Abstract

Margarin umumnya diproduksi dari lemak tumbuhan. Margarin sering digunakan dalam produk pangan untuk meningkatkan nilai gizi, memberikan aroma spesifik dan rasa yang enak. Penggunaan fraksi olein-stearin dan ekstrak labu kuning merupakan upaya diversifikasi untuk menghasilkan margarin bernilai tambah. Tujuan dari penelitian ini adalah untuk mengetahui pengaruh rasio fraksi olein dan stearin terhadap penerimaan sifat sensoris margarin. Penelitian ini menggunakan Rancangan Acak Lengkap non faktorial dengan 5 perlakuan proporsi fraksi olein dan stearin yaitu 5:95, 10:90, 15:85, 20:80, 25:75. Hasil penelitian menunjukkan  proporsi fraksi olein dan stearin dengan penambahan sari labu kuning memberikan pengaruh nyata terhadap uji hedonik warna, aroma, rasa, tekstur dan uji mutu hedonik warna, aroma, rasa, dan tekstur margarin. Margarin dengan karakteristik terbaik diperoleh dari penggunaan fraksi olein dan stearin (5:95).

Abstract

Mocaf adalah produk tepung singkong yang diproses menggunakan prinsip memodifikasi sel singkong melalui fermentasi, salah satunya menggunakan mikroba BAL (Bakteri Asam Laktat) untuk proses fermentasi tepung singkong. Tepung mocaf dapat digunakan sebagai subtitusi tepung terigu pada pembuatan produk biskuit, roti dan mie. Tepung mocaf memiliki komposisi kandungan kimiawi yang berbeda dengan tepung terigu. Perbedaan yang mendasar adalah mocaf tidak mengandung gluten yaitu protein yang ada pada tepung terigu. Sehingga untuk meningkatkan kualitas mie yang dibuat menggunakan tepung mocaf maka dilakukan penambahan tepung lain yaitu tepung porang. Tepung porang memiliki manfaat yang sangat luas terutama dalam bidang pangan. Tujuan penelitian ini yaitu mengetahui penambahan tepung porang pada pembuatan mie basah terhadap karakteristik kimia dan fisik. Penelitian ini menggunakan RAL 1 faktor yaitu formulasi penggunaan tepung mocaf, tepung tapioka, dan tepung porang (P1=60:40:0, P2=60:40:1, P3=60:40:2, P4=60:40:4, P5=60:40:6) data yang diperoleh dianalisis menggunakan one way Anova dan untuk mengetahui ada atau tidaknya perbedaan perlakuan, kemudian dilanjutkan uji Duncan dengan tingkat signifikansi 5%. Parameter pengamatan meliputi kadar air, cooking time, cooking loss, dan elastisitas. Formulasi penggunaan tepung mocaf, tepung tapioka, dan penambahan tepung porang berpengaruh nyata terhadap kadar air berkisar antara 30,11% hingga 38,55%, cooking time 50,00 detik hingga 80,00 detik, cooking loss 0,91% hingga 1,07%, dan daya elastisitas 20,00% hingga 35,00%. Kata kunci: Mie basah; tepung mocaf; tepung porang; tepung tapioka, karakteristik

Abstract

The aim of this research was to investigate the impact of various types of plastic packaging on the physical characteristics, weight, sugar content, and shelf life of honey pineapple (Ananas Comosus (L.) Merr.). Additionally, this study aimed to evaluate the influence of Polypropylene (PP) and High Density Polyethylene (HDPE) plastic packaging on the sensory evaluation of honey pineapple fruit following storage. Employing a Completely Randomized Design (CRD) with three replications, treatments included no packaging, Polypropylene (PP) plastic packaging, and High Density Polyethylene (HDPE). Research parameters encompassed the physical and chemical properties of honey pineapple fruit, such as weight loss, color, aroma, texture, and sugar content.Findings revealed that honey pineapple subjected to treatment (P1) exhibited the lowest weight loss percentage (0.04%), contrasting with the highest weight loss observed in P0 (11.6%). ANOVA analysis of the scoring test indicated no significant differences in color, aroma, or texture. Honey pineapple fruit under treatment P2 demonstrated the lowest percentage of total sugar content compared to P0 and P1. Regarding physical appearance, honey pineapple fruit treated with P0 displayed the most pronounced change in aroma. According to the experimental assessment based on SNI 3166-2009, honey pineapple fruit without packaging failed to meet quality criteria, while those packaged in Polypropylene (PP) and High Density Polyethylene (HDPE) plastic met the quality standards for honey pineapple.

Abstract

The butterfly pea flower can be used as a food coloring to provide color, enhance visual appeal, and maintain or improve its organoleptic properties. Its role is not only limited to aesthetic aspects, but also has a significant health impact. Antioxidants owned by telang flowers have health potential, namely as anti-microbial, anti-depressant, anthelmintic, anti-cancer, and anti-diabetes. Therefore, the purpose of this research is to produce a powdered food coloring using telang flowers as the base material, which contains anthocyanins as a high source of antioxidants. This research method includes extraction with a 1% acetic acid solvent, a solubility test, a yield test, water content, and anthocyanin content. Maltodextrin (5,10,15%) and Carboxy Methyl Cellulose (CMC) were used as good capsulants. The total anthocyanin content determination test used the UV-Vis spectrometry method. The test results showed that increasing maltodextrin concentration was directly proportional to solubility, yield, and moisture content but inversely proportional to total anthocyanin content.

Abstract

The background to this research is that ale-ale shellfish are endemic shellfish in Ketapang Regency; the results are abundant because they are available all year round. The use of ale-ale shellfish has yet to be maximized, so it does not have added economic value for the people of Ketapang Regency. The nutrition of ale-ale shellfish is quite a lot from the fatty acids and amino acids contained in ale-ale shellfish. The weakness of ale-ale shellfish is that its water content is very high, so a method is needed to reduce the water content so that it can be used as a raw material for processed products that have high economic value, one of which is ale-ale flour. The raw material in this research is fresh ale-ale shellfish meat added with 0% and 5% salt and fried at 120ËšC, 130ËšC, and 140ËšC for 15 minutes. Tests in this research consisted of tests for protein content, fat content, water content, and sensory tests. The results of this study showed that the water content was the lowest in the P3G3 treatment, namely 5.87%. The addition of salt increases fat and protein levels indirectly. The treatment with the highest fat and protein content was P3G3, namely 1.33% and 6.43%. Sensory parameters show that the addition of salt and differences in the frying temperature of flour ales can increase consumer acceptance. Ale-ale flour with the addition of 5% salt and fried at a temperature of 140ËšC (P3G3) got the highest value in all parameters. The addition of salt and the higher temperature used in processing ale-ale flour can increase the fat and protein content, which consumers like.

Abstract

Pola konsumsi masyarakat Indonesia cenderung sulit berubah dari beras. Bahkan banyak yang masih beranggapan bahwa belumlah makan jika belum memakan nasi, ketahanan pangan dalam pengertian pemenuhan kebutuhan pangan, diusahakan agar pangan selalu tersedia setiap saat dan masyarakat juga berharap harganya terjangkau. Beras analog merupakan salah satu bentuk solusi yang dapat dikembangkan dalam mengatasi permasalahan ketahanan pangan baik dalam hal penggunaan sumber pangan baru ataupun untuk penganekaragaman pangan. Tujuan penelitian ini untuk mengetahui karakteristik mutu beras analog berbahan baku tepung sagu. Penelitian ini mengunakan rancangan percobaan RAL. Beras analog dibuat sebanyak 5 variasi komposisi bahan penyusun yaitu 100 % dari tepung sagu, dan komposisi campuran tepung tapioka dengan perbandingan 95:5, 90:10, 80:20, 70:30 Data dianalisis secara statistik menggunakan analisis varian dengan membandingkan F hitung dan F tabel dengan derajat penerimaan 5% menyimpulkan tepung sagu berpengaruh nyata terhadap karakteristik beras analog. Dalam pembuatan beras analog penguji menghasilkan karakteristik beras analog dengan kadar air 5,23% sampai 6,47, kerapatan curah tertinggi pada P5 dari 70% sagu dan 30% tapioka, Daya serap terendah adalah P5 yakni 71,67%, pada daya pengembang P3, P4 dan P5 memiliki prosentase yang sama 8% serta diameter beras dihasilkan 3,3 sampai 4,7 pada 50 g beras diperoleh berat terbanyak 44,33 pada P2. Pada Uji Hedonik keseluruhan perlakuan secara moderat disukai dan diterima oleh  panelis.

Abstract

Pie is a a type of pastry that consists of pie crust dough and filling. The texture of a well-made pie crust is arid and coarse. The texture of pie crust can be affected by the use of flour with a low gluten content. This study made a pie crust using a banana hump and breadfruit composite flour. The aim of this research was to obtain the optimum ratio banana hump and breadfruit flour on the quality characteristics of crust pie. The research method used a completely randomized design (CRD) with five treatments and four replications to obtain 16 experimental units. The treatments consisted of ratio banana hump and breadfruits flour BS1 (100:0), BS2 (75:25), BS3 (50:50), BS4 (25:75), and BS5 (0:100). Parameters observed included moisture content, ash, fat, protein, carbohydrate, crude fiber, and sensory assessment (descriptive and hedonic). Data obtained were statistically analyzed using Analysis of Variance (ANOVA) and continued with Duncan’s Multiple Range Test (DMRT) at a 5% level.  The results showed significant moisture content, ash, fat, protein, carbohydrate, crude fiber, and sensory assessment. The treatments was BS4 where moisture 8.05%, ash 2.66%, fat 15.07%, protein 1.56%, crude fiber 5.21%, and carbohydrate 72.67%. The panellist’s favoured the overall sensory assessment of BS4, which had a yellow colour and a slightly breadfruit flavour

Abstract

 Bawang merah memiliki kadar air tinggi sehingga mudah mengalami kerusakan selama masa penyimpanan. Penanganan pasca panen yang banyak dilakukan oleh para petani di Kabupaten Brebes pada umumnya masih secara sederhana/tradisional. Penelitian ini bertujuan untuk  Mengetahui pengaruh  metode  pengasapan  terhadap  kualitas  bawang  merah  selama penyimpanan dan umur simpan bawang merah. Penelitian dilakukan menggunakan metode eksperimental dengan rancangan dasar Rancangan Acak Lengkap terdiri dari 2 ulangan.  Faktor yang dicoba meliputi lama penyimpanan   yaitu 3, 6,  9, 12 minggu. Variabel pengamatan pada penelitian meliputi, kadar air, susut bobot, tekstur serta penentuan umur simpan. Hasil penelitian ini adalah Perlakuan pengasapan memberikan pengaruh nyata terhadap kualitas bawang merah selama penyimpanan terhadap kadar air, susut bobot dan tekstur. Mutu bawang merah selama 12 minggu atau 3 bulan dapat dipertahankan dari semua perlakuan dengan kondisi penyimpanan kadar air metode tradisional tertinggi 83,27% dengani rata-rata 68,82%, susut bobot tertinggi 24% terendah 3,5%, kekerasaan umbi cenderung stabil 4,14 N menjadi 4,36 N sampai akhir penyimpanan, Metode pengasapan dapat memperpanjang umur simpan umbi bawang merah adalah perlakuan dengan lama penyimpanan 9 minggu.

Abstract

Soursop leaf drink with the addition of ginger is a powder drink product which is developed into a functional food because it contains antioxidants which are good for health. Drinks in the form of powders have a low water content, so they last longer during storage. The quality of the drink can be maintained with proper packaging and storage temperature. The purpose of this study was to determine the effect of temperature and storage time of soursop leaf powder drink with the addition of ginger in metalized packaging to maintain product quality and extend shelf life. This study used a 2-factor Completely Randomized Design (CRD) with temperature treatment (10⁰C and 27⁰C) and storage time (1, 2, and 3 weeks), each treatment was repeated 3 times. Analysis was performed on 4 parameters, namely, water content, water activity, pH, and antioxidant activity. The results showed that there was a significant effect of temperature and storage time on water content, water activity, color, pH solubility, and antioxidant activity.Keywords: powder drink, antioxidant activity, soursop leaves, ginger

Abstract

Jam is a food product made from crushed fruit, with the addition of pectin and sugar to a gel or semi-solid consistency. Jackfruit, which bears fruit without knowing the season, is an excellent food source, but it spoils quickly and does not last long when stored. One way to use jackfruit is to make jam. It is hoped that the addition of cinnamon extract to making jackfruit jam will make jackfruit jam popular with all groups. The research used a Completely Randomized Design (CRD) with 3 treatments, namely the addition of cinnamon extract P1=15%, P2=25%, P3=35% with 3 replications. The jam will be analyzed for water content, vitamin C content and acceptance level based on color, aroma, texture and taste. The results of calculating the water content of jackfruit jam with the addition of cinnamon extract do not comply with the SII NO. 173 Tahun 1978. Vitamin C levels are 1.13%, 1.25%, 1.42%. The results of the hedonic test analysis showed that the 25% cinnamon extract formulation was liked by the panelists based on taste, aroma and texture and really liked the color of the jam
