugar equal to 4% is the best results: Antioxidant Capacity 610,278 ppm and a panelist as well as the colors 3,83 (like), odor 3,86 (Like); and sense at 2,86 (Neutral). Overall, the Bir pletok had high antioxidant activity that is the potential to prevent non-communicable diseases. important factors in the pletok brewing process are heating time and temperature.

Abstract

An adolescent female athlete has a high risk of suffering iron deficiency. Low-quality diets reflect a lack of variety, adequacy, balance, and moderation, but these have not been associated with iron deficiency. This study aimed to analyze the relationship of diet quality with iron deficiency. Methods, the research was conducted at the Student Center for Education and Sports Training Central Java, the Salatiga athletic club, the Semarang State University athletic, and the swimming club. The subjects were 82 female athletes aged 13-21 years who were selected by purposive sampling. The variables of this study were diet quality and iron deficiency. The diet quality measured by assessing food consumption used the Semi-Quantitative Food Frequency Questionnaire and then the diet quality score calculated by Diet Quality Index-International. Iron deficiency measured based on serum ferritin level. The bivariate was analyzed by the Rank Spearman test. Results, as many as 17,1% of subjects suffering iron deficiency and 95,1% of subjects had low diet quality. Diet quality and its component; Variety, adequacy, moderation, and overall balance were associated with serum ferritin (p<0,05). Energy, protein, iron, fiber adequacy also related to serum ferritin, but vitamin C adequacy was not related to this. In conclusion, low-quality diets are associated with iron deficiency in female athletes.

Abstract

The Lack of intake of macro nutrients such as energy, protein, and micronutrients such as zinc, iron, calcium, and vitamin A, especially during the growth period will disrupt the growth process of a child which has an impact on stunting. The purpose of this study was to determine the characteristics of respondents and the relationship between macro and micro nutrient intake and stunting in elementary school (SD) children in Bengkulu City. The research design was cross-sectional with cluster sampling. The sample consisted of 82 elementary school children who were stunted in the Teluk Segara District, Bengkulu City. Data collection was carried out by interview and SQ-FFQ. Data processed in computerized. Data analysis using correlation test. The average energy intake was 783.5 kcal, protein 28.3 grams, carbohydrates 103.1 grams, calcium intake 198.1 mg, while the median value for fat intake was 36.7 grams, zinc 3.1 mg, iron 4 mg, and vitamins. A 201.6 mcg. All of these nutrient intakes are very low when compared to the recommended nutritional adequacy rate for school-age children. There is no relationship between macro and micro nutrient intake and stunting in elementary school children in Bengkulu City (p > 0,05). In conclusion, the intake of both micro and macro nutrients is still low in elementary school children and does not show an association with the incidence of stunting.

Abstract

The preconception period is the ideal time to optimize the health of women before becoming a mother. The prevalence of stunting is still above 25%, which will affect the next life cycle. The objective of this study was to assess the knowledge and attitudes of fathers through educational nutrition during preconceptions. It was designed as a quasi-experimental study. There were a total of 60 participants in the leaflet group and 60 participants in pocketbooks with incidental sampling technique. Education of first thousands of days of life which contain chronic energy deficiency (CED), anaemia, initiation of breastfeeding, exclusive breastfeeding, weaning food and stunting topics was given by officer of Religious Affairs Office for three days.  Data were collected using a structured questionnaire through interviews. Data analysis was used pair t-test, Wilcoxon and Mc Nemar test. Results, after getting education using pocketbook, increasing knowledge especially at CED and weaning food (p= 0,006), anaemia, early initiation of breastfeeding and stunting (p= 0,000), exclusive breastfeeding (p= 0,035). Increasing in attitudes significantly after using pocketbooks especially (p < 0,05) on CED, anaemia and initiation of breastfeeding, exclusive breastfeeding, and stunting topics. In conclusion, the increase in men's knowledge in the leaflet group, especially anaemia and initiation of breastfeeding while in the pocketbook group all of the topics increased significantly.

Abstract

Children who do not get exclusive breastfeeding will be at risk of deficiency of nutrients needed in the growth process. This study aims to analyze the relationship between stunting and exclusive breastfeeding. The research method uses a cross-sectional research design with quantitative research, presented by means of descriptive-analytic with the number of respondents as many as 41 people. Data regarding the child's height was obtained by measuring the child's height using a digital weight scale with an accuracy of 0,1 kg. Data regarding children's age is obtained by birth certificate records or family cards. Mothers’ knowledge about exclusive breastfeeding and its giving was obtained using interview techniques. Data analysis using univariate analysis was carried out on each variable resulting from the study in the form of frequency distribution and percentage of each variable. Bivariate analysis to analyze the relationship between variables using Chi-square with 95% CI. The results showed that knowledge (p= 0,633) and education (p= 0,840) had no effect on exclusive breastfeeding (p > 0,05). Meanwhile, exclusive breastfeeding did not affect the incidence of stunting (p= 0,797). In conclusion, education, knowledge and exclusive breastfeeding have no significant correlation with the incidence of stunting in children under five.

Abstract

The problem of overweight in adolescents is caused by multiplicity, including friendships and also the amount of pocket money which will affect the pattern of daily food consumption. The purpose of this study was to analyze the relationship peer group support, pocket money, and food consumption patterns with overweight. This research is observational with a cross-sectional approach. The sample was selected by 50 respondents with stratified random sampling technique, this study was conduction in 2020. Data collected by interviews for respondent characteristics, peer group support, pocket money, and food consumption patterns using the Food Frequency Questionnaire (FFQ). Data analysis using  Chi-Square Test. The results showed that there was a significant relationship between peer group support and overweight (p= 0,048), There is a significant relationship between pocket money and overnutrition (p= 0,001) and there is a significant relationship between food consumption patterns with overnutrition (p= 0,000). The results of the study indicated that there was a relationship between peer group support, pocket money, and food consumption patterns with overweight. From these results, it is hoped that adolescents will be able to minimize the influence of their peers and be able to allocate pocket money to consume nutritious daily food.

Abstract

Maintaining food quality can be done by supervising portion standards. One of the important components in food management is the quality of human resources. The research objective was to determine the accuracy of serving dishes in terms of the characteristics of the serving staff. This observational study had a cross-sectional design. Collecting data in July 2019 at the Nutrition Installation of Dr. Tjitrowardojo Purworejo hospital. The research subjects were 14 people who were taken by a purposive sampling method. Subject characteristics consist of age, gender, level of education, and length of work. The accuracy of serving dishes was categorized into precise (±10% of standard serving) and imprecise (<10% or >10% of standard serving). The weighing method is used to determine the portion produced by the research subject. The research instrument is a digital food scale that has been calibrated at the BBKKP Calibration Laboratory with the number: 310/Labkal/V/2019. Data analysis used the Spearman Rank Correlation test. The results showed that most of the dishes were not done correctly (85,7%). Statistically, the characteristics of the serving staff do not show a correlation with the accuracy of serving dishes (p > 0,05). Concluded, there is no correlation between the characteristics of the proponents with the accuracy of the serving dishes in Dr. Tjitrowardojo Purworejo hospital.

Abstract

Anchovy Engraulis encrasicolus is a good prospect to be developed in the future, maybe it can be used for hyperlipidemia diet.  This study, therefore, aims to measure and assess the content of EPA (eikosapentaenoat acid)  and DHA (docosahexaenoic acid).from Anchovy Engraulis encrasicolus  oil extract. The samples were obtained from the city of Kendari in Southeast Sulawesi, Indonesia. It was processed and manufactured at the Halu Oleo University in Pharmacy Laboratory. Furthermore, the extraction process utilized the Soxhlet method, while measuring and analyzing the content of EPA and DHA using UV/Vis Spectropometric. It was found that 25 mg of Anchovy Engraulis encrasicolus oil produced DHA levels of 145,5 mg/g (14,5%) and EPA levels of 97,15 mg/g (7,71%). Anchovy Engraulis encrasicolus is a potential for functional food used to provide protection against diseases associated with metabolic disorders and diet hyperlipidemia.
