Jurnal Pangan Kesehatan dan Gizi (JAKAGI) merupakan media ilmiah yang diterbitkan oleh Program Studi Gizi, Fakultas Ilmu Kesehatan dan Teknologi, Universitas Binawan. Jurnal ini menerbitkan artikel-artikel pada lingkup ilmu gizi, pangan, dan kesehatan dengan aspek diantaranya gizi klinik, gizi masyarakat, manajemen penyelenggaraan makanan, pangan fungsional, aplikasi sistem informasi bidang pangan, gizi dan kesehatan. Abstract

Tofu pulp still has a relatively high protein content because in the process of making tofu not all protein content is extracted. This study aims to analyze nutritional content and organoleptic properties of foodbars. This experimental research design uses a completely Randomized Design (CRD) with three substitution levels including F1 (70% wheat flour and 30% tofu dregs flour), F2 (60% wheat flour and 40% tofu dregs flour), F3 (50% wheat flour and 50% tofu dregs flour), Data from organoleptic test results were analyzed using Kruskal Wallis test. The results of proximate were analyzed using independent t-test. The organoleptic analysis of the hedonic test showed that the selected foodbar formula was F1. The results of proximate analysis of selected foodbar contains 9.58% protein, 19.8% fat, 33.5% carbohydrate, 19.6% water, 1.37% ash, 14,7% fiber.

Abstract

Latar belakang: Skizofrenia merupakan gangguan kejiwaan yang bersifat kronik dan mempunyai kecenderungan untuk mengalami masalah gizi. Penderita skizofrenia mempunyai risiko untuk menderita Diabetes Melitus sebagai efek dari pengobatan jangka panjang. Asuhan gizi yang efektif dan efisien melalui Proses Asuhan Gizi Terstandar (PAGT) dan didukung dengan pendekatan multidisiplin ilmu belum banyak dibahas, sehingga diperlukan pengkajian tentang asuhan gizi pada penderita skizofrenia dengan penyakit penyerta, termasuk kasus Skizofrenia dengan Diabetes Melitus dan Tuberkulosis Metode: Penelitian didisain dalam bentuk studi kasus yang dikumpulkan data dan dilakukan pengamatan dari tanggal 13-21 Maret 2023. Analisa dilakukan dalam bentuk mekanisme Proses Asuhan Gizi Terstandar (PAGT). Hasil: Penderita Ny. M berusia 34 tahun didiagnosa gizi asupan karbohidrat yang tidak konsisten dan mendapatkan pengobatan antipsikotik dan obat lainnya yang dapat mempengaruhi interaksi obat dan makanan. Pengukuran antropometri menunjukkan Indeks Massa Tubuh (IMT) sebesar 27,3 dengan kategori Obesitas. Penderita sering mengkonsumsi makanan yang terasa manis, dan berlemak atau gorengan. Diet Diabetes Melitus 2100 Kalori diberikan sesuai dengan berat badan ideal dan pengurangan energi dilakukan bertahap, karena gangguan psikologis yang diderita dapat mempengaruhi tingkat konsumsi harian. Edukasi dan konseling gizi pada penderita mengalami kesulitan karena kurang kooperatif, dan pada keluarga terkendala keluarga hanya hadir pada saat mengantar dan menjemput dari rumah sakit. Kesimpulan: Kondisi psikologis Penderita sangat mempengaruhi tingkat konsumsi harian, sehingga berdampak pada kondisi glukosa darah dan diperlukan kolaborasi yang lebih efektif lintas professional pemberi asuhan.

Abstract

Stunting is a chronic condition that describes stunted growth due to long-term malnutrition. Stunting is defined as a length for age Z score (LAZ) less than -2 SD. This study aimed to analyze the relation of family income and intake of micronutrients to the incidence of stunting in children under two years in North Landasan Ulin Village. This analytic observational study used a case control design. The research samples were 26 children under two years in the case group (stunting) and 26 children under two year in the control group (not stunted) taken using a purposive sampling technique. Length data were measured using an infantometer, family income was assessed through interviews and questionnaires, intake of micronutrients were collected using a 3x24 hour food recall. Data were analyzed using the Spearman Rank test. The results of this study indicated that family income (p=0.155) and intake of vitamin A (p=0.182) were not associated with the incidence of stunting in children under two years, whereas intake of iron (p=0.001) and zinc (p=0.001) were associated with the incidence of stunting in children under two years. Stunting can be prevented with sufficient intake of iron and zinc as needed, and the allocation of family income and vitamin A must also be considered. Abstract

According to the Riskesdas 2014 – 2018, coverage of exclusive breastfeeding in Indonesia in 2014 amounted to 37.3%, 2015 amounted to 55.7%, 2016 amounted to 54%, 2017 amounted to 61.33%, and in 2018 experienced a significant decrease, namely by 37.3%. According to SSGI (2021), only 52.5% or half of the 2.3 million babies aged less than six months are exclusively breastfed. This research was conducted in the Central Bogor Health Center UPTD area from June to May 2023 with a cross-sectional design using a purposive sampling technique involving 67 respondents. Data collection included filling out mother's knowledge questionnaires, early initiation of breastfeeding, and history of exclusive breastfeeding. The statistical analysis used was the chi-square test. The results of the study showed that 61.2% of respondents who had babies aged 6-24 months with the exclusive breastfeeding category and 38.8% were not exclusively breastfed. The results of the bivariate test study found that there was a significant relationship between knowledge and exclusive breastfeeding (p-value 0.000) and there was no significant relationship between Early Breastfeeding Initiation and a history of exclusive breastfeeding (p-value 0.932).

Abstract

Emprit ginger (Zingiber officinale var Amarum) has been used as a traditional drink in Southeast Sulawesi. Oleoresin in ginger is an antioxidant because it can prevent the oxidation process by blocking or capturing free radicals. In principle, antioxidants can inhibit the clumping of blood cells, and stimulate the production of nitric oxide (NO) which plays a role in widening blood vessels (vasodilatation) so that it can reduce blood pressure and also inhibit cancer cells. Emprit ginger (Zingiber officinale var Amarum) and secang wood (Caesalpinia sappan L), which have antioxidant properties, will be made into instant functional powder drinks. This research aimed to analyze the content of antioxidant activity, mold, and total clay number (ALT) in the selected formulation, namely the crystallization method (MK2). Organoleptic data (hedonics and hedonic quality) were analyzed using further tests, namely the Mann-Whitney test for significant results. Results of content analysis the selected formulation in powder form contained antioxidant activity of 29895.95 mg/kg, total plate number (ALT) of 1.0 x 102, and mold <10. Meanwhile, in drink form, it contains antioxidant activity of 53335.3 mg/kg, total plate number (ALT) of 1.4 x 102, and mold <10. In conclusion, differences in the manufacturing process also affect the likeability when organoleptically tested by the panelists.
