Abstract

Background: Individuals at the age of 40 years face a 6-fold higher risk of developing Type II diabetes. Modification of enteral nutrition is necessary to address nutritional needs in patients with eating difficulties. Nutritional therapy for Type II diabetes patients should focus on controlling blood glucose levels by selecting foods with low glycemic index and high fiber content. Red beans, rich in protein, carbohydrates, and fiber, offer potential benefits in blood glucose control and as a dairy substitute for individuals with cow's milk allergies, making them a viable candidate for hospital-based enteral nutrition. Objectives: This study aims to determine the macronutrient content, flow test, food cost, and organoleptic test of non-dairy liquid food based on local ingredients. The study uses a completely randomized design. Methods: A complete randomized design was employed for this research. Product development activities were conducted in June 2022 at the Nutritional Kitchen of Jantung dan Pembuluh Darah Harapan Kita Hospital. Preparation of non-dairy liquid food using red beans as a base, proximate analysis of nutritional content, flow test through an NGT tube, food cost calculation, and organoleptic assessment involving ten respondents were carried out. Results: Proximate analysis of the formula yielded the following composition: water content 85,88%, ash 0,25%, protein 1,95%, fat 2,343%, carbohydrates 9,60%, and fiber 1,38%. The flow test for the red bean formula through the Fr 16 NGT tube demonstrated a rate of 50cc/31,90 seconds. The calculated food cost for one recipe of red bean formula was Rp. 8,734.00. Organoleptic evaluation results indicated that the majority of respondents favored the aroma (80%), taste (60%), color (100%), and texture (90%).Conclusion: The red bean formula meets the protein and carbohydrate requirements of the diabetes mellitus diet standards, while the fat and fiber content do not yet meet the diabetes mellitus diet standards.

Abstract

Background: Diabetes prevention can be pursued by utilizing abundant local food. Cilembu sweet potato is a staple food in demand by the community because it has a distinctive sweet taste. The higher starch content than other sweet potatoes makes Cilembu sweet potato a potential starch source, namely into liquid sugar with enzyme hydrolysis. Liquid sugar has advantages over crystal sugar; it dissolves easily during processing and is more practical. Cilembu sweet potato liquid sugar can be used as an alternative to prevent the occurrence of Diabetes Mellitus. Objectives: This study aims to determine glucose levels and acceptability of Cilembu sweet potato liquid sugar (Ipomoea batatas L.) by adding α-amylase and glucoamylase 1, 2, and 3 mL enzymes. Methods: This study used a quasi-experimental design using a Completely Randomized Design (CRD). This study consisted of 3 treatments and 3 replications, adding 1 ml, 2 ml and 3 ml of α-amylase and glucoamylase enzymes. The research on glucose levels was located at the Food Analysis Laboratory of the Jember State Polytechnic, and the acceptance test was carried out at the Faculty of Public Health, University of Jember, on 30 people aged 18-25 years. Glucose levels were tested using the Luff school method. Analysis of glucose level data used the One-Way ANOVA test, while the acceptance test used the Kruskal Wallis test. Results: The results of this study indicate that the lowest average test value for glucose levels in liquid sugar made from Cilembu sweet potato is with the proportion of adding 1 ml amylase enzyme, namely 31,55% with statistical test results p=0,000 with α=0,05. In the acceptability test, which included scent, texture, and taste, the highest score was found in liquid sugar with the addition of 1 ml of the enzyme with statistical test results p=0,012; p=0,014; p=0,000, while the color acceptability had the highest value in liquid sugar with the addition of 2 ml of the enzyme (p=0,004).Conclusion: The best formulation based on the glucose content and acceptability test is liquid sugar with adding 1 ml of enzyme.

Abstract

Background: Shivering is a frequent complication in patients undergoing surgery under neuraxial anesthesia. Shivering can increase oxygen consumption and lead to hypothermia, so it must be prevented. Objectives: This study aims to determine the difference between intravenous paracetamol and pethidine to prevent shivering after spinal anesthesia. Methods: This research is a double-blind, randomized, controlled clinical trial. This research was conducted at Haji Adam Malik General Hospital, Medan. This research was done in August 2022. The research sample was patients with spinal anesthesia at the Haji Adam Malik General Hospital Medan who met the research criteria. The Modified Crossley and Mahajan Scale (1-4) measured the degree of shivering. The subjects who met the inclusion criteria were 34 patients, with 17 patients in the group receiving pethidine and 17 receiving paracetamol. The data that will be collected is analyzed with the bivariate test using the Chi-square test CI 95% to compare categorical variables. Of the 34 patients, 17 patients in the group received pethidine, and 17 patients in the group received paracetamol. Furthermore, both groups were randomized to obtain a balanced group of 17 patients in each group. Results: In this study, the degree of shivering in the paracetamol and pethidine groups did not show a statistically significant difference with the value (p= 0,450). However, the highest degree of shivering was found in the paracetamol group with a score of 2 (significant tremor in the chest muscles), about 17,6%. While in the pethidine group, most scores suffer shivering, the highest score being 1 (intermittent and mild tremors in the jaw and neck muscles). Conclusion: There is no difference in the effect of paracetamol and pethidine as shivering prophylaxis in preventing post-spinal anesthesia shivering.

Abstract

Background: Disasters can cause emergencies that have the potential to impact food and nutrition crises, especially in the first five days (first phase of emergency response); therefore, assistance is needed in the form of providing food immediately. Pregnant women are vulnerable groups that can become victims of disasters. Insufficient intake by pregnant women during a disaster can lead to a potential incidence of infection, stunting, and malnutrition in infants. Additionally, disaster conditions can cause pregnant women to experience stress. Objectives: This study aimed to analyze the formulation of disaster emergency food biscuits in an effort to relieve stress in pregnant women victims of disasters. Methods: This type of research was purely experimental on the biscuit formula and had a completely randomized design with five formulas. The nutritional content was calculated using DKBM. The acceptability test at the organoleptic stage was quasi-experimental. The organoleptic quality tested on 3 limited panelists and 25 somewhat trained panelists was analyzed using the Kruskal Wallis test (α ≤ 0,05). Results: The results showed that the formula with the best acceptability was F1 (purple sweet potato flour 30 g; skim milk powder 10 g; soy protein isolate 5 g; nutmeg powder 7 g) with total energy per serving  247,4 kcal, which fulfills 11% of the energy needs of pregnant women. Giving 7 grams of nutmeg powder can potentially relieve stress in pregnant women if consumed one serving per day for 15 days. Conclusion:  An increasing number of substitutions resulted in lower acceptability and higher energy, protein, and fiber contents in biscuits. In addition, biscuits are produced with high nutritional content and can relieve stress. The formula with the best acceptability was obtained using F1 (7,5% purple sweet potato flour, 2,5% skim milk powder, 1,3% soy protein isolate, and 1,8% nutmeg) and had the potential to relieve the stress of pregnant female victims of the disaster.

Abstract

Background: Cosmetics have been widely used to enhance the appearance and make it look more attractive. One of the most commonly used cosmetics is lotion. As science and technology progress, many lotions are introduced to the market. As pharmaceutical regulations require, not all lotion products are safe, effective, and of high quality. However, many losses are caused by whitening lotion products in circulation, one of which is the addition of hydroquinone, a whitening substance that can cause damage to the skin. Objectives: This study aims to identify the hydroquinone content contained in whitening lotion. Methods: Experimental research using the Thin Layer Chromatography (KLT) method to test lotions for hazardous ingredients. It was conducted at the Chemistry Laboratory of Poltekkes Kemenkes Aceh in June 2022. Materials are whitening hand body lotion available online and not branded as many as five samples—determination of criteria, namely, low prices, high demand, and instant results. The single variable used in this study determines the presence or absence of hydroquinone in lotion samples. Results: This study has shown that five whitening lotion samples are positive. Sample S4 contains hydroquinone with an Rf value of 0,55 (< 0,05). Meanwhile, samples S1, S2, S3, and S5 were negative for hydroquinone. Conclusion: Some lotions tested have met the requirements of BPOM regulations and are safe to use, but one lotion is unsafe to use because it contains high hydroquinone.

Abstract

Background: Tempe contains bioactive compounds in the form of isoflavones, scientifically proven to have antioxidant abilities. In addition, banana peel antioxidants are quite high compared to the fruit flesh. Food products that are high in antioxidants have the potential to reduce various degenerative diseases. The combination of antioxidants from soybean tempeh and Ambon banana peel is expected to be one of the efforts to maintain health by minimizing the risk factors for chronic disease due to hypercholesterolemia. Objective: The study aimed to analyze the effect of varying soy tempeh and Ambon banana peel concentrations on tempeh steak's antioxidant activity and acceptability.Method: Research using design Quasi-Experiment, with one group posttest-only design. This research was conducted in January-March 2023. The research procedure began with making tempeh steak with the formulation of the comparison of soybean tempe: Ambon banana skin, namely F1 (30%: 70%), F2 (40%: 60%), F3 (50%: 50%), F4 (60%:40%). There were 4 experimental groups and 3 repetitions. Then, the antioxidant test was carried out using the DPPH method at the Jember State Polytechnic Bioscience Laboratory. The data was analyzed using this method by Kruskal Wallis. Acceptance test was carried out on 30 untrained panelists using the hedonic method at the Integrated Laboratory of FKM University of Jember and data analysis using the test Friedman, at a significance level of 95% CI.Results: The results of the antioxidant activity test showed no significant difference in the average antioxidant activity of tempeh steak (p= 0,951). The average results of antioxidant activity were F1 (70,61%), F2 (71.77%,) F3 (70,64%), F4 (71,44%). Acceptability test results showed significant differences in terms of aroma (p= 0,004), taste (p= 0,026), and overall (p= 0,004), but not significantly different in terms of color (p= 0,055) and texture (p= 0,157). The most preferred experimental group is F4[A2] (p= 0,004).Conclusion: The content of soy tempeh and Ambon banana skin contribute to each other in increasing the percentage of antioxidant inhibition so that it affects the increase in the antioxidant activity of tempeh steak. The higher the concentration of soy tempeh used, the higher the level of preference for the acceptance of tempeh steak. The product recommended in this study was the F4 sample with an average antioxidant activity yield of 71,44%, and the panelists preferred the F4 sample.
