Abstract

Indonesian natural products that are antioxidant have diversity and have not been used optimally, one of which is white goroho banana. White goroho banana (Musa acuminate Colla) is one of the endemic plants originating from North Sulawesi. These bananas are often used empirically as an additional / main food for people suffering from diabetes mellitus. This research aims to determine the potential inhibition of the Maillard reaction from extracts of white goroho banana by measuring the carbonyl protein content using a spectrophotometer. The result of this research is white goroho banana can used as inhibitor Maillard reaction to restrain Diabetes mellitus surface and grow. Acetone extract has the highest inhibitor Maillard reaction than ethanol and methanol. The activity of inhibitor Maillard reaction from acetone, ethanol and methanol extracts are 5,49; 3,18; 2,96%.Indonesian natural products that are antioxidant have diversity and have not been used optimally, one of which is white goroho banana. Abstract

The research of manufacturing chitosan from shrimp shell waste , and their use as a stabilizer in the manufacture of silver nanoparticles has been done. The aim of the research was to synthesize silver nanoparticles using chitosan as a stabilizer by chemical reduction method and determine the effect of chitosan concentration on the stability of Ag nanoparticles. In this study, the raw material used is shrimp shell powder and then processed in several stages, eliminating proteins, demineralization, and deacetylation. Chitosan obtained is 16.4 % of shrimp shell powder, with a degree of deacetylation of 85 %. Chitosan is used to synthesize silver nanoparticles as a reducing agent of silver ions in silver nitrate solution and is expected to be stabilizer. Sample containing 45 mg of chitosan and 1000 ppm AgNO3 has 421,60 nm of maximum wavelength, and the average particle size is 154.07 nm.

Abstract

Wastewater of detergent residual that comes from the washing process (laundry) has the potential to pollute environmental sustainability such as rivers and soil if it is thrown away in large volumes without any prior processing. Easy and inexpensive methods for processing laundry wastewater for household-scale have been carried out and proven to reduce levels of pollutants contained in laundry wastewater such as phosphate and ammonia. This study aims to determine the effect of the use of filtration media using a combination of activated charcoal adsorbent, zeolite, silica sand, anthracite and ferolite in reducing phosphate and ammonia levels in laundry wastewater. Based on the results of laboratory tests on the parameters of phosphate and ammonia test, it was found that after the filtration process, there was a decrease in phosphate and ammonia levels in the samples of laundry wastewater by 83.3% and 63.6% respectively. Thus, from the research data, it can be concluded that the filtration media in the form of a combination of adsorbents used in this study proved to be able to reduce phosphate and ammonia levels in samples of laundry wastewater.

Abstract

Abstract Cocor bebek plant contains secondary metabolites which are useful in the field of pharmacology. This experiment aims to isolate flavonoid compounds which are secondary metabolites in cocor bebek. The extraction method uses maceration with methanol solvents, followed by partitions using ethyl acetate solvents. Identification of flavanoid group compounds was analyzed qualitative testing using FTIR and Thin Layer Chromatography (TLC) with the mobile phase of ethyl acetate : n-hexane with a ratio of 8:2, 7:3, 5:5, 3:7, and 2:8. The experimental results obtained from 600 grams of fresh cocor bebek leaves producing 3 gram of flavonoid extract. The qualitative test gave positive results for the TLC method the presence of flavonoids in the leaves of cocor bebek on spot yellow. While the levels of flavonoids in the extract of cocor bebek are obtained 4.20 ppm. Keywords: Cocor Bebek (Kalanchoe pinnata), Extraction, Flavonoids, Thin layer chromatography

Abstract

The research on effect of traditional drying process againt proximate composition of the payangkah fish nike has been done. A number of payangkah fish nike samples has been taken from the Tondano lake, divided into two parts, i,e, fresh samples and other parts were traditionally dried at temperature range of 37°C for 24 hours. The proximate composition of wet and dried samples respectively specified was water content of 83.157%, protein 13.128%, lipid 1.48%, ash 2.033%, crude fiber 0.65% and carbohydrate 0.2%. While for dry samples the water content of 9.59%, protein 67.434%, ash 5.065% and crude fiber 0.64%. The results shows that traditional drying process has positive influence against some parameters on proximate composition of the payangkah fish nike.

Abstract

Mesoporous material MCM-41 cannot be used directly as a catalyst, so need to be added metals or nonmetals to create an acidic site. Nickel is a Lewis acid metal because it is able to accept lone pairs of electrons from ligands to form complex compounds. The purpose of this study was to produce mesoporous material Ni/MCM-41 and to see the effect of the addition Nickel metal to the acidity level of mesoporous material Ni/MCM-41.Tthe ion exchange method is used to produce Ni/MCM-41 and the gravimetric method to test the acidity of the material. The MCM-41 used for Ni/MCM-41 synthesis has an x-ray diffraction pattern with a hexagonal structure that is identical with the MOC researchers results. BET results is showed the type IV of the Langmuir adsorption isotherm with a surface area of ​​Ni/MCM-41 material 775.9 m2/g, pore volume 0.81 cc/g and pore radius 15.2 Å. TEM characterization shows the morphological shape of Ni/MCM-41 in the form of hexagonal structure. The acidity test results of Ni/MCM-41 material have a higher acidity level compared to MCM-41. Based on the research data, it can be concluded that Ni/MCM-41 has a morphological form with a hexagonal structure, has a large surface area and has a pore size classified as mesoporous material and has a higher acidity level than the MCM-41 synthesized.

Abstract

Utilization of natural ingredients as a means of supporting health has actually been applied by humans for a long time, especially green tea plants (Camellia sinensis). The high polyphenol content in green tea is used to kill harmful bacteria and also bacteria that cause disease in the oral cavity. This study aims to determine how to optimize the extraction of polyphenols from green tea to produce a large polyphenol extract so that it can be used as an ingredient for edible coating formulations with carrageenan and chitosan as well as to determine the preservation ability of the polyphenol edible coating formulations with carrageenan and chitosan to be used for preservation fruits. The stages of this research include: extraction, characterization, polyphenol content analysis, microbial inhibition test and edible coating formulation. The results of the analysis of the total polyphenol content obtained an average of two tests of 22.05% and in the microbial inhibition test, the optimum concentration of polyphenol extract as an antimicrobial was 0.5%. The most effective edible coating formulations with carrageenan and chitosan for tomatoes are polyphenols 0.1%; 0.25%; 0.5%, chitosan-polyphenols 0.5%, and carrageenan-polyphenols 0.25% and caragenan-polyphenols 0.5%. While the most effective coating formulation for grapes is 0.5% polyphenols.

Abstract

Synthesis of silver nanoparticles was carried out using bioreductors of Cratoxylum glaucum leaf extract using the microwave irradiation method. Synthesis was carried out by reacting the Cratoxylum glaucum leaf extract with silver nitrate solution at a mass ratio of 1: 2. The variables of this study were variations in silver nitrate concentration and synthesis time. Based on the results of UV-Vis analysis showed the presence of maximum wavelength absorption which is characteristic of the formation of silver nanoparticles at a wavelength of 398.8 nm with a concentration of 0.5 mM AgNO3 and a synthesis time of 120 seconds. Particle size analysis shows that the 10% particle size distribution is 92.5 nm and overall is 544.1 nm. Antibacterial activity test results showed silver nanoparticles have strong antibacterial properties against E. coli and S. aureus bacteria.

Abstract

Fish is one of the main foods for humans that are rich of proteins, fatty, and minerals that are good for health. Unsaturated fatty acids are very easily oxidized by the presence of catalysts such as oxygen, heat, light, and the presence of metals. Ginger contains antioxidants which can inhibit oxidation of fat or oil. This study aims to inhibit fat oxidation of skipjack fish with the addition of ginger. Skipjack fish soaked in ginger water with a concentration of 10%, 20%, 30% and the control, then saved for 0, 2, 4 days. The fish was extracted by the wet rendering method and then analyzed with 2 parameters, peroxide value and free fatty acids with the titration method. The best concentration in inhibiting lipid oxidation of skipjack fish is at a concentration of 10% and 30%. The peroxide value of cakalang oils is still below the IFOS standard of 3.75 meq O2/kg and the percentage of free fatty acids is still below the standard of 1.5%

Abstract

Agglutinin or lectin is a protein or glycoprotein that binds saccharide specifically. The substance can agglutinate cells, because of the cells surfaces consist of saccha- rides. Halymenia durvillaei, Laurencia obtusa and Ulva fasciata, contain agglutinin. Cells agglutination by agglutinin can be inhibited by specific saccharide which is its specific sugar. This research aims to determine the specific sugar of agglutinin from Halymenia durvil laei, Laurencia obtusa and Ulva fasciata seaweeds. The researched shows that specific sugar on agglutinin of Laurencia obtusa is D-Glucosamine, and Ulva fasciata is D(+)-Glucose.
