Abstract

Diabetes Mellitus (DM) is a metabolic disorder in which the body's inability to oxidize carbohydrates is found, due to disturbances in the mechanism of insulin action which can cause hyperglycemia, glycosuria, polyuria, acidosis, lipemia, and ketonuria. Research objectives to analyze the difference in decreasing blood sugar levels in the group that was given red dragon fruit juice and jicama therapy in DM sufferers in the elderly GRES community in Tuban Regency. The design of this research is true experimental design, Two Group Pre-test and Post-test Design. The sample in this study were the elderly in the GRES Community, Tuban Regency, totaling 34 elderly people, using a purposive sampling technique. The analysis of this study used the statistical test pair T-test and Independent T-test. The results of the study using the Paired T-Test showed that the red dragon fruit group had a p-value of 0.000 <0.05, which means that H1 was accepted, that is, there was a difference in decreasing blood sugar levels before and after being given red dragon fruit juice therapy and the jicama juice group. with a p-value of 0.000 <0.05 which means that H1 is accepted, that is, there is a difference in the decrease in blood sugar levels before and after being given Jicama juice therapy.

Abstract

Problem: Chronic energy deficiency is a condition in which a person experiences a long-lasting and chronic lack of energy and protein. This condition can be determined through the measurement of MUAC (Upper Arm Circumference) as one of the indicators of nutritional status measurement. with a threshold of 23.5 cm. Objective: This study is to determine the relationship between macronutrient intake, iron and physical activity with nutritional status based on MUAC in SMA Negeri 2 and 4 Tuban District. Method : Analytical research method with a cross sectional approach. The sample of adolescents in SMA Negeri 2 and 4 Tuban Sub-district amounted to 237 respondents, determined by cluster random sampling technique. Analysis of the study using spearman correlation statistical test. Result: showed that adolescent girls with weight deficit energy intake had Chronic energy deficiency nutritional status with a percentage (93.5%), protein (76.5%), fat (76.6%), carbohydrates (86.2%). The results of statistical tests found a significant relationship between macronutrient intake and Chronic energy deficiency (p-value = 0.000). Conclusion: of this study is that macronutrients can affect the incidence of Chronic energy deficiency in adolescents. The lower the intake of macronutrients, the more adolescent girls are at risk of chronic energy deficiency

Abstract

Wasting is a malnutrition condition where the toddler's weight does not match the height or z-score value of < - 2SD. One of the direct factors that affect the nutritional status of toddlers or the occurrence of wasting is a history of exclusive breastfeeding, completeness of basic immunizations and infectious diseases. This study aims to analyze the relationship between exclusive breastfeeding, completeness of basic immunization, and infectious diseases with the incidence of wasting in toddlers aged 1-5 years in Tuban Regency. This type of research is cross sectional. The population in this study of all wasting toddlers in Tuban Regency in 2022 was 6,240, and a sample of 400 wasting toddlers from 10 health centers with the highest wasting prevalence in Tuban Regency. The sampling technique used is cluster random sampling, a collection method using secondary data from each puskesmas. The results of the study conducted after being analyzed using SPSS 26 for windows with the spearman test obtained (p < 0.05) then H1 was accepted. For exclusive breastfeeding history (p = 0.000), baseline immunization history (p = 0.000) and infectious disease history (p = 0.000).

Abstract

Obesity is a disorder characterized by excessive accumulation of fat tissue in the body. Therefore, additional food with high daily fiber intake is needed. One of them is by providing additional food in the form of young jackfruit and soy flour substitute nuggets. This study aims to determine the macronutrient content and acceptability of nuggets as an alternative high-fiber snack. This study used the True Experimental Design method with a Completely Randomized Design (CRD) with 4 levels of young jackfruit and soy flour substitution treatment, namely F0 (100:0:0), F1 (45:45:10), F2 (35:50:15) and F3 (15:65:20). Preliminary research, namely organoleptic quality tests of 30 panelists and ranking tests to show the best formulation, continued with proximate analysis and nugget fiber content. The results of the study showed that there was an effect of increasing fiber content in nuggets, with the highest fiber content in the F3 treatment. Significant effect on the color and texture of young jackfruit substitution and Kruskal Wallis soybean flour (P Value <0.05). The best treatment was in F2. The conclusion of this study is that young jackfruit and soybean flour substitution nuggets show an effect on the levels of calories, protein, fat, carbohydrates, ash, water, fiber, and acceptability in the color and texture categories of nuggets. Obese adolescents are advised to consume 100 grams of fried F2 nuggets per day to meet 95.58% of fiber needs.

Abstract

Blood sugar levels that are higher than normal, specifically when they are at least 200 mg/dL and fasting blood sugar levels are greater than or equal to 126 mg/dL, are indicative of diabetes mellitus, a chronic illness. Because patients frequently do not receive a diagnosis until their complications are known, diabetes mellitus is referred to as the silent killer. From the skin to the heart, DM can affect nearly every system in the body, potentially leading to issues. Biscuits are one substitute food that DM patients can be fed. The purpose of this study is to ascertain the nutritional value and acceptability of biscuits made with coconut dreg flour as a diabetic alternative. Both statistical analysis and an analysis of acceptability or organoleptic quality were employed in this study. The study's findings demonstrated that the nutritional value, color, flavor, texture, and aroma of biscuits made with coconut dreg flour were all significantly impacted. The P1 therapy biscuits offer the best care. The nutritional content and acceptability of the biscuits' color, flavor, scent, and texture are all impacted when coconut dreg flour is substituted.

Abstract

One common health issue among adolescents, particularly teenage girls, is anemia. Anemia is a condition where the number of red blood cells or hemoglobin (Hb) is below normal, often due to a diet low in iron. Green beans, which are rich in iron, can be used as an alternative ingredient in brownies for individuals with anemia. Cooking techniques play a crucial role in preserving the nutritional content of food. In brownie preparation, the techniques used are steaming (with hot steam) and baking (with dry heat in an oven). This study employs a True Experimental Design with a Completely Randomized Design (CRD), involving 3 treatment levels, 1 control, and 6 replications. Treatments include comparisons of wheat flour to green bean flour ratios: P0 (100%:0%), P1 (75%:25%), P2 (50%:50%), P3 (25%:75%). Statistical analysis uses Kruskal-Wallis and Wilcoxon tests. The results indicate significant differences in protein, moisture, and iron content between steaming and baking techniques, but no significant differences in fat, carbohydrates, and ash content. This suggests that cooking methods affect the nutritional content and acceptability of brownies, with steamed and baked brownies showing variations in nutrient content and acceptability, particularly in protein, moisture, and iron.

Abstract

Obesity is a complex disease characterized by excessive fat accumulation in the body. Obesity is caused by an imbalance between the amount of energy intake and energy expenditure. To provide additional fiber to adolescents, it is hoped that by making a snack bar substitution of bran flour and white oyster mushroom flour, it can be used as an alternative high-fiber snack for adolescents.  The purpose of this study was to determine the effect of substitution of rice bran flour and white oyster mushroom flour on fiber content in snack bars.  His type of research used True Experimental with Completely Randomized Design (CRD) with 4 levels of treatment and 6 replications. The treatment carried out was by comparing the proportion of wheat flour: rice bran flour: white oyster mushroom flour in each P0 (100:0:0), P1 (0:70:30), P2 (0:30:70), P3 (0:50:50). The results showed that there was an effect of increasing fiber content in snack bars, the more rice bran flour was added, the fiber content increased, with the highest fiber content in treatment P3, which was 8.06 gr. There was a tendency for the addition of rice bran flour, the more rice bran flour and white oyster mushroom flour were added, the fiber content in snack bars increased.

Abstract

Dysmenorrhea is abdominal pain that comes from uterine cramps and occurs before, during or after menstruation. There are several factors that can affect the incidence of dysmenorrhea, one of which is nutrient intake. The purpose of this study was to determinate the relationship between vitamin E intake and the incidence of dysmenorrhea in female adolescents at SMA Negeri Tuban District. This type of research is a quantitative study with a correlation design using a cross-sectional approach. The sampel of this study was adolescent girl at SMA Negeri Tuban District as many as 199 respondents selected using the cluster random sampling techniques. The analysis of this study used the spearman correlation statistical test. The results of the study showed that adolescent girl with severe vitamin E deficit intake experienced moderate pain with a percentage of 40,0%. The result of the statistical test showed that there was a significant relationship between vitamin E intake and the incidence of dysmenorrhea (p-value = 0,004). Based on the results of the study, it can be concluded that one of the nutrients that can affect the incidence of dysmenorrhea in adolescents girl is vitamin E. The lower the intake vitamin E, the more at risk adolescent girl are of experiencing dysmenorrhea. It is hoped that adolescent girl can implement a balanced diet to reduce dysmenorrhea pain.

Abstract

High blood pressure or hypertension is a public health problem in Indonesia. High blood pressure or hypertension is a condition in which blood pressure in the arteries increases consistently above normal limits. This study aims to analyze the relationship between the waist-hip circumference ratio and the incidence of hypertension in the elderly in the Wire Health Center work area of ​​Tuban Regency.This study uses an observational analytical research design with a "Cross-sectional" data collection method. The sample of this study was 163 people who met the inclusion criteria, namely the elderly aged 60 years and over who were willing to be respondents, determined by the Simple Random Sampling technique. With the independent variable ]waist-hip circumference ratio. The dependent variable is hypertension. The analysis of this study used the Spearman Rank correlation statistical test. The results of the study, most of the waist-hip circumference ratios were classified as at risk. The results of the analysis between ]waist-hip circumference ratio and the incidence of hypertension showed a p value of 0.001, there was a significant relationship. From the description above, it can be concluded that the greater the waist-hip circumference ratio, the higher the risk of hypertension in the elderly in the Wire Health Center work area of ​​Tuban Regency.

Abstract

From menu design to food delivery, the execution food consists of a number of tasks. Food management is focused on customer happiness with food quality and service, and as food waste is a good indicator of customer satisfaction, it may be used to gauge how well food management is working. Finding out how meal quality and service level relate to students' food waste is the aim of this study. cross-sectional temporal approach combined with analytical research methodology. Using a stratified random sampling approach, the study's sample consisted of 112 female students, out of the total 156 respondents. Food waste is a dependent variable, while food quality and service quality are independent factors. A statistical test of spearman's correlation is used in the study analysis. According to the study's findings, the majority of female students were unhappy with the caliber of the meal and the degree of service. Regarding leftovers, the majority of female students left food in a variety of areas. There was a significant correlation between food quality and food waste, according to the findings of the food quality statistical test (p-value = 0.002 < 0.05), and between service level and food waste (p-value = 0.000 < 0.05). According to the study's findings, food waste decreases with increasing meal quality and service, whereas it increases with decreasing food quality and service.
