Abstract

Tujuan penelitian ini adalah untuk mengeksplorasi struktur dan letak organ dalam tubuh ikan kerapu (Epinephelus sp.). Metode penelitian melibatkan pengamatan visual terhadap karakteristik fisik dan operasi pembedahan pada ikan kerapu, yang kemudian dianalisis untuk mendapatkan pemahaman yang lebih baik. Hasil penelitian menegaskan bahwa ikan kerapu memiliki tubuh yang cenderung oval atau memanjang, dengan kepala besar, beragam jenis sirip, sisik yang beraneka ragam, dan gigi yang tajam. Anatomi ikan kerapu mencakup organ-organ vital seperti hati, usus, lambung, dan insang, yang berperan penting dalam berbagai fungsi tubuh seperti metabolisme, pencernaan, dan pernapasan. Pentingnya pemahaman tentang anatomi ikan kerapu adalah untuk memahami fungsi-fungsi organ tersebut serta berkontribusi dalam upaya konservasi dan manajemen populasi ikan. Dengan pengetahuan yang lebih mendalam tentang anatomi ikan kerapu, diharapkan dapat memperkuat kesadaran akan perlunya pelestarian dan perlindungan terhadap spesies ini.

Abstract

Producing protein hydrolysates from trash fish is important to increase the added value and utilization of trash fish itself. The hydrolysis process of trash fish is carried out enzymatically using the enzyme bromelain to produce peptide chains and umami amino acids such as glutamic acid. The aim of this research was to determine the effect of variations in the addition of bromelain enzymes to pineapple fruit on glutamic acid levels, organoleptic properties, and the proximate content of trash fish hydrolyzate as a natural flavoring. The design of this research was an experimental study using a completely randomized design (CRD) with levels of pineapple extract and bromelain enzyme addition of 10%, 15%, and 20%. The results of soluble protein testing and organoleptic tests were carried out using analysis of variance (ANOVA). Further testing uses the Duncan test. to determine the best treatment using the effectiveness index test. The results of organoleptic testing of trash fish hydrolyzate show that differences in pineapple juice concentration (bromelain enzyme) of 10% (P1), 15% (P2), and 20% (P3) have a significant effect on consumer acceptability based on taste and aroma attributes. Meanwhile, the color attributes of trash fish hydrolyzate did not differ significantly between treatments. The highest monosodium glutamate content was found in the third treatment (P3; 20%). The water content, ash content, fat content, and protein content of the trash fish hydrolyzate with the best treatment (P3; 20%) were respectively 95.11%, 6.50%, 3.44%, and 82.06%.

Abstract

Fish is a perishable food so it needs to be handled appropriately, namely by processing it into a product in the form of amplang made from catfish. Catfish is a fish that is widely cultivated in Indonesia. Considering the abundant production of catfish, it is necessary to make variations, namely by adding carrageenan from the seaweed Euchema cottonii as a determinant of the physical and organoleptic properties of catfish amlang in the form of flowering power and organoleptic tests of color, taste, aroma, texture and crispness of amlang. The formulation of the problem in this research is how the addition of carrageenan affects the physical and organoleptic properties of catfish amlang and what is the best formulation for adding carrageenan to catfish amlang based on physical and organoleptic properties. Meanwhile, the aim of this research is to determine the effect of adding carrageenan on the physical and organoleptic properties of catfish amplang and to find out the best formulation for adding carrageenan to catfish amplang. This research is an experimental study using carrageenan as a determinant of physical and organoleptic properties in catfish amplang using 4 treatments (P0) as control, (P1) 1%, (P2) 2% (P3) 3%. Data were analyzed using the SPSS type 26 application with the ANOVA test at a confidence level of 95% with Duncan's advanced test. Meanwhile, to determine the best treatment, use the De Garmo method. The results of the research showed that the addition of carrageenan had a significant effect on the physical properties of catfish amplang's swellability, organoleptic attributes of color, taste, texture and crispness. However, the addition of carrageenan had no effect on the aroma attributes of catfish amplang. The best formulation for making catfish amplang is P1 treatment with the addition of 1% carrageenan based on the De Garmo method with a productivity value (NP) of 0.98.

Abstract

Pasar tradisional Oesapa terletak di kelurahan Oesapa selatan, kecamatan Kelapa Lima Kota Kupang. Letak pasar Oesapa berdekatan dengan laut sehingga banya sekali aktifitas masyarakat yang menghasilkan peningkatan sampah atau limbah seperti plastik kemasan, botol-botol minuman, makanan sisa dan limbah ikan hasil penjualan. Sampah plastik dapat terurai menjadi partikel kecil yang disebut mikroplastik dan dapat terdistribusi pada bagian kolom air sehingga tanpa disengaja tertelan oleh ikan-ikan salah satunya ikan Kembung (Rastrelliger sp). Tujuan penelitian ini untuk mengidentifikasi tipe dan kelimpahan mikroplasti pada saluran pencernaan ikan Kembung yang dijual di pasar tradisional Oesapa Kota Kupang. Design penelitian ini adalah deskriptif kualitatif dengan melakukan survey langsung dan mengambil sampel ikan dari beberapa tempat penjualan di Pasar tradisional Oesapa. Pengambilan sampel sebanyak 30 ekor yang berukuran 16,4 – 25,7 cm dibagi menjadi tiga kelas. Hasil penelitian menunjukkan bahwa saluran pencernaan ikan Kembung pada tiap kelas mengandung tipe film, granule, fragment dan fiber. Pada kelas ketiga ukuran (23,6-25,7 cm) menghasilkan total mikroplastik tertinggi yaitu 3,40 partikel/ind. Sedangkan dari semua kelas ikan, tipe mikroplastik fragment menghasilkan nilai rata-rata kelimpahan tertinggi yaitu 0,69 + 0,57 partikel/ind.

Abstract

Silvofishery is an environmentally friendly cultivation model that is now widely implemented in coastal areas of Indonesia. The aim of this research is to conduct a study on the use of saline tilapia fish (Oreochromis niloticus) as a cultivar in silvofishery cultivation. The research method used is qualitative descriptive research. The parameters studied are water quality and aspects of the financial feasibility of the business. The research results showed that the weight of saline tilapia fish during cultivation ranged from 3.01-21.24 gr (13.37 ± 6.53) and biomass growth was 3,010-19,116 kg (12,886 ± 7.79). Silvofishery water quality parameters produced data: pH 7.8-8.2 (8.0 ± 0.14), dissolved oxygen 4.01-5.92 mg/L (4.90 ± 0.55), temperature 31.00-32,750C (31,800C ± 0.60), salinity 5-8 gr/L ( 6.3 ± 1.28) and organic matter 54.32-73.87 mg/L (62.90 ± 6.33). The financial feasibility value of the business shows a profit value of IDR. 8,840,000,-, R/C Ratio 1.55, BEP unit 297 kg, BEP sales Rp. 4,428,000,-, profitability 25%, Net Present Value Rp. 101,528,000,-, IRR 20.45%, and payback period 2.7 years. Based on the presentation of research data, saline tilapia is highly recommended as a commodity for silvofishery cultivation. The conclusion of this research is that saline tilapia would be ideal to be used as the main commodity in silvofishery cultivation activities carried out in coastal areas.

Abstract

Water quality standard criteria for shrimp farming, as regulated by the CBIB, are a crucial aspect in intensive farming operations. This research aims to assess the suitability of water quality parameters in intensive cultivation of vaname shrimp (L. vannamei) with CBIB standards (Good Fish Cultivation Methods). The research method uses an ex post facto causal design during one shrimp cultivation cycle, with a focus on the condition of water quality parameters compared with CBIB standards in accordance with Minister of Maritime Affairs and Fisheries Regulation Number 75 of 2016. The research results show that most of the water quality parameters during the cultivation period in accordance with CBIB standards, except for alkalinity and organic matter exceeding the thresholds set by CBIB. Abnormal conditions in these two parameters are caused by unpredictable natural and seasonal factors, as seen in unstable fluctuations in temperature and salinity. However, overall, the cultivation system at the research location still complies with the cultivation quality standards set by CBIB. From this discussion, it can be concluded that the water quality parameters at the research pond location are mostly in accordance with CBIB quality standards, with the exception of alkalinity and organic matter which slightly exceed the limits set by CBIB..

Abstract

The purpose of this research was to identify heavy metals in Jembrana waters and analyze water quality to determine water fertility. This study used direct observation and quantitative descriptive. Primary production, biological chemical physical parameters, and heavy metal data were collected in this study. The results showed that Jembrana waters had the highest primary productivity value of 1051.01 mgC/m3/day and the lowest value of 112.61 mgC/m3/day. Water quality in Jembrana is considered quite good. The results of this study showed that the water conditions at the observation site remained stable and within the tolerance limits for marine biota. This is due to the fact that during the sampling period, there was no significant activity from fishermen and local residents. Observations of heavy metals lead and cadmium at the study site showed that some stations exhibited values that exceeded the threshold, but these values were still acceptable for the waters. The heavy metal levels at the stations exceeded the threshold due to sewage effluents from companies and ships in the local harbor.

Abstract

Pengolahan hasil samping menjadi solusi untuk permasalahan limbah. Penelitian ini bertujuan untuk mengetahui efektifitas pada formulasi sabun dari hasil samping pengalengan ikan. Hasil samping pengalengan sebelum digunakan sebagai bahan baku pembuatan sabun diolah terlebih dahulu melalui proses pre-treatment. Adsorben yang digunakan sebagai media filtrasi dalam mengkondisikan minyak ikan yaitu adsorben kombinasi antara arang aktif dan zeolite. Penelitian ini menggunakan analisis data secara kuantitatif dan dijelaskan secara deskriptif. Sabun pembersih padat minyak ikan diuji melalui proses uji hedonik dengan jumlah 25 orang dengan menggunakan sabun komersil sebagai kontrol. Adsorben yang dipilih berdasarkan penerimaan uji hedonik dan penilaian uji gores (streak plate method) karena keefektifannya dalam membunuh kuman selama 60 menit. Minyak hasil samping pengalengan ikan dapat digunakan sebagai bahan baku dalam pembuatan produk sabun pembersih.

Abstract

Geographically, Buleleng Regency in North Bali has high potential coastal resources, with a coastline length reaching 157.05 km. Bondalem Village is in Tejakula District, Buleleng Regency, in the northern part of the Island of the Gods. The condition of the coral reefs in the Bondalem Waters area is categorized as very good, with coral reef cover percentages ranging from 65.93% to 81.33%. Besides having potential for diving tourism, Bondalem Village also boasts cultural attractions and local artistic wisdom. The purpose of this research is to identify the minatourism potential in Bondalem Village from the social aspect of the community. This research uses a descriptive quantitative method. The research process begins with the preparation of a proposal and the drafting of a questionnaire, followed by data collection, data processing, and data testing before drawing conclusions from the research activities. Based on research conducted on the potential of minatourism from the social aspect of the community in Bondalem Village, Buleleng, Bali, it is concluded that Bondalem Village in North Bali, specifically in Buleleng Regency, has minatourism potential that can be developed based on cultural, economic, and environmental assessments. The analysis of cultural, economic, and environmental aspects influencing minatourism potential, based on interviews with respondents, yielded scores of 3.253, 3.256, and 3.220, respectively, indicating that respondents support the development of minatourism potential in Bondalem Village from these aspects. This research is expected to provide useful input for various parties, especially the government, the Bondalem Village authorities, and researchers, to jointly support sustainable minatourism development.

Abstract

Analysis of Food Safety Regulation Compliance for Processed Fishery Products through Packaging Label Identification, this study aims to understand the urgency of food safety regulations, evaluate producer compliance, and analyze packaging labels as indicators of compliance. Observations were conducted using a literature study method by collecting online data for five processed fishery products: sardines, fish floss, fish sauce, chikuwa, and fish oil. The results show that the five processed fishery product namely Sarden Gaga, Chikuwa Cedea, Bonroa Abon Ikan Cakalang, Finna Kecap Ikan, and OM3 Heart Natural Fish Oil—largely comply with BPOM Regulation No. 31 of 2018 and Government Regulation No. 69 of 1999, despite deficiencies in the inclusion of expiration dates and nutritional information. Four products have BPOM distribution permits, one has a PIRT permit, only Sarden Gaga complies with mandatory SNI standards, and two products do not display the halal logo as required by Law No. 33 of 2014.
