Abstract

Maintaining food quality can be done by supervising portion standards. One of the important components in food management is the quality of human resources. The research objective was to determine the accuracy of serving dishes in terms of the characteristics of the serving staff. This observational study had a cross-sectional design. Collecting data in July 2019 at the Nutrition Installation of Dr. Tjitrowardojo Purworejo hospital. The research subjects were 14 people who were taken by a purposive sampling method. Subject characteristics consist of age, gender, level of education, and length of work. The accuracy of serving dishes was categorized into precise (±10% of standard serving) and imprecise (<10% or >10% of standard serving). The weighing method is used to determine the portion produced by the research subject. The research instrument is a digital food scale that has been calibrated at the BBKKP Calibration Laboratory with the number: 310/Labkal/V/2019. Data analysis used the Spearman Rank Correlation test. The results showed that most of the dishes were not done correctly (85,7%). Statistically, the characteristics of the serving staff do not show a correlation with the accuracy of serving dishes (p > 0,05). Concluded, there is no correlation between the characteristics of the proponents with the accuracy of the serving dishes in Dr. Tjitrowardojo Purworejo hospital.

Abstract

Anchovy Engraulis encrasicolus is a good prospect to be developed in the future, maybe it can be used for hyperlipidemia diet.  This study, therefore, aims to measure and assess the content of EPA (eikosapentaenoat acid)  and DHA (docosahexaenoic acid).from Anchovy Engraulis encrasicolus  oil extract. The samples were obtained from the city of Kendari in Southeast Sulawesi, Indonesia. It was processed and manufactured at the Halu Oleo University in Pharmacy Laboratory. Furthermore, the extraction process utilized the Soxhlet method, while measuring and analyzing the content of EPA and DHA using UV/Vis Spectropometric. It was found that 25 mg of Anchovy Engraulis encrasicolus oil produced DHA levels of 145,5 mg/g (14,5%) and EPA levels of 97,15 mg/g (7,71%). Anchovy Engraulis encrasicolus is a potential for functional food used to provide protection against diseases associated with metabolic disorders and diet hyperlipidemia.

Abstract

The nutritional needs of preschool children are very important for their growth and development. However, the problem is the low consumption of preschool children for fruits and vegetables, so it requires special strategies, for that the role of the family is very important. This study aims to determine the impact of nutrition education and changes in mother's behavior towards the fulfillment of vegetable and fruit consumption strategies in pre-school children. This research uses quasi-experimental and observational methods, observations were carried out on 30 September 2019 on 44 preschool children. Data collection was carried out on September 20, 2019, in Early Childhood Education SB in 50 mothers of preschool children. The data is processed in stages; editing, coding, transferring and tabulating. Univariate data analysis in the form of frequency distribution tables, paired t-test statistical test. The results showed an average value of knowledge before the intervention (p= 0,000). Observation results show that after nutrition education was given, only 31,8% of preschool children were given vegetable and fruit supplies or processed food vegetables and fruits by the mother when going to school. The conclusion of the study is nutrition education on maternal strategies in increasing consumption of vegetables and fruit in preschool children in early childhood education effectively changing maternal knowledge but has not had a comprehensive impact on changes in mother’s behavior

Abstract

Walking can affect the muscles to stretch which can improve physical fitness for prevention in elderly women. Galoba contains flavonoids that have anti-oxidative properties and play a role in preventing damage to cells and their cellular components by reactive free radicals. The aim of the study was to determine the effectiveness of the physical exercise model walking by giving galoba juice on body fat composition and antioxidant status in women aged > 55 years. This study was a true experiment with a pre-posttest with a control group. Consecutive admission sampling technique, as many as 20 people. Data collection was carried out by observing mothers who did walking sports by giving galoba juice for 14 consecutive days with a walking time of 25 minutes. Statistical was using the Independent t-test. The results obtained that the average value of body fat composition after walking was 38,1% <after walking with galoba juice 42,2%, p= 0,372 (p > 0,05). The average value of total anti-oxidants after walking was 1,58 µg/mL <after walking with galoba juice was 1,59 µg/mL, p= 0,527 (p > 0,05). The conclusion is that there is no effect of walking physical exercise on body fat composition and there is no effect of the physical exercise model walking with the provision of galoba juice on total antioxidant levels.

Abstract

Dyslipidemia condition causes oxidative stress that triggers inflammation. Moringa leaves are rich in fiber and antioxidants that can prevent oxidative stress and reduce inflammation. This study aimed to see, measure, and analyze the effect of Moringa flour supplementation on IL-6 and LDL levels of dyslipidemic Sprague Dawley (SD) rats. The type of study was true-experiment with randomized pre-post. Test with control. Group design. Intervention for 28 days in 4 groups of SD rats (n= 24); a consisting group of healthy rats (K-), dyslipidemic rats (K+), dyslipidemic rats respectively given 0.1g/100g BW moringa flour (P1), and 0.2 g/100g BW moringa flour (P2). ELISA and CHOD-PAP methods measured IL-6 and LDL levels. Statistical analysis used Paired t-test, One-way Anova, and Post Hoc Bonferroni. The results showed a significant decrease in IL-6 and LDL levels in the intervention group compared to the non-intervention group (p= 0,000). The reduction of IL-6 levels in the P2 group was greater than that in the P1 group but not significant. The decrease. in LDL levels in the P2 group was significantly higher than in the P1 group. It is attributed to the fiber and antioxidant content in Moringa. Fiber that can bind cholesterol and bile acids, antioxidants can regulate fat metabolism, capture free radicals and prevent oxidative stress. In conclusion, Moringa flour supplementation improved lipid profiles and inflammation compared to rats with only standard and high-fat diets

Abstract

Women in Indonesia are a group at risk of experiencing high blood glucose levels with increasing age. The purpose of the study was to analyze the relationship between physical activity and central obesity on hyperglycemia in adult women. The type of research is quantitative with a cross-sectional design on adult women at the Telaga Biru Public Health Center, Gorontalo Regency in 2019. The sample size is 248 people using purposive sampling. The method of collecting physical activity data is measured using a Physical Activity Level (PAL) questionnaire, central obesity is measuring waist circumference, and current blood glucose levels for hyperglycemic status. The statistical test is the chi-square test with 95% CI. The results showed that physical activity included in the light category was very high at 91.1% and central obesity status was also high at 61,3%. The results of current blood glucose levels showed that respondents who experienced hyperglycemia were low at only 15,3%. Physical activity had no significant association with hyperglycemia (p= 0,142), central obesity had a significant association with hyperglycemia (p= 0,005). The conclusion is that central obesity has a significant relationship with the incidence of hyperglycemia in adult women with an OR value of 3,52

Abstract

Foodstuffs rich in lactogogum are very useful in increasing milk production, especially in postpartum mothers. This study studied the effect of a mixed drink of katuk leaves, papaya leaves, and green beans on increasing breast milk production and weight growth of baby mice. This type of research is an experimental RAL with four treatments and three repetitions on female mice of the DDY strain aged 2,5–3 months, a total of 32 mice with six mice each. Mice were divided into four groups, two treatment groups and two control groups. Its treatment for 12 days postpartum. Data analysis used ANOVA and continued with the Duncan test at a 5% confidence interval. The study results found that there was a significant difference in the average milk production of the mother mice in the four groups (p= 0,003); there was no difference in the average total weight gain of mice during the four groups (p= 0,187). In conclusion, giving a functional drink a mixture of katuk leaves, papaya leaves, and green beans has the same potential as commercial katuk leaf extract but has not increased breast milk production in mice. Suggestion, further research is needed to measure prolactin hormone levels and milk quality

Abstract

Cow's milk is the secretion of a cow that has perfect nutritional value but is easily damaged. Efforts to extend the shelf life of milk, milk is usually stored in a box freezer or by thermal pasteurization. However, this thermal processing can change the smell, taste, colour and reduce the nutritional content of milk, especially protein, which is a heat resistant substance. Alternative non-thermal technology that HPEF can apply. The method of this research was descriptive, describing the nutritional value of milk before and after had been HPEF Implementation. After non-thermal pasteurized cow's milk with HPEF, the nutritional value of cow's milk was better than fresh cow's milk. In unprocessed milk with HPEF, the fat content decreased by 3,77%. Protein content increased 0,15%, lactose 0,29%, and increased mineral content 0,05%. The TPC test on milk showed 6,91 x 102 cfu/ml. HPEF implementation can effectively reduce fat levels, increase protein, lactose levels, and increase mineral levels in milk. Non-thermal pasteurized cow's milk with HPEF can be immediately ready for consumption
