Abstract

White rice has become the main source of carbohydrates, but in the last few years, red and black rice are getting more popular. Red and black rice can be an alternative food for people who wish to reduce the risk of diabetics due to its low glycemic index. Pigmented rice demand in Yogyakarta is continuously increasing. However, farmers are reluctant to plant pigmented rice because of their lower yields. Value chain analysis on pigmented rice is performed to provide the condition of the business’ performance for farmers who are not willing to work on pigmented rice yet. The objective of this study was to identify the main activities and to measure the performance of the value chain. The value chain performance was measured by calculating profit, marketing margin, and farmer’s share. In the business of pigmented rice nowadays, there are 5 actors involved, i.e. farmer, farmers group, association of farmers groups, distributor, and retailer. These five actors formed 5 value chains for red rice and 4 value chains for black rice. The main activities were cultivating, cropping, milling, sorting out, packing, and selling. The performance of the pigmented rice was as follows: on the red rice value chain, farmers earned the highest profit in each chain, except on the chain where the association of farmers groups was involved. The largest marketing margin was found on the farmer – association of farmer groups – retailer – end-user consumer chain. On the black rice value chain, farmers earned the highest profit in each chain, except on the chain where the farmers group was involved. The largest marketing margin found on the farmer – farmers group – distributor – retailer – end-user consumer chain. For both the red and the black rice value chain, the farmer’s highest share was obtained on the farmers – distributor – end-user consumer chain.

Abstract

Surakarta City has experienced various losses due to flooding. Kali Pepe Catchment contributes to flooding that occurs in Surakarta City, mainly by upstream areas dominated by agricultural activities. Land acquisition in the upstream area of Kali Pepe Catchment for reforestation can reduce the river discharge into the downstream region of Surakarta City. This study aimed at 1) making delineation of land acquisition areas, 2) determining the amount of fair replacement value, 3) calculating the amount of river discharge reduction. Analysis of land capability using a geographic information system was used to determine the reforestation area. The fair replacement value was calculated based on the Indonesian Assessment Standard 306, by involving the physical replacement component and non-physical replacement. The amount of river discharge reduction of the Kali Pepe Catchment was calculated using a rational discharge model. The results showed that the delineation of 1.269,67 ha, which is the target of land acquisition in the upstream of the Kali Pepe Catchment, requires a replacement value of IDR 909 billion. This treatment reduced the river discharge by 139.263 lt/sec or 29.4%. River discharge reduction can be a solution in overcoming flooding problems in the downstream region of the Kali Pepe Catchment, Surakarta City.

Abstract

Red chili’s characteristic flavor has been a popular element in Indonesian cuisine. A large and continuous demand for red chili is inconsistent with production volumes, causing frequent and extreme price fluctuations throughout the year. This study explores the changing trends in red chili prices to identify the influencing factors. The study was conducted in the Sleman district of Yogyakarta, Indonesia. Time-series datasets of monthly production rates and prices of chili for 3 years were subject to multiple linear regression analysis. The study found a rising trend in prices in the Sleman Regency from January 2014 to December 2016. The factors significantly influencing the red chili prices was the price of cayenne pepper. The production cost of chili, the price of tomatoes, and the price of chili for the previous 2 months had only partial and nonsignificant effects. The timing of great Muslim celebrations, such as Eid Al-Fitr and Eid Al-Adha had no significant effect on the price of red chili. However, Christmas and New Year events were associated with higher prices.

Abstract

This study aimed to characterize red kidney bean instant porridge formulation with sucrose (BKM S), isomalto-oligosaccharides (BKM IMO), and fibercreme (BKM FC) as sweeteners on sensory, chemical and physical properties. Isomalto-oligosaccharides and fibercreme are used as sucrose substitutes because they provide a sweet taste as well as high fiber that can provide health benefits. The result showed that IMO and FC as a sucrose replacement in red kidney bean instant porridge formulation did not affect the texture, instead of lowering the acceptance level. The formulations did not change rehydration time but reduced the viscosity, while the water holding capacity increased with IMO replacement but decreased in FC replacement. Besides, the formulations increased the amount of fiber and decreased calories.

Abstract

Calamus ornatus Bl., locally known as rotan mantang or rotan seuti is one of the commercial rattan species growing in the forests of East Borneo. Its fruit is edible, like the fruits of other species of rattan, and it has been used by the local people as traditional medicine to treat stomachache or toothache. Until recently, there has not been any study investigating the benefits of the fruit for medicinal or other purposes. This research aimed to discover the bio-activity potentials of Calamus ornatus Bl. fruits by identifying its toxicity level and antibacterial potentials. The parts of the fruit (pericarp, flesh, and seed) were extracted using ethanol as solvent to extract samples. The toxicity was analyzed by using the Brine Shrimp Lethality Test (BSLT) method while the antibacterial activity was tested using a well diffusion method. Low toxicity was found in the flesh, whereas the pericarp and the seed were non-toxic. Antibacterial activity against Escherichia coli was found in the pericarp and the seed, while antibacterial activity against Streptococcus mutans was found in the pericarp and the flesh.

Abstract

Rice-field rat (Rattus argentiventer) is a rodent that has a high level of productivity. These animals attack rice plants from the vegetative to the generative phase. This research aimed to analyze and to predict the accuracy of the use of owls with mathematical equations model in Kebokura and Lebeng villages, Sumpiuh district. Lotka - Volterra and Competitive Lotka-Volterra models were used to predict the population dynamics of Owl (predator) and rice-field rats (prey), then Runge - Kutta numerical method was applied to analyze the population dynamics of predator and prey at a certain time. The results of the analyses using the Lotka – Volterra, Competitive Lotka - Volterra equations and simulation data, each graph data showed that the rats’ population was able to be maximally suppressed. Based on the analysis result, started with 24 owls and 1,689 rats, the rats’ population could be suppressed to 104 using Lotka – Volterra, and to 176 using the Competitive Lotka – Volterra model. Then in the first and second simulation, started with 50 and 100 owls and 1,689 rats, analysis using Lotka – Volterra and Competitive Lotka – Volterra showed that the rat population could be suppressed to as much as 126, 188 and 145, 189, respectively. Based on the analysis, it could be concluded that use of Serak Jawa owl strategy was able to reduce and stabilize the rat populations. Furthermore, the higher population of owls can prevent the population explosion of rats and can suppress the rat population to a lower number.

Abstract

Bekatul atau rice bran adalah lapisan luar dari beras yang terlepas pada saat proses penyosohan dari beras pecah kulit menjadi beras. Salah satu kendala peneriman konsumen pada bekatul adalah mutu sensorinya. Oleh sebab itu, salah satu upaya untuk meningkatkan mutu sensori bekatul dilakukan dengan fermentasi. Tujuan penelitian ini adalah mengetahui pengaruh jenis kapang, varietas bekatul (padi), dan lama fermentasi terhadap perubahan kandungan total senyawa fenolik (TSF), aktivitas antioksidan, dan profil sensori bekatul fermentasi dari dua varietas padi (Sintanur dan Inpari 24). Fermentasi dengan metode Solid-state fermentation menggunakan perlakuan jenis kapang yaitu Rhizopus oligosporus, R. oryzae dan kombinasi keduanya, dengan lama waktu fermentasi masingmasing adalah 48, 72 dan 96 jam. Analisis kandungan TSF dengan metode Folin-ciocalteu, analisis aktivitas antioksidan menggunakan metode DPPH, dan analisis profil sensori menggunakan metode Projective mapping (Napping®) dengan panelis tidak terlatih berjumlah 75 orang. Hasil penelitian menunjukkan bahwa perlakuan varietas padi, jenis kapang dan waktu fermentasi menghasilkan nilai TSF dan aktivitas antioksidan yang berbeda nyata (p<0,05). Bekatul Inpari 24 memiliki nilai TSF dan aktivitas antioksidan yang lebih tinggi dibandingkan bekatul Sintanur (p<0,05). Nilai TSF dan aktivitas antioksidan tertinggi pada bekatul Inpari 24 yang difermentasi dengan kapang R.oligosporus selama 48 jam dengan nilai masing-masing sebesar 4,16±0,3 mg GAE/g BK dan 86,11 %. Selanjutnya, hasil analisis korelasi menunjukkan korelasi positif antara kandungan TSF dan aktivitas antioksidan kedua varitas bekatul fermentasi (r=0,82). Analisis sensori menunjukkan bahwa panelis mampu membedakan atribut sensori pada sampel yang diujikan.

Abstract

Indonesian farmers used to utilize crank to turn on hand tractor machine till today. It may make operators weariness and potentially raised work accident. The purpose of this study was to design a portable electric starter for hand tractor machine. Moreover, the study was addressed to evaluate the performance of the design. The minimum rotational speed (n) and initial torque (T) in decompression and non decompression conditions were adopted to calculate the minimum power (P) requirement. The minumum power of decompression and non decompression were 572.78 watts (≈ 0.74 hp) and 841.75 watts (≈ 1.09 hp), respectively. These values used as a reference in determining the main components, namely the wet type 12 volt battery and the serial type direct current starter motor. The next step, set up additional components, transmission mechanism, as well as concept of portable electric starter. The design was realized by construction and assembly process. A performance test was carried out on the prototype. The performance test of non decompression showed 1.88 seconds for working time, 264.56 Joules for workload (operator), 363.20 rpm for rotating speed and 0.68 watt hours for power requirement. Overall, application portable electric starter indicated better performance than crank. This study proved a high preference of operator on application of portable electric starter in decompression conditions.

Abstract

Red snapper processing industry (Lutjanus malabaricus) produces more than 50% solid waste and by-products, so the by-product of red snapper processing, viz., the fish head is a potential source of omega-3. This study aimed to determine the rendering method and extraction time, producing the best quality fish oil that is rich in omega-3 from the red snapper head. The samples were taken from a fish fillet industry in Pasuruan, East Java, Indonesia. Randomized Block Design (RBD) with two factors has been used to evaluate different rendering methods (wet and dry rendering) and extraction time (1, 2, and 3 hours) in triplicate. The results showed that the best fish oil was produced by wet rendering method in 1 hour of extraction time, achieving peroxide number 0.98 meq/kg, free fatty acid 1.02%, acid number 2.02%, extraction yield 9.02%, water content 4.22% (wb), brightness (L) 43.5, redness level (a) -0.9, and yellowish level (b) 2.7. The fish oil consisted of 31 types of fatty acids with palmitic acid as the major fatty acid. Additionally, the oil also contained omega-3 (14.02%) as well as AA, DHA, and EPA.

Abstract

Ikan mujair (Oreochromis mossambicus) merupakan ikan konsumsi dan memiliki kandungan protein yang tinggi. Peningkatan produksi ikan mujair terus meningkat pada industri fillet dan olahan produk sehingga berdampak pada melimpahnya hasil samping, salah satunya tulang. Kandungan kalsium tulang ikan sebanyak 36% yang berpotensi dimanfaatkan menjadi nanokalsium. Salah satu pemanfaatan nanokalsium di bidang pangan yaitu dengan melakukan penambahan nanokalsium untuk memperbaiki kekuatan gel kamaboko. Tujuan dari penelitian ini untuk mengetahui pengaruh penambahan nanokalsium dengan konsentrasi yang berbeda terhadap karakteristik fisik kamaboko dan konsentrasi terbaiknya. Kamaboko diproduksi dengan menambahkan surimi ikan mujair dengan nanokalsium tulang ikan mujair pada konsentrasi  0%, 0,5%, 1% dan 1,5% (b/b). Hasil penelitian menunjukan bahwa penambahan nanokalsium dengan konsentrasi yang berbeda berpengaruh nyata (p<0,05) terhadap kekuatan gel, expressible moisture content, kadar kalsium, dan uji lipat kamaboko. Konsentrasi nanokalsium 1% efektif dapat meningkatkan kekuatan gel 49,32.% dan uji lipat 34,69 %, menurunkan nilai expressible moisture content 61,73%, serta memperbaiki kenampakan morfologi gel menjadi padat tidak berongga, tetapi tidak mempengaruhi kadar kalsium kamaboko.
