Journal Gizi dan Pangan Soedirman advances to publish scientific and authentic research articles with various topic regarding nutrition and food sciences. The relevants aspects to the topic are clinical nutrition, dietetics, public health nutrition, paediatrics and maternal nutrition, nutrigenomic and nutrigenetic, food science, food processing and technology, supplement and functional foods, food fortification, sport nutrition and physical activity, socio-culture, environmental and behaviour nutrition, nutrition and aging, nutrition education,food services and counselling. This journal has an official affiliation with Department of Nutrition Science, Faculty of Health Sciences, Universitas Jenderal Soedirman. Abstract

Food management in hospital where hygiene and sanitarian become basic principles in nutrition installation and support patients healing process. The research aims to determine the correlation between knowledge of food handlers and the behavior of food handlers in nutrition installation of RSUD dr. Soeselo Slawi. This quantitative research uses a cross sectional approach. The research subjects were food handlers in the Nutrition Installation of RSUD dr. Soeselo Slawi with total 23 people. The bivariate analysis used in the study was the Rank Spearman test. The results of the study indicate that knowledge of food handlers in RSUD dr. Soeselo Slawi appertain to good 60,9% and good hygiene behavior 39,1%. The age characteristics of food handlers are mostly 40-49 years old with total 11 people, female 19 people, majority education level of high school or SMK 14 people, and length of work >10 years 16 people. the results of the Spearman rank test, p value 0,510 was obtained. because p value >0,05;  then H0 accepted, meaning there are no correlation between knowledge with hygiene behavior of food handler in nutrition installation at RSUD dr. soeselo slawi. Abstract

ABSTRACT Background: Hemodialysis is a catabolic process (breakdown of complex compounds into simpler compounds) in which amino acid removal and protein synthesis depletion occurred. Objective: To investigate differences in nutritional intake of hemodialysis patients at RSUD dr. Doris Sylvanus Palangka Raya. Research Methodology: This research is an observational research with Pre-post design. Purposive sampling technique was employed on 13 PGK patients who undertake weekly hemodialysis at RSUD dr. Doris Sylvanus Palangka Raya. Data of protein, sodium, potassium and oral intakes were obtained by interview and 24-hour food recall for 2 consecutive days of pre and post hemodialysis. BM photo book was used during interview and food recall. Data were analyzed using paired t-test. Result of the study: Most of samples were female (92%), ranged at 46-67 years old, graduated from elementary school and not working. Bivariate test showed p value of protein, sodium, potassium and fluid intakes were 0.022, 0.382, 0.075 and 0.836, respectively. Hemodialysis aims to restrain uremia, excessive fluid and electrolyte imbalance that occur in end-stage renal failure patients. Hemodialysis may increase survival rate of patients as it is effectively removing fluids, electrolytes and metabolites. Conclusion: There was a significant difference in protein intake and insignificant differences in sodium, potassium and fluid intakes of pre and post hemodialysis patients at RSUD dr. Doris Sylvanus Palangka Raya.

Abstract

Guidelines for balanced nutrition began to be introduced and socialized more than 15 years ago. Guidelines for balanced nutrition apply to every stage of age including school-aged children. Education of balanced nutrition is still little given to school-aged children. According to some research is still a lot of prevalence of knowledge of balanced nutrition is lacking. In the study conducted Zulaekah (2012) showed that as many as 57.7% of primary school children have a lack of nutrition knowledge. This study aims to determine whether there is influence of nutrition education by using Comic media on knowledge of balanced nutrition. In this research use quasy experimental research design with time series design design. This research is done by using comic print media which contains about 4 messages of balanced nutrition, that is variation of food, the importance of clean life, the importance of active lifestyle and exercise, and the importance of monitoring the weight which is visualized in a tumpeng gizi seimbang (TGS). Statistical analysis of data using t-dependent test. The result of t-dependent test shows that there is an increase of average value of knowledge before and after giving comic 36,36. In this research, balanced comic nutrition media can increase the average knowledge of schoolchild by 34,36 or 72,15%.

Abstract

Ikan laut adalah sumber protein hewani yang penting dalam pertumbuhan fisik dan perkembangan mental pada anak sekolah. Tujuan umum dari penelitian ini adalah untuk mempelajari kebiasaan konsumsi ikan laut pada anak sekolah dasar di daerah pantai dan bukan pantai, tingkat kecukupan energi dan protein, status gizi, dan prestasi belajarnya. Penelitian dilakukan pada bulan Juni-Juli 2012 dengan desain cross sectional dan berlokasi di dua sekolah dasar yaitu SD Negeri 03 Kota Karang, Pulau Pasaran, Lampung, yang mewakili daerah pantai, dan SD Negeri Ciaruteun Ilir 01, Ciaruteun Ilir, Bogor, sebagai perwakilan dari daerah bukan pantai. Subyek dari penelitian adalah kelas 5 dari dua sekolah dasar, masing-masing berjumlah 27 siswa sehingga jumlah keseluruhan subyek adalah 54 siswa. Hasil penelitian menunjukkan terdapat perbedaan yang signifikan antara daerah pantai dan bukan pantai yang ditunjukkan dengan frekuensi dan jumlah konsumsi ikan laut di daerah pantai lebih tinggi dibanding daerah bukan pantai. Demikian pula dengan tingkat kecukupan energi dan protein.  Status gizi dan prestasi belajar di daerah pantai lebih baik dibanding daerah bukan pantai. Frekuensi konsumsi ikan laut berkorelasi dengan tingkat konsumsi energi dan protein. Tingkat kecukupan energi dan protein berkorelasi dengan status gizi IMT/U dan LILA. Tingkat kecukupan energi juga berkorelasi dengan prestasi belajar.

Abstract

This study aim to determine correlation between simple carbohydrates intake, dietary fiber intake, and excercise habbits on body mass index (BMI) of employee. This study used a cross-sectional method. As many as 63 peoples were selected as samples using purposive sampling method. Simple carbohydrate intake and fiber intake were measured using a 2x24 hour recall method, exercise habits were measured using exercise habits questionnaires. BMI was measured using digital scales and microtoise. The result showed an average simple carbohydrates intake 37.8  ± 33.3 g/day , dietary fiber intake 9.7 ± 4.1 g/day, excercise habbits 63.6 ± 77.7 minutes/week. The pearson correlation test showed insignificant relationship between simple carbohydrates intake, dietary fiber intake, and excercise habbits with BMI (p = 0.976, 0.871 and 0.454). Simple carbohydrates intake, dietary fiber intake, and excercise habbits did not relate with BMI head official employee Unsoed.

Abstract

Background: Iron deficiency anemia (IDA) is often suffered by pregnant women. Preventive action by giving iron tablet during pregnancy had been performed with unsatisfying result. Kelor leaves has micro nutrient substance that is needed by pregnant women. This study aims to develop additional food product such as mocaf (Modified cassava flour)-arrowroot biscuit that’s supplemented with kelor (Moringa Oleifera) leaves and chicken liver with high level iron and protein as well as sensory characteristics that can be accepted in pregnant women. Methodology: This study used Random Groups Design. There were two factors tested; they were, the proportion of mocaf : arrowroot (P), 80:20 (P1); 75:25 (P2); 70:30 (P3) and the comparison of kelor leaves : chicken liver (K), 50% addition to total flour, 25% : 25% (K1); 35% : 15% (K2). There were 6 treatment combinations repeated four times until 24 samples were obtained. Chemistry variable analysis used F-test (95%) and then continued with Duncan’s Multiple Range Test (DMRT) 5%, sensoric variable used Friedman Test and then continued with Double Compare Test 5%. The best treatment combination used Effectivity Index Test. Result: The best treatment combination was P3K1, in which biscuit had proportion of the composite of mocaf : arrowroot 70:30 and the comparison of kelor leaves : chicken liver 25%:25% with energy value 460.35 kkal/100g; water content 4.40% bb; gray value 1.76% bk; protein level 6.09% bk; fat content 17.71% bk; carbohidrat content by difference 74.43% bk and iron level 9.89 mg. Conclusion: Second trisemester pregnant women anemia could be given eleven biscuits and for third semester pregnant women anemia could be given sixteen biscuits in a day to fulfil the iron need. Abstract

Banana of Kapok, Ambon and Plantain are widely used by the community, but their peels have not been utilized. Vitamins and minerals from banana peels are very high, so it need to increase the nutritional value of their food. This study aimed to analyze the physical and chemical characteristics of banana peel flour produced from three different banana varieties namely Plantain, Kapok and Ambon banana. This study used a factorial experimental with a completely randomized design (CRD) design, with different treatments of banana peel and soaking time varieties. Analysis of yield, color, water content, gel strength and stickiness, kamba density, solubility, water holding capacity, oil absorption, swelling power, moisture content, ash, protein, fat, carbohydrate, pectin levels, were carried out on banana peel flour. The results showed that the highest water content contained in the Ambon banana peels; the highest levels of ash, fat, protein and carbohydrate are in plantain peels; the highest crude fiber content are in Ambon banana peel, and the average pectin level of the three types of banana peels was 1.08%. Different types of banana peels and soaking time had a significant effect on water content, fiber content and banana flour pectin content.

Abstract

Latar Belakang. Sindrom metabolik berhubungan dengan meningkatnya risiko penyakit kardiovaskular, diabetes melitus tipe 2 dan kematian muda. Informasi mengenai gizi, riwayat penyakit keluarga, dan jenis kelamin sering dikaitkan dengan kejadian sindrom metabolik. Tujuan Penelitian. Untuk mengetahui variabel-variabel yang berhubungan dengan sindrom metabolik di Yogyakarta. Metode. Penelitian case cantrol dilaksanakan pada bulan Agustus – September 2018 di Provinsi Daerah Istimewa Yogyakarta. Besar sample adalah 33 kasus dan 47 kontrol, yang dipilih dengan metode quota sampling  . Data di ambil dari Puskesmas di setiap Kecamatan terpilih di Kabupaten Bantul dan Kotamadya Yogyakarta. Hasil. Jenis kelamin dan riwayat adanya keluarga yang menderita penyakit degeneratif berhubungan signifikan dengan sindrom metabolik (p< 0,05). Wanita memiliki risiko 3,77 lebih tinggi untuk mengalami sindrom metabolik dibanding laki-laki. Individu dari kelurga dengan riwayat penyakit degeneratif memiliki risiko 3,75 kali lebih tinggi untuk mengalami sindrom metabolik. Kesimpulan. Jenis kelamin dan riwayat keluarga menderita penyakit degeneratif berhubungan dengan kejadian sindrom metabolik. Wanita dan individu dari keluarga dengan rimayat menderita penyakit degeneratif memiliki risiko lebih tinggi mengalami sindrom metabolik.

Abstract

Diabetes Melitus adalah salah satu penyakit metabolik yang ditandai dengan kelainan sekresi insulin atau dan kinerja insulin sehingga mengakibatkan kondisi hiperglikemik (American Diabetes Association, 2005) . Diabetes Melitus dapat mengakibatkan stroke, katarak, susah tidur, sakit jantung dan kaki diabetik. Universtias Pembangunan Nasional Veteran Jakarta merupakan salah satu perguruan tinggi yang berada di perbatasan Jakarta dan Depok khususnya Fakultas Ilmu Kesehatan berada di Kelurahan Desa Limo. Universtias Pembangunan Nasional Veteran Jakarta menjalankan fungsi Tri Dharma Perguruan Tinggi  yaitu pengabdian kepada masyarakat (PKM) untuk membantu menyelesaikan masalah yang terdapat di Desa Limo. Tujuan program kepada masyarakat (PKM) adalah untuk meningkatkan pengetahuan para kader Posbindu dan atau Posyandu mengenai Diabetes Melitus, diet yang tepat dan aktifitas fisik yang sesuai khususnya pada penderita Diabetes Melitus. Pada program kepada masyarakat (PKM) mahasiswa ikut serta dalam meningkatkan pengetahuan para kader kesehatan. Kegiatan program kepada masyarakat (PKM) berlangsung di Aula Kelurahan Desa Limo. Pada kegiatan program kepada masyarakat (PKM), kepala kelurahan, ibu PKK dan para kader mendukung program ini karena di Kelurahan Desa Limo masalah Diabetes Melitus merupakan masalah kesehatan yang meningkat angka kejadiannya. Peserta yang hadir yaitu: Kepala Kelurahan, Ibu PKK dan para ibu kader kesehatan. Kegiatan dilakukan selama dua hari berselang seminggu dalam bentuk penyuluhan dan senam. Total yang hadir mencapai 28 orang. Peserta mendapatkan modul Diabetes dan penanganan diet dalam bentuk leaflet. Selama dua hari para kader didampingi dan diberi kesempatan untuk bertanya pada program ini. Pengukuran peningkatan pengetahuan dilakukan dengan memberikan kuesiner pre dan post test yang berasal dari materi yang diberikan dan dibahas saat acara berlangsung.

Abstract

Penelitian ini bertujuan mengetahui pengaruh kadar BAL dan lama fermentasi terhadap kadar total fenol dan serat dalam yogurt susu kecambah kacang merah (Yosukamera). Kacang merah dikecambahkan 30 jam, diblender menjadi susu, kemudian difermentasi menjadi yogurt menggunakan BAL 1 dan 2%, serta lama fermentasi 12 dan 24 jam. Kadar serat meningkat oleh kadar BAL dan lama fermentasi (P<0,05), sedangkan kadar total fenol hanya dipengaruhi lama fermentasi (P<0,05). Yosukamera terbaik adalah yogurt yang dibuat dari susu kecambah kacang merah dengan kadar BAL 2% dan lama fermentasi 24 jam, mengandung antioksidan fenolik sebesar 993,08 ppm dan serat 6,29%. Yosukamera kaya antioksidan fenolik dan serat, dapat dimanfaatkan sebagai minuman fungsional bagi penderita obesitas. Sebagai selingan, yosukamera dapat dikonsumsi sebanyak 122-153 ml per harinya, dengan kandungan total fenol sebesar 121,22-152 mg dan serat 7,76-9,62 g.
