Abstract

This research aims to analyze the development of the fried bean business in Lakanaha Village, Wadaga District, West Muna Regency. The research location was determined purposively. Data collection was carried out using observation, questionnaires, interviews, and documentation methods. The analysis method used is Quality Function Deployment (QFD). The results of the research show that the development of fried bean products in the Lakanaha Village Fried Bean Business, using the QFD method, found that the priorities for development were in line with consumer expectations. The highest priority was packaging design (16.87%). The ability of business actors to develop fried peanut products includes sorting peanuts, the frying process, adding flavorings, making packaging, and marketing.

Abstract

Sago cracker products are only marketed from shop to shop and even from stall to stall, this is what makes Sago Cracker MSMEs still unable to market them widely. The aim of this research is to determine the effect of promotion and marketing via Facebook social media on the volume and sales value of sago crackers. Data analysis uses difference test analysis/T test. The results of the research show that the use of the Facebook marketplace feature on the sales value of Anissa sago cracker products has had a significant influence on the MSME owners of Anissa sago crackers who previously had a weekly income of IDR 960,000 before using the marketplace. Facebook and after using the Facebook marketplace, their weekly income is around IDR 1,395,000. The difference before and after using the Facebook marketplace has a real effect so that the Facebook application using the Facebook marketplace feature is effective for MSME owners to market Anissa sago cracker products. The level of consumer confidence in the sale of sago cracker products on the Facebook marketplace is 95%.

Abstract

The chicken meatball processing business located in Rahandouna Village, Poasia District, Kendari City, is a home-based company that produces chicken meatballs. This research aims to determine the strengths, weaknesses, opportunities, and threats and determine a competitive strategy using the SWOT analysis method. SWOT analysis can provide accurate research results to formulate competitive strategies that maximize strengths and opportunities. But at the same time, it minimizes weaknesses (weaknesses) and threats (threats). The research results show a strength score of 1.95, weaknesses of 0.80, opportunities of 1.65, and threats of 0.98. So, it was found that Mrs. Hasnia's business position was in a very favorable situation; the company had opportunities and strengths to take advantage of existing opportunities. The strategy that must be implemented in this condition is to support aggressive growth policies (growth-oriented strategy).

Abstract

This research aims to determine the processing and manufacturing process of sago chip products in the Sagoku Home Industry, Kendari City. The research location was determined purposively. Data collection was carried out using observation and documentation methods. The analytical method used is descriptive. The results of the research show that the processing of sago chip products in the Saguku Home Industry begins with the following stages: (1) Providing raw materials, which include 5 kg of sago flour, 5 kg of finely ground corn, 2 kg of moringa leaf flour, 20 tbsp of salt, 15 tsp of pepper, 10 tsp of baking soda, and 15 tsp of baking powder for one production, (2) Mixing process using 1 mixer machine with a maximum capacity of 10 kg, (3) Rolling process with a thickness of 2.5 mm and molded in a circular shape with a diameter of 50 mm, (4) Drying process for 2 days, (5) frying process, (6) Packaging process using mica plastic, with one pack of sago chips weighing 50 grams and a selling price of Rp. 25,000.

Abstract

The problem is that apple productivity in Batu City decreases every year, while the demand for apple juice is increasing along with the increase in tourists and destinations in Batu City. The level of dependence and complexity in the supply chain makes the supply chain as a whole more vulnerable to disruption. Therefore, risk mitigation is needed so that it can reduce and overcome various risks that occur in supply chain institutions. This research aims to identify risk factors and formulate appropriate strategies so that they can be implemented by apple cider supply chain actors. Data analysis uses Fuzzy FMEA (Failure Mode and Effect Analysis) to identify problems or causes of failures that occur. The research results show that the highest risk for farmers is the risk of apples being damaged during the planting process due to pests and climate, with an FRPN value of 5.228; Meanwhile, for the middleman, it can be seen that the highest risk is the risk of late delivery to the factory with an FRPN value of 4.986; and the highest risk in the processing industry is the risk that the quality of the fruit juice product does not comply with the FRPN value of 6.047. Alternative risk mitigation strategies for farmers include increasing harvest area, increasing farmer awareness of good planting methods, using organic fertilizer, and scheduling deliveries. Alternative risk mitigation strategies for middlemen include production scheduling, sorting, grading, using safe transportation packaging, and GHP training. On the part of the processing industry, alternative strategies that can be implemented are increasing the availability of raw materials, reducing the occurrence of product defects, repairing and replacing machine components, and consistent implementation of SOPs.

Abstract

This research aims to determine the effect of cow dung bokashi dosage on the growth and production of peanut plants in carried out this research in Wanseriwu Village, Central Tiworo District, West Muna Regency, Southeast Sulawesi Province. The materials used are cow manure, EM4, granulated sugar, water, urea fertilizer, SP 36, KCl, and mouse deer variety peanut seeds. The tools used were hoes, machetes, wood, meters, raffia rope, buckets, scales, small spoons, label boards, sprayers, thermometers, small containers/bowls for seeds, and writing utensils. This research organized based on a Randomized Block Design (RAK) with five treatments consisting of B0: without cow dung bokashi, B1: cow dung bokashi with a dose of 3 kg plot-1 or 10 t ha, B2: cow dung bokashi with a quantity of 6 kg plot-1 or 20 t ha-1, B3: cow dung bokashi with an amount of 9 kg plot-1 or 30 t ha-1, B4: cow dung bokashi with a dose of 12 kg plot-1 or 40 t ha-1. The parameters observed were plant height (cm) carried out at 2, 4, 6, and 8 weeks after planting, number of stem branches) carried out at 2, 4, 6, and 8 weeks after planting, number of pods formed, number of filled pods, weight planting seeds (g), and weight of 100 dry seeds (g). Giving cow dung bokashi at different doses significantly affected plant height, number of branches, number of pods formed, number of filled pods, weight of seeds per plant, and weight of 100 dry seeds. Bokashi cow dung at a dose of 40 t ha-1 provides the best growth and production of peanuts, with an average dry seed weight per plant reaching 36.71 g plant-1 or 3.06 t ha-1.

Abstract

AThis research aims to determine the cashew product processing process at UD. Cashew Mubaraq in Kendari City. Data collection was carried out using interview and documentation methods. The analysis used is descriptive analysis. Based on the research results, it is shown that the cashew product processing process at UD. Cashew Mubaraq in Lombe begins with the stages: (a) providing raw materials, (b) washing process, (c) process of providing flavorings, (d) frying process, (e) process of adding flavorings, and (f) packaging process. Production activities carried out by UD. Mete Mubaraq Lombe are done 8 times a month. The production volume for each month can process 40 tonnes of cashew nuts with the assumption of 8 tonnes of peeled cashews with a sales volume of 4 tonnes of raw cashews (super and regular), 3.5 tonnes of fried cashews, and 0.5 tonnes of cashew shells. This production can increase when there is an increase in market demand.

Abstract

The study aims is to identify the application of Good Manufacturing Practices (GMP) and SSOP for tofu products at industry tofu sumber reski, Sendang mulya sub-district, Konawe city and provide recommendations for the best improvements related to the problems of implementing Good Manufacturing Practices (GMP) at Sumber reskit. Every food producer must have quality according to standards so that the food produced is safe for consumption. Data collection comes from direct observations, interviews, evaluations carried out by observing all aspects of Good Manufacturing Practices (GMP) based on the regulation of the Ministry of Industry of the Republic of Indonesia No. 75 of 2010). Identification of the implementation of Good Manufacturing Practices (GMP) at Sumber Reski based on the Minister of Industry Regulation on Good Processed Food Production Methods (CPPOB) with a checklist gap getting a total of 63% of 18 parameters, which means Sumber Reski Industry still has to improve in order to meet the requirements of GMP standards according to Regulations The Minister of Industry of the Republic of Indonesia Number 75/M-IND/PER/7/2010 concerning guidelines for good processed food production.

Abstract

Proper business development analysis is essential so that micro businesses develop and become sustainable small industries. This research aims to determine the elements of actors, constraints, needs, and objectives that play a crucial role in supporting the development of tempeh products at Alfia Jaya in Baubau City and in finding out the recommended solutions by knowing the key factors in developing tempeh products using the Interpretative Structural Modeling (ISM) Method. This research uses the ISM method. ISM is useful as a decision-making system tool. The research results show that the factors are divided into four levels and are included in the autonomous, dependent, related, and independent sectors. The key influencing factors are all elements of actors, constraints, needs, and goals, one of which plays an important role, namely actors/stakeholders, namely suppliers, traders, consumers, cooperative and SME services, industry and trade services, agriculture and food security services, and institutions—financial results, as well as the percentage of consistency results obtained from each element.

Abstract

This research aims to examine the effect of using several types of mulch on the growth and production of long beans. Additionally, it aims to determine which type of mulch provides the best growth and production for long beans. The research was conducted in Suka Damai Village, Central Tiworo District, West Muna Regency, Southeast Sulawesi Province. The materials used in this research included long bean seeds, cow manure, straw mulch, coconut fiber mulch, reed mulch, krinyuh mulch, and pesticides. The tools used consisted of machetes, hoes, analytical scales, meters, gembors, sprayers, buckets, raffia ropes, and writing tools. The research was structured based on a Randomized Block Design (RAK) which included five levels of mulch type treatment (M), namely without mulch (M0), straw mulch (M1), coconut fiber mulch (M2), reed mulch (M3), and crunchy mulch (M4). The variables observed included plant length (cm), number of productive branches (branches), number of fruits, fruit length, fresh fruit weight per plant (g), and production (t/ha). The data obtained was quantitatively analyzed using analysis of variance (ANOVA). If the analysis results show that the calculated F-value is greater than the F-table value, then the Honestly Significant Difference (BNJ) test is conducted at a 95% confidence level. The research results showed that the type of mulch treatment had a very significant effect on plant length, number of branches, number of fruits, fruit length, fresh fruit weight, and production. The krinyuh mulch type provided the best growth and production for long beans, with an average production reaching 23.83 t/ha
