Abstract

Background: Dimsum is a food from the Chinese region which is quite popular in Indonesia which has high nutritional value. Shrimp shells is one of the highest sources of active compounds for the amino acid group. This study was to determine the difference in protein content in dimsum cooked with different processing techniques. Methods: This type of research is descriptive with quantitative descriptive research design.The method used in this research is sensory test and quantitative analysis using a uv-vis spectrophotometer instrument. Ultraviolet light absorption measurements were carried out at a wavelength of 542 nm. This research were analyzed using univariate analysis which aims to explain and describe the characteristics of each research variable. And protein test result were made by plotting the absorbance value obtained against the concentration using the Microsoft excel. Results: The results showed that the shrimp dimsum had a protein content in GDK, KDK, GTK and KTK respectively 0,0307%; 0,0358%; 0,0385%; and 0,0521%. The statement that processing provides a decrease in protein levels, this is due to the use of high temperatures during the processing process resulting in denatured protein. The decrease in protein content is caused by the occurrence of denaturation and protein coagulation. The higher the temperature, the greater the amount of a densaturated protein, where at 50oC protein has experienced denaturation Conclusion: It is necessary to test the food quality of the processed shrimp dimsum (Penaeus merguensis) and further research needs to be developed using other better methods such as the Bradford method.

Abstract

Background: Adolescence is the starting point of the human life cycle in preparing for a healthy reproductive process. Guidance and information that is not true at this time can oftaffectect the future of adolescents. Most adolescents don’t use Adolescent Reproductive Health (ARH) services (57%), quite a lot of adolescents (46.3%) use internet technology in accessing the information on ARH (Sampulawa & Mubarokah, 2015). Based on the above background, the researcher wants to explore the behavior of using ARH facilities in the city of Malang. Methods: Descriptive research method with cross-sectional approach, with population, are all teenagers in the city of Malang. The research sample was taken using the purposive sampling technique, obtained a suitable sample of 200 adolescents from April to June 2021. The inclusion criteria of this study were unmarried and willing to be research respondents. Collecting data using a questionnaire via a google form. Descriptive analysis technique, presented in the frequency distribution. Results: The majority of respondents have never received correct knowledge about reproductive health (89.6%), with the majority of information sources obtained from schools (80%) and mass media (45.5%). Respondents used mass media to access information on reproductive health from the internet (87.5%) and books (51.5%). In using gadgets, respondents use them for 5-10 hours a day (53.5%), but only occasionally use them to find information about reproductive health (50.5%). Respondents stated that the use of mass media as a source of information about reproductive health can help in maintaining health (96.5%). Conclusion: Internet-based health education about adolescent reproductive health is needed because it is easy and simple, and the content is interesting to read. It can be used as an alternative media for reproductive health learning.

Abstract

Background: Garlic (Allium sativum, L) was used empirically by the ancestors as a useful plant for hypercholesterolemia. The processed garlic product, namely black garlic, has gone through an optimal heating process at a temperature of 70oC for 21 days. Black garlic can become a standardized herb if it has been through characterization and toxicity tests. Methods: The characterization test is known by measuring several general standard parameters of Indonesian extracts. Acute toxicity test was carried out by dividing 5 treatment groups namely negative control, group I (5 mg/kg BW), group II (50 mg/kg BW), group III (300 mg/kg BW), group IV (2000 mg/kg BW). Results: The results showed that the standardization of black garlic extract has a drying shrinkage content of 7.24%, a water content of 8.8%, a total ash content of 4.79%, an acid insoluble ash content of 1.52%, a water soluble extract content of 7.47% and an ethanol soluble extract content of 9.3% which is still into the Indonesian herbal pharmacopoeia standard and the administration of black garlic ethanol extract caused mild toxic symptoms during the acute toxicity test and obtained LD50 values > 2000 mg/kg BW. Conclusion: Characterization of black garlic extract according to standardization parameters of Indonesian plant extracts and administration of ethanolic extract of black garlic has an LD50 value > 2000 mg/kg BW which is included in category 5 in the OECD.

Abstract

Background: Moringa oleivera is a local plant species that has the potential to be developed for nursing mothers. The content of phytosterol compounds contained in Moringa leaves has a function to increase and facilitate the production of breast milk. Instant Moringa powder preparation is one of the processed Moringa powder leaves in the form of powder for drinks that can be used by nursing mothers. Dates contain sterols needed to produce hormones for breastfeeding mothers, such as estrogen, progesterone, and prolactin. This hormone has a very important role in increasing milk production. Methods: Extraction of Moringa leaf powder (15%) and dates (25%) by infundation method with aquadest solvent. Moringa powder extract and date extract were further crystallized with sucrose (60%). Results: The results of the formulation of 30 grams of moringa plus 50 grams of crystallization with 120 grams of sugar obtained as much as 115 grams of moringa powder. The color of the preparation is brownish yellow, the smell is typical of Moringa with a slightly bitter sweet taste, pH is 5.61%, water content is 5.41% and fat content is 1.75%. Conclution: There is a shrinkage during the formulation processing process of 57% of the net weight of the material.

Abstract

Background: Emergency situations can arise from various diverse conditions, can come from natural conditions, humans and technological advances that have an impact on the emergence of disasters, accidents and diseases that threaten life or cause disability. Every individual in the community needs to know the flow of accessibility in an effort to seek help and the steps to provide first aid, so it is very necessary to attend training. This can be done by participating in an algorithm-based accessibility simulation model training. Methods: This type of research is a comparative experimental study with a pretest-post test design with a control group with a cross sectional approach. The respondents involved are special lay people (members of linmas in the city of Surakarta). The sampling technique used was random sampling by spreading invitations to respondents, so that 110 respondents agreed. This research instrument was tested for expert validity, namely practitioners and academics of emergency nursing, totaling 3 people. Data were analyzed by t-test with the help of a computer Results: The results showed an increase in the value of 4.4 from the pretest (Mean = 73.5) and posttest (Mean = 77.9) and the t test results showed the value of Sig. (2-tailed) is 0.00 so it can be concluded that there is a significant difference between the pretest and posttest values. Conclusion: Training with an algorithm-based accessibility simulation model can significantly increase knowledge related to the emergency field. So it needs to be recommended to be carried out gradually, continuously and thoroughly to community members.

Abstract

Background: Carrots production in Indonesia is quite abundant but has not been used optimally. How to process carrots is very necessary so that they become foods that have a high selling value while maintaining the content of antioxidant compounds contained therein One way to optimize is to make carrot flour that can reprocess into food products, steamed brownies. This research was conducted to increase the selling value of carrots, to determine the quality and antioxidant activity of carrot flour steamed brownies. Methods: The research type is quantitative with a design of descriptive research. Determination of the quality of carrots flour and carrots flour steamed brownies included water and ash content assays. A qualitative assay using color reaction assays, quantitative analysis, and antioxidant activity using UV-Visible Spectrophotometry. Results: The quality assay result content of water and ash in carrots flour was 4.1% and 0.5% and in carrots flour steamed brownies was 26.8% and 1.8%. A qualitative assay using a color reaction assay with antimony trichloride showed positive results, both for carrot flour and carrot flour steamed brownies. The result of antioxidant activity with IC50 values of 241.4822 ± 2,1294 ppm Conclusion: The quality assay results in carrots flour and carrots flour steamed brownies in accordance with the flour parameters of SNI 3751: 2009 and SNI 01-3840-1995 for steamed brownies. The result of antioxidant activity for carrots flour steamed brownies including a medium level. It is necessary to carry out proximate tests such as fat, protein, carbohydrate, and microbiological tests on carrot flour and carrots flour steamed brownies.

Abstract

Background: Nutritional status in Indonesia, especially stunting in toddlers, is still a problem that is influenced by many interrelated factors. This Study aimed to analyze the factors related to prevention of stunting in toddlers. Methods: This study used a cross-sectional design. The population was 131 mothers who have children aged 2-5 years at Timbulharjo village, Sewon, Bantul with number of samples are 57 people using purposive sampling technique. The independent variables were prior related behavior, education level, socio-economic status, perceived benefits to action and perceived barrier to action. Dependent variable was prevention of stunting. Data were collected using questionnaire and analyzed using logistic regression with a significance level α 0.05. Results: The vast majority (54.4%) of maternal education is high school (61.4%) with a family income of <1,790,500, most respondents have the benefit of perceived actions insufficient categories (56.1%). High prior related behavior was 1.26 times better at stunting prevention than low prior related behavior. Any change per 1 unit on the previous behavioral variable and a change per 1 unit on the benefit variable of the perceived action, will increase the likelihood of stunting prevention behavior (4.6%). Conclusion: Factors associated with stunting prevention behavior are prior related behavior and perceived benefit to action. The dominants factor related to stunting prevention behavior is prior related behavior. This research showed that it is able to add information and improve stunting prevention behavior for the community. This can be realized through collaboration with health workers to conduct integrated service program held an activities, training, workshop, and family mentoring related to stunting prevention.

Abstract

Background: Receptive language is the ability to understand what is seen and heard to help children develop listening skills, identify concepts through understanding the labeling of words, and improve the ability to respond to any communication. Auditory memory involves the ability to retrieve information presented orally. This study analyzed the relationship between auditory memory digit and preschool-age child receptive language ability. Methods: This study was quantitative research. The research design used in this study was an observational correlation with a cross-sectional approach. The research sample consisted of 58 students in three Private Kindergartens existing in the Ministry of Education and Culture of Surakarta. Auditory memory testability of sample using hearing forward test and receptive language ability of sample using Assessment of Children's Language Comprehension form. Hypothesis testing using the Chi-Square hypothesis. Results: The result it can be concluded that auditory memory digit does not have a relationship with receptive language ability in preschool-age children because significance value more than 0.05 (ρ>0.05) with an OR value of 0.857, this means that the auditory memory digit is above average has a meager chance of influencing receptive language ability above average, which is only 0.857. Conclusion: The dominant factor influencing the receptive language skills of children aged 3-6 years is communication during interactions or activities with parents, such as reading fairy tales or telling stories. Receptive language skills predicted symbolic understanding as reflected in picture comprehension and how language skills are interrelated with social skills.

Abstract

Background: Caesarean section is the delivery through a surgical incision in the abdomen and uterus with various risks, such as Surgical Site Infection (SSI). This research aims to evaluate the use of prophylactic antibiotics and observe the outcome of prophylactic antibiotic therapy in cesarean section patients. Methods: This non-experimental research used descriptive methods and the data were obtained retrospectively from medical records. The data covered the type of antibiotic used, the dose used, the route of administration, and the time of administration. The results of the study were compared with the ASHP Therapeutic Guidline which is then measured using the percentage formula. Results: The results showed from the 54 patients, most of them aged 20-34 years (63.0%) with a gestational age of 37-42 weeks (96.2%), and length of treatment of 4 days (72.2%). There are 5 types of indications in the cesarean section patients and the highest case is the patients with a history of cesarean section. Conclusion: Based on research on the use of prophylactic antibiotics in cesarean section patients at the Pertamina Bintang Amin Hospital Surgical Center Lampung in 2019 – 2020, it has not met the ASHP Therapy Guidelines. Because of the four analyzes, only the dose, route of administration, and time of administration met 100% of the ASHP Therapeutic Guidelines. Meanwhile, the analysis of the types of prophylactic antibiotics does not comply with the ASHP Therapeutic Guidelines. The therapeutic showed a good outcome based on the patient's body temperature.

Abstract

Background: Efforts to prevent the spread of COVID-19 require personal awareness, understanding, and a sense of responsibility toward the community. The fundamental purpose of this study was to determine the factors related to the social responsibility of the santris in preventing the spread of COVID-19 in the pesantren environment. Methods: This descriptive correlative study used a cross-sectional approach with 384 respondents (santris), a total population of 8.413 santris in various Pesantren in Probolinggo, East Java. A self-administered questionnaire was used to conduct the online survey using a Google form and social networking apps. The validity test results of each questionnaire using Product Moment with 40 participants showed a value of more than 0.312 and Cronbach's alpha values of 0.722, 0.759, and 0.774 on each knowledge, attitude, and social responsibility questionnaire. Then descriptive statistics and chi-square tests were used to analyze the data. Results: The findings show that the level of knowledge about Covid-19 of the santris is moderate (49.7%), attitudes are in a good category (52.3%), and social responsibility is in a good category (72.4%). Their knowledge, attitude, and residence were all significantly associated with santri's social responsibility behaviors (p 0.05). Conclusion: Knowledge of COVID-19 transmission and attitude toward the state measures for COVID-19 prevention and control were significantly associated with participants’ social responsibility behaviors. Santris becomes more conscious of their own and the environment's needs and responsibility due to these results.
