Abstract

Lack of fiber and antioxidants can increase the risk of obesity which lead to oxidative stress. Eucheuma cottonii seaweed contains dietary fiber which provide anti-obesity effects. Beside dietary fiber, antioxidant is also needed to prevent oxidative stress in obesity. Canistel fruit (Pouteria campechiana) contains antioxidants such as vitamin C, beta carotene and polyphenols. The purpose of this study was to determine the effect of the proportion of seaweed and canistel on the content of dietary fiber, antioxidant activity, physical properties, and organoleptic properties of sorbet. This research method used a one-factor completely randomized design (CRD) with two repetitions. These factors are the proportion of seaweed and canistel, namely F1 (20%:80%), F2 (30%:70%), and F3 (40%:60%). The ANOVA test results showed that the proportion of seaweed and canistel had a significant effect (p< 0.05) on the dietary fiber and overrun, while the antioxidant activity and organoleptic properties of sorbet had no significant effect (p >0.05). The selected formula by using Exponential Comparison Method (ECM) results the F1 formula with the proportion of 20%:80%. The selected formula products contained 5.19% dietary fiber, 48% w / v antioxidant activity, and 34.32% overrun.

Abstract

One of the problems arising from overconsumption of meat is degenerative diseases and many people are turning to vegetarianism. Vegetarians tend to experience protein deficiency problems, therefore one of the most popular food preparations for the community and have high nutritional value is making jerky analogue of banana hearts with the addition of black soybean tempeh flour. To analyze differences in nutrient content and acceptability (color, taste, aroma and texture) with the addition of black soybean tempe flour. This type of research is an experimental study, there are 4 formulations with a ratio of black soybean tempeh flour banana heart and in analog jerky, namely F0 (100%), F1 (15%: 85%), F2 (20%: 80%), F3 (25%: 75%). The Nutritional Testing which was conducted was the analysis of proximate levels and crude fiber content. Organoleptic assessment uses a Likert form with a scale of 1-5 against 50 consumer panelists. Based on the assessment of the results of nutrition and consumer panelists, the selected formulations were F3 with 27.24 g protein, 11.23 g fat, 22 g carbohydrates, 5.71 g crude fiber content, 36.05 g moisture content and ash content 3.46 g. There is an effect of adding black soybean tempe flour to the nutritional value of analog jerky. There is a significant difference in the acceptability of texture and taste in analog jerky.

Abstract

The market opportunity for snack products is currently very high, this is indicated by the many different shapes and flavors. Snack nori is one form of the diversity of snack products and is an alternative to healthy snacks. Chaya (C. aconitifolius) is an opportunity for Chaya (C. aconitifolius) as a substitute for alternative raw materials, which are abundant and have a high crude fiber content. This study aims to utilize chaya (C. aconitifolius) in the manufacture of nori snacks with the addition of tapioca. The experimental design used was a completely randomized design (CRD) with two factors, namely factor A was the formulation of the ratio of chaya and tapioca (60:40, 40:60, 80:20) and factor B was the processing method (oven and frying. The results of data analysis used analysis of variance (ANOVA) with Duncan's Advanced Test with a 95% confidence interval. The selected nori snack is a comparison of chaya and tapioca (80:20) with the frying processing method with a color sensory value of 7.32 (towards greenish black), taste of (towards savory), aroma of 7.26 (towards very unpleasant). rancid), and texture of 7.65 (towards crunchy); color hedonic score 6.33, taste 6.46, 6.47, texture 6.54, overall 6.54 each towards very like. The results of the chemical test of the selected nori snack were 3.11% water content, 3.05% ash content, 19.7% protein content, 9.72% fat content, 67.53% carbohydrate content and 14.3% crude fiber.

Abstract

Cendol is a food product whose basic ingredients are rice flour, tapioca flour and other additives such as water and food coloring. Dragon fruit waste, namely the skin contains antioxidant compounds and anthocyanins which can be used as natural dyes in cendol. In making cendol with the addition of dragon fruit peel extract, it can be an alternative food product that is good for health. The bioactive components in dragon fruit peel are expected to increase the functional properties of cendol dragon fruit peel extract. This study aims to determine the effect of adding dragon fruit peel extract to the degree of color, anthocyanin levels, antioxidant activity and sensory properties of cendol. The steps taken were starting from making dragon fruit peel extract, making cendol dragon fruit peel extract and then analyzing the degree of color, anthocyanin levels, antioxidant activity and sensory properties of cendol. The research method was experimental using a monofactor completely randomized design (CRD) with the addition of dragon fruit peel extract using four treatments (0, 5, 10 and 15%) and six replications resulting in 24 experimental units. The results showed that there was an effect on the degree of color, anthocyanin levels, antioxidant activity and sensory cendol with the addition of dragon fruit peel extract 15% with a score of 2.82. As for the degree of color is 78.23, anthocyanin is 259.07 mg/L and antioxidant activity is 39.70% RSA.

Abstract

Nutrient intake has an important role in human growth and development. Therefore it is necessary to make an alternative effort f of snacks that can contribute to protein, carbohydrate and fat intake. In fulfilling nutritional intake, it is necessary to regulate a food menu by selecting types of food items with high nutritional value and good for body health. Purpose of this study is to analyze of acceptability, proximate with an addition of breadfruit flour and cowpea flour. This study is experimental study comparing all of formulation of breadfruit flour and cowpea flour added to kue mangkok is F0 (TS= 0 g ; TKT= 0 g), F1 (TS= 32 g ; TKT= 48 g), F2 (TS= 40 g ; TKT= 40 g) dan F3 (TS= 48 g ; TKT= 32 g). This data were processed using One Way Anova with Duncan's continued test. Results of the nutritional content of kue mangkok is Moisture content 51.02 g, ash content 0.67 g, protein 4.41 g, total fat 16.85 g, carbohydrate 27.03 g. The formula’s chosen by the best formula. The conclusion of this study, there are significant differences in proximate of kue mangkok with the addition of breadfruit flour and cowpea flour.

Abstract

Frozen bean sprouts yogurt is a probiotic drink made from fermented vegetable milk that has a consistent texture and is synonymous with sour taste. In the fermentation process of yogurt, lactose is broken down from lactic acid bacteria into lactic acid. One of the innovations is to improved quality of yogurt by adding variations in the addition of red dragon leather extract which contains polyphenols and antioxidants. The purpose of this study was to determine the antioxidant activity, physical and sensory characteristics with the addition of red dragon fruit peel extract. This study used a completely randomized design (CRD) with 5 treatments with 5 replications. The treatment for the addition of dragon leather extract used was (0; 1; 3; 5; and 7 percent). The analysis in this research is analysis of antioxidant activity, physical characteristics, and sensory. The results showed that the addition of red dragon leather extract significantly different from antioxidants and physical characteristics. Meanwhile, the sensory properties were not significantly different. The best treatment was obtained at a concentration of 5% which has sensory properties (4.02), pH (4.34), viscosity (4006 mPas) and antioxidant activity of 26.17% RSA.

Abstract

Fish bone, as a food waste, and cowpea can be a high potential ingredient to develop a healthy snack food. This study aimed to compare and sensory properties of a snack food made from ratio of fish bone and cowpea. This experimental study manipulate fish bone (FB) and cowpea (CW) waste into four formula F0 (control), F1 (90g:20g), F2 (80g:30g). ) and F3 (70g:40g). Proximate and calcium analysis was carried out in an accredited laboratory, while the sensory analysis was evaluated by semi-trained and consumer panelists. One Way-Anova test with Post Hoc test was performedto answer research question. There is significant difference among all formulas (p<0.05) in the parameters of color, aroma, texture and taste. The snack bar F3 was the most preferred by the panelists. This formulation contains 12.06% protein and 5572 mg calcium and can be claimed as a calcium source snack. The greater the concentration of patin bone meal, the higher the calcium content of the snack bar. The hedonic test showed that increase in the concentration of patinbone meal had an effect on the texture, aroma and taste of the resulting snack bar.

Abstract

Soybean sprouts have nutritional components and functional characteristics that are better than soybeans. Soybean sprouts are easily damaged, so efforts are needed to maintain shelf life through packaging and storage. This study aimed to determine the effect of packaging type on cold storage on protein content, total microbes, and physical properties (color and weight loss) of soybean sprouts. The study used a completely randomized design with 5 treatments and 5 replications, namely: open container packaging (A), 0.02 mm thickness HDPE plastic (B), 200 ml closed plastic bowl (C), banana leaves (D), and HVS paper. (E). Storage at a temperature of ± 10oC for 3 days. The results showed that the cold storage of soybean sprouts based on the type of packaging did not affect the protein content, but affected the total microbial and physical properties (color and weight loss). In determination of the best treatment using the Composite Performance Index (CPI) method, the best results were obtained in treatment B with a protein content value of 12.13%, a total microbe of 1.4x106cfu/g, a color with a value of L* 96.34, and a weight loss of 0.05. %.

Abstract

Free radicals have an unpaired electron in the outermost orbital causing degenerative diseases such as cancer. However, it can be inhibited by antioxidants. Natural antioxidants are considered safer than synthetic antioxidants, which have harmful side effects if consumed by the body in the long term. Natural antioxidants are obtained from natural ingredients such as plants. Agung banana is one of the plants that have the potential to produce antioxidants. The community widely consumes these bananas, increasing the waste of banana bunches stem. Banana bunch stem is one of the wastes that has not been widely used. This study aims to determine secondary metabolites' content through phytochemical screening, total phenol, and antioxidant activity.Phytochemical screening is a qualitative descriptive test with indicators of color change and the presence of precipitate. The screening results showed that the agung banana bunch stem extract was positive for flavonoids, triterpene terpenoids, polyphenols, tannins, and alkaloids. The total phenol test showed a result of 40,00 mg/g. The antioxidant activity test showed an IC50 value of 190,55 µg/ml, which was classified as weak. Research shows that the relatively small relationship between total phenol causes low/weak antioxidant activity.

Abstract

Black soybean is a food ingredient that has functional characteristics. Black soybeans have a relationship with health, namely in black soybeans contained anthocyanins and isoflavones. Black soybeans are a source of vegetable protein, each seed contains an average of 37% protein. The addition of black soybean flour to the spring roll skin is intended to increase the nutritional and functional value of the spring roll skin. The purpose of this study was to determine the effect of adding black soybean flour to protein content, antioxidant activity, tensile strength and sensory properties of spring roll skin. The independent variable used was the concentration variation of black soybean flour (0, 2, 4, and 6 percent) with 6 replications. The steps taken were starting with making spring roll skin with the addition of black soybean flour, then analysis was carried out on chemical characteristics (protein content and antioxidant activity), tensile strength and sensory quality (hedonic test and scoring test). The results showed that there was a significant effect of variations in the concentration of black soybean flour on protein content, antioxidant activity, tensile strength and sensory quality of spring roll skin. The conclusion of the research results of spring roll skin with black soybean flour concentration that is 6% concentration is the best treatment with the results of the analysis of protein content: 12.63%, antioxidant activity: 28.95 %RSA, tensile strength: 0.09N/mm2 and taste: 3,37 (somewhat like).
