Abstract

Overweight in adolescents is a serious nutritional problem with a national prevalence of 32.8% in Indonesia. One contributing factor is the high consumption of snacks with elevated fat content and low dietary fiber. This study aimed to analyze the effect of red lentil flour and oyster mushroom substitution on the hedonik acceptability and nutritional content of chicken wonton as a high-fiber, low-fat snack alternative for overweight adolescents. This study used an experimental design with a Completely Randomized Design (CRD) approach involving three formulas: F0 (kontrol), F3, and F4. Hedonik tests were conducted by 30 semi-trained panelists aged 16–18 years, evaluating taste, color, aroma, and texture. Data were analyzed using the Shapiro-Wilk, Friedman, and Wilcoxon Signed-Rank tests. Results showed that substitution significantly affected taste (p = 0.003), while color, aroma, and texture showed no significant differences. All formulas remained in the "like" category. Laboratory analysis revealed that F4 had the lowest fat content (3.79 g) and highest total dietary fiber (4.92 g) per serving, contributing 4.46% and 13.33% of daily requirements based on the 2019 Nutritional Adequacy Rate (RDA), qualifying for a "fiber source" claim per BPOM Regulation No. 22/2019. Red lentil flour and oyster mushroom substitution effectively increases fiber content and reduces fat in chicken wonton without significantly reducing hedonik acceptability.

Abstract

The prevalence of overweight among Indonesian adolescents increased from 7.3% (2013) to 13.5% (2018), partly driven by habitual consumption of high-calorie, high-fat, and low-fiber snacks. This study aimed to analyze the effect of substituting red kidney bean flour in gyoza skin and wood ear mushroom in the filling on organoleptic acceptability and nutritional content as a high-fiber snack for overweight adolescent girls. An experimental study using a Completely Randomized Design (CRD) was conducted with three formulas tested: F0 (control), F1 (30% red kidney bean flour, 50% wood ear mushroom), and F2 (40% red kidney bean flour, 60% wood ear mushroom). Hedonic evaluation was performed by 30 semi-trained panelists and data were analyzed using Friedman and Wilcoxon tests (α=0.05). Nutritional content was assessed through proximate and dietary fiber analysis at the Nutrition Laboratory of FKM Universitas Airlangga. Results showed that substitution significantly affected color, aroma, and texture (p<0.05), but not taste (p=0.299). Formula F1 obtained the highest overall acceptability mean score among modified formulas (3.66), with superior performance in texture (4.30) and taste (3.67). Based on nutritional analysis, F1 contained 3.35 g dietary fiber per serving, 5.38 g fat per serving, and 240 kcal per serving. Formula F1 is recommended as the best formula, providing a balance between organoleptic acceptability and nutritional quality as a high-fiber functional snack for overweight adolescent girls.

Abstract

Adolescent overweight is associated with high-fat and low-fiber dietary patterns, including the consumption of processed foods such as sausages. This study aimed to analyze the effect of tofu and red lentil flour substitution in chicken sausage on sensory acceptability and nutritional content as an alternative snack for overweight adolescent girls. This quantitative experimental study employed a Completely Randomized Design (CRD) with three tested formulations: F0 (control), F1 (45%), and F2 (60%). Hedonic tests were conducted by 30 untrained panelists evaluating color, aroma, taste, and texture using a 5-point Likert scale. Data were analyzed using the Shapiro–Wilk test, Friedman test, and Wilcoxon signed-rank test. The results showed significant differences in color (p=0.030), taste (p=0.000), and texture (p=0.000), but not in aroma (p=0.104). F2 obtained the highest scores for color (4.30) and aroma (4.53), while F0 scored highest for taste (4.43) and texture (4.23). Nutritional analysis indicated that increasing the level of substitution increased fiber content from 0.58 g to 4.40 g per serving and reduced fat content from 6.39 g to 5.45 g per serving. This study concludes that tofu and red lentil flour substitution affects the sensory acceptability of chicken sausage and has the potential to produce a high-fiber, low-fat snack alternative for overweight adolescent girls.

Abstract

Background: Tuberculosis (TB) remains a major public health problem and one of the leading infectious diseases worldwide. The success of TB transmission prevention is strongly influenced by family knowledge and attitudes toward disease prevention efforts. Objective: This study aimed to determine the relationship between family knowledge and attitudes toward the prevention of tuberculosis transmission in the working area of Wundulako Public Health Center. Methods: This study employed a quantitative cross-sectional design involving 39 respondents selected according to the study criteria. Data were collected using a structured questionnaire and analyzed through univariate and bivariate analyses. The relationship between variables was tested using the Spearman Rank test with a significance level of 0.05. Results: The majority of respondents were aged 26–35 years (53.9%), female (87.2%), had a senior high school education (64.1%), and were categorized in other occupations (74.3%). Most respondents demonstrated good knowledge regarding TB (76.9%), while 92.3% showed positive attitudes toward TB prevention. Bivariate analysis revealed a significant relationship between family knowledge and attitudes and the prevention of TB transmission, with a p-value of 0.001 (p<0.05). Conclusion: Good knowledge and positive family attitudes are significantly associated with efforts to prevent TB transmission. Strengthening health education programs and enhancing family involvement are essential strategies to support tuberculosis control and prevention within the community.

Abstract

Ground spice paste is a widely consumed food product sold in traditional markets with varying environmental conditions. Differences between wet and dry stalls may affect environmental sanitation and the microbiological safety of the product, including contamination by Staphylococcus aureus. This study aimed to determine the Total Plate Count (TPC) and identify S. aureus in cooked ground spice pastes sold in traditional markets in Samarinda City. A descriptive observational study was conducted using 12 samples consisting of rendang, soup, and rawon spice pastes collected from wet and dry stalls. TPC was determined using the pour plate method on Plate Count Agar (PCA), while S. aureus was identified using Mannitol Salt Agar (MSA) followed by biochemical tests. Environmental sanitation conditions were assessed through direct observation, and the data were analyzed descriptively. The results showed that all samples met acceptable organoleptic criteria; however, several samples exceeded the maximum TPC limit established by SNI 7388:2009 and were contaminated with S. aureus. Samples exceeding the maximum TPC limit were more frequent in wet stalls (83.3%) than in dry stalls (66.7%), with the highest count found in rendang spice paste. Meanwhile, S. aureus was detected more frequently in wet stalls (50.0%) than in dry stalls (33.3%). The higher descriptive proportions of microbiological contamination in wet stalls coincided with poorer sanitation conditions, including standing water, high humidity, and open storage. These findings indicate that cooked ground spice pastes sold in traditional markets are susceptible to microbiological contamination, particularly in stalls with inadequate sanitation.

Abstract

Fishermen are a group of workers at high risk of developing occupational diseases (OCD) due to exposure to extreme weather, heavy physical activity, non-ergonomic working positions, and limited implementation of occupational safety and health (K3). This study aims to analyze the risks and factors associated with Occupational Occupational Diseases (OCD) among fishermen in Gampong Lampulo, Banda Aceh City. This study used a quantitative method with a cross-sectional design. The study population was 450 fishermen working on vessels measuring 6–10 GT, with a sample of 82 respondents selected using a purposive sampling technique. Data were collected using a questionnaire administered to respondents, and then analyzed using the Chi-Square test at a 95% confidence level. The results showed that 53 respondents (65%) experienced Occupational Diseases (OCD). The most common type of OCD was muscle pain (49%), followed by dermatitis (26%), and work-related injuries (24%). Bivariate analysis results showed that length of service (p=0.028), knowledge (p=0.016), and personal hygiene (p=0.017) were significantly associated with the incidence of PAK in fishermen. Meanwhile, age did not show a significant association with PAK (p=0.086). This study concluded that longer service periods, low levels of knowledge, and poor personal hygiene can increase the risk of PAK in fishermen. Therefore, efforts are needed to improve occupational health and safety education, foster clean and healthy lifestyles, and strengthen occupational health programs to reduce the risk of PAK in fishermen.

Abstract

Prehypertension among university students represents a transitional cardiovascular condition with significant potential to progress toward established hypertension, warranting increasing attention within the domain of public health. This study aimed to analyze and synthesize scientific evidence regarding the relationship between knowledge, attitudes, and dietary sodium consumption behaviors with the occurrence of prehypertension among university students through a Systematic Literature Review (SLR) approach. Literature searches were conducted across Google Scholar, PubMed, and Portal Garuda databases using the PRISMA framework, yielding ten articles that fulfilled the inclusion criteria, published between 2022 and 2025, employing cross-sectional, descriptive, and quasi-experimental designs. Narrative synthesis revealed that students' knowledge levels regarding sodium-related health risks were generally categorized as adequate, yet a persistent knowledge-practice gap was consistently identified across studies. Attitudes toward sodium consumption exhibited moderate and sociodemographically influenced patterns, with associations to prehypertension largely indirect in nature. Sodium consumption behavior demonstrated the strongest and most consistent association with prehypertension incidence, yet proved most resistant to modification through educational interventions. It is concluded that prehypertension prevention strategies targeting university students necessitate multidimensional approaches that prioritize sustained behavioral modification, extending beyond mere enhancement of cognitive knowledge.

Abstract

Background: Hypertension is a cardiovascular condition requiring long-term management. Non-pharmacological therapies, such as isometric handgrip exercises, offer a viable self-management option within the context of family care. Objective: To determine the outcomes of isometric handgrip exercise therapy in elderly individuals with hypertension. Methods: This study employed a pre-experimental design-specifically a one-group pre-test/post-test format-conducted as a case report involving two respondents (Mrs. W and Mr. M) in Guwosari Village, Jebres District, Surakarta. The intervention was administered over five consecutive days, once daily for 12 minutes (comprising four sets of 45-second isometric contractions with one-minute rest intervals between contractions). Data were analyzed using a descriptive quantitative approach, reporting mean values ​​and standard deviations (SD). Results: The baseline mean (pre-test) for Mrs. W was 148.0/85.0 mmHg (systolic SD 5.7; diastolic SD 4.9), which decreased to 136.2/81.8 mmHg post-intervention (systolic SD 8.0; diastolic SD 5.9). For Mr. M, the baseline mean (pre-test) was 146.6/88.4 mmHg (systolic SD 8.2; diastolic SD 7.1), which decreased to 137.4/82.2 mmHg post-intervention (systolic SD 6.1; diastolic SD 7.0). The average mean reduction in systolic blood pressure was 11.8 mmHg for Mrs. W and 9.2 mmHg for Mr. M. Conclusion: Isometric handgrip exercise is clinically beneficial for lowering and controlling blood pressure and is safe to use as an adjunct therapy that families can perform independently.

Abstract

The quality of health services is one of the factors that can influence the level of patient satisfaction with the services received. Patient satisfaction is an important indicator in assessing the success of health services provided by health facilities. There has been a decline in the number of outpatient visits over the past three years, along with patient complaints regarding waiting time, staff attitudes, and the comfort of service facilities. This study aimed to determine the relationship between the quality of health services and outpatient satisfaction at Puskesmas Timung, Wae Ri’i District, Manggarai Regency. This was an analytical survey with a cross-sectional design. The study population consisted of all outpatients at Puskesmas Timung. A total of 101 respondents were selected using accidental sampling technique according to the research criteria with a significance level of α = 0,05. The variable of health service quality was measured using five SERVQUAL dimensions, namely reliability, responsiveness, tangible, assurance, and empathy. Data were analyzed using the Fisher's Exact test to determine the relationship between each dimension of health service quality and patient satisfaction. The results showed that all dimensions of health service quality had a significant relationship with outpatient satisfaction (p-value = 0,000). It was determined that there was a strong association between the quality of health services in all five SERVQUAL dimensions and outpatient satisfaction at Puskesmas Timung. Therefore, continuous improvement of health service quality across all SERVQUAL dimensions needs to be carried out to enhance patient satisfaction with the services provided.

Abstract

Patient satisfaction is a crucial indicator in evaluating the quality of healthcare services, including hospital pharmacy installations. Based on patient feedback at the Stella Maris Hospital Pharmacy in Makassar, complaints were identified regarding long waiting times, lack of drug information, and the absence of a clear queue information system, which could potentially decrease patient satisfaction. This study aims to evaluate the effect of service quality using the SERVQUAL approach (tangibles, reliability, responsiveness, assurance, and empathy) on patient satisfaction. This quantitative research used a cross-sectional design. Data were collected from 103 outpatients using validated and reliable questionnaires and analyzed via multiple linear regression analysis. The results showed that simultaneously, all SERVQUAL dimensions significantly influenced patient satisfaction (F = 16.765, p = 0.000). Partially, only reliability (p = 0.013) and empathy (p = 0.000) had a significant positive effect, with empathy being the most dominant factor ($Beta = 0.546$). Responsiveness, assurance, and tangibles did not show significant effects. In conclusion, patient satisfaction is heavily driven by staff empathy and service reliability. Pharmacies should focus on interpersonal communication training and service accuracy to optimize patient experiences.
