Abstract

Stik merupakan makanan ringan yang dibuat dari pisang Raja Sere mentah dan tepung terigu serta adanya bahan tambahan lain seperti gula, margarin, telur, minyak goreng, vanilli, dan soda kue. Tujuan dari penelitian ini adalah mengetahui pengaruh perbandingan tepung terigu dengan pisang terhadap rasa, aroma, tekstur, dan warna pada pembuatan stik pisang berdasarkan uji organoleptik, dan komposisi yang tepat untuk stik pisang dari perbandingan tepung terigu dengan pisang berdasarkan uji organoleptik. Manfaat penelitian ini yaitu menciptakan variasi produk olahan pisang, mendapatkan perbandingan tepung terigu dengan pisang yang tepat dalam pembuatan stik yang disukai konsumen, untuk menjadikan stik pisang sebagi makanan ringan yang baik bagi kesehatan. Metode penelitian stik pisang melakukan beberapa perlakuan dengan perbandingan tepung terigu dan pisang Raja Sere. Perlakuan yang dilakukan penulis adalah 75%:25% (AA), 60%:40% (AB), 50%:50% (AC), 40%:60% (AD), dan 25%:75% (AE). Lima perlakuan tersebut dilanjutkan dengan uji sifat organoleptik produk (rasa, aroma, tekstur, warna). Penilaian uji organoleptik stik pisang Raja Sere yang dibuat dengan perlakuan 75%:25% (tepung terigu : pisang Raja Sere) yang disukai oleh panelis. Sedangkan stik pisang dengan perlakuan 25%:75% (tepung terigu : pisang Raja Sere) kurang disukai panelis berdasarkan uji organoleptik. Kesimpulan penelitian ini adalah komposisi terbaik dari perbandingan yang telah dilakukan dalam pembuatan stik pisang Raja Sere untuk perbandingan tepung terigu dan pisang Raja Sere mentah yaitu pada perlakuan dengan kode AA (75%:25%). Kata Kunci : Stik, Pisang, Organoleptik.

Abstract

PT. IGASAR merupakan salah satu perusahaan yang berafiliasi dengan PT. Semen Padang dimana selama ini sistem evaluasi supplier masih menggunakan penilaian berdasarkan subjektifitas. Evaluasi supplier menjadi salah satu faktor penting dalam supply chain. Tujuan penelitian ini adalah merancang Vendor Performance Indicator (VPI) yang dibutuhkan oleh perusahaan, mengukur dan mengevaluasi performansi supplier supplier dengan Analytical Hierarchy Process (AHP). Hasil penelitian diperoleh sebuah rancangan sistem evaluasi supplier yang meliputi 12 IKP sebagai indikator kinerja supplier batu mangga yaitu : Quality meliputi ketepatan jenis bahan yang dikirimkan, dan ketepatan ukuran, Cost meliputi harga barang, dan besaran potongan harga, Delivery meliputi ketepatan kuantitas barang yang dikirimkan, dan waktu pengiriman, Flexibility meliputi dipenuhinya perubahan jumlah material yang dipesan, dipenuhinya perubahan waktu pengiriman, dan dipenuhinya penggantian material yang tidak sesuai, dan Responsiveness meliputi respon supplier terhadap masalah atau keluhan, respon supplier terhadap perubahan jumlah permintaan, respon supplier terhadap perubahan jadwal pengiriman. Ketiga supplier batu mangga memiliki skor kinerja sebesar 89 persen yang berada pada zona kuning dimana perlu ditingkatkan. Kata kunci : evaluasi, kinerja supplier, VPI, AHP

Abstract

Refined sugar is produced from raw sugar through refined processes for the needs of the food and beverage industry.The raw materials used are imported from the raw sugar producing countries of Australia, Brazil and Thailand. Quality control is caried out since the arrival of the material so that the material received is only material that meets the quality requirements.The most important process control in the process of refined sugar processing is during the decolorization process.In determining the color value the method used is visible spectrophotometry to determine the absorbance value and refractometryto determine the value of %brix. Based on the results of the determination made at PT Medan Sugar Industry obtained the average value of the color of sugar R1 products is 11.1 IU, the color value of sugar product R2 is 23.5 IU, the color value of sugar product R3is 33.2 IU, and the color value of sugar product R4 is 39.6 IU, when compared with the quality standards used, the value of the color of the sugar product meets the standars. The quality standard used is ICUMSA (International Commision for Uniform Methods of Sugar Analysis) with IU units (ICUMSA Unit) and testing of refined sugar products based on SNI.01.3140.2-2011.A.6 regarding the quality requirements of refined crystal sugar where grade A namely ≤45 IU and grade B which is 45-80 IU.

Abstract

Cooking oil is a principal need for human as a media to process food stuff. Cooking oil can have damage if had repeatly heated, contact with water, air, and metal. The break down of cooking oil happen when frying cause of oxydation, polymerisasion and hydrolysis. Repeatly heated cooking oil will make undesirable compound like free fatty acid and waste suspension in it. The quality of repeatly heated cooking oil measured according to free fatty acid value, water content, and iodine value parameters by using volumetric and gravimetric methods. The sign of cooking oil quality degradation in each repeated fryings are showed by increase of free fatty acid and water content, but decrease of iodine value. After fourth frying of Euthynnus Affnis C., was obtained free fatty acid value 0.131 %, water content 0.172 % and iodine value 56.167. The result showed that after fourth frying of Euthynnus Affnis C., the free fatty acid and iodine value still eligible with SNI, but water content is beyond of SNI limit.

Abstract

The purpose of this study was to analyze the effect of price discountand store display on impulse buying in customers at Suzuya Rocky Plaza Padang. This type of research is causative research. The population of this study was all Suzuya in customers at Suzuya Rozky Paza Padang who had experienced failure in the process of unplanned shopping (Impulsive buying). While the number of research samples is determined based on the accidental sampling method. So that the resulting sample is 100 people. The data used are primary data obtained through distributing questionnaires to selected customers. This study has two categories of variables. First is the independent variable, namely price discount and store display. The two dependent variables are impulse buying. The analytical method used is descriptive and quantitative analysis through multiple regression analysis. The results showed that the price discount and store display had a significant effect on impulse buying in customers at Suzuya Rocky Plaza Padang.

Abstract

The high demand for crude palm oil (CPO) and kernel at CPO Industry requires good production planning so that the production process runs smoothly. The utilization of the resources used is still not optimal, for this reason an effort is made to optimize the production  that they can the targets and limits set by the company. In optimizing the production of CPO and kernel, several factors must be considered, starting from production raw materials namely fresh fruit bunches, factory capacity, storage and the yield of CPO and kernel that have been set by the company. The method used in this final assignment is the Goal Programming method. This method is able to solve the problem of more than one target to be achieved (multi-objective). This’s in accordance with the conditions of the problems at CPO Industry, namely maximizing the production of CPO and kernel when processing FFB at the factory. The output of this final project is the optimal amount of CPO and kernel production for the period January 2021 to December 2021. The results of this planning optimization are expected to assist in a more effective and efficient that process to achieve the targets set by the company.

Abstract

Palm oil mill effluent can pollute the environment and endanger human health. Test parameters that can indicate the quality of palm oil mill effluent are pH, Chemical Oxygen Demand, and Total Suspended Solid. The purpose of this study is to determine the pH using pH meter, COD and TSS values using spektrofotometer UV – Vis in each palm oil mill effluent pond before discharging into the river so as not to pollute the environment. The results of three weeks of testing showed that the pH value of the palm oil mill effluent pond tended to increase from the fat fit pond to the outlet of pond V while the COD and TSS values tended to decrease from the fat fit pond to the outlet of pond V. The pH value of the waste discharged into the river is in the range of 6-9, the COD value is below 350 mg/L and TSS is below 250 mg/L. The results obtained are in accordance with the regulation of the Minister of Environment Number 5 of 2014.  The resulting palm oil mill effluent is safe to be discharged into the river.

Abstract

Wastewater is a contemporary problem as population density increases. Every household living in urban areas will definitely need a waste water disposal site. This research was conducted to determine the levels of iron and mercury. This is done to ensure that the levels of ferrous metal and mercury in the outlet comply with predetermined requirements. The side effect of metal iron and mercury is that if the outlet contains too many levels, the outlet cannot be channeled directly to residential areas, which if released can endanger the health of the community. Quantitative tests were carried out to determine iron content using the flame atomic absorption spectrophotometry method at a wavelength of 248.3 nm and to determine mercury content using the Mercury Vaporizer Unit (MVU) method using atomic absorption spectrophotometry at a wavelength of 253.7 nm. The results of testing for ferrous metal levels in the outlet sample were 0.1969 mg/L. Meanwhile, the mercury level in the outlet sample was 0.0012 mg/L, based on Minister of Environment and Forestry RI No. 05 of 2014 it can be concluded that the levels of ferrous metal (Fe) and mercury (Hg) contained in the outlet wastewater are below the established environmental quality standards.

Abstract

The abundant benefits of essential oils have led to a significant increase in demand, prompting researchers to continuously explore this field to achieve optimal results. Various extraction methods can be employed to obtain essential oils. In this study, researchers used the maceration method with variations in several solvents as comparators. The resulting maceration filtrate was subsequently distilled to obtain pure essential oil, aiming to find an efficient process for essential oil production and identify the most suitable solvent for the production process. The solvents used were Methanol, Ethanol, n-Hexane, and Water. During the maceration method, a sample of 150 g lemongrass was prepared with a size of 1 cm and soaked in 1 L of solvent in a closed container for 24 hours. The filtrate was then distilled to obtain a pure product, which was further characterized using GC-MS. The research findings showed that essential oil was extracted most effectively by ethanol solvent, yielding 23.31 g, and the GC-MS analysis indicated that the lemongrass oil contained 25.75% Geraniol. It was concluded that Geraniol is more soluble in ethanol due to its closer polarity to the compounds within lemongrass oil, resulting in a higher yield compared to extractions using other solvents.

Abstract

Small companies that do not pay attention to product quality will experience marketing problems such as decreased product sales. Therefore, quality control is required for each product. Banana chips, for example, are considered very difficult to manufacture and often experience product defects. The cause of product failure is a weakness of a business today. The cause of this failure is unknown until now. Banana stick production based on data from August to September 2020 shows the number of defective products is approximately 28,875 kg of the total production, which is 323 kg. Therefore this research is intended to determine the factors that affect production defects in banana sticks. While the benefit of this research is to be able to control the factors that affect defects in banana sticks and can later increase profits and work productivity. The Six Sigma method is one of the tools commonly used in product quality control, where the concept of this method is to set quality standards of up to 3.4 rejects per million possibilities. Based on the results of banana chip defect data, it was found that the type of defect was sluggish with a percentage of 61% and the type of defect was burnt with a percentage of 39%. Factors that affect the two defects include human factors, materials, machines. The suggestion from this research is that of the three most influencing factors are humans, materials and machines. Companies need to plan improvements in stages so that in the future these products can achieve lean production.
