Abstract

THE UTILIZATION OF RED GINGER POWDER (Zingiber officinale var. Rubrum) ON ORGANOLEPTIC CHARACTERISTIC OF MUTTON MEATBALLS. This study was conducted to evaluate the utilization of red ginger powder on the organoleptic characteristic of mutton meatballs. The materials used were fresh mutton meat on the hamstrings, tapioca flour, salt, flavoring, garlic, pepper, red ginger powder, ice cubes and processing equipment tools. The experimental design used in this study was a Completely Randomized Design of five treatments with 30 replications. The treatment was 300 g of meat and 0 g red ginger powder (R0), 300 g of meat and 1.5 g red ginger powder (R1), 300 g of meat and 3.0 g red ginger powder (R2), 300 g of meat and 4.5 g red ginger powder (R3), and 300 g of meat and 6 g red ginger powder (R4). Organoleptic testing performed was using the hedonic quality test. The variables measured consisted of color, flavor, taste and elasticity of meatballs. Determination of the average difference among treatments was done by Tukey (HSD) test. The results showed that the treatments affected significantly on flavor and taste. However, treatments did not affect significantly on color and elasticity of meatballs. The use of 3g red ginger powder could provide acceptance levels on organoleptic characteristic of mutton meatballs. Keywords: Mutton meat, red ginger, Meatballs

Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh pencincangan, penggilingan dan pengirisan daging ayam petelur afkir terhadap daya mengikat air (DMA), kadar air, pH dan organoleptik ilabulo. Penelitian ini dilakukan dengan menggunakan. Rancangan Acak Lengkap (RAL) dengan 3 (tiga) perlakuan (P1) pencincangan, (P2) penggilingan, dan (P3) pengirisan dan 6 (enam) ulangan. Hasil ANOVA (analysis of variance) menunjukan bahwa perlakuan pencincangan, penggilingan dan pengirisan memberikan pengaruh yang tidak nyata (P>0,05) terhadap DMA, kadar air, pH dan sifat organoleptik ilabulo. Nilai rataan pada perlakuan P1 (Pencincangan) untuk DMA (30,20), Kadar air (42,06), pH (5,25) Organoleptik (warna 5,1, aroma 4,8, tekstur 4,6, cita rasa 5,1), P2 (Penggilingan)  DMA(32,75), Kadar air (43,67), pH (5,21), Organoleptik (warna 5,2, aroma 5,3, tekstur 4,6, cita rasa 5,2), P3 (Pengirisan) DMA (31,35), Kadar air (42,46), pH (5,20), Organoleptik (warna 4,7, aroma 5,3, tekstur 4,5, cita rasa 4,9) tidak berbeda nyata pada (P>0,05). Berdasarkan hasil analisis data dan pembahasan untuk semua variable maka disimpulkan bahwa perlakuan pencincangn, penggilingan dan pengirisan daging ayam petelur afkir memberikan pengaruh yang sama terhadap kadar air, daya mengikat air, pH dan organoleptik ilabuloKata Kunci : Daging ayam afkir, pencincangan, penggilingan, pengirisan, ilabulo.

Abstract

Tujuan penelitian ini ialah untuk mengetahui sifat fisik dan organoleptik dari bakso daging sapi dengan menggunakan tepung talas belitung. Penelitian ini menggunakan Rancangan Acak Lengkap dan pengukuran data organoleptik menggunakan uji hedonik yaitu dengan menggunakan skala hedonik. Sebagai perlakuan ialah level tepung talas belitung pada bakso, yaitu 5%, 10%, 15%, 20% dan 25% dari berat daging. Analisa meliputi sifat Fisik bakso yaitu, Kadar air, daya mengikat air dan susut masak serta pengujian organoleptik meliputi warna, tekstur, kekenyalan dan citarasa bakso. Analisis ragam menunjukkan bahwa level tepung talas belitung hingga 25 % dari berat daging memberi pengaruh berbeda sangat nyata (P<0,01) terhadap sifat fisik bakso yaitu kadar air dengan rataan berkisar antara 61,75%-66,83%, susut masak bakso daging sapi dengan rataan berkisar antara 9,74%-24,96% dan memberi pengaruh berbeda  nyata (P<0,05) terhadap daya mengikat air dengan rataan berkisar antara 18,51%-41,56%. Analisis ragam untuk uji organoleptik menunjukkan bahwa perlakuan memberi pengaruh berbeda nyata (P<0,05) terhadap warna bakso dengan rataan skor berkisar antara 4,55-5,32. Perlakuan memberi pengaruh berbeda sangat nyata (P<0,01) terhadap tekstur dengan rataan skor berkisar antara 3,34-5,55, kekenyalan dengan rataan skor 3,95-5,66 dan citarasa bakso daging sapi dengan rataan skor 4,84-5,53. Dapat disimpulkan bahwa penambahan level tepung talas belitung hingga 20% dari berat daging sudah cukup untuk menghasilkan bakso daging sapi dengan sifat fisik yang baik dan secara organoleptik dapat diterima oleh konsumen.

Abstract

RELATIONSHIP OF WEIGHT BIRTH PIGLET WITH ADDITION OF AGENCY WEIGHT, WEANING WEIGHT, MORTALITY, AND LITTER SIZE WEANING IN LIVESTOCK PT. KARYA PROSPEK SATWA. This study aims to determine how much the relationship of birth weight with weight gain, weaning weight, mortality, and litter size of weaning in animal husbandry companies owned by Animal Prospects. The material used is 7 pregnant sows from Yorkshire and Landrace, with an average body weight of 140 kg which will be taken by 54 children randomly. Furthermore, this research data obtained from weighing piglets during parturition, weighing weekly during weaning and weighing when weaned and taking data on live and dead piglets during the study. The data is then processed by procentage descriptive method and evaluated by simple correlation (r) and determination (R) tests. The variables measured in the study were body weight gain, weaning weight, mortality, and weaning litter size. Birth weight has a very close relationship with weight gain and weaning weight, but litter size weaning has a very weak relation. Abstract

ABSTRACT RENTABILITY ANALYSIS OF LAYING DUCK FARM AT   THE WOLAANG VILLAGE LANGOWAN TIMUR DISTRICT OF MINAHASA REGENCY. Study was conducted at Wolaang village, East Lagowan district of Minahasa regency on August 8 to September 5, 2015. The objective of this study was to evaluate the rentability laying duck farm  at the Wolaang village. Survey method was applied in this study. Wolaang village was defined as study location and chosen the purposive sampling based on consideration of the highest duck population (5924 heads), widest wet rise areas of 161.35 ha, and more than 20 animal farmers. Data of primary and secondary bases were used in this study. Rentability  analysis model was applied using formula, R= L/M x 100%. Results showed that animal farmer education was 60 percents passed the elementary school, 25 percents passed junior high school and 15 percents passed senior high school. The period of raising animals of the 1- to 10-year experience was 25 percents, the period of the 11- to 20 year experience was 20 percents, that of the 21- to 30 year experience was 25 percents, that of the 31- to 40-year experience was 15 percents, that of the 41- to 50-year experience was 10 percents, and that of more than 50-year experience was 5 percents. The rentability analysis found the value of 69 percents indicating that the use of infestation financial capital of IDR 100,000.- was able to gain the benefit of the IDR 60,000.-. The reach of the values of R was more than the deposit rent of the BRI bank of 6.5 percents. Therefore, it can be concluded that farm rentability of laying duck was more than the BRI bank deposit rent.   Key word: Laying duck, rentability.

Abstract

UTILIZATION OF ORANGE SWEET POTATOES   FLOUR (Ipomoea trifida) AS A SUBSTITUTE OF CORN TO THE PERCENTAGE OF CARCASS, ABDOMINAL FATS AND LIVER ORGANS OF AYAM KAMPUNG SUPER. This study aims to determine the percentage of replacement of some corn with orange sweet potato flour (Ipomoea trifida) in ration   and its effect on carcass, abdominal fat and liver of super native chicken. This research used a 80 of chiken at six week old. Complete Randomized Design consist of 4 treatments and 5 replication were used as methods. The tratment were formulated as follow R0 Ration witout addition of orange sweet potatoes flour, R1 57% corn + 2.5 orange sweet potatoes flour, R2 55% corn + 5% orange sweet potatoes flour, R3 52.5 % corn + 7.5 % orange sweet potatoes flour. Research result showed that the addition of 2.5- 7.5% orange sweet potatoes flour in ration shows significant difference (P<0,05) on the percentage of carcass, where treatment using orange sweet potatoes flour up to 7.5% could increase the percentage of carcass. The treatment gave high sinificantly effect (P<0.01) on the percentage of abdominal fat. Percentage of liver on this research shows no sinificant effect (P>0.05). The conclution of this research is the giving of orange sweet potatoes can be used as substitution of corn untuil 7.5 % in ration because it can increase percentage of carcass, decrease of abdominal fat percentage and does not interfere.function of liver of  super native chicken.key words: orange sweet potatoes, a super native chicken

Abstract

ABSTRACT ANALYSIS OF PRODUCTION FACTOR UTILIZATION AT LAYING HEN FARMS (CASE STUDIES AT UD. KAKASKASEN INDAH AND CV. NAWANUA FARM). Laying hen farm can support the government program due to its prominence in egg productivity. The problem that must be evaluated were how much the profit in one period of production gained and how many the scale of laying hen farm to reach the break event point. The laying hen farms used in this study were UD. Kakaskasen Indah and CV. Kawanua Farm. The objectives of this study were to evaluate utilization of production factor, profit level and break event point. Research was conducted by survey method. Data were collected based on field observation and direct discussion with the owners of laying hen farms. Results showed that both laying hen farms had the largest production costs of 69.44% for animal feeding on CV. Kawanua Farm and 76.66% for animal feeding on UD. Kakaskasen Indah. Analysis of profit level on CV. Kawanua Farm were Rp. 5,247,257,316 per production period with farm scale of 21,000 heads of animals per production period. The BEP were Rp. 209,297,896 for 10,956 heads of animals, with MOS of 94.36% and ROI of 1.78. Analysis of profit level on UD. Kakaskasen Indah were Rp. 17,523,288,446 per production period with farm scale of 60,000 heads of animals per production period. The BEP were Rp. 517,417,088 for 24,851 heads of animals, with MOS of 96.38% and ROI of 1.25. Results of analysis showed that both laying hen farms were using the capital efficiently as indicated by profitable values of MOS and ROI above the break event point.  Key Words : Production factor, BEP, MOS, ROI

Abstract

PHENOTYPE CHARACTERISTICS OF SOME QUANTITATIVE TRAITS OF NATIVE CHICKEN IN MINAHASA. This study aims to obtain a measure of the phenotypic character of the quantitative traits of native chickens in Minahasa, North Sulawesi. This research was useful as additional information about the quantitative character of native chickens in Minahasa as a reference in efforts to preserve genetic resources (SDG) both for the development of native chickens and other breeding purposes. The material used was 291 male and female native chickens that had been separated by age (6 months and above) and had reached adult sex in the Minahasa Regency. The research method used was descriptive analysis (average, standard deviation, coefficient of variation and correlation) and continued withT-test. Retrieval of data by direct observation and measurement of quantitative properties based on the observed parameters. The results of this study illustrate the phenotypic character of quantitative traits of male and female native chickens in Minahasa where the size of the FL (femur length) and WL (wing length) were not different or the same in both sexes. SC (shank circumference) and CL (comb length)   were     significantly  different (P<0.05), while the trait of TL (tibia length), SL (shank length), TFL (third finger length), CH (comb height) showed differences very significant (P<0.01). It can be concluded quatitavive characteristics of native chicken in Minahasa were diverse and correlate from high to low.Keywords: native chicken, phenotype, quantitative characteristics.

Abstract

Study was conducted to evaluate the effect of feed restriction and source of different crude fiber on carcass weight and commercial pieces of broiler with Cobb strain. Study was using 24 broilers with Cobb Strain. Restriction of 20 percent feed and different sources of crude fiber were applied to broilers at age of 21to 28 days old. Ration was fed ad libitum to broilers until birds reached age of42 days old. . This research was using a Completely Randomized Design (CRD) in Factorial pattern of 2x4 with 3 replications. As a factor A was restricted feeding consisted of without restrictions (A0), and 20 percents restricted ration (A1). A factor B was source of crude fiber consisted of commercial feed (B0), commercial feed with coffee hull meal (B1), commercial feed with rice bran (B2), and commercial feed with coconut pulp (B3). There were treatment combinations including A0B0, A0B1, A0B2, A0B3, A1B0, A1B1, A1B2 and A1B3. The variables measured were percentages of commercial pieces consist of breast, thigh, wing and brisket. The data analyzed used variance analysis. The honestly significance difference test was used to determine which one of treatment was significantly different from each other. The results showed that the combination treatment of feed restriction and source of crude fiber in feed gave a very significant different effect (P <0.05) on carcass weight of broiler with Cobb strain. Sources of fiber crude affected significantly (P<0.05) percentages of thigh, breast, brisket and live weight. Treatment of feed restriction affected significantly (P<0.05) percentage of wing. Restriction of 20 percents with coconut pulp as source of crude fiber produced better commercial carcass of broilers withCobb strain. Keywords: Feed restriction, crude fiber source, broiler commercial pieces, Cobb strain

Abstract

THE CHEMICAL QUALITIES OF FERMENTED DUCK IMMERSED WITH DIFFERENT LEVELS OF L. plantarum AND STORED UNDER LOW TEMPERATURE. The objective of this research was study the effect of soaking time on chemical (pH, water content, acetic acid content and total lactic acid bacteria) of duck meat fermentation using L. plantarum. Ducks was done by soaking duck meat in culture L.plantarum and stroraged at cooling temperature. Soaking was done with different level of L. plantarum. This experiment was arranged in a completely randomized design consisted of five levels of L. plantarum. Data were analyzed by variance analysis. Significantly difference treatment effects on variable measures were tested using honestly significant difference (HSD). The result showed that treatments had significantly difference (P<0,01) on pH and total lactic acid bacteria of duck meat fermentation, but did not affect significant (P>0,05) on water content and acetic acid content of duck meat fermentation. Therefore, it can be concluded that soaking at 15% level of L. plantarum and storage at cooling temperature can conserve duck meat until 16 days and ducks fermentation were still constant.
