Abstract

The objectives of the experiment were to determine the effect of pumpkin flour filler substitution on the nutrition facts of beef sausage. The research material was divided into five substitution treatments of pumpkin flour as a filler in sausage processing, namely: 0, 25, 50, 75, and 100% of the total filler. Each treatment consisted of five replications. The nutrition facts of sausages was calculated based on the nutritional adequacy rate of sausages which refers to the average energy sufficiency for the Indonesian population per person per day, which is 2,150 kcal, total protein 60 g, total fat 67 g, and 30 g food fiber with a 50 g serving size. The data from the calculation of the nutrition facts of sausages were analyzed by analyzing variance and then tested by using Duncan's New Multiple Range Test. The results showed that the sausages substituted filler with pumpkin flour had a highly significant effect (P<0.01) on total protein, fiber, and β-carotene, but did not affect the energy from fat and total fat of beef sausage. Sausages substituted filler with pumpkin flour up to 100% had a higher intake of total protein, fiber, and β-carotene than control sausages.

Abstract

The purpose of this study was to determine the factors that influence the strategy and development of the use of organic fertilizers in Banyuwangi Regency to make the land healthier. This research was conducted in April-June 2021 in Banyuwangi Regency. The population in this study came from 5 farmer groups in Banyuwangi Regency, amounting to 350 people. The data used in the form of primary and secondary data. Primary data was obtained from the distribution of questionnaires, while the secondary data sources were obtained from the Agriculture and Food Service of Banyuwangi Regency The data obtained were analyzed using AHP (Analytical Hierarchy Process) and CSI (Customer Satisfaction Index). The results of this study indicate that 1) The priority of the strategy for developing organic fertilizer in the Banyuwangi Regency is the role of the government in supporting all activities related to organic fertilizer. 2) Farmers are satisfied with the current performance of the Banyuwangi Regency Agriculture and Food Service with a satisfaction value of 80.79%.

Abstract

The Aims of this research are to; 1) know the supply chain of fat-tailed sheep with institutions involved in marketing in Gumukmas District, Jember Regency. 2) find out the difference in the price of fat tail sheep in Gumukmas District, Jember Regency. This research was conducted in May-August 2021 in Gumukmas District, Jember Regency. The data obtained were analyzed descriptively by calculating the formula for marketing margin, margin percentage, and marketing efficiency. The results showed that the most efficient supply chain during the Eid al-Adha period in Gumukmas District, Jember Regency, male and female sheep tails were pattern I in terms of farmer price share, males 95.24% and females 92.29%. The efficiency of the supply chain after Eid al-Adha male fat-tailed sheep is a pattern I with a farmer price share of 88.00% and a female in pattern III with a farmer price share of 90.17%.

Abstract

Penelitian ini dirancang untuk mengevaluasi pengaruh pemberian tempe dedak plus isoflavon terhadap dimensi tubuh, kualitas karkas, sifat organoleptik daging broiler dan kadar kolesterol daging broiler. Dua ratus empat puluh ekor broiler dengan perbandingan jantan dan betina 1:1 dibagi menjadi 4 kelompok perlakuan dengan 6 ulangan pada setiap perlakuan sebagai berikut: P1 = Kontrol; P2 = 20% tempe dedak; P3 = 20% tempe dedak plus 10 mg isoflavon/kg pakan, dan; P4 = 20% tempe dedak plus 20 mg isoflavon/kg pakan. Hasil penelitian menunjukkan bahwa pemberian tempe dedak plus isoflavon berpengaruh tidak nyata terhadap warna, berat karkas, meat bone ratio, cooking loss dan drip loss. Penambahan isoflavon ke dalam tempe dedak cenderung menurunkan kadar kolesterol daging broiler, tetapi tidak memperbaiki sifat organoleptik daging. Penambahan isoflavon tidak mempengaruhi dimensi tubuh. Terdapat korelasi sedang (r= 0,342) antara berat badan dengan panjang punggung. Dapat disimpulkan bahwa penambahan isoflavon ke dalam tempe dedak tidak memperbaiki dimensi tubuh, kualitas karkas dan sifat organoleptik daging. Penambahan isoflavon ke dalam tempe dedak cenderung menurunkan kadar kolesterol daging broiler.

Abstract

Beef cattle have a different carcass percentage according to the breed. The percentage of carcass in livestock is an important indicator to determine the potential for meat obtained from cattle. IGF-1 is a gene from the growth gene family which is known to have an influence on the percentage of carcass. A total of 445 samples of Sumba Ongole cattle (156 males and 289 females) were used for genotyping using PCR-RFLP. A total of 237 carcass percentage data were obtained in this study. Data were performed using POPGENE version 1.32 and Microsoft Excel for genetic data and descriptive statistics, respectively. The intensively reared cattle have a higher carcass percentage than the cattle that were reared traditionally. The IGF-1/RsaI in the SO cattle was polymorphic with two alelles (C and T) and three genotype (CC, TT, and CT) but has low values of heterozygosity. The C allele frequency was 0.0034 and T allele frequency was 0.9966. Further studies in larger population are needed to validate the IGF1/RsaI as a candidate genetic marker in the SO cattle.

Abstract

Quail eggs are a source of animal protein that the public can consume. In addition to the low price, eggs also contain nutrients needed by the body. So it is necessary to pay attention to the quality of the eggs before consuming them. Egg quality that can be assessed is derived from internal and external quality. The quality of the eggs is influenced by various factors, including the content of the ratio given, especially the energy-protein balance of the feed. This study aimed to assess the external and internal quality of quail eggs with different protein and energy levels. The research was carried out for 42 days in the poultry house of the Animal Husbandry Study Program, Faculty of Agriculture, Djuanda University. The feed ingredients formulated in this study as the basic ration were yellow corn, fine bran, soybean meal, fish meal, premix, DCP, CaCO3, CPO, and Cr-O. The design used was a completely randomized design (CRD) with four treatments and four replications with six quails per cage unit. The research data were analyzed by analysis of variance (ANOVA) if the data showed significantly different results (P<0.05), followed by Duncan's test. The variables observed in this study were egg weight, shell weight, percentage of eggshell weight, eggshell thickness, egg index, egg white weight, egg yolk weight, egg white weight percentage, egg yolk weight percentage, Haugh unit (HU). The results showed that the balance of energy and protein differences were not significantly different in all variables. Based on the research results, it can be concluded that the quail ration with the balance of protein 17% and metabolizable energy 2800 kcal/kg has been able to maintain the internal and external quality of eggs in quail and produce standard egg quality.Keywords:  protein energi balance; egg white, yolk, haugh unit

Abstract

As time goes on in the land function area, one solution is needed to meet the needs of forage in the livestock sector. The research was conducted in April 2021, and the samples were identified at the Animal Feed and Forage Laboratory at Padjadjaran University.  This research aimed to determine the botanical composition and carrying capacity of the Padalarang-Cileunyi border toll road.  The method used in this research was stratified random sampling with one sample in every kilo meters on both roads randomly using a quadrant of 0.5 m x 0.5 m with a total of 66 samples along 33 km.  The samples were weighed in fresh and then analyzed descriptively.  The carrying capacity of the padalarang-Cileunyi border toll road was 1.63 AU/ha/year with a forage production of 2.70 tons/ha.  In this research, 80 types of botanical species were found with the most botanical compositions being Paspalum scrobiculatum and Polygonum aviculare.Keywords:  botanical composition, forage, carrying capacity, toll road

Abstract

The meats physical quality is reflected by meat characteristics and reference for consumers to choose good quality of beef. Several factors that affect the meat quality are interaction genetic and environmental factors during maintenance until post slaughter. The research was conducted to evaluate the meat physical quality with the breeds factor (Red Brahman Crossbred and Droughtmaster), genders (steer and heifer), and ages (PI0, PI2, and PI4). The research materials were 120 samples of Longissimus dorsi ribs 12th from AM FARM abattoir and tested physical quality meat on QC Laboratory of KASA Company. The data were analyzed by ANOVA and Least Significant Difference if there were any significant. The variables observed were pH, meat color, WHC, cooking loss, and tenderness. The results showed that breeds factors have no significant difference on meat physical quality. The factor of genders nested to breeds has very significance (P<0,01) on meat physical quality except for pH and tenderness there wasn’t significant differences. The factor of ages nested to genders nested to breeds has very significant (P<0,01) on meat physical quality except that pH. The conclusion that the evaluation of meat physical quality can be predicted by the relationships of breed, genders, and age factors. Keywords: Meat physical quality, breeds, genders, ages

Abstract

This study aimed to determine the effect of edamame flour filler substitution on the physical quality of culled duck meatballs. The research material consisted of culled duck meat, tapioca flour, edamame flour, albumen, garlic, onion, salt, pepper, monosodium glutamate, sodium tripolyphosphate, and ice. The edamame flour filler substitution treatments were P0 (0%), P1 (5%), P2 (10%), P4 (15%), and P5 (20%) from total filler. Each treatment consisted of five replications. The parameters which tested were pH value, water holding capacity, cooking loss, and chewiness. The data on physical quality results were analyzed by analysis of variance using completely randomized design and if there was significantly (P<0.01), then that tests further by the Duncan's New Multiple Range Test. The results showed that the substitution of edamame flour filler to the level of 20% had a highly significant effect (P<0.01) on pH value, water holding capacity, cooking loss, and tenderness of culled duck meatballs. The edamame flour filler substitution at the level of 20% can increase the pH value, water holding capacity, and cooking loss, but decrease chewiness of culled duck meatballs.

Abstract

Cassava leaf paste is an alternative substance in supporting the physiological performance of quail. Cassava leaf paste contains nutritional compositions such as water, ash, crude protein, crude fiber, fat, and carbohydrate. Cassava leaf paste has high crude protein and low crude fiber. The content of β-carotene and chlorophyll in cassava leaf paste has the ability as an antioxidant. Cassava leaf paste also contains phytochemicals such as flavonoids, saponins, tannins, sitosterol, and stigmasterol. The concentration of phytochemical has slightly higher flavonoid content, moderate tannins and saponins, and high sitosterol and stigmasterol. These phytochemicals act as antioxidants, antimicrobials, anti-inflammatory, improve the immunomodulatory system and reduce cholesterol. In addition, cassava leaf paste contains macro minerals such as P and Ca, as well as microminerals (Fe, Cu, Mn, and Zn). These minerals act as an antioxidant increases nutrient absorption, enhances immune response, and take part in mineralization during eggshell formation. Cassava leaf paste also has low levels of cyanide. Based on the nutritional content, phytochemicals, macro and micro minerals, and cyanide acid, cassava leaf paste has the potential to increase the physiological performance of quail.
