Abstract

Duck eggs have a delicious taste, are easily digested by the body, and contain quite good nutrition.However, duck eggs have a short self life. This study aims to determine the effect of the length of storage and concentration of Moringa leaf solution on the internal quality of duck eggs. This study was conducted in September-October 2023 at the Livestock Production Laboratory of Animal Husbandry Study Program, Faculty of Agriculture, Universitas Sumatera Utara. The design used in this study is a complete random design, factorial pattern, namely 4 concentration solution treatment (R0 = without soaking, R1 = 10%, R2 = 20%, R3 = 30%), 5 Treatment of Length of Storage (L0 = 0 days, L1 = 7 days, L2 = 14 days, L3 = 21 days, L4 = 28 days) with 2 replications. The parameters used in this study include the egg white index (albumen), the egg yolk index (yolk), the percentage of decreased egg weight and the degree of acidity (pH) of eggs. The results showed that the number of concentrations of 30% solution had a significant effect (p <0.05) on the albumen index, yolk index and pH, but did not affect the percentage of decreased egg weight. The length of storage has a significant effect on the internal quality of duck eggs. The treatment interaction is a significant effect (p <0.05) against the egg white index (albumen) and egg pH. Treatment with a 30% moringa leaf solution had better results for 28 days compared to treatment without soaking.

Abstract

Transportation stress is influenced by trip duration, mileage, vehicle type, road conditions, loading and unloading, vehicle speed and environmental conditions. The provision of Urea Molasses Multi-Nutrient Block (UMMB) based on fermented coffee peel aims to overcome nutritional deficiencies and stress in livestock. This study was conducted experimentally with a non-factorial complete randomized design (RAL) with 4 treatments of A0 (without UMMB) as a control, A1 (UMMB based on fermented coffee peel 10%), A2 (UMMB based on fermented coffee peel 20%), A3 (UMMB based on fermented coffee peel 30%) and 4 replications. The parameters of the study were glucose levels, total protein and creatinine. The results showed that giving UMMB peel-based fermented coffee has a significant effect (P<0.05) on increasing glucose levels (16.03%), decreasing total protein levels (31.49%), and decreasing creatinine levels (2.71%). It can be concluded that giving UMMB based on fermented coffee peel up to 30% can overcome stress in sheep that experience transportation for 8 hours.

Abstract

Currently, there is a tendency for consumers to prefer frozen food. This study aims to analyze the perceptions and preferences of chicken nugget products on consumers in North Kayong, West Borneo. The research uses a survey method by distributing questionnaires. The perceived variables tested were price perception, quality, organoleptic, and brand. Descriptive test using a Likert scale on each perception variable is used to determine the level of consumer perception. Spearman rank correlation test is used to determine the relationship of each perception variable. Data was obtained by distributing questionnaires to 103 respondents with an age range of 15 years to 50 years and domiciled in North Kayong Regency and the sample was selected purposively. Consumers of chicken nugget products in North Kayong Regency stated that they rarely consume as much as 69%. The reason consumers like nugget products are highest on the taste aspect. Abstract

Local communities in Bahorok District are highly dependent on the agricultural and livestock sectors as their main livelihoods. The environment and abundant natural resources cause a profitable for the community to raise livestock.This study aims to to examine potential development of cattle farming (financial and economic aspects) in the buffer zone of Gunung Leuser National Park, Bahorok District.The type of data used in this study is primary data obtained through observation and interviews and secondary data through literature and the North Sumatra Central Statistics Agency. Determination of the sample by Purposive Sampling with 100 cattle breeders. Data analysis was carried out by calculating income, financial analysis of Net Present Value (NPV), Net Benefit-Cost (B/C), Payback Period (PP), and economic analysis. The results of this study indicate that the average income of cattle breeders in the Buffer Zone of Gunung Leuser National Park, Bahorok District is IDR 24,551,421 for semi-intensive and IDR 8,235,155 for extensive per year. The income of breeders can cover production costs so that income is positive or profitable. The cattle farming business shows that by using an interest rate of 8%, the NPV is obtained >0 or has a positive value, the Gross B/C value is obtained 1.97 and the Net B/C value is 1.25, meaning BCR>1 means a positive value, the PP value is 3.1 and 4.2 years, and the economic analysis shows that the cattle farming business has an important role in the economy in Bahorok District

Abstract

Worm infections in livestock can have a huge risk impact such as decrease in growth, body weight, meat quality and death. This study aims to determine the anthelmintic activity of young areca nut extract (Areca catechu L.) against Fasciola sp. worm eggs in goat feces in vivo and to determine at what concentration the young areca nut extract (Areca catechu L.) is effective in providing anthelmintic effects against worm eggs. The study used an experimental method with a paired t-test of 5 treatments and 4 replications. The treatments given were P0 (negative control), P1 (10% areca nut extract), P2 (20% areca nut extract), P3 (30% areca nut extract) and P4 (positive control using kalbazen worm medicine). Parameters were reduction in the number of dead worm eggs, lethal concentration,  effectiveness of areca nut extract against worm eggs. The results of the study showed that there were Fasciola sp. worm eggs in all tested goats. Treatment with young areca nut extract (Arecha catechu L.) can significantly reduce the number of Fasciola sp. eggs (P <0.05), with an LC50 result of 26.75%. The best Fecal Egg Count Reduction Test (FECRT) result in the administration of areca nut extract with a concentration of 30% (P3) of 56.75% was the same as that given treatment using kalbazen worm medicine and the lowest FECRT result in the administration of areca nut extract with a concentration of 20% (P2) of 29%.

Abstract

Chicken nuggets are processed products that are easily contaminated if the processing and storage of the product are not good. Batak onions contain antioxidant compounds that can prevent oxidative damage to chicken nuggets. This study aims to determine the effect of using Batak onion juice on the physical quality and organoleptic quality of chicken nuggets. The study was conducted at the Technology Research Laboratory, Faculty of Agriculture and the Animal Production Laboratory, Faculty of Agriculture, University of North Sumatra in November 2023. The research design used was RAL (Completely Randomized Design) with 4 treatments, namely P0 = 0%, P1 = 5%, P2 = 10%, P3 = 15% and 5 replications. The parameters of this study were physical quality tests, namely pH, cooking loss, water holding capacity, and organoleptic tests of color, taste, aroma and texture. The results of this study indicate that Batak onion juice with a concentration of 5%, 10%, 15% has a significant effect (P <0.05) on the physical quality and organoleptic quality of taste and aroma in chicken nuggets but does not affect the color and texture

Abstract

Turkey is a type of poultry with characteristics and tastes similar to chicken meat, so turkey has the potential to be a raw material for meatballs. Carrots are also a source of natural antioxidants, the use of carrots so far has only been for vegetables and juice. Utilization in a fresh state has limitations because fresh carrots are prone to deterioration in quality. This study aims to determine the effect of adding carrot juice on the shelf life and organoleptic of turkey meatballs. This research was conducted in April 2024 at the Production Laboratory, Animal Husbandry Study Program, Faculty of Agriculture, Universitas Sumatera Utara. The design used in this study was RAL (Completely Randomized Design) with 4 treatments, namely P0 = 0 ml, P1 = 50 ml, P2 = 100 ml, P3 = 150 ml and 5 replications. The parameters used were shelf life and organoleptic color, taste, texture and aroma. The results of this study indicate that the addition of carrot juice can extend the shelf life of turkey meatballs. The best shelf life is in P3 with the addition of 150 ml of carrot juice with a shelf life of 5 days and the lowest shelf life is 1 day

Abstract

Moringa leaf flour is a plant that contains good nutrients and high antinutrients. One of the efforts to degrade crude fiber and detoxify antinutrients through fermentation with cattle rumen fluid. This research aims to determine the effect of fermented Moringa leaf flour with cattle rumen fluid on feed consumption, body weight gain, feed conversion female quail grower phase, and age at first egg-laying. This research was held at the Livestock laboratory of Animal Science Study Program, Faculty of Agriculture, Universitas Sumatera Utara, from February to March 2024. The design experiment used a completely randomized design with 4 treatments and 5 replications, where each plot contained 5 female quails. Treatment were consisted of T0 (100% commercial feed), T1 (96% commercial feed + 4% fermented moringa leaf flour), T2 (92% commercial feed + 8% fermented moringa leaf flour) and T3 (88% commercial feed + 12% fermented moringa leaf flour). The results showed that the effect of using fermented moringa flour with cattle rumen fluid mixed with commercial feed was able to affect the performance of laying quail, with the best treatment is T2 (92% commercial feed + 8% fermented moringa leaf flour).

Abstract

UHT milk is a food commodity that plays an important role in fulfilling calcium nutritional sources. UHT milk consumption practices can be influenced by consumer nutritional knowledge. The general objective of this study was to analyze the relationship between nutritional knowledge and the characteristics of UHT milk consumers in Lamongan Regency and the relationship between nutritional knowledge and consumer nutritional attitudes. Sampling was carried out based on the calculation of the Slovin formula and obtained the number of 100 respondents. Data were analyzed descriptively and correlation test was performed. The results obtained as many as 77% of respondents have sufficient knowledge of nutrition. The nutritional attitude of the respondents showed that 63% of the respondents had adequate nutrition attitudes. The conclusion of this study is that there is a significant relationship between the education variable and the job characteristics of the respondents and their knowledge of nutrition. The test results of the relationship between nutritional knowledge and nutritional attitudes showed that there was a very significant and direct relationship between nutritional knowledge and nutritional attitudes

Abstract

Quail meat (Coturnix coturnix japonica) has high protein content, as well as low fat. This research aims to determine the effect of using gelugur tamarind juice on the physical quality and organoleptic quality of quail meat. The research was conducted in June-July 2024 at the Technology Research Laboratory, Faculty  of agriculture and Animal Production Laboratory, Faculty of Agriculture, Universitas  Sumatera Utara. The design used in this  research was a Completely Randomized Design (CRD) with 4 treatments and 5 replications, so in total there wewe 20 experimental units, namely T0=0ml, T1=30ml, T2=60ml and T3=90ml. The parameters used in this research are physical and quality tests, namely pH on quail meat, and organoleptic tests of color, aroma, taste and texture.The results  of this study showed that administration of gelugur acid juice 30ml, 60ml, 90ml had a very significant effect (P<0,01) on physical quality and organoleptic quality. The higher the percentage of gelugur acid assence used in quail meat, the greater the physical quality and organoleptic quality of the quail meat.
