Abstract

STUDY ON SLAUGHTER ACTIVITY OF BABIRUSA (Babyrousa babirussa celebensis DENIGER) AS THE ENDEMIC FAUNA IN NORTH SULAWESI AT THE SEVERAL TRADITIONAL MARKETS IN MINAHASA REGENCY. Babirusa (Babyrousa babyrussa celebensis D.) is categorized as a valuable germinal plasma and included into protected fauna since sixty years along a go. Therefore, this animal was noted into endangered animals. However, the hunting activities of the local community are occurring in the remote area of Minahasa as indicated by availability of meat trading of this animal. The objective of this study was to evaluate the slaughter activities dealing with meat trading of this endemic fauna on several traditional markets in Minahasa regency. Study was conducted by survey method focusing on hunters, traders and consumers buying meat of this animal on several traditional markets in Minahasa regency. Results showed that meat of Babirusa (Babyrousa babyrussa celebensis D.) were still traded and found on several traditional markets in Minahasa regency indicated by hunter existences of 0 to 25 percents, meat sellers of 8.33 to 50 percents, and fixed meat consumers of 58.33 to 100 percents of this animal. These cases were spreading on the traditional markets around districts of Tondano, Remboken, Kawangkoan, Langowan and Tanawangko. As the conclusion that slaughters and trading activities of the protected Babirusa (Babyrousa babyrussa celebensis D.) were existing recently in the remote areas of Minahasa Regency.Key words: Babirusa (Babyrousa babyrussa celebensis D.), endemic,  traditional market.

Abstract

RACE HORSE TRAINING PATTERNS IN PINABETENGAN VILLAGE AND SOUTH PINABETENGAN, WEST TOMPASO DISTRICT. This study aims to look at the training patterns of racehorses in Pinabetengan and South Pinabetengan villages, West Tompaso sub-district. The research material used in this study was race horse livestock in Pinabetengan and South Pinabetengan villages. Horses that were sampled were racehorses that were still active. The number of samples taken in South Pinabetengan village was 11 trains, while in Pinabetengan village there were 14 tails. There were differences in the number of exercises and the duration of the exercises using the trot, canter and gallop patterns in Pinabetengan and South Pinabetengan villages while the walking patterns were exactly the same. In the implementation of patterns and exercises between Pinabetengan and South Pinabetengan villages, Pinabetengan tends to apply more daily training with trot, canter and gallop patterns, while South Pinabetengan villages apply more trot, canter and gallop pattern precursors.Keywords: Race horse, exercise pattern, Pinabetengan dan South Pinabetengan village

Abstract

REFLECTION OF INTEREST OF THE TUMINTING VILLAGE COMMUNITY TOWARDS THE DEVELOPMENT OF QUAIL BUSINESS AS A SOLUTION TO SUPPORT THE FAMILY ECONOMY IN THE NEW NORMAL. The purpose of the study was to explore the level of interest of the Tuminting Village community towards the development of quail business as a solution to support the family economy and to find an overview of the basic understandings that the Tuminting Village community had known if their quail farming business would be developed with simple technology. The variables measured in the community were: level of education, community work and income, community interest in quail business, understanding of village officials on quail farming. The data or information collected was analyzed simply by calculating the percentage and then presented in the form of a bar chart, while the results of other observations would be described descriptively, including describing things that were seen and received directly from the community as the object under study. The results of the research on public interest in quail business showed that there were around 32.02% interested in developing quail cultivation in the New Normal Covid-19 period. The level of basic understanding of the Tuminting Village community towards quail development efforts from the results of the study was shown to be 51.09%. Meanwhile, the understanding of village officials in supporting quail farming by the community illustrated that more than 56.25% did not understand, but they strongly support the development of quail cultivation and the value was around 84.75%. The conclusion was that although the number of people who did not understand was still very high, they still have a high interest in participating and in developing the quail farming business as a support for the family economy during the New Normal Covid-19 period.Keywords: Community interest, village officials, quail, new normal covid-19

Abstract

Penelitian ini bertujuan untuk mengkaji pengaruh penambahan berbagai konsentrasi gelatin terhadap sifat fisikokimia dari sosis daging ayam. Bahan utama yang digunakan dalam penelitian ini adalah daging ayam broiler segar, gelatin kulit sapi. Penelitian ini menggunakan rancangan acak lengkap (RAL) dengan perlakuan penambahan berbagai konsentrasi gelatin (0%, 5%, 10% dan 15%) masing – masing perlakuan diulang sebanyak empat kali. Variabel yang dianalisis yaitu nilai pH, susut masak, daya mengikat air dan keempukan. Hasil dari penelitian ini menunjukkan bahwa penambahan berbagai konsentrasi gelatin pada perlakuan R0, R1, R2 dan R3 memberikan pengaruh berbeda yang sangat nyata (P<0,01) terhadap nilai susut masak dan berbeda nyata (P<0,05) terhadap nilai pH, daya mengikat air dan keempukan sosis. Berdasarkan hasil dan pembahasan dapat disimpulkan bahwa penambahan konsentrasi gelatin kulit sapi sebanyak 10% menghasilkan fisikokimia sosis ayam yang baik (nilai pH 7,0, susut masak 2,30%, daya mengikat air 54,62% dan keempukan 5,25 mm/menit).

Abstract

SENSORICAL QUALITY AND PHYSICAL PROPERTIES OF CHICKEN NUGGETS WHICH IS ADDED PURPLE ROAD UBI FLOUR (Ipomoea batatas L). This study aims to determine the benefits of using purple sweet potato flour (Ipomoea batatas L) on the sensory quality and physical properties of chicken nuggets. The research was carried out in 3 stages, namely (1) making purple sweet potato flour, (2) making chicken nugets with the addition of purple sweet potato flour, (3) testing chicken nuggets including sensory quality testing using 35 untrained panelists to measure the level of acceptance of aroma, color, texture and taste, physical properties test to determine water binding power and cooking losses. This research was conducted experimentally using a completely randomized design with 4 additional treatments of purple sweet potato flour, namely P1 = 10 g, P2 = 20 g, P3 = 30 g and P4 = 40 g, each treatment was repeated as many as 35 (panelists) for the test. sensory quality and 5 replications for physical characteristics test. Data from the observation of sensory quality test, physical properties were tabulated and analyzed by analysis of variance (Ansira) and if there were significant differences between treatments, it was continued with Duncan's multiple test (DMRT). The results of the research with analysis of variance showed that the addition of 10, 20, 30 and 40 grams of purple sweet potato had a very significant effect (P <0.01) on color, texture, water-binding capacity and cooking loss but had no significant effect. (P> 0.05) on aroma and taste. The results of Duncan's multiple further test showed that the P4 treatment of 40 g of purple sweet potato gave the best results on color, texture, water binding power and cooking loss. Based on the results and discussion, it can be concluded that the addition of 40 g of purple sweet potato flour in the manufacture of chicken nuggets provides good sensory quality and physical properties.Keywords: Chicken nuggets, purple sweet potato flour, sensory quality, physical properties

Abstract

Sapi perah Friesian Holstein (FH) merupakan salah satu sumber daya alam dan juga merupakan sumber protein hewani (susu) yang dibutuhkan oleh manusia, namun dalam upaya perkembangannya di Sulawesi Utara khususnya di Tampusu pengelola peternakan masih belum mengenal dan atau menerapkan manajemen reproduksi. Kendala dalam pelaksanaan manajemen reproduksi sapi perah di Balai Pengembangan Bibit Ternak dan Benih Pertanian (BPBTBP) unit Tampusu berpotensi untuk tidak tercapainya performa reproduksi sapi perah betina FH yang diharapkan dan berdampak pada efisiensi reproduksi. Penelitian ini bertujuan untuk mengetahui efisiensi reproduksi sapi perah Friesian Holstein (PFH) yang dipelihara di BPBTBP. Penelitian ini telah dilaksanakan dengan menggunakan metode survei. Parameter yang diukur adalah: umur pertama kawin (UPK), umur pertama beranak (UPB), Service Per Conception (S/C), Calving Interval (CI), Estrus Post Partum (EPP). Data yang diperoleh ditabulasi dan dianalisis secara deskriptif dan ditampilkan dalam bentuk tabel, gambar dan diagram. Hasil penelitian menunjukkan angka capaian rata-rata untuk UPK 2,6 ± 0,89 ; UPB 3,6 ± 0,89 tahun, S/C 2,8 ± 0,45 kali, CI 24 ± 0 bulan, CR 0% dan EPP 90 ± 7,07 hari. Kesimpulan : Ditinjau dari aspek angka capaian rata-rata UPK, UPB, S/C, CI, CR dan EPP maka dapat disimpulkan bahwa sapi FH yang ada di BPBTBP unit Tampusu memiliki efisiensi reproduksi yang rendah. Abstract

Penelitian ini bertujuan untuk mengetahui akseptabilitas dan kualitas produk nugget ayam menggunakan tepung ubi jalar ungu dengan lama penyimpanan berbeda sebagai pangan fungsional. Metode penelitian menggunakan Rancangan Petak Terbagi Dalam Waktu (Split Plot Design in Time) dengan rancangan dasar RAL (Steel dan Torrie, 1994 dalam Anisa et al., 2013), dan sebagai perlakuan petak utama A = lama penyimpanan pada suhu dingin (A1=10 hari, A2=14 hari, A3=18 hari, A4=22 hari) dan anak petak B = penambahan tepung ubi jalar ungu (B1=10 g, B2=20 g, B3=30 & B4=40 g) dengan 3 ulangan. Parameter yang diukur yaitu uji sensoris (akseptabilitas/tingkat penerimaan & citarasa) uji fisik (daya ikat air), uji kimia (kadar protein & kadar lemak), uji mikrobiologis (Total bakteri/TPC). Hasil analisis sidik ragam menunjukkan bahwa pengaruh perlakuan penambahan tepung ubi jalar ungu dengan lama penyimpanan berbeda memberikan pengaruh yang sangat nyata (P<0,01) terhadap akseptabilitas, kadar protein, kadar lemak, total bakteri dan citarasa produk nugget sebagai pangan fungsional. Kesimpulan penambahan tepung ubi jalar ungu sampai 30 g dengan lama penyimpanan 14 hari menghasilkan akseptabilitas dan kualitas produk nugget sebagai pangan fungsional. Abstract

Tujuan penelitian ini adalah ingin mengetahui informasi jenis-jenis satwa liar dan endemik yang banyak ditemukan di pasar-pasar tradisional beredar di Wilayah Kabupaten Minahasa Utara. Penelitian ini telah dilaksanakan di beberapa pasar tradisional yang ada di Minahasa Utara. Objek penelitian adalah masyarakat pengguna pasar-pasar tradisional di Wilayah Kabupaten Minahasa Utara dan ini merupakan data primer. Data sekunder yang diperoleh dari instansi terkait dengan penelitian. Metode penelitian yang digunakan adalah metode survey. Data yang dikumpulkan dengan cara mendatangi langsung ke responden dan mewawancarai melalui quisioner yang berikan tanpa adanya intervensi dari peneliti. Data yang diperoleh ditabulasi dan dianalisis secara sederhana yaitu menghitung persentase dari tiap-tiap vartabel yang terkait dengan responden. Hasil penelitian menunjukan bahwa, satwa liar yang diperjual belikan di pasar Minahasa Utara diambil atau didatangkan dari Gorontalo dan Palu  sebanyak 1 sampai 2 pedagang, akan tetapi ada 1 orang pedagang mendapatkannya dari Gunung Kelabat dan Likupang. Jenis satwa liar yang diperdagangkan diantaranya tikus, kelelawar, babirusa dan juga ular phyton. Jumlah pembeli daging satwa liar dipasar tradisional Minahasa Utara untuk daging babirusa yang dikonsumsi sendiri sebanyak 6 orang pembeli dan untuk dijual kembali ke rumah makan hanya 1 orang, sedangkan pembeli daging tikus 12 orang hanya untuk dikonsumsi sendiri dan dijual kembali hanya 1 orang. Untuk daging kelelawar pembelinya 7 orang dan dijual kembali hanya 1 orang, serta pembeli daging ular piton pembelinya 5 orang dan tidak menjual kembali daging yang mereka beli. Kesimpulan penelitian ini  bahwa, ada peredaran satwa liar  baik dalam bentuk hidup maupun mati yang ditemukan dipasar tradisional Minahasa Utara, dan ini sangat bervariasi sedangkan satwa endemik tidak diperjual belikan dipasar tersebut baik dalam bentuk hidup maupun mati. Abstract

Penelitian ini bertujuan untuk mengetahui sampai sejauh mana mutu kimiawi nugget ayam petelur afkir menggunakan sayur brokoli. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) yang terdiri dari 5 perlakuan dan 4 ulangan. Perlakuan terdiri dari P0 : Nugget ayam tanpa tambahan brokoli P1 : Nugget ayam dengan tambahan 10% brokoli P2 : Nugget ayam dengan tambahan 20% brokoli P3 : Nugget ayam dengan tambahan 30% brokoli P4 : Nugget ayam dengan tambahan 40% brokoli. Variabel yang diamati pada penelitian ini adalah pengujian kimia/analisa proksimat (kadar air, kadar protein, kadar lemak, kadar karbohidrat, dan serat pangan). Data yang diperoleh dianalisis menggunakan anova dan dilanjutkan dengan uji (BNJ). Hasil analisis sidik ragam menunjukan bahwa perlakuan penambahan brokoli memberikan pengaruh berbeda nyata (P<0,05) terhadap mutu kimiawi (kadar air, kadar protein, kadar lemak, kadar karbohidrat, dan serat pangan) nugget ayam petelur afkir. Berdasarkan analisis data dan pembahasan dapat disimpulkan bahwa penambahan brokoli 20% memberikan hasil yang baik terhadap mutu kimiawi nugget ayam petelur afkir.
