Abstract

Berdasarkan riset kesehatan dasar tahun 2010, prevalensi gizi kurang dan gizi buruk di Sumatera Barat adalah 20,2 %, sementara prevalensi gizi kurang di kota Padang 15,1 %. Dadih adalah salah satu makanan fungsional yang berasal dari Provinsi Sumatera Barat yang kaya akan zat gizi seperti : karbohidrat sebesar 3,34 %, protein 5,93 %, lemak 5,42 %, dan kadar air 84,35 %. Tujuan penelitian ini adalah mengahasilkan formula makanan PMT untuk anak Balita dengan penganekaragaman pangan dadih dari susu kerbau. Penelitian ini adalah penelitian eksperimen yaitu memanfaatkan dadih dari susu kerbau dengan campuran dari tepung gandum, tepung ubi jalar merah, tepung kedelai dan tepung gula. Rancangan penelitian ini menggunakan rancangan acak lengkap (RAL) terdiri dari 6 perlakuan dan 2 kali pengulangan. Pengamatan citarasa produk dengan uji organoleptik dan analisis data dengan menggunakan ANOVA dan dilanjutkan dengan uji DMNRT taraf 5 % Hasil yang diperoleh warna dan aroma cake yang banyak disukai panelis adalah penambahan 140 g dadih susu kerbau, sedangkan rasa dan tekstur adalah penambahan dadih 120 gr dan 160 gr. Cake yang terbaik yang paling disukai panelis adalah perlakuan F2 dengan penambahan dadih susu kerbau sebesar 120 gr. Kata kunci: diversifikasi, dadih , makanan formula

Abstract

Based on Data of Basic Research 2010, the prevalence of malnutrition and undenutrition in West Sumatera is 20,2%, While the prevalence of undernutrition for Padang City is 15,1%. Curd is one of functional foods to be there in West Sumatera which contains the adequate nutrition consisting of carbohydrate contents 3,34%, protein 5,93%, fat 5,42%, and level of water 84,35%. This aim for research is producted food formula to children under 5 years old with diversification of food raw in making functional formula from Curd of buffalo milk. This research is experiment by the diversivication of raw foods from Curd of buffalo milk with mixture of wheat flour, flour of red sweet potato, soya flour and sugar flour. This design of research is using Completely Randomized Design (CRD) consisting of 6 treatments and 2 repetitions. Observation is done for organoleptic test in cake to be made. Result of observation is analyzed by Analysis of Variance (Anova). And continued by Duncan Test/DNMRT at the level 5%.Color and aroma cake curd most preferred by the panelists was the addition of 140 g of buffalo milk curd while adding flavor and texture of the curd 120 gr addition of curd 160 gr.The best treatment in curd cake which is the most preferred by the panelist is in the F2 Treatment with the addition of curd of 120 gr buffalo milk.

Infancy (0-12 months) is the most important period in human development. This is due in this period of brain development and intelligence that will affect adulthood (Winarno, 1990). Developmental disorder is a condition in which the child is not able to achieve the developmental tasks at the expected time. Disorder can occur in many areas of development, for example in motorik, language, social, or think. Based on the UNICEF conceptual framework, there are direct and indirect factors that affect child development (Myers 1990; and 1997 in Hartoyo Hadad et al. 2000).This study aims to determine the relationship of nutrition knowledge of mothers with levels of motorik and mental development of stunted children aged 6 to 12 months in Tanah Datar regency. This study uses a quantitative approach with cross sectional design and qualitative approaches. The samples were stunted children aged 6-12 months as many as 89 people. Sampling was carried out with Multistage Random Sampling technique. Data analysis was performed with a statistical test and Chi square test. The results quantitatively demonstrate an association with maternal nutrition knowledge of motorik and mental development of stunted children with p value 0.02. It is recommended to improve the coordination between the programs in health centers (posyandu), so that health problems, especially problems of child development can be satisfactorily resolved. Besides cross-sector participation as kenagarian, PKK and related agencies in the revitalization posyandu further enhanced, so that posyandu as one of community empowerment efforts can work well. Key words :motorik and mental development of stunted children Abstrak. Hubungan Pengetahuan Ibu dengan Pengembangan Mental dan Motorik Anak Usia 6-12 Bulan Kabupaten Tanah Datar Provinsi Sumatra Barat.Anak usia(0-12 bulan) adalah periode yang palingpenting dalampembangunan manusia. Abstract

Calcium deficiency in the body is caused by calcium that has not optimal absorption by the body, resulting in the occurrence of calcium defesiensi. Calcium can not be absorbed maximally by the body when in large molecular form, so the calcium is finally wasted. Therefore, it is necessary to form nano-size so that the calcium can be absorbed by the bones well. The purpose of this research is to see the effect of Milling time with Nano size particles of Kelor powder (Moringa oleifera) and the correlations with Invitro and Invivo bioavailability. The research method is to use the research draft of laboratory experiments, with the sample of the Kelor leaves in powder form, and nanoparticles will be carried out the proximate analysis, nutrient analysis, solubility test, and bioavailability test. The results showed there was a long influence of milling time with nanoparticle size. There is a difference in moisture content, ash, energy, fiber, and total sugar between the leaves of the powder and nano Kelor (p<0,05). There are significant differences in the content of vitamin A, vitamin C, and vitamin K between the form of powder and nano leaf particles (p<0,05). There are significant differences in the levels of calcium, magnesium, phosphorus, potassium, and sodium between the size of the powder to the nano leaf-size particles (p<0,05). The recommendation of consuming nanoparticles kelor flour can be used as a source of food ingredients to increase bone growth and bone density

Abstract

The nutritional needs of preschool children are very important for their growth and development. However, the problem is the low consumption of preschool children for fruits and vegetables, so it requires special strategies, for that the role of the family is very important. This study aims to determine the impact of nutrition education and changes in mother's behavior towards the fulfillment of vegetable and fruit consumption strategies in pre-school children. This research uses quasi-experimental and observational methods, observations were carried out on 30 September 2019 on 44 preschool children. Data collection was carried out on September 20, 2019, in Early Childhood Education SB in 50 mothers of preschool children. The data is processed in stages; editing, coding, transferring and tabulating. Univariate data analysis in the form of frequency distribution tables, paired t-test statistical test. The results showed an average value of knowledge before the intervention (p= 0,000). Observation results show that after nutrition education was given, only 31,8% of preschool children were given vegetable and fruit supplies or processed food vegetables and fruits by the mother when going to school. The conclusion of the study is nutrition education on maternal strategies in increasing consumption of vegetables and fruit in preschool children in early childhood education effectively changing maternal knowledge but has not had a comprehensive impact on changes in mother’s behavior

Abstract

The problem of malnutrition in children under five years is not a new thing, but the problem is still actual . One of the alleviation program for malnurition problem is food supplementation. The biscuits are used as food supplementation in the community , is still a food manufacturer based flour and it hasn’t enriched yet by exploring the potential of local food that is rich in nutrients, such as fishery products. This research was aimed to see the effect of Bilih fish (Mystacoleucus padangensis) biscuits on nutritional status and morbidity of malnutrition children under five years in the region of Belimbing Health Centre, Padang city. The study is an experimental research with pre-post test one group design. Preliminary research was done to get the formula Bilih fish flour biscuits by using a completely randomized design (CRD) continued by acceptance with organoleptic test. The subjects of the research were children ages 2-5 years who where WAZ-scores ≤ -2 SD conducted purposively. The treatmen was given 5 times a week for 3 week. Data collected by antrophometry for nutritional status, interview for morbidity and 24 hour- recall for intake energy and nutritions. Data was analyzed in the continuous stages: data analysis to obtain the best functional biscuit formulation was obtained by ANOVA test with 95 % confidence level. The effect of Bilih fish biscuits on nutritional status and morbidity was analyzed by paired T-Test. It was found that the best biscuits formula from Bilih fish was formula F1 (Addition 10 gr of Bilih Fish flour, 500 kkal energy, 7,8 gr protein and 1,9 mg zinc). The average change of WAZ-scores was 0,2 SD after treatmen. There was a decline in the number of children under five suffering from diarrhea and acute respiratory infection after treatment. There was a difference of nutritional status, intake of energy and nutrients, suffering from acute respiratory infection before and after giving the biscuits from Bilih fish flour. There was no difference in suffering from diarrhea before and after treatmen. Giving the biscuits from bilih fish flour can increase WAZ-score. Further research conducted need to look at the acceptability and the efficacy of Bilih fish flour usage in the food processing techniques to improve the value of the food nutrition.

Abstract

Tujuan penelitian untuk mengetahui mutu Organolepatik dan Zat Gizi Snack Bar seperti : Beras Merah, Wortel, dan Tempe sebagai makanan jajanan tinggi serat. Jenis penelitian eksperimen menggunakan Rancangan Acak Lengkap (RAL) dengan 5 perlakuan dan 2 kali ulangan yaitu dengan Perlakuan Penambahan beras merah, wortel, dan tempe, yaitu : 50 gr : 62 gr, 50 gr : 50 gr, 62 gr : 50 gr, 60 gr : 72 gr, 60 gr : 60 gr, 72 gr : 60 gr. Pengamatan dilakukan secara subjektif dengan menggunakan uji Organoleptik terhadap warna, aroma, rasa, dan tekstur dari Snack Bar. Sedangkan pengamatan objektif dilakukan untuk melihat kandungan zat gizi Snack Bar, yaitu : Karbohidrat (Metode Luff Schoorl), Protein (Metode Kjeldahl), Lemak (Metode Soxhlet), Serat, Vitamin C, Fe, Kadar Air, dan Angka Lempeng Total (ALT). Analisis Data menggunakan uji Kruskal Wallis untuk melihat perbedaan antar perlakuan. Untuk mengetahui perbedaan antar perlakuan maka dilakukan uji lanjut dengan Uji Mann- Whitney. Hasil penelitian yakni hasil uji organoleptik berpengaruh tidak nyata terhadap warna, aroma, rasa, dan tekstur Snack Bar Beras Merah Kombinasi Wortel dan Tempe. Perlakuan Terbaik adalah F1 dengan Perbandingan Beras Merah dan Wortel 1,2 : 1. Disarankan untuk penelitian selanjutnya Diversifikasi Snack Bar dengan pangan fungsional lainnya.

Abstract

The purpose of this study was to determine the effect of counseling with group discussion methods using flipchart media on knowledge and attitudes about overweight and obesity in class IX students in junior high schools. Pre-experiment research design with the One Group Pre-Post Test method. The research was conducted from February 2019 to April 2020. The respondents of class IX students who were overweight and obese numbered 32 people, a simple random sampling technique. Data were collected by interview using a questionnaire. Data were analyzed using Wilcoxon test. The results of the study are, there are significant differences in the level of knowledge and attitudes of students between before and after counseling the value of p = 0,000 (p ≤ 0.05). It is hoped that other researchers will continue the extension research with group discussion using flipchart media. In addition, it is also hoped that there will be researchers who research extension with different methods and media that are more interesting to improve students' knowledge and attitudes.

Abstract

Noodles are foods that adults and children like, there are various types of noodles, one of which is wet noodles. Wet noodles are high in carbohydrates, but low in protein, so you need to add protein from other foods such as dried rebon shrimp . The purpose of the study was to determine the protein content and acceptability of wet noodles substituting dry rebon shrimp flour. This type of research is experimental research in the field of food technology with complete randomized design (RAL) one control, three treatments, two repetitions. Test protein levels in the laboratory Baristand Padang and receptivity Test at SDN 10 Surau Gadang. The study was conducted from March 2020 to April 2021. Organoleptic test results obtained the best treatment with a ratio of 75: 25 grams, 8.1% protein content with an increase of 3.5% protein, 80% target can spend product means wet noodles is acceptable. It is suggested that in the production process of wet noodles should use a substitution of dry rebon shrimp flour as much as 25 grams, and further research to test the shelf life and food safety.

ABSTRACTBackground: Hypertension as the Silent Killer because it is a deadly disease without any symptoms as a warning sign to its victims. Bukittinggi is ranked 4th with the highest hypertension prevalence rate in West Sumatra at 31.2% in 2018. Tigo Baleh Health Center is ranked as the first with the highest hypertension in Bukittinggi City. Non-pharmacological therapy management can be carried out in patients with hypertension sourced from local functional foods. Pumpkin is one of the local functional foods that has anti-hypertensive substances.Objectives: Hypertension is often referred to as the Silent Killer because it is a deadly disease without any symptoms as a warning sign to its victims. The purpose of this study was to determine the effect of giving pumpkin pudding on lowering blood pressure in patients with hypertension.Methods: This study used a Quasi Experiment Two Group Pretest-Postest design in the Tigo Baleh Health Center work area. The sampling technique was purposive sampling. Respondents in this study were 40 people who included the Treatment Group and the Control Group. Data analysis consisted of univariate analysis and bivariate analysis with the Dependent T-test to see the average differences of each experimental group also the Independent T-test to see the effect of changes in blood pressure after intervention from both experimental groups.Results The results showed an average blood pressure reduction of 20.35/8.05 mmHg in the treatment group and 3.30/4.35 mmHg in the control group. Also, there is a significant difference in mean blood pressure (p < 0.05) and there is a significant effect of blood pressure changes (p < 0.05) from both groups before and after hypertension.Conclusion: Pumpkin pudding is more effective in reducing blood pressure in patients with hypertension than pudding. Thus, it is recommended for the community to consume pumpkin pudding as a complementary therapy for lowering blood pressure.Keywords : Hypertension; Blood Pressure; Pumpkin Pudding ABSTRAKLatar belakang: Hipertensi termasuk penyakit yang mematikan tanpa disertai gejala yang terlebih dahulu sebagai tanda peringatan kepada korbannya. Bukittinggi termasuk urutan ke- 4 dengan angka prevalensi hipertensi tertinggi di Sumatera Barat yaitu 31,2% pada tahun 2018. Puskesmas Tigo Baleh menduduki peringkat pertama penderita hipertensi tertinggi di Kota Bukittinggi. Penatalaksanaan Terapi Non Farmakologi dapat dilakukan pada penderita hipertensi yang bersumber dari pangan fungsional lokal. Labu kuning merupakan salah satu pangan fungsional lokal yang memiliki zat anti hipertensi. Tujuan: Tujuan penelitian ini untuk mengetahui pengaruh pemberian puding labu kuning terhadap penurunan tekanan darah pada penderita hipertensi.Metode: Penelitian ini menggunakan desain Quasi Eksperimen Two Group Pretes-Postest di wilayah kerja Puskesmas Tigo Baleh. Teknik pengambilan sampel berupa Purposive Sampling. Responden dalam penelitian ini sebanyak 40 orang yang mencakup Kelompok Perlakuan dan Kelompok Kontrol. Analisis data terdiri dari analisis univariat dan analisis bivariat dengan uji T-test Dependent untuk melihat perbedaan rata – rata dalam masing – masing kelompok perlakuan dan kontrol serta uji T-test Indenpendent untuk melihat pengaruh perubahan tekanan darah setelah intervensi antara kelompok perlakuan dan kontrol.Hasil: Hasil penelitian menunjukkan rata- rata penurunan tekanan darah 20,35/8,05 mmHg pada kelompok perlakuan dan 3,30/4,35 mmHg pada kelompok kontrol. Serta, terdapat perbedaan rata-rata tekanan darah yang signifikan (p < 0,05) dan terdapat pengaruh perubahan tekanan darah yang signifikan (p < 0,05) dari kedua kelompok sebelum dan setelah intervensi. Simpulan: Puding labu kuning lebih efektif menurunkan tekanan darah pada penderita hipertensi dibandingkan puding. Sehingga, disarankan kepada masyarakat untuk mengonsumsi puding labu kuning sebagai terapi komplementer untuk penurunan tekanan darah.Kata Kunci : Hipertensi; Tekanan Darah; Puding Labu Kuning
