Abstract

Abstract  Animal slaughter house (RPH) are very important in maintaining food safety and play an important role in the supply chain for meat needs. There are several stages in the slaughtering process at the abattoir that are often ignored or do not pay attention to the rules of animal welfare and also animal welfare before slaughtering will have an impact on the quality of the meat produced. The purpose of this study was to assess the application of animal welfare at the Manokwari abattoir, especially in slaughtering bali cattle. This study used a purposive sampling method with a total sample of 50 bali cattle which were observed from animals unloaded from trucks to the shelter and 100 cows were observed during the slaughtering process. The results of the data obtained from the inspection of the stages starting from the cow being unloaded from the blank car to being slaughtered, then the results were recorded in a questionnaire sheet. The results showed that 63.63% of the process of dropping animals from trucks to herding had met the requirements for animal welfare. Meanwhile, the process of preparation for slaughter until the assessment of animal death (separation of the animal's head and legs) meets the animal welfare requirements of 38.87%. The results of this study concluded that most of the principles of animal welfare have not been maximally implemented by the Manokwari abattoir for several processes of slaughtering cattle. Key words: Animal Welfare; Bali Cattle; Manokwari; Slaughterhouse   Abstrak  Rumah Pemotongan Hewan (RPH) sangat penting dalam menjaga keamanan pangan sehingga memegang peranan penting dalam mata rantai pengadaan kebutuhan daging. Abstract

The fermentation process is an activity of microorganisms that make products with characteristics of texture, flavor, aroma and changes in nutrient quality that better than the original raw material. It is also protein process of developing of protein from the material. This study uses a Completely Randomized Design with four treatments. P0 = Unfermented winged seeds, P1 = Winged seeds + 0,1% Trichoderma viride mushroom (Tv), P2 = Winged seeds + 0,2% Trichoderma viride mushroom (Tv), P3 = Winged seeds + 0,3% Trichoderma viride mushroom (Tv). The material used was crushed winged seeds as substrates that mixed to be homogenized. One hundred gr of each sample from every treatment was weighed, put into a perforated plastic bag (to create anaerobic atmosphere) with 2 cm thick. Subsequently, samples were incubated in fermented room at 30oC for 7 days. Each treatment was repeated 3 times. Variables observed in color, texture and coarse fiber. This study indicated that the winged fermented beans with Trichoderma viride mushroom had no effect on color, effected crude fiber and texture.

Abstract

This study intends to find out the impact of green tea leaves’ concentration and heating temperature on the physical quality of the antimicrobial edible film (AmEF) made from chicken bone gelatin. This study also utilizes chicken bone waste, in oder to increase both monetary value and the usefulness of that waste. The bone gelatin will then be utilized as AMeF and combined with green tea leaves’ extract (Camellia sinensis) that used as sausage wrapper. Several stages have been taken placed as follow: chicken bone gelatin production; green tea leaves extraction; and tea leaves’ extract-AMeF production. cCompletely randomized design with the factorial pattern was used in this study. Data was statistically analyzed using uni-variate analysis with 5% significance rate. Duncan’s Multiple Range Test (DMRT) will later be used to further test if there is a difference between each treatment. The physical qualities of AmEF that tested in this study include clarity, color, and thickness. The result of this study shows that a clarity value of AmEF was ranged between 0.62-2.12 abs, color was 0.87-2.60 abs, and 0.015-0.023 mm of thickness. The addition of tea extract and heating temperature have significant (P<0.05) effect on the clarity and color while have no effect on the thickness.

Abstract

The objective of this research was to determine the potential resource of farms in Mamberamo Raya regency. The research was conducted in the Mamberamo Raya Regency between September and October 2012., A subjective approach of the qualitative method was used by interview and literature studies. The results showed that the livestock development in Mamberamo Raya regency had a promising future, but worth noting agribusiness channel from upstream to downstream. The problem faced by farmers was lack of venture capital, livestock, training, lack of access to education and short of affordable of quality health services, low investment both public and companies, lack of basic infrastructure such as roads, electricity, limited good river transport services, problem of land and sea linkages among districts and limited access to marketing. To optimize the efficiency of the production value and income of farmers then this should be supported by a cooperative storage facility or the expected distribution of the production can be accommodated and prepared collectively. Regional development of cattle and goats have good prospects in Mamberamo Hulu district, Central Mamberamo, Benuki, Roufaer, Mamberamo Lower and Upper Waropen. Other commodities need to be developed in all districts in Mamberamo are Pigs, Goats, range chicken and duck. Buffaloes also prospective by considering the potential freshwater swamps but the presence of natural predators such as estuarine crocodile and the annual flooding of Mamberamo should be considered. Livestock production is a priority at the moment in order to meet local consumption and improve animal protein sources.
