Abstract

Blue swimmer crab (Portunus sp.) is one of the aquatic products which also the member of crustacea with high value as local commodity and export commodity. Weight changes in blue swimmer crabs can occur during handling time and steam process. This research aimed to determine different handling time on weight changes, proximate composition and amino acids of blue swimmer crab (Portunus sp.). The handling times used in this research were 0 hours (J0), 2 hours (J2), 4 hours (J4), 6 hours (J6) conditioned in ambient temperature. Weight lost before and after steam process of blue swimmer crabs showed significant differences in J6. Proximate compositions did not show significant differences in J0 and J6. Amino acids analysis determined by HPLC method and and did not show significant differences in J0 and J6 except for methionine, histidine, arginine, serine, and glutamic acid.

Abstract

Proper harvesting time determines the physicochemical characteristics of carrageenan. The purpose of this study was to determine the physicochemical characteristics of carrageenan extracted from Kappaphycus alvarezii at various different harvesting times from the Bontang Coastal, East Kalimantan. This study consisted of 7 treatments at the harvesting times, which were harvested at 30; 35; 40; 45; 50; 55 and 60 days. The parameters observed included yield, moisture content, ash content, viscosity and gel strength. The results showed the highest yield at the age of 50 days of harvest (46.91%), the highest viscosity at the age of55 days harvest (50.25 cP), and the highest gel strength at 40 days of harvesting at 60.14 g/cm2.

Abstract

The aim of study was to formulate solid soap made from Eucheuma cottonii seaweed which has antiseptic properties. This study used a Complate Randomized Design (CRD) with one factor adding extractE. cottonii seaweed (0 ppm, 250 ppm, 500 ppm and 750 ppm). The steps included sample preparation, extraction, production of antiseptic soap, chemical physics test (moisture content, pH, free alkali, foam stability, and hardness) and antibacterial test. The results showed that the addition of E. cottonii seaweed extract had a significant effect on free alkali, foam stability, and soap hardness except the moisture contentand acidity (pH) of the soap. Moisture content of solid soap ranged 20.03-27.62%, pH 11.22-11.57, the free alkali value was 0.05-0.53%, foam stability was 42.77-74.42%, and hardness was in the range of 102.10-387.84%. Antibacterial activity test showed inhibitory diameter in E. cottonii extract soap ranged 11.08-17.15 mm, classified as a strong antibacterial activity (> 11 mm), while the antibacterial inhibitory diameter of E. cottonii extract was 0–12.26 mm. The higher the concentration of seaweed extract E. cottonii, the higher the inhibition zone (antibacterial activity) of soap produced. The best treatment of antiseptic soap produced was seaweed extract with concentration of 750 ppm which had the highest inhibition zone against S. aureus compared to other treatments.

Abstract

West Aceh Region has Nypa fruticans mangrove community distributed almost ±100 Ha. N.  fruticans  leaves have been used as traditional cigarette paper. The objective of this study was to explore bioactive compound of  N. fruticans from the coast of West Aceh as antioxidant. The extraction used 3 solvents including methanol (polar), etyl acetate (semi polar), and n-hexane (non polar). The result showed the methanol extract contained  bioactive compound content such as phenolic, flavonoid, tannin, saponin, and steroid while the etyl acetate extract comprised phenolic, tannin, and steroid. Moreover, n-hexane extract only had steroid compound. The result of antioxidant activit assay showed etyl acetate extract had IC50 value 8.81 µg/mL, methanol extract had IC50 value 9.31 µg/mL and n-hexane extract was 238.47 µg/mL with ascorbic acid as positive control. It is indicated the presence of phenolic, flavonoid, tannin, and saponin in the ethyl acetate extract play the role as antioxidant.

Abstract

Seaweed is one of Indonesia’s marine biological resources which has potential to produce alginate which can be used for food and non-food industries. Several studies had been carried out in an effort to improve the quality of alginate extraction. This study aims to determine the effect of extraction temperature on the quality of sodium alginate from Sargassum muticum. This study used variations in extraction temperatures, namely 30; 40; 50; 60 and 70°C. The parameters observed included yield (%), moisture content (%), ash content (%), pH, whiteness degree and functional groups of alginate. The results showed that the difference in extractiontemperature of sodium alginate had a significant effect on yield and viscosity, but did not significantly affect water content, ash content, and whiteness degree. Extraction temperature of 60°C produced the best yieldand viscosity, 14.90±2.26% and 236.10±36.61 cPs, respectively.

Abstract

The aim of this research was to determine the effect of addition of pectin on characteristics of edible film from gelatin of red snapper (Lutjanus argentimacalatus) skin. Concentration of pectin used were 0%, 0.2%, 0.4%, 0.6%, 0.8% and 1%. Water content, thickness, tensile strength, elongation, and the transmition rate of the water vapor of edible film were analysed. Results from analysis of variance showed that different concentration of pectin significantly affected (P<0.05) on the water content, thickness, tensile strength, elongation, and transmition rate of water vapor of edible film. Therefore, it was suggested that addition of 0.6% of pectin showed a good quality of edible film and in accordance with the Japan International Standard (JIS).

Abstract

Smoke catfish (Pangasius hypophthalmus) processing place produces waste in the form of fish entrails. Abdominal fat is the main component of fish entrails and is a source of fish oil. This study was aimed to determine the physicochemical characteristics and composition the catfish abdominal fat. The oil was extracted by rendering the abdominal fat at 70°C for 5 h followed up by purification through bentonite and active charcoal. Crude catfish oil was observed to be semi-solid in texture, yellow and fishy. The purification improved the characteristics of the fish oil. The purified fish oil was white and less fishy. Furthermore, the purification step reduced the free fatty acid content, the acid number and peroxide value up to 11; 4 and 3 fold, respectively. Palmitic, stearic and myristic acid dominated saturated fatty acid group, representing 26.22; 5.06 and 2.85% of the total fat, respectively. Meanwhile, oleic and linoleic represented 40.14 and 19.97 of the total fat, respectively and were the dominant fatty acid of the unsaturated fatty acid group.

Abstract

The quality of salted fish depends on the quality of raw material as well as the processing methods. The aim of this work was to study the processing profile of the salted fish in PHPT Muara Angke. Data was collected from the annual salted fish production data in Muara Angke from January 2017 to July 2018, as well as from observation and interview with 25 salted fish producers using snowball sampling method. The results showed that the processed fish species were very diverse and the processing was carried out using traditional methods. Frozen fish were used more frequently than the fresh one. The ground water and crystal salt were used in the processing.Pickling was widely used for salting method rather than dry salting or wet salting. Drying of the fish was carried out traditionally under the sun. However, bleaching agent was still used by some producers. In conclusion, the processing of salted fish in PHPT Muara Angke has not appliedsanitized and hygiene production processes.

Abstract

The quality of fresh fish will decrease immediately after death. One of the indicators of fish quality is the changes of the gills color. The aim of this research was to determine the changes of red color in the gills of tilapia using image processing as an indicator of fish freshness. The research method used is the Explanatory Research where the independent variable (x) is tilapia which stored at room temperature for 12 hours. The dependent variable (y) was the intensity value of red. The quality of fish could be grouped into several categories, such as high quality, good quality, limit of acceptability and spoilt. The Observation was carried out with a time of 0 hours to 12 hours (4 hour interval). The results showed that storage time affected the deterioration of fresh quality. The high quality category has a red percentage value of 82.18%. Fresh category has a red percentage value of 67.10%. The limit of acceptability category has a value of 38.52% and the spoiltcategory has a red percentage value of 9.92%.

Abstract

Dagger-tooth pike conger fish (Muraenesox cinerus) is known to have high edible portions and white meat, thus can be used as a surimi raw materials. However, the textural quality of this fish meat is relatively poor after washing process of surimi. This reserch was aimed to analyze the effects of TGase activator and STPP addition to increase the textural quality of surimi malong. The method used is a factorial experiment with the addition of activator TGase 0.2; 0.4 and 0.6 and STPP at concentrations 0; 0.2; 0.5 and 0.8. Parameters observed were texture profile analysis (TPA), water holding capacity (WHC) folding test, bite test, and scanning electron microscopy (SEM). The results showed that the addition of STPP and activator TGase (Ca) has significant effect on increasing the hardness, fracturability, chewiness, gumminess, bite test and the folding test. Furthermore, microscopies structure (SEM) of malong surimi showed smooth and solid surfaces.
