Abstract

Malnutrition in toddlers can result in growth disturbances, development, and low-quality human resources. Indonesia ranks fifth in the prevalence of stunting in the world. SSGI data for 2021 the prevalence of stunting in the city of Pekanbaru is 11.4%. The highest prevalence of stunting under five cases was found in the Lima Puluh District at 7.29%. The Supplemental Feeding Program (PMT) is one of the efforts to overcome and prevent stunting, the type of food ingredients used as PMT can be local food ingredients, namely catfish, in Riau the commodity of catfish is higher than other fish. Indonesia is the largest soybean market in Asia with the largest tempe production in the world. The study aimed to determine the nutritional and sensory content of catfish meat nuggets added with tempeh, which can be used as a solution for providing additional food for toddlers to prevent stunting. the research used in this study was experimental with a completely randomized design (CRD). The stages of this research consisted of, 2 namely the preliminary research stage to analyze the addition of the amount of tempeh in each treatment and further research namely the implementation of sensory tests and proximate analysis. The results of the study found that the most preferred treatment was the addition of 70% tempeh both from the attributes of color, aroma, taste, and texture. The ingredients contained in the nuggets are carbohydrates at 22.2%, protein at 4.9%, fat at 10.7%, fiber at 5.5%, ash content 0.1%, and water content 52.8%. Fish nuggets based on SNI contain 5.0% protein, 15.0% fat, 2.5% ash content, and 60% moisture content.

Abstract

Patin fish nuggets are a processed form of fish that is finely ground, mixed with a binder and spices, then steamed and molded. 12 Nuggets are often added to other food ingredients to increase nutritional value, one of which is tempeh. It is hoped that the nutritional content of catfish and tempeh can meet nutritional intake needs, especially protein so that they can be an alternative to highly nutritious processed foods, however, there are problems in their use, namely that these two food ingredients are easily damaged, so that they remain available in the community they can be made into processed foods. One way to see the quality of food is to calculate its shelf life. This research aims to estimate the shelf life of Nupate (Patin Tempe Nuggets) using the ASLT method, with the Arrhenius approach, namely assessing the shelf life of food ingredients using water content as a critical point. The research was carried out at the integrated laboratory of the Riau Ministry of Health Polytechnic. The research results showed that the selected formula was P3, and then the water content was tested using thermography. The result of measuring the water content is 40.43%, which means it meets the requirements of SNI 7758:2013, namely less than 60%, then stored at a temperature of -5, a temperature of -10, and a temperature of -15, the higher the storage temperature, the higher the water content. contained therein, the lower the storage temperature, the lower the water content in it. The shelf life at -5 is 4 months, -10 is 6 months and -15 is 8 months. The research suggestion is to carry out microbiological, and chemical tests and packaging and labeling processes.

Abstract

Anemia is a condition where there is a lack of red blood cells below normal, one of which is caused by consuming iron inhibitors such as tannins in tea. Tannins are known to inhibit the absorption of iron, especially the heme non-iron category. Drinking tea at the same time as eating can inhibit the absorption of Fe and thus affect hemoglobin levels. This study aims to determine the relationship between tea consumption habits and the incidence of anemia in young women at MTsN 3 Pekanbaru. This type of research is descriptive with a cross sectional design. The research sample of 64 female adolescent respondents was obtained using purposive sampling. Sampling used inclusion and exclusion criteria. Data on tea consumption habits was obtained using the SQ-FFQ (Semi-Quantitative Food Frequency) method and using a questionnaire. Hemoglobin level data was obtained by taking blood using the Diaspect device. The results of the study showed that 68,8% of respondents drank tea at the same time as eating, the percentage of respondents who consumed tea in the occasional category if the score was ≥ 10-14,9 with a frequency of 1-2x/week was 53,1% and the percentage of respondents who have a hemoglobin level of ≥12 g/dl with a category of no iron deficiency anemia of 65,5%.The conclusion of this studyis that there is no significant relationship between the habit of drinking tea and the incidence of anemia but there is a significant relationship between the time of tea consumption and the incidence of anemia in Adolescent girls. Abstract

Indonesia is still a country with a large number of early marriage cases. The high number of cases shows that sexual education in preventing early marriage and improving adolescent reproductive health needs to be implemented. The training of volunteer sexuality cadres at SMPN 2 Tombolo Pao aims to increase students' knowledge and awareness of reproductive health and the dangers of early marriage. This program evaluation uses quantitative evaluation methods through pre and post-tests, observations, and interviews. The results of the analysis showed a significant increase in the knowledge of the cadres after the training. Interviews with the cadres indicated that this activity went well and that the cadres were able to educate their peers about the dangers of early marriage. However, the formation of an official cadre structure did not take place due to the constraints of preparing for exams and scout competitions. Observations showed that the physical intervention of installing posters at two strategic points was hampered by school renovations, so the posters were temporarily removed and will be reinstalled after the renovations are completed. The findings suggest that the sexuality volunteer cadre training is effective in increasing knowledge and information dissemination among students, although improvements are needed in the structural implementation and placement of educational materials in the school environment.

Abstract

Balita merupakan salah satu golongan rawan, masa balita merupakan masa kritis dalam pertumbuhan seseorang. Stunting merupakan salah satu masalah gizi yang menjadi perhatian pemerintah Indonesia saat ini, walaupun prevalensi stunting sudah menurun dari 37,2% pada tahun 2013 menjadi 30,8% pada tahun 2018 namun masih menjadi masalah kesehatan masyarakat karena masih diatas 30% dan masih di bawah target RPJMN 2019 yaitu 28%. Edukasi kepada kader dengan cara penyuluhan, demonstrasi dan praktek sangat baik dan diperlukan karena kader memiliki peranan yang sangat penting dalam pelaksanaan posyandu dengan meningkatnya pengetahuan gizi kader akan berpengaruh pada PMT yang disediakan. Ikan Patin merupakan salah satu komoditas andalan Indonesia, produksi ikan patin di Riau juga tinggi dibandingkan dengan jenis ikan yang lain, selain ikan patin Indonesia merupakan negara produsen tempe terbesar di dunia dan menjadi pasar kedelai terbesar di Asia. Sebanyak 50% dari konsumsi kedelai Indonesia dalam bentuk tempe. Protein yang terdapat dalam tempe tergolong mudah dicerna. Nugget adalah salah satu jenis makanan yang bisa dijadikan makanan PMT balita. Hasil dari kegiatan pengabmas adalah telah terlaksana penyuluhan kader yang berisi materi balita, stunting dan PMT, selain dari itu kader posyandu juga telah mampu membuat nugget daging ikan patin dengan penambahan tempe dan telah dijadikan menu PMT di posyandu.

Abstract

Situasi gizi balita di dunia saat ini sebanyak 155 juta balita pendek (stunting), 52 juta balita kurus (wasting) dan 41 juta balita gemuk (overweight). Di Indonesia, berdasaran hasil Riskesdas 2018, 17,7% balita mengalami gizi buruk dan gizi kurang, 30,8% balita sangat pendek dan pendek, 10,2% balit sangat kurus dan kurus, 8% balita gemuk dan 30,8% balita stunting. Pemberian ASI pada bayi erat hubungannya dengan kondisigizi kurang dan gizi ebih (gemuk) pada anak. ASI merupakan sumber energi dan nutrisi terpenting pada anak unia 6-23 bulan. ASI memenuhi lebih dari setengah kebutuhan energi pada anak usia 6-12 bulan dan sepertiga dari kebutuhan energi pada anak usia 12-24 bulan. Persentase pemberian ASI sampai usia 6 bulan di dunia masih sangat rendah yaitu 41% sementara target yang ingin dicapai pada tahun 2030 aalah 70% (WHO,2018). Berdasarkan hasil Riskesdas 2018 proporsi pola pemberian ASI pada umur 0-5 bulan di Indonesia sebanyak 37,3% ASI eksklusif, 9,3% ASI parsial dan 3,3% ASI predominan. Hal ini masih jauh dari target capaian ASI eksklusif secara global yaitu 80%. Presentase pemberian ASI eksklusif pada bayi 0-5 bulan di Provinsi Riau pada tahun 2018 sebesar 37%. Dari 12 Kabupaten/Kota yang ada di Provinsi Riau, Kabupaten Kampar termasuk salah satu yang terendah yatu 28,12%. Pada tahun 2018 jumlah bayi dengan ASI eksklusf hanya 20,7% di kecamatan Kampar (Profil Dinkes Kampar, 2018). Rendahnya cakupan ASI Ekslusif di seluruh Indonesia tidak terlepas dari kesadaran masyarakat umum khususnya ibu-ibu hamil untuk memberikan ASI setelah melahirkan. Banyak alasan yang dikemukakan oleh masyarakat tentang gagalnya pemberian ASI ekslusif. Untuk menumbuhkan kesadaran dan menerapkan ASI ekslusif sangat dipengaruhi oleh faktor yang paling mendasar yaitu tingkat pengetahuan tentang menyusui itu sendiri. Tingkat pengetahuan seseorang sangat dipengaruhi oleh faktor lingkungan terutama lingkungan sosial budaya dan dorongan dari lingkungan terdekat agar memotivasi ibu hamil agar memberikan ASI setelah melahirkan. Sehubungan dengan hal tersebut rasa perlu memberikan pelatihan pada kader sebagai pendamping dalam gerakan meningkatkan ASI ekslusif di Kecamatan Kampar Desa Ranah Singkuang agar dapat meningkatkan kompetensi kader dalam mengedukasi dan mendampingi ibu hamil dan ibu balita dalam pemberian ASI ekslusif dan praktik menyusui. Tujuan dari pengabdian masyarakat ini adalah meningkatkan pengetahuan tentang ASI ekslusif dan memberikan keterampilan praktik menyusui pada kader posyandu di Desa Ranah Singkuang Kabupaten Kampar. Hasil evaluasi pre-post test dapat dilihat bahwa terjadi peningkatan dari pengetahuan kader Desa Ranah Singkuang sebesar 1,7 poin. Sebelum penyuluhan besar nilai maksimum yang dimiliki kader ialah 73 dan setelah penyuluhan meningkat menjadi 86 (Kriteria baik). Hal ini menunjukkan bahwa pendampingan kader ASI dapat menjadi salah satu cara untuk meningkatkan pengetahuan kader ASI sehingga diharapkan dapat memotivasi kader untuk melaksanakan perannya dalam pemberian edukasi menyusui dan ASI Ekslusif pada ibu hamil dan menyusui di Desa Ranah Singkuang dalam upaya promosi kesehatan khususnya tentang ASI Ekslusif.

Abstract

Gizi merupakan salah satu faktor yang mempengaruhi kualitas SDM, Periode 1000 Hari Pertama Kehidupan (HPK) dapat menentukan kualitas hidup di masa depan. Penurunan stunting adalah agenda prioritas pembangunan kesehatan. Asupan yang baik dapat meningkatkan status gizi anak diantaranya dengan penambahan PMT. Tujuan dari pengabmas adalah peningkatan kapasitas kader dalam Pembuatan Makanan Tambahan (PMT) berbahan dasar pangan lokal sebagai upaya pencegahan stunting di desa ranah singkuang. Metode yang digunakan adalah penyuluhan dan demonstrasi. Hasil evaluasi terjadi peningkatan sebesar 15 poin yaitu dari 65 menjadi 80. Hal ini menunjukkan bahwa penyuluhan dan demonstrasi dapat meningkatkan pengetahuan tentang PMT. PMT berbahan dasar pangan lokal telah diberikan pada dua posyandu balita di desa Ranah Singkuang. dan telah dimasukan kedalam siklus menu makanan tambahan balita yang akan diberikan kepada balita di posyandu. Pengabdian kepada Masyarakat telah memberikan kontribusi yang nyata kepada masyarakat setempat, tercermin dari terlaksananya kegiatan dengan baik dan penerapan hasil kegiatan setelah dilakukan pengabmas.

Abstract

Stunting is a serious health issue in Indonesia that affects the quality of human resources. This study aims to examine stunting prevention from the perspective of Islamic Religious Education based on verses from the Qur'an and Hadith. The method used is a literature review with primary data from the Qur'an and Hadith, and secondary data from scientific literature. The findings show that the principles of stunting prevention are outlined in Islamic teachings, such as the recommendation for exclusive breastfeeding (Qur’an, Al-Baqarah: 233; Hadith Abu Dawud), the importance of cleanliness and sanitation (Qur’an, Al-Anfal: 11; Hadith Tirmidhi), the encouragement to work hard to meet family needs (Qur’an, At-Tawbah: 105; Hadith Bukhari), and the consumption of lawful and wholesome food (Qur’an, Al-Baqarah: 168; Hadith Thabrani). This study shows that Islamic teachings offer a holistic approach to health and well-being and can serve as a foundation for religion-based stunting education.

Abstract

Remaja Indonesia mengalami masalah gizi yaitu stunting, obesitas dan anemia. Upaya pembentukan sadar gizi pada usia sekolah menengah pertama penting karena pada usia ini anak sudah dapat mengolah informasi dan dapat membuat keputusan terhadap perilaku konsumsi. Tujuan pengabdian ini adalah untuk membentuk sikap dan perilaku sadar gizi remaja melalui edukasi pedoman gizi seimbang. Pengabdian ini dilaksanakan di SMPN 01 Kampar dengan 27 siswa kelas VIII sebagai sasaran. Kegiatan dilakukan dengan metode ceramah menggunakan media booklet dan cakram gizi yang dilanjutkan dengan diskusi. Evaluasi hasil edukasi dilakukan melalui pre-test dan post test menggunakan kuesioner. Lomba foto isi piringku juga dilakukan untuk monitoring sikap dan perilaku setelah edukasi. Hasil kegiatan diketahui bahwa 63% remaja memiliki pengetahuan gizi baik, 48,1% memiliki sikap baik terhadap gizi, dan 59,3% memiliki perilaku yang baik terhadap gizi. Disimpulkan bahwa edukasi dengan metode ceramah dengan media booklet dan cakram gizi dapat meningkatkan pengetahuan remaja tentang gizi seimbang.

Abstract

The supplementary feeding program (PMT) is a crucial nutritional intervention aimed at improving toddlers' nutritional status and meeting their dietary needs. Patin fish, a local food commodity from Riau, has potential for development into attractive processed food, such as dim sum. This study aimed to evaluate the acceptability and protein content of patin fish dim sum with red bean flour substitution. A Completely Randomized Design (CRD) was used, comprising one control (100% patin) and three treatments with varying patin fish and red bean flour ratios: 95%:5%, 90%:10%, and 85%:15%. Sensory evaluation was conducted with 30 panelists and analyzed using the Kruskal-Wallis test, followed by the Mann-Whitney test if significant differences were found. The results showed a significant difference in color (p-value=0,002), while taste (p-value=0,445), aroma (p-value=0,694), and texture (p-value=0,341) showed no significant differences. The most preferred formulation was the control (without red bean flour). However, the formulation with 10% substitution (F2) had the highest protein content at 9.45%, equivalent to 9,45 grams per 100 grams of product. With this level of protein, the patin dim sum qualifies as a high-protein food product. This innovation highlights the potential of locally sourced, nutritious food for children and supports the success of supplementary feeding programs in regions like Riau that rely on local resources.
