Journal of SAGO Gizi dan Kesehatan (Nutrition and Health) is a peer-reviewed journal of a scientific nature contained in the Polytechnic of Health Ministry of Health of Aceh, who publish high quality of nutrition and health-related individuals, populations, groups and communities who are vulnerable to malnutrition and health and risk issues. The scope of the journal study associated issues of nutrition, food technology, nutrition and maternal and child health, environmental health, hygiene and sanitation, oral health, treatment of individuals/families and communities, and safety of medical drugs. The journal also seeks to raise awareness of the interrelationship between nutrition, exercise, physical activity, and lifestyle for improving health across the lifespan and to demonstrate how healthcare outcomes and policies can be improved with the adoption of a more nutrition-oriented approach. In this way, it aspires to provide an invaluable resource to nutrition and healthcare practitioners, as well as researchers and academics of nutrition studies. SAGO Gizi dan Kesehatan (Nutrition and Health) provides an initial rapid review of all submissions to determine suitability for external peer review. Authors can, if they wish, contact a member of the editorial board with potential submission ideas if they are in doubt as to whether or not they fit the scope or interests of the journal.

Abstract

Background: Food safety is essential for preventing foodborne diseases, particularly among schoolchildren who frequently consume snacks of uncertain hygienic quality. Evidence of hazardous food additives and microbial contamination in school snacks indicates the need to understand the behavioral factors underlying food safety practices among vendors.Objective: This study aimed to analyze the dominant factors associated with food safety practices among school snack vendors in Pasir Gombong Village, Bekasi, Indonesia.Methods: A cross-sectional study was conducted among 50 school snack vendors selected through accidental sampling in June 2025. Data were collected using structured interviews and validated questionnaires. Knowledge, attitudes, respondent characteristics, and food safety practices were analyzed using the chi-square test and multivariable logistic regression.Results: Knowledge and attitudes were significantly associated with food safety practices after adjustment for other variables. Vendors with good knowledge had 28.15 times higher odds of implementing good food safety practices than vendors with poor knowledge (OR = 28.15; p = 0.013). Vendors with positive attitudes had 12.86 times higher odds of implementing good practices than those with negative attitudes (OR = 12.86; p = 0.041).Conclusion: Knowledge and attitudes were the dominant factors associated with food safety practices. Food safety education should combine theoretical material with demonstrations, hands-on practice, and simulation to strengthen vendors’ knowledge, attitudes, and practical skills.

Abstract

Background: Adolescent girls are vulnerable to anemia, partly because of inadequate protein and iron intake. The 2023 Indonesian Health Survey reported an anemia prevalence of 15.5% among adolescents, with a higher proportion in females (18%) than in males (14%). Sorghum and soybeans are locally available ingredients that can be developed into nutrient-dense food products.Objectives: This study aimed to evaluate the sensory acceptance and nutrient composition of sorghum brownies substituted with soybean flour as a locally based food product with potential to support anemia prevention.Methods: A completely randomized design was used with three ratios of sorghum, wheat, and soybean flours: F1 (75:35:15 g), F2 (75:20:30 g), and F3 (75:5:45 g). A five-point hedonic test involving 40 semi-trained panelists assessed color, taste, aroma, and texture. The selected formulation was analyzed for moisture, ash, fat, protein, carbohydrate, and iron contents.Results: F1 had the highest mean scores for color (4.4) and aroma (4.3), whereas F2 had the highest scores for taste (4.1) and texture (3.96). F1 was selected based on the aggregate sensory scores. The selected formula contained 2.17% moisture, 1.53% ash, 23.24% fat, 9.72% protein, 43.33% carbohydrate, and 3.1125 mg iron/100 g.Conclusions: F1 showed the most favorable overall sensory profile and contained protein and non-heme iron. Sorghum-soy brownies may be further developed as a locally based food to support nutrient intake; however, their dietary fiber content, shelf life, iron bioavailability, and effectiveness in preventing anemia require further study.

Abstract

Background: Poor dietary diversity among young children is a major contributing factor to stunting. Children's feeding practices are influenced by local cultural practices and health workers.Objective: To determine the relationship between local culture and the role of health workers in promoting dietary diversity among children under five years of age in Lhokseumawe City. Methods: This cross-sectional study involved 385 children under five years of age in Lhokseumawe City and was conducted from February to March 2026. Participants were selected using a non-proportional stratified random sampling technique. Data were collected through interviews using a structured questionnaire to assess the local culture, cultural values, and the role of health workers. A 24-hour dietary recall was used to evaluate the dietary diversity of the children. The research instruments were tested for validity and reliability and deemed suitable for use. Data were analyzed using the chi-square test with a 95% confidence level.  Results: Most children achieved adequate dietary diversity (73.8%), were characterized by less supportive local cultural practices (52.7%), and had good involvement of health workers (62.1%). Significant associations were found between local culture (p = 0.001; OR = 2.27; 95% CI: 1.41–3.66) and the role of health workers (p = 0.001; OR = 3.78; 95% CI: 2.35–6.08) and children's dietary diversity. Children living in environments with less supportive local cultural practices were 2.2 times more likely to have low dietary diversity, while those who did not receive adequate support from health workers were 3.7 times more likely to have low dietary diversity.Conclusion: Local culture and health workers’ roles are significantly associated with dietary diversity in children under five. Strengthening nutrition education and counseling that are culturally sensitive may contribute to improving children's feeding practices and dietary diversity

Abstract

Background: The frequent consumption of street food among adolescents is a cause for concern because many types of street food are high in sugar, salt, and fat but low in essential nutrients. Nutritional literacy, body image perceptions, and pocket money allocation are thought to influence this behavior, although the findings of previous studies have been inconsistent.Objectives: To examine the associations between nutrition literacy, body image, pocket money allocation, and street food consumption frequency among junior high school students in Karangpilang District.Methods: This cross-sectional study was conducted at two junior high schools in the Karangpilang District of Surabaya from January to May 2026. A total of 173 students were selected using proportional random sampling method. Data were collected using the Short Food Literacy Questionnaire, Figure Rating Scale, and Semi-Quantitative Food Frequency Questionnaire. Associations were analyzed using chi-square tests at P < 0.05.Results: Most participants had above-average nutritional literacy, negative body image, and above-average pocket money allocation. Pocket money allocation was significantly associated with street food consumption frequency (p = 0.012), whereas nutritional literacy (p = 0.400) and body image (p = 0.428) were not.Conclusion: Pocket money allocation was associated with street food consumption frequency, but nutrition literacy and body image were not. Managing adolescents’ pocket money and improving the school food environment may help reduce the frequency of street food consumption.

Abstract

Background: Maternal nutrition is a critical determinant of pregnancy outcomes in Indonesia. While most studies emphasize nutrition‑specific interventions, limited evidence exists on how nutrition‑sensitive determinants influence access to supplementary feeding programs among pregnant women.Objectives: This study examined the role of socioeconomic, maternal, service, and environmental factors in shaping PMT uptake among urban pregnant women using nationally representative data from the 2023 Indonesia Health Survey (SKI).Methods: This study used secondary data from the 2023 Indonesia Health Survey (SKI) with an observational analytic cross‑sectional design. The analysis included household data and 26,651 urban pregnant women, with the uptake of the Supplementary Feeding Program as the dependent variable. Associations were tested using chi-square and prevalence ratios, followed by multivariate logistic regression to calculate adjusted odds ratios (AOR) and 95% confidence intervals (CI). Results: Bivariate analysis showed significant associations between supplementary feeding uptake and maternal, socioeconomic, and health service factors. However, in the multivariate model, only household economic status (AOR = 1.40; 95% CI: 1.30–1.50), receipt of social assistance (AOR = 1.35; 95% CI: 1.25–1.45), and pregnancy risk (AOR = 1.25; 95% CI: 1.15–1.35) were significant predictors. Environmental and service-related factors lost their significance after adjustment.Conclusion: Supplementary feeding uptake among urban pregnant women is primarily influenced by socioeconomic vulnerability and pregnancy risk. These findings provide policy relevance to guide the integration of nutrition-specific and nutrition-sensitive approaches within national stunting reduction strategies and the Sustainable Development Goals.

Abstract

Background: Chemotherapy is commonly used to inhibit the proliferation of cancer cells. However, its side effects may reduce nutrient intake, increase the risk of malnutrition, and adversely affect the patients’ quality of life, treatment response, and therapeutic outcomes. Evidence regarding factors associated with the risk of malnutrition among cancer patients undergoing chemotherapy in Indonesia, particularly in Palembang, is limited.Objective: This study aimed to analyze the factors associated with the risk of malnutrition among cancer patients undergoing chemotherapy at RSUP Dr. Mohammad Hoesin Palembang.Methods: This analytical observational study used a cross-sectional design and involved 110 respondents recruited through purposive sampling. Data were collected using the SNAQ (appetite), DASS-42 (stress level), B-IPQ (illness perception), SQ-FFQ for food intake during the previous month, PG-SGA for malnutrition risk, and body mass index (BMI) measurements for assessing nutritional status. Bivariate analysis was performed using the chi-square test with a significance level of p < 0.005.Results: Of the 110 respondents, 78 (70.9%) were at risk of malnutrition and 32 (29.1%) were not. Among the variables examined, cancer stage and appetite were significantly associated with the risk of malnutrition (p = 0.013 and p = 0.001, respectively). The proportion of respondents at risk of malnutrition was higher among those with advanced-stage cancer (78.4%) than among those with early stage cancer (55.6%). Patients with early stage cancer had lower odds of malnutrition than those with advanced-stage cancer (OR 0.345; 95% CI 0.146–0.814).Conclusion: Cancer stage and appetite are significantly associated with the risk of malnutrition. Nutritional screening and interventions should prioritize appetite management, particularly in patients with advanced-stage cancer.

Abstract

Background: The periorbital area is highly sensitive to oxidative stress, which triggers premature skin aging. Dayak onion (Eleutherine bulbosa) contains secondary metabolites that are potential natural antioxidants for protecting the periorbital area.Objectives: This study aimed to formulate an anti-aging eye cream using the ethanol extract fraction of Dayak onion with the highest antioxidant activity.Methods: A laboratory-based experimental design was used to evaluate the antioxidant activity and formulate it into an eye cream. The study was conducted from August to November 2024. Phytochemical screening was performed on powdered samples, ethanol extracts, and water, ethyl acetate, and n-hexane fractions. GC-MS analysis was performed on the water, ethyl acetate, and n-hexane fractions of the samples. The physical quality of the eye cream was evaluated, including its organoleptic properties, homogeneity, emulsion type, pH value, viscosity, spreadability, and adhesiveness. Data analysis included IC50 calculation and One-Way ANOVA testing. Results: The samples contained flavonoids, alkaloids, tannins, and saponins. GC-MS analysis identified 9,12-octadecadienoic acid, 9-octadecenoic acid, and hexadecanoic acid, whereas coumarin was found in the water and ethyl acetate fractions. The ethyl acetate fraction exhibited the highest antioxidant activity, with an IC50 of 25,12 ± 5,14 ppm. The Dayak onion eye cream met the requirements for homogeneity, viscosity, and adhesion, but its spreadability and pH values exceeded the standards. The eye cream demonstrated strong antioxidant activity, with an IC50 of 99,43 ± 12,39 ppm.Conclusion: The anti-aging eye cream possesses strong antioxidant activity with an IC50 of 99,43 ± 12,39 ppm and fulfills the physical quality criteria for homogeneity, adhesiveness, and viscosity.

Abstract

Background: Anemia remains a public health problem among adolescent girls. Inadequate protein intake may impair hemoglobin synthesis and iron transport, whereas prolonged menstruation may increase blood and iron loss. Evidence comparing these factors between anemic and non-anemic adolescent girls remains limited.Objectives: To compare protein adequacy and menstrual duration between anemic and non-anemic adolescent girls in the Sukapakir Health Center working area, Bandung.Methods: This analytical cross-sectional study was conducted in January–February 2025. Sixty-four female students aged 15–19 years were selected using purposive sampling and divided into anemic (n = 32) and non-anemic (n = 32) groups. Anemia was defined as a hemoglobin level <12 g/dL. Protein intake was assessed using two nonconsecutive 24-hour dietary recalls, and menstrual duration was obtained using a questionnaire. Differences between groups were analyzed using the Mann–Whitney U test at α = 0.05.Results: Protein adequacy was lower in the anemic group (74.4 ± 29.6%; mean rank 27.88) than in the non-anemic group (87.8 ± 23.9%; mean rank 37.13; p = 0.047; r = 0.248). Menstrual duration was longer in the anemic group (5.97 ± 1.28 days; mean rank 37.09) than in the non-anemic group (5.34 ± 1.06 days; mean rank 27.91; p = 0.040; r = 0.257). Both effect sizes were small.Conclusions: Adolescent girls with anemia had lower protein adequacy and longer menstrual duration than those without anemia. Nutrition education to support adequate protein intake and targeted hemoglobin monitoring may contribute to anemia prevention.

Abstract

Background: Food handlers play an essential role in ensuring food safety. However, evidence on the impact of sanitation and hygiene training on knowledge, attitudes, and practices in Indonesia remains limited.Objectives: To evaluate the effect of sanitation and hygiene training on food handlers’ knowledge and attitudes and to describe their practices after the intervention.Methods: This quasi-experimental study used a nonequivalent control group design and was conducted from March to August 2025 at two catering companies in Bandung, Indonesia. Thirty food handlers were selected using purposive sampling. Knowledge and attitudes were measured before and after the intervention using a structured questionnaire, and practices were assessed once afterward using a checklist. Within-group changes were analyzed using the Wilcoxon signed-rank test, and between-group differences in change scores using the Mann–Whitney U test.Results: The intervention group showed greater improvements in knowledge and attitudes than the control group did. The median change in knowledge score was 20 (IQR = 27) in the intervention group and 0 (IQR = 4) in the control group (p < 0.001; effect size = 0.65). The corresponding attitude changes were 16 (IQR = 30) and 0 (IQR = 4) (p < 0.001; effect size = 0.65). Good practices were observed in 53.3% of the control and 33.3% of the intervention groups.Conclusion: Sanitation and hygiene training improved knowledge and attitudes. Because the practices were assessed only once, they could not be interpreted as a training effect. Standard operating procedures, supervision, reminders, and refresher training are required to support food safety practices

Abstract

Background: Critically ill patients frequently develop gut dysbiosis, characterized by reduced microbial diversity and increased colonization by opportunistic pathogens. These alterations may contribute to gastrointestinal dysfunction and are associated with small intestinal bacterial overgrowth (SIBO)-related outcomes. Enteral nutrition is a key nutritional strategy for critically ill patients and may influence gut microbiota composition; however, its role in modulating the microbiota and its implications for SIBO-related outcomes remain unclear.Objectives: This systematic review aimed to synthesize evidence on the relationship between enteral nutrition and gut microbiota modulation in critically ill adults and explore its potential implications for SIBO-related gastrointestinal outcomes.Methods: A systematic review was conducted following the Preferred Reporting Items for Systematic Reviews and Meta-Analyses (PRISMA 2020) guidelines and registered in the PROSPERO database (CRD420261384432). Literature searches were performed in PubMed and Google Scholar for studies published between 2020 and 2026. Observational studies and randomized controlled trials involving critically ill patients receiving enteral nutrition, with outcomes related to the gut microbiota, gastrointestinal function, or SIBO were included. Data were extracted and synthesized narratively and thematically. Results: Seven studies were included in the meta-analysis. Evidence from studies directly assessing microbiota has demonstrated reduced microbial diversity and increased abundance of opportunistic pathogens during critical illness. Studies evaluating fiber- or prebiotic-containing enteral formulas suggested potential increases in short-chain fatty acid (SCFA)-producing bacteria, although the findings remained inconsistent and were influenced by antibiotic exposure and clinical severity. Only one of the included studies directly evaluated SIBO.Conclusion: Enteral nutrition may influence the gut microbiota composition in critically ill patients; however, direct evidence regarding SIBO remains limited. Further prospective studies using standardized microbiota and SIBO assessment methods are needed before the clinical implications for nutritional practice can be more clearly established.
