Abstract

Kegiatan ini bertujuan untuk mengembangkan inovasi dan penerapan teknologi rumah pengering sinar matahari semi-tertutup berbahan plastik UV pada produk kerupuk sagu fungsional dari ikan biang Ilisha elongata di UMKM Kube “Dian Lestari” Selatpanjang Kabupaten Kepulauan Meranti Provinsi Riau. Metode pelaksanaan kegiatan dilakukan melalui penyuluhan dan percobaan langsung pembuatan alat pengering sinar matahari semi tertutup dari bahan plastik UV untuk diterapkan pada produk kerupuk sagu fungsional dari ikan biang. Kegiatan pembuatan rumah pengering sinar matahari semi tertutup berbahan plastik UV melibatkan partisipasi dari tim pengabdian Universitas Riau dan UMKM Kube “Dian Lestari”. Rumah pengering sinar matahari memiliki dimensi panjang 5 meter, lebar 2 meter dan tinggi 1,8 meter. Bagian dalam pengering memiliki kisaran suhu panas 45-62 oC, terdapat dua tingkatan rak dengan jumlah 16 rak, masing-masing tingkatan terdiri dari 8 rak pengering dengan ukuran panjang rak 100 meter dan lebar 85 cm, rak pengering dibuat dari bahwa kawat berlapis plastik sehingga tahan dan aman untuk produk pangan. Hasil penerapan rumah pengering sinar matahari semi tertutup terhadap produk kerupuk sagu fungsional ikan biang memiliki keunggulan yaitu: waktu pengeringan 24-36 jam, kapasitas pengering mencapai 20 kg, produk kerupuk aman dari cuaca hujan dan produk higenis, dan memiliki efisiensi waktu pengeringan lebih cepat daripada pengeringan biasa (3-4 hari). Kegiatan pengabdian masyarakat berpengaruh terhadap peningkatan produksi dan pendapatan keuntungan dari produk yang dihasilkan. Kata kunci: fungsional, kerupuk sagu, rumah pengering, sinar matahari ABSTRACT This activity aims to develop innovation and application of semi-enclosed sun-drying house technology made from UV plastic on functional sago cracker products from Biang fish (Ilisha elongate) at “UMKM Kube Dian Lestari" Selatpanjang, Meranti Islands Regency, Riau Province. The method of carrying out the activities were carried out through counseling and direct experiments in making semi-enclosed sun dryers from UV plastic material to be applied to functional sago crackers products from Biang fish (Ilisha elongata). The activity of making a semi-enclosed sun dryer house made of UV plastic involves the participation of the Riau University service team and Kube UMKM "Dian Lestari". The sun-drying house has dimensions of 5 meters long, 2 meters wide, and 1.8 meters high. The inside of the dryer has a hot temperature range of 45-62 oC, there are two levels of shelves with a total of 16 shelves, each level consists of 8 drying racks with a shelf length of 100 meters and a width of 85 cm, the drying rack is made of plastic-coated wire so that resistant and safe for food products. The semi-enclosed drying room applied to sago biscuit products has the following advantages: 24-36 hours drying time, drying capacity reaches 20 kg, cracker products are safe from rainy weather and hygienic products, and have faster drying efficiency than normal drying (3-4 days). Abstract

Kegiatan pengabdian kepada masyarakat merupakan pengamalan tridharma perguruan tinggi dan sebagai bentuk transfer ilmu pengetahuan dan teknologi kepada masyarakat, sehingga memberikan nilai tambah bagi masyarakat. Pelaksanaan pengabdian masyarakat dapat dilakukan dengan berbagai pendekatan sesuai dengan bidang ilmu yang dikembangkan perguruan tinggi melalui kegiatan penyuluhan ataupun pendampingan kepada masyarakat yang membutuhkan. Program Studi Teknologi Pangan mengarahkan kegiatan pengabdian kepada masyarakat berupa pengembangan dan penganekaragaman produk pangan yang bertujuan untuk meningkatkan nilai serta diversifikasi bahan pangan. Pengolahan pangan lokal diharapkan mampu memberikan nilai tambah bagi masyarakat, baik secara ekonomi maupun dari segi kesehatan. Kegiatan pengabdian kepada masyarakat dilakukan oleh kelompok dosen. Pada kegiatan ini dipilih kelompok wanita tani (KWT) di Kanagarian Andaleh, Kecamatan Luak, Kabupaten Limapuluhkota. Berdasarkan observasi di lapangan, masyarakat Andaleh sering memanfaatkan jagung manis sebagai bahan makanan, sehingga mereka tertarik untuk mengetahui dan mempraktikkan berbagai olahan jagung yang terjangkau namun dapat meningkatkan kesejahteraan keluarganya. Untuk menambah pengetahuan masyarakat tentang pemanfaatan jagung, maka dilakukan pendampingan pengolahan jagung menjadi beberapa makanan ringan. Rangkaian kegiatan yang dilakukan antara lain: observasi, sosialisasi, praktik pengolahan snack jagung, dan praktik pengolahan velva, dan praktik pengolahan es krim jagung. Penganekaragaman pengolahan jagung manis ini dapat menambah ide bisnis untuk meningkatkan perekonomian mitra. It is a kind of knowledge and technology transfer to the community, delivering additional value to the community. Community service can be carried out in a variety of ways, depending on the field of science developed by the institution, such as through outreach programs or assistance to people in need. The Food Technology Study Program focuses on community service activities such as food production and diversification in order to increase the value and diversity of foods. The processing of local food is supposed to provide value to the community in terms of both economics and health. Community service activities are carried out by groups of lecturers. A women farmer group (KWT) in Kanagarian Andaleh, Luak District, Limapuluhkota Regency was selected for this activity. According to field observations, the Andaleh community consumes sweet corn frequently, so they were interested in learning about corn preparations that are inexpensive but can also increase their income. Assistance has been provided in the processing of corn into several snacks to improve public knowledge about the utilization of corn. The activities included observation, socialization, corn snack production, velva, and corn ice cream production. Abstract

Diabetes mellitus (DM), terutama tipe-2 merupakan penyakit degeneratif akibat perubahan pola hidup, ditandai dengan peningkatan gula darah (hiperglikemia) dan perubahan progresif terhadap struktur histopatologi sel beta langerhaens pankreas karena akumulasi radikal bebas dalam tubuh. Pengelolaan DM yang tidak tepat menyebabkan munculnya penyakit menahun lainnya, seperti jantung koroner dan gangguan mata. DM tipe-2 lebih mudah penanganannya, diantaranya diet pangan kaya polifenol, yang mempunyai aktivitas antioksidan serta antidiabetik, salah satunya teh beluntas (Pluchea indica Less). Konsumsi teh beluntas diharapkan menurunkan gula darah dan resiko lanjut. Pengabdian kepada masyarakat ini bertujuan sebagai upaya penyadaran masyarakat dalam menanggulangi penyakit DM dengan memperkenalkan potensi teh beluntas, menyelenggarakan senam diabetes mellitus serta pemeriksaan kesehatan rutin, meliputi tekanan darah, berat badan, gula darah, total kolesterol serta hemoglobin A1c (HbA1c) khusus bagi peserta DM di komunitas RS Gotong Royong, Surabaya. Kegiatan ini diikuti oleh 75 orang selama 3 bulan (Maret-Mei 2017) setiap hari Minggu mulai pukul 06.00-10.00 WIB (11 pertemuan). Hasil evaluasi diperoleh sejumlah 46% peserta hadir > 8 kali mengikuti senam diabetes mellitus dan pemeriksaan kesehatan, 24% peserta menderita pre hipertensi, 34% menderita DM, 39% memiliki kadar total kolesterol pada kategori perbatasan dan 37% berada pada katerogi berbahaya. Pemeriksaan HbA1c pada pasien DM dengan kadar gula darah >140 mg/dl menunjukkan bahwa 19% pasien beresiko DM dan 81% pasien benar menderita DM. Konsumsi teh beluntas 2 cangkir per hari pagi dan sore (2g/100mL) selama 2 bulan menurunkan gula darah dan total kolesterol, menurunkan keluhan seperti hilangnya rasa kesemutan dan berkurangnya rasa lelah yang berimbas peningkatan semangat beraktivitas. Kata kunci : penanggulangan, diabetes mellitus tipe-2, teh beluntas, pemeriksaan kesehatan ABSTRACT Diabetes mellitus (DM), especially type 2 is a degenerative disease due to changes in lifestyle, characterized by increased blood sugar (hyperglycemia) and progressive changes in the histopathological structure of pancreatic beta langerhaens cells due to accumulation of free radicals in the body. Improper management of DM causes the emergence of other chronic diseases, such as coronary heart disease and eye disorders. Type 2 diabetes is easier to handle, including a diet rich in polyphenols, which have antioxidant and antidiabetic activity, one of which is beluntas tea (Pluchea indica Less). Consumption of beluntas tea is expected to reduce blood sugar and further risk. This community service was conducted as an effort to raise public awareness in tackling DM disease by introducing the potential of beluntas tea, organizing diabetes mellitus exercises and routine health checks, including blood pressure, weight, blood sugar, total cholesterol and hemoglobin A1c (HbA1c) specifically for DM participants. in the Community Hospital Gotong Royong, Surabaya. This activity was attended by 75 people for 3 months (March-May 2017) every Sunday starting at 06.00-10.00 WIB (11 meetings). The results of the evaluation showed that 46% of participants attended > 8 times diabetes mellitus exercise and health checks, 24% of participants suffered from pre-hypertension, 34% suffered from diabetes, 39% had total cholesterol levels in the border category and 37% were in dangerous categories. Examination of HbA1c in DM patients with blood sugar levels >140 mg/dl showed that 19% of patients were at risk of DM and 81% of patients had diabetes. Consumption of 2 cups of pluchea tea per day in the morning and evening (2g/100mL) for 2 months reduced blood sugar and total cholesterol, reduced complaints such as loss of tingling sensation and reduced fatigue which results in increased enthusiasm for activities. Abstract

Nagari Sungai Talang is one of the villages in Payakumbuh District, Lima Puluh Kota Regency which seeks to cultivate ginger plants. The type of ginger commonly developed by this Innovation farmer group is elephant ginger. This ginger has a rhizome that is larger and fatter, the rhizome segment is more bulging than other varieties of ginger. This type of ginger can be consumed both when you are young and old, both as fresh ginger and processed ginger. One of the obstacles that hinder our farmers from developing organic ginger here is the low production because the supply of nutrients is also low and the attack of pests and diseases is quite high. Therefore, it is necessary to find a treatment that can overcome this problem to increase the production of organic ginger. One of the microorganisms that is widely reported to act as biological agents is from the Plant Growth Promoting Rhizobacteria (PGPR) group or plant growth promoting rhizobacteria. Rhizobacteria have the ability to aggressively colonize the rhizosphere and some types of rhizobacteria are capable of dual roles as biofertilizers and bioprotectants in plants. The purpose of this farmer group empowerment activity is to provide knowledge about the benefits of Rhizobacterial biological agents in triggering the growth and yield of ginger plants in the field as well as plant-disturbing organisms that often attack ginger plants during cultivation, as well as effective control methods through outreach activities and direct counseling in the field. The method used is the method of socialization, counseling and direct discussion with farmer groups. The results obtained from this empowerment activity are that the farmer groups understand the benefits of Rhizobacteria biological agents as a trigger for growth and production of ginger plants, know various plant pest organisms (OPT) and know how to properly control them.

Abstract

Kondisi berbukit dan lokasi sungai yang jauh dari pusat pemukiman pada Nagari Sawah Tangah membuat masyarakat kesulitan untuk mengakses sumber air sebagai kebutuhan pokok maupun untuk irigasi persawahan. Saat ini, sumber mata air yang berlimpah pada Jorong Tuah Sakato, Nagari Sawah Tangah, sebagian telah dialirkan dari lembah yang dalam menuju rumah-rumah warga dan persawahan dengan menggunakan pompa listrik. Namun, hal ini membuat masyarakat memiliki biaya listrik yang besar untuk memenuhi kebutuhan air mereka. Kegiatan pengabdian kepada masyarakat ini bertujuan untuk membantu biaya listrik masyarakat Nagari Sawah Tangah dengan membangun sistem Pembangkit Listrik Tenaga Mikro Hidro (PLTMH) dengan memanfaatkan air buangan yang tidak terpakai. Kegiatan dibagi menjadi beberapa tahapan, yaitu diawali dengan (1) melakukan peninjauan lokasi dan penyuluhan, (2) penentuan lokasi pemasangan dan rancangan pipa dan turbin crossflow, kemudian selanjutnya (3) pembuatan sistem sipil dan mekanik sistem turbin, dan (4) melakukan pengujian efisiensi sistem turbin, serta (5) pembinaan kepada masyarakat. Perbedaan ketinggian antara posisi bendungan dengan turbin crossflow sebesar 15°. Debit air yang melewati pipa menuju turbin mencapai 60 liter/detik. Keberhasilan sistem turbin ini mampu memeroleh daya sekitar 2600 W. Dengan demikian, kegiatan pengabdian ini mampu membuat biaya listrik yang ditanggung oleh masyarakat menjadi lebih murah. Kata kunci: Pembangkit Listrik Tenaga Mikro Hidro (PLTMH), Turbin crossflow, Efisiensi, Jorong tuah sakato, Nagari sawah tangah ABSTRACT The hilly conditions and the location of the river which is far from the center of settlement in Nagari Sawah Tangah make it difficult for the community to access water sources as basic needs and for irrigation of rice fields. Currently, the abundant springs in Jorong Tuah Sakato, Nagari Sawah Tangah, have been partially drained from a deep valley to people's homes and rice fields using electric pumps. However, this leaves the community with large electricity costs to meet their water needs. This community service activity aims to help the electricity costs of the Nagari Sawah Tangah community by building a Micro Hydro Power Plant (PLTMH) system by utilizing unused waste water. The activity is divided into several stages, starting with (1) conducting site inspections and counseling, (2) determining the installation location and design of pipes and crossflow turbines, then (3) making civil and mechanical turbine systems, and (4) conducting testing turbine system efficiency, and (5) community development. The difference in height between the position of the dam and the crossflow turbine is 15°. The flow of water that passes through the pipe to the turbine reaches 60 liters/second. The success of this turbine system is able to obtain a power of about 2600 W. Thus, this service activity is able to make the electricity cost paid by the community cheaper. Abstract

Kemampuan bertahan bagi pelaku usaha UMKM di era pandemic COVID-19 menjadi sebuah tantangan tersendiri. Turunnya daya beli konsumen menjadi salah satu isu yang menjadi perhatian khusus bagi salah satu kedai kopi di pusat kota Bekasi. Penurunan omzet penjualan teridentifikasi pada menu dengan bahan baku premium yang relative dijual dengan harga tinggi. Adanya kondisi ini berdampak pada kerugian terkait penyimpanan stok bahan baku premium yang memiliki masa simpan singkat namun harga beli tinggi. Tujuan utama pelatihan ini adalah untuk membantu mitra dalam menentukan metode pengelolaan bahan baku premium yang tepat sehingga dapat meminimalisir risiko kerugian akibat kerusakan bahan baku. Dengan adanya metode yang tepat maka akan dapat melakukan perhitungan harga jual yang tepat pula. Metode yang dilakukan dalam kegiatan ini adalah melalui pelatihan dan pendampingan intensif dengan pendekatan service learning. Adapun bentuk pelatihan yang dilakukan adalah sebanyak 10 kali pertemuan daring oleh tim dosen sarjana Akuntansi di Universitas Bina Insani. Selama melakukan pelatihan dan pendampingan didapati adanya kekeliruan alokasi modal dalam perhitungan harga jual sehingga menjadi terlalu tinggi dibandingkan harga jual pasaran. Selain itu didapati pula masalah terkait manajemen persediaan biji kopi yang menjadi salah satu akar masalah kerugian. Setelah melakukan pelatihan dan pendampingan ini terjadi peningkatan penjualan dan berdampak pada peningkatan keuntungan mitra sebesar 76%. Peningkatan ini terjadi setelah adanya perhitungan HPP dengan metode full costing dan penerapan pricing-strategies yang tepat. Kata kunci: service learning, pengelolaan bahan baku, harga jual, full costing, pricing strategies ABSTRACT The ability to survive for MSME business in the era of the COVID-19 pandemic is a challenge in itself. The decline in consumer purchasing power is an issue that is of particular concern to one of the coffee shops in downtown Bekasi. The decline in sales turnover was identified on the menu with premium raw materials which were relatively sold at high prices. The existence of this condition has an impact on losses related to the storage of premium raw material stocks which have a short shelf life but high purchase prices. The main objective of this training is to assist partners in determining the right method of managing premium raw materials so as to minimize the risk of loss due to damage to raw materials. With the right method, it will be able to calculate the right selling price as well. The method used in this activity is through intensive training and assistance with a service learning approach. The form of training carried out was 10 online meetings by a team of Accounting lecturers at Bina Insani University. During the training and mentoring, it was found that there was an error in the allocation of capital in the calculation of the selling price so that it was too high compared to the market selling price. In addition, there were also problems related to coffee bean inventory management which became one of the root causes of losses. After conducting this training and mentoring, there was an increase in sales and an impact on increasing partner profits by 76%. This increase occurred after the calculation of COGS using the full costing method and the application of appropriate pricing strategies. Abstract

Praktek pemberian MP-ASI dini sebelum usia enam bulan masih banyak dilakukan di negara berkembang seperti Indonesia sehingga berdampak terhadap kejadian infeksi yang tinggi. Tujuan pengabdian kepada masyarakat ini adalah untuk meningkatkan pengetahuan sekaligus keterampilan para ibu dalam mengolah MP-ASI dengan memanfaatkan pangan lokal. Kegiatan ini dilaksanakan dari bulan Januari sampai dengan Agustus 2021 di Desa Ranah Singkuang Kabupaten Kampar. Peserta pengabdian kepada masyarakat adalah ibu-ibu dari balita di Posyandu yang berjumlah 35 orang dengan menggunakan metode Focus Group Discussion (FGD), pre-test dan post-test, penyuluhan, praktik pengolahan menu MP-ASI dan advokasi. Hasil kuisioner menunjukkan peningkatan pengetahuan setelah diberikan edukasi berupa penyuluhan sebesar 100%. Para ibu juga dianggap telah mampu mengolah menu MP-ASI dengan memanfaatkan pangan lokal. Disarankan para ibu agar lebih kreatif dalam mengolah dan menyajikan menu makan balitanya. Kata kunci: makanan pendamping, MP-ASI, pangan lokal, pengolahan MP-ASI, pengabdian kepada masyarakat ABSTRACT The practice of early complementary feeding before six months old is still widely practiced in developing countries such as Indonesia so that it has an impact on the high incidence of infection. The purpose of this community service is to increase the knowledge and skills of mothers in processing complementary feeding by utilizing local food. This activity was carried out from January to August 2021 in Ranah Singkuang Village, Kampar Regency. Participants in community service are mothers of children under five at the Posyandu, totaling 35 people using the Focus Group Discussion (FGD) method, pre-test and post-test, counseling, practice of processing complementary feeding menus and advocacy. The results of the questionnaire showed a 100% increase in knowledge after being given education in the form of counseling. Mothers are also considered to have been able to process the complementary feeding menu by utilizing local food. It is recommended that mothers be more creative in processing and presenting their toddler's menu. Abstract

Kelurahan Talumolo adalah salah satu kelurahan dengan jumlah ibu hamil tertinggi di wilayah kerja Puskesmas Dumbo Raya Kota Gorontalo, dimana dalam dua tahun terakhir terdapat kematian ibu, yaitu satu kasus ibu hamil hipertensi di tahun 2019 dan satu kasus ibu hamil menderita Covid-19 di tahun 2020. Pendampingan kader mempunyai peran besar dalam upaya peningkatan derajat kesehatan ibu hamil. Kader di kelurahan ini belum memiliki pengetahuan dan keterampilan yang cukup dalam mendampingi ibu hamil di masa pandemi Covid-19. Tujuan pengabdian ini adalah memberikan pelatihan kepada kader tentang pendampingan ibu hamil pada masa pandemi Covid-19. Pada awal kegiatan, tim membagikan kuisioner untuk mengukur pengetahuan awal kader, kemudian memberikan materi pendampingan ibu hamil masa pandemi Covid-19, tanya jawab, demonstrasi, praktik, dan diakhir kegiatan kader kembali mengisi kuisioner untuk mengukur pengetahuan akhir setelah dilatih. Metode selanjutnya adalah praktik langsung kader dengan melakukan kunjungan rumah ibu hamil menggunakan buku pegangan. Hasil yang diperoleh adalah terdapat peningkatan nilai rata-rata pengetahuan kader sebesar 3,85 dan semua kader mampu melakukan praktik pendampingan ibu hamil di masa pandemi Covid-19 (100%). Kesimpulan kader mengalami peningkatan pengetahuan dan memiliki kemampuan mendampingi ibu hamil di masa pandemi Covid-19 sehingga ibu menjalani kehamilan yang sehat dan terhindar dari penularan Covid-19. Kata kunci: Pelatihan, Kader, Pendampingan, Ibu hamil ABSTRACT Talumolo is one of the villages with the highest number of pregnant women in the Dumbo Raya Public Health Center working area, Gorontalo City, wherein in 2019 there was one case of maternal death due to hypertension and one case of pregnant women suffering from Covid-19 in 2020. Cadre assistance has a significant role in efforts to improve the health status of pregnant women, but they do not have sufficient knowledge and skills in assisting pregnant women during the Covid-19 pandemic. This community service aims to provide cadre training on assisting pregnant women during the Covid-19 pandemic. Activities were carried out by distributing pretest questionnaires, providing materials, demonstrations, practice, distributing posttest questionnaires, and direct practice with home visits of pregnant women using a checklist. The results obtained are an increase in the average value of cadre knowledge by 3.85, and all cadres can practice assisting pregnant women during the Covid-19 pandemic (100%). The conclusion is that cadres have increased knowledge and can assist pregnant women during the Covid-19 pandemic so that mothers undergo healthy pregnancies and avoid Covid-19 transmission. Abstract

ABSTRAK Tujuan program pengabdian kepada masyarakat Universitas Andalas Skim Membantu Nagari Membangun ini adalah meningkatkan kapasitas BUMNag Sungai Kamuyang dalam mengembangkan usahanya untuk menunjang capaian nagari mandiri. Program ini didesain sebagai program terintegrasi dari proses pelatihan dan pendampingan bisnis. Diawali pemetaan permasalahan bisnis BUMNag Sungai Kamuyang, kajian kebutuhan pelatihan dan pendampingan bisnis berdasarkan kondisi bisnis eksisting BUMNag. Pemetaan dimaksud mencakup aspek bisnis seperti aspek manajemen, pemasaran, proses produksi, aspek lingkungan dan pembiayaan. Hasil pemetaan dijadikan acuan utama program penguatan kapasitas yang akan dilaksanakan selama masa program diimplementasikan. Program ini telah dilaksanakan dari tanggal 11 Oktober sampai akhir November 2021. Hasil yang telah dicapai ada enam kegiatan utama yang satu dengan lainnya terpaut untuk mencapai tujuan program ini telah selesai dilaksanakan. Keenam kegiatan tersebut adalah: 1) review aspek legalitas BUMNag, 2) review unit usaha potensial, 3) business training bagi tim manajemen, 4) business mentoring and consultation, 5) mendampingi tim manajemen menyusun draft revisi anggaran dasar dan anggaran rumah tangga, dan 6) mendampingi tim manajemen BUMNag menyusun business plan/rencana bisnis. Jumlah peserta yang terlibat dalam kegiatan ini sekitar 28 orang, yang terdiri dari Wali Nagari Sungai Kamuyang dan perangkatnya, tim manajemen BUMNag, dan tokoh masyarakat. Kata kunci: BumNag, pemetaan bisnis, pelatihan, pendampingan, berkelanjutan ABSTRACT The purpose of this community service program for the Skim Helping Nagari Build is to increase the capacity of the Sungai Kamuyang BUMNag in developing its business to support the achievement of independent nagari. This program is designed as an integrated program of the training and business mentoring process. Starting with mapping the business problems, assessing the training needs and business assistance based on the BUMNag's existing business conditions. The mapping includes business aspects such as management, marketing, production processes, environmental and financing aspects. The results of the mapping are used as the main reference for the capacity building program that will be implemented during the program's implementation period. This program has been implemented from October 11 to the end of November 2021. The results that have been achieved there are six main activities that are adrift to achieve the objectives of this program have been completed. The six activities are: 1) reviewing the legality aspects of BUMNag, 2) reviewing potential business units, 3) business training for the management team, 4) business mentoring and consultation, 5) assisting the management team in drafting the revised articles of association and by-laws, and 6) assisting the BUMNag management team in preparing a business plan/business plan. The number of participants involved in this activity is about 28 people, consisting of the Wali Nagari Sungai Kamuyang and his apparatus, the BUMNag management team, and community leaders. Abstract

Air kelapa memiliki kandungan kalium, kalor serta klorin yang tinggi sehingga memiliki peluang dikembangkan menjadi produk yang bergizi. Pengabdian kepada Masyarakat ini bertujuan untuk memberikan pengetahuan dan mempraktekkan pengolahan kecap manis serta meningkatkan adding value tehadap produk kecap manis di Desa Sese, Kecamatan Dampal Utara, Kabupaten Tolitoli. Metode pelaksanaan adalah observasi, penyuluhan, pelatihan, dan diskusi. Pelatihan pengolahan produk kecap manis air kelapa dapat memanfaatkan potensi desa yaitu air kelapa. Berdasarkan data hasil pelatihan, materi yang diberikan sangat mudah dipahami, hal ini ditunjukan rata-rata 87.56% peserta memahami materi yang diberikan yang sebelumnya peserta belum mengetahui tentang kecap air kelapa yaitu sebesar 66.17%. Hasil analisis data uji hedonik didapatkan rata-rata 9 orang sangat menyukai warna dan aroma, 10 orang menyukai rasanya, dan 6 orang menyukai tekstur dari kecap manis air kelapa. Kegiatan diskusi didapatkan bahwa peserta menginginkan pendampingan dalam pembuatan kemasan, metode penyimpanan dan metode pemasaran. Kata kunci: Air kelapa, Kecap manis, Pengabdian masyarakat, Diversifikasi produk, Tolitoli ABSTRACT Coconut water contains high potassium and chlorine, so it has the opportunity to be developed into a nutritious product. This Community Service aims to provide knowledge and practice sweet soy sauce processing and increase the adding value of sweet soy sauce products in Sese Village, North Dampal District, Tolitoli Regency. The implementation method is observation, counseling, training, and discussion. Training on processing coconut water sweet soy sauce products can take advantage of the village's potential, namely coconut water. Based on the data from the training, the material provided was very easy to understand. It was shown that an average of 87.56% of participants understood the material that previously participants did not know about coconut water soy sauce, which was 66.17%. The hedonic test data analysis results showed that an average of 9 people liked the color and aroma, ten people liked the taste, and six people liked the texture of the coconut water sweet soy sauce. The discussion activity found that participants wanted assistance in making packaging, storage methods, and marketing methods.
