Abstract

ABSTRACT Nutritional problems that often occur in teenager girls are anemia. Based on data (Riskesdas, 2018), almost half of the Indonesian population suffers from anemia nutritional problems with the number of cases reaching 48.9%. Therefore, it is necessary to modify the recipe from local food ingredients by substituting spinach flour and anchovy flour in wonton chips products to prevent anemia in teenager girls.This study aims to determine the acceptability and nutritional value of wonton chips with spinach flour and anchovy flour substitution. The research design used an experimental method in 4 treatments, namely the first treatment P0 as a control, treatments P1, P2, and P3 respectively, namely spinach flour (5%, 10%, 15%) and anchovy flour (15%, 10%, 5%) with organoleptic tests carried out by 30 semi-trained panelists. Statistical analysis was performed using the Kruskal Wallis test and continued with the Mann-Withney test for significantly different data, while the nutritional value was tested using TKPI 2017. The results of the organoleptic test showed that the substituted wonton chips of spinach flour and anchovy flour had a significant effect on the color, aroma, taste and texture of wonton chips with a p value <0.05. The most preferred wonton chips in terms of color were P1, aroma was P2, texture was P1 and P3, taste was P2. While the results of the nutritional value test showed that the formula with the nutritional content closest to the needs of teenage girls' snacks was P2 with a total energy of 1119.4 kcal, 35.2 grams of protein, 60.3 grams of fat, 111.2 grams of carbohydrates and 5.8 milligrams of Fe. The results of the organoleptic and nutritional value tests showed that the most recommended product was the product from the P2 formula with a ratio of spinach flour and anchovy flour of 10%: 10%. Further research is expected regarding the content or analysis of other micronutrients from the wonton chips formulation.

Abstract

Women of childbearing age (WUS) are women who are in their late teens to early adulthood. The main characteristics of WUS are characterized by physiological events, such as menstruation and reaching peak fertility with well-developed reproductive organ function. WUS is assumed to be an adult woman who is ready to become a mother. Nutritional needs during this period are different from those of childhood, adolescence or old age. The need for nutrients during this period is important because it is a time to prepare for pregnancy and breastfeeding. For this reason, women are obliged to maintain their health, especially their activities and diet. Diet is a description that informs the number of types and frequency of food consumed every day. Insufficient knowledge of nutrition will cause health problems that affect women's fertility. The results of the analysis stated that there was no relationship between knowledge and consumption patterns and the incidence of SEZ in WUS. This research aims to determine the knowledge and consumption patterns of women of childbearing age. This research is a quantitative research with a Cross Sectional data analysis approach used, namely the Fisher Exact Test. Based on the research results, it is known that the knowledge of women of childbearing age at KUA Kelapa Lima is in the good category 51.4%, sufficient, 37.5% and 11.1% less. The consumption pattern of women of childbearing age in the good category for types of food is 23.6% less than 76.4%, frequency of good food is 58.3%, less than 41.7 %, and total protein intake less 63.9% good 23.6% more 12.5% , fat intake less 79.2% good 8.3% more 12.5% carbohydrates less 70.8% good 18.1% 11.1%.

Abstract

Anemia that occurs in pregnant women is a condition where there is a lack of red blood cells in the blood circulation or hemoglobin (Hb) so that they cannot carry out their function in carrying oxygen properly. One of the triggers for pregnant women experiencing anemia is a lack of intake of foods rich in iron. One food ingredient that is high in iron is spinach. Spinach can be processed into a main dish or snack that pregnant women like. Spinach preparations that can be given to pregnant women are mackerel fish sticks prepared with the addition of spinach flour. It is hoped that mackerel fish sticks with the addition of spinach flour will be liked and help pregnant women meet their daily iron needs. Research Objectives: The aim of this research is to determine the effect of adding green spinach flour on the acceptability of mackerel fish sticks. Type of Research: This research is an experimental research using a Completely Randomized Design (CRD) with 4 treatment levels where 1 treatment uses the original recipe and 3 treatments use the addition of green spinach flour where at P1 20%, P215%, and P3 10%. From the results of the research conducted, the most preferred treatment in terms of color, aroma, texture and taste was P1 (adding 20% ​​spinach flour).

Abstract

The HIV/AIDS case is a health problem that has occurred globally, including in Indonesia. HIV causes immune dysfunction, leading to malnutrition, and further immune deficiency. Lack of nutritional knowledge and inadequate nutritional intake cause the patient's clinical condition to worsen, thereby increasing the incidence of morbidity and mortality. Good nutritional knowledge accompanied by good nutritional intake for HIV/AIDS patients can be an effort for sufferers to achieve and maintain good nutritional status. The aim of this research was to determine the relationship between nutritional knowledge and macronutrient intake and nutritional status in HIV/AIDS outpatients at Prof. Hospital. Dr. W. Z. Johannes Kupang. This research is a type of analytical descriptive research using a cross sectional study research design. Sampling was taken using the accidental sampling method, the number of samples used the Slovin formula with a total of 35 people. The research results showed that the level of nutritional knowledge was mostly in the poor category at 65.7%. Energy intake in the severe deficit category was 71.4%. Protein intake in the severe deficit category was 25.7%. Fat intake in the severe deficit category was 77.1%. Carbohydrate intake in the severe deficit category was 68.6%. The nutritional status of the majority had normal nutritional status as much as 71.4%. Based on the Chi-Square test, it shows that there is no relationship between nutritional knowledge and nutritional status (p-value=0.530), there is no relationship between macronutrient intake and nutritional status, namely energy intake (p-value=0.568), protein intake (p- value=0.468), fat intake (p-value=0.754), carbohydrate intake (p-value 0.899).

Abstract

Nutrition problems in Indonesia that remain a serious concern are undernutrition and malnutrition, especially Protein Energy Malnutrition (PEM). Undernutrition refers to nutritional status measured using the indicator Weight for Height (BB/TB) with a z-score between -3SD to <-2SD. Data from the World Health Organization (WHO) shows that 54% of deaths in children under five are caused by protein energy malnutrition. This study aims to determine the effect of substitution of tuna flour and red bean flour on the acceptability of cookies. This research is an experimental research with a Completely Randomized Design (CRD). Substitution of tuna and red bean flour was done in three treatments: F1 (30%:5%), F2 (20%:10%), and F3 (10%:15%). Organoleptic test was conducted by 30 panelists from students of Poltekkes Kemenkes Kupang. Data analysis used ANOVA test to determine significant differences between treatments. The results of the organoleptic test showed that cookies with a substitution of tuna flour and red bean flour in treatment F3 had the highest level of acceptance in the aspects of color, aroma, texture, and taste. The average organoleptic assessment shows the like category. ANOVA test showed significant differences between treatments in the aspects of color, aroma, texture, and taste.

Abstract

Stroke disease became the second highest cause of death in the world in 2015 and the highest cause of death in Indonesia in 2014. The prevalence of stroke in people over 15 years of age in Indonesia based on the results of the 2018 Village Health Research (Riskesdas) was 10.9/mil, which means that out of 1000 residents, 10.9 residents experienced stroke, the province with the most residents experiencing stroke was East Kalimantan province with a total of 14.7/mil, while South Kalimantan province was ranked 6th with the number of stroke sufferers reaching 13.3/mil. Research Objectives: To identify fiber, sodium and blood pressure intake in hemorrhagic stroke patients at Prof. Dr. W. Z. Johannes Kupang Regional Hospital. Research Methods : The type of research used was an observational study with a cross-sectional design. This descriptive study was based on the research objectives, namely to determine the description of fiber, sodium and blood pressure intake in hemorrhagic stroke patients in outpatient care at Prof. Dr. W. Z. Johannes Kupang Regional Hospital. Dr. W. Z Johannes Kupang. Results : The results of the univariate study showed that the gender of hemorrhagic stroke patients was mostly female, 17 people (56.7%). The highest education was high school, 16 people (53.3%). The level of fiber intake of hemorrhagic stroke patients was in the severe deficit category, 12 people (40.0%). The level of sodium intake of hemorrhagic stroke patients was in the severe deficit category, 30 people (100%).

Abstract

Parenting is a pattern of interaction between parents and children, especially attitudes or behavior when interacting with children, such as how to enforce rules, instill values ​​and norms, show affection and behave well so that they become role models for their children. Changes in physical size over time in terms of dimensions, proportions, and body composition are referred to as growth and development. The growth process is quantitative in nature, showing changes that can be observed physically. By measuring body weight (BB), height/body length (TB/PB), and so on, growth can be observed.This research aims to determine the relationship between parenting patterns and the growth status of PAUD children in PAUD Halleluya and Cemara Liliba, Kupang City. This type of researcher uses quantitative analysis with a cross-sectional method approach. The data analysis used was the chi square test. From the research results, it was found that the frequency of parenting attitudes with the most negative parenting attitudes, namely the attitudes of pampering, allowing and controlling, amounted to 53 respondents with a percentage of (63.9%). Namely, the attitude of pampering parenting was 21 respondents (25.3%), the attitude of letting parenting was 17 respondents (20.5%) and the attitude of controlling parenting was 15 respondents (18.1%). The frequency of children's growth status based on BMI in the normal category was 61 respondents (73.5%), in the thin category 15 respondents (18.1%), in the fat category 4 respondents (4.8%) and in the obesity category 3 respondents (3.6%). The results of the analysis stated that there was a relationship between parenting patterns and children's growth in body mass index (BMI), indicated by a p value of 0.000.

Abstract

Parenting is a pattern Anemia is a condition where the hemoglobin level in the body is less than normal. In general, adolescent girls are susceptible to anemia due to inadequate nutritional intake, physical activity and menstruation. Normal Hb levels in adolescent girls are >12 g/dL. Adolescent girls need more iron than adolescent boys, because adolescent girls experience menstruation every month, adolescent girls who experience menstruation for a long period of time will cause anemia. One way to prevent anemia is by providing functional food ingredients that have been developed, namely adding red spinach leaves to skipjack fish sausages, where red spinach has a high iron content which can overcome anemia in young women. The research objective: to determine the organoleptic tests and nutritional content of fish sausages with the addition of red spinach leaves. Research Method: The research used a completely random method (RAL). With the addition of red spinach leaves, there were 4 treatments where P1 10% P2 15% and P3 20% Results: The results of the study showed that the comparison of skipjack tuna meat with the addition of red spinach leaves had an effect on descriptive and hedronic sensory assessments of color and taste attributes. Conclusion: The best organoleptic test results and the panelists liked the most was P2 with the addition of 52 grams of red spinach leaves = 15%. From the research results the author recommends P3: 20% because it has the highest nutritional content. Values ​​in nutritional analysis per slice of 41 pieces: energy 22.27 kcal, protein 1.96 grams, fat 0.26 grams, carbohydrates 2.98 grams, iron 0 .51 mg.

Abstract

The most dangerous food problem facing the world today is protein energy deficiency (KEP). Considering that children under five years of age often experience disorders related to lack of protein and energy, KEP refers to children who experience malnutrition due to low daily energy and protein intake or due to certain diseases. Snack bars are emergency food in the form of solid sticks that are rich in important nutrients, protein and calories that the body needs. The aim of this study was to evaluate the nutritional content and level of preference for snack bars made with substitute ingredients for peanuts and sorghum flour. This research used a completely randomized design (CRD) and three substitution treatments of sorghum flour and peanut flour at P1 (40%:40), P2 (50%:30%), and P3 (60%:20%)—an experimental study. . methodology. Research findings show that treatments P1 to P3 on average fall into similar groups. However, the Tukey test was added after the ANOVA test results showed that there were real differences between the three treatments in color, texture, aroma and taste. P1 has the most nutritional value, with energy (1,362.12 grams), protein (45.17 grams), fat (77.5 grams), and carbohydrates (132.47 grams) making up the energy nutritional value. In summary, treatments P1 to P3 generally belong to the same group. Based on the results of nutritional value and acceptability tests, P2 is the recommended snack bar because it tastes the best.

Abstract

Chronic kidney disease (CKD) is considered a significant health challenge due to its increasing prevalence and poor prognosis. The incidence of chronic kidney disease in East Nusa Tenggara was 0.33% in 2018, while Kupang City had a lower prevalence of 0.45 %, according to Riskesdas. Based on data from the medical records section of RSUD.WZ. According to Johannes Kupang, the number of sufferers of chronic kidney disease in January-June 2023 was 44 people at RSUD W.Z.Johanes Kupang. This research method is included in the analytical descriptive research category which uses a cross-sectional framework. Findings Specifically, participants' energy expenditure (63.2%) fell into the "severe deficit" category. The majority of participants' protein intake (68.2%) fell into the severe protein deficiency category. The majority of patients undergoing hemodialysis were over 2 years old and included 54.5% of the sample. The nutritional status of most respondents (77.3%) was classified as normal. The results of the chi-square test showed that there was no significant relationship between the duration of hemodialysis and nutritional status (P=0.550). Based on the research results, the results of the chi-square test showed that in chronic stable patients there was no significant relationship between energy intake and nutritional status (P = 0.458), and protein intake and nutritional status also did not show a significant relationship.
