Abstract

Hazard Analysis Critical Control Point (HACCP) ia a quality control system from the preparation of raw maerials to the product and accepted by consumers. HACCP is a requirement for guaranteeing the safety of food products produced according to company quality standards.PT. X produces packaged coconut milk as one of the main products and has implemented HACCP in every production process of its products. The packaged coconut milk that is produced often gets bloated in the finished product warehouse before the product is distributed. Therefore it is necessary to analyze the application of HACCP in the production of packaged coconut milk. HACCP application in the packaged coconut milk production process has set 4 Critical control points. CCP 1 (UHT Sterilization System & Aseptic Tank), CCP 2 (Filtration 500 micron), CCP 3 (Product Sterilization at 140-148ºC) and CCP 4 (Filling with Astepo Filler Filling Machine). Each Critical Control Point has physical and biological hazards, which must be controlled to ensure food safety. The research objective was to analyze the implementation of HACCP plan for coconut milk products based on SNI No. 01-4852-1998 regarding the HACCP system and analyzing the causes of product defects (bloating) in the determination of the CCP. Based on the analysis of HACCP application and the causes of product defects in packaged coconut milk, product defects due to bloating are not defects in the production process but defects caused by cross-contamination of microbes after filling. Cross contamination occurs due to cracks in the neck of the aseptic bag cup that cannot be detected directly, and the use of tools that should not be used during the filling process.

Abstract

The increase in household electrical energy causes shrinkage of energy so that efforts are needed to conserve energy, especially electrical energy. One attempt to reducing the scarcity of electrical energy is by changing behavior. Changes in the behavior of electricity consumption can be influenced by psychological factors (norms, awareness, etc.), demographic factors (age, gender, income, etc.), and other factors such as regulations or policies from the government to conserve energy. This study seeks to determine the effect of psychological and regulatory factors on the behavior of household electricity consumption based on age. The method used was to conduct a survey by distributing questionnaires, the respondents obtained were 808 respondents. The results of the questionnaire were processed using the Structural Equation Model Partial Least Square (SEM-PLS) using the Smart-PLS software. The results of this study indicate that psychological and regulatory factors can explain their effect on the behavior of electrical energy consumption for ages <30 years of 50.9%. For 30-50 years old it is 49.5% while those> 50 years old are 59.3% and the rest is explained by other factors / variables outside those that have been studied so that it can be concluded that psychological factors and regulatory factors have a significant and significant influence. positive behavior towards household electrical energy consumption at all ages. it is expected that the results of this study can become the basis for making stronger regulations or policies in the field of energy conservation.

Abstract

The rapid development of the palm oil industry, which cannot be denied, has an impact on the amount of industrial waste, particularly wastewater, requiring proper and effective treatment to reduce the impact of the damage. Wastewater treatment of Palm Oil Mill Effluent (POME) in an aerobic pond requires an adequate supply of oxygen so that its quality improves and becomes disposable, so it requires assistance from aeration media. A fine bubble diffuser was used as the aeration medium in this study. The aeration medium in this study was a fine bubble diffuser. The purpose of this research is to investigate the impact of installing a diffuser on the quality of the final wastewater, particularly the COD and BOD values, in the palm oil industry wastewater treatment. The analysis results for the wastewater parameters after the installation of the fine bubble diffuser revealed a significant reduction in the waste's COD and BOD values to 130 – 175 mg/L and 67 – 78 mg/L, respectively, making it more suitable for disposal to the environment.

Abstract

We are currently faced with the problem of the Covid 19 pandemic and no cure has been found. One of the efforts made by the community is to implement health protocols to the recommendations from the government and increase the body's resistance to prevent this Covid 19 attack. Indonesia has a wealth of spices that are quite large in number and type. According to some studies that this spice can increase the body's resistance because it contains antioxidants and active compounds that can ward off free radicals. This is one of the business opportunities as well as an effort to increase the body's endurance if consumed. Community service activities organized by ATI Padang Polytechnic, Agro Industry Engineering Study Program aims to provide technology for processing instant spice drinks based on red ginger. The spices used are red ginger, cinnamon, cloves and lemongrass. The product produced is instant red ginger. Partners of this activity are UKM/communities in Bungo Pasang Subdistrict, Koto Tangah District, Padang. The method used is to deliver processing technology through virtual training and practice independently. After attending virtual training and independent practice using equipment and materials that have been assisted by team, participants submitted their products that have been packaged as evaluation materials. It is hoped that with this activity, UKM/communities can produce this product in order to increase the resilience of the family as well as their business choice. The processing of spices into instant beverage products is expected to be widely marketed, more durable and provide added value to spice commodities. Kata kunci : Minuman instan, rempah, daya tahan tubuh

Abstract

The oil palm empty fruit bunch (OPEFB) as solid biomass of palm oil mill industry is available in abundance and has the potential to be utilized as the raw material of nanocrystalline cellulose (NCC). This research aims to investigate the effect of bioprocess treatment (bio-delignification, bio-bleaching, and enzymatic hydrolysis) on the nanocrystalline cellulose synthesized from OPEFB. The bio-delignification of OPEFB fiber was carried out using white-rot fungi (Tremetes versicolor and pre-bleaching pulp with xylanase. Trichoderma reesei, a cellulase enzyme type was used to hydrolyze the OPEFB fiber into nano-sized cellulose. The result exhibits that the cellulose content of OPEFB pulp using bio-delignification increased significantly compared to chemical treatment. Furthermore, the concentration of enzyme and hydrolysis time in the synthesis treatment affect reducing average particle size and increasing the crystallinity index while decreasing the yield of NCC produced. The synthesis process was under optimal processing conditions at 1% enzyme concentration and 3 days of hydrolysis time resulting in the NCC product with 155 nm of average particle size, 66.78% of crystallinity index, and a yield of 38.28%. The bioprocess technology applied in this study could improve the cellulose yield of OPEFB and enhance the quality parameters of NCC products such as particle size and crystallinity index.

Abstract

All this time, corn cob waste has not yet been utilized optimally, while corn cob waste is rich in pentoses and has great potential to be processed into food. There is a business opportunity for the community to process corn cob waste into crackers, in order to generate added value in addition to selling shelled corn. The problem of processing corn cob waste by the community and how to take advantage of this business opportunity can be overcome by providing processing technology and assistance in processing corn cob waste into crackers to the community. Because of this, it is necessary to increase business opportunities by taking advantage of the potential of corn cob waste to become products that can be used as additional products such as processed food products, corn cob crackers through a short training in Nagari Aie Tajun, Lubuk Alung. The evaluation results from this exercise show that the participants are very satisfied and can make this product independently so that they are encouraged to develop this product into a superior product in their hometown.

Abstract

Industri pengolahan crumb rubber di Sumatera Barat memiliki operator trolley sebagai bagian dari pekerjanya. Saat ini, analisis lama waktu istirahat berdasarkan beban kerja operator trolley belum pernah dilakukan oleh perusahaan. Berdasarkan hasil observasi yang dilakukan secara langsung menggunakan kuesioner Nordic Body Map (NBM), lebih dari 50% operator trolley yang bekerja mengalami keluhan pada bagian kaki. Sehingga dilakukan analisis lama waktu istirahat berdasarkan beban kerja operator trolley dengan pendekatan fisiologis pada crumb rubber industry di Sumatera Barat. Penentuan waktu istirahat berdasarkan beban kerja menggunakan metode tidak langsung dengan menghitung denyut nadi selama bekerja serta metode langsung dilihat melalui asupan oksigen selama bekerja. Berdasarkan hasil pengukuran beban kerja, menggunakan metode pengukuran tidak langsung, didapatkan %CVL pada pekerja proses pembongkaran trolley meningkat mencapai 58,81% sehingga diperlukan perbaikan. Pada rata-rata P1, P2, P3 pekerja pembongkaran trolley adalah 88,6 atau mempunyai nadi pemulihan normal dan beban kerja tidak berlebihan (not excessuve). Untuk hal tersebut perlu dilakukan pengkajian lebih lanjut. Pada pengukuran menggunakan metode pengukuran langsung, total metabolisme yang didapat sebesar 206,86 Kkal/jam dengan beban kerja tergolong sedang. Berdasarkan pendekatan fisiologis untuk penentuan waktu istirahat menyatakan bahwa tidak dibutuhkan waktu istirahat tambahan selama melakukan kerja pada proses pembongkaran trolley tersebut (Rt = 0).

Abstract

Rendang, a traditional Minangkabau dish from West Sumatra, Indonesia, has gained international recognition and has inspired many entrepreneurs to promote this cuisine globally. One such entrepreneur is CV. Kuliner Makmur Sejahtera (KMS), which produces rendang under the brand Katuju. To enhance operational efficiency and support global market expansion, KMS requires an improved inventory management system. The primary challenge is the difficulty in monitoring inventory and tracking products without a barcode system. This community service program aims to address this issue by implementing barcode technology on Katuju's product packaging. The activities include designing, creating, and printing barcodes, as well as training KMS staff on how to use them. The process starts with observation and interviews to identify needs, followed by barcode design and production using an online barcode generator, and testing the barcode functionality with a scanning system. The results indicate that the community service team successfully trained KMS in barcode creation and printing, and integrated barcodes into product packaging. Evaluation through questionnaires showed participant satisfaction with the program and readiness to apply the barcode system to their products. This program is expected to improve inventory management, data accuracy, and support CV. KMS's global market expansion by providing tools necessary for efficient product tracking and valuable consumer data collection.

Abstract

Keandalan mesin dalam proses produksi sangat menentukan kualitas dan kelancaran operasional, khususnya di industri pengolahan makanan dan minuman. Penelitian ini dilakukan pada sebuah perusahaan pengolahan kelapa yang memproduksi berbagai produk turunan kelapa, seperti coconut powder, desiccated coconut, coconut water, dan coconut milk. Perusahaan ini menghadapi kendala berupa gangguan operasional pada mesin Intasept di bagian filling, yang memiliki peran penting dalam proses pengemasan produk cair seperti santan dan air kelapa. Berdasarkan hasil pengamatan selama 4 bulan dan kuesioner kepada personel maintenance, ditemukan bahwa kerusakan yang sering terjadi melibatkan komponen O-Ring, gasket, dan Teflon sealing. Kerusakan ini berdampak langsung pada kebocoran produk dan penghentian sementara proses produksi. Penelitian ini bertujuan untuk menganalisis potensi kerusakan pada mesin Intasept menggunakan metode Failure Mode and Effect Analysis (FMEA) dan diagram fishbone. Hasil FMEA menunjukkan bahwa kerusakan O-Ring memiliki nilai Risk Priority Number (RPN) tertinggi, yaitu 99. Penyebab kerusakan dianalisis lebih lanjut menggunakan diagram fishbone, yang mengungkapkan faktor utama berasal dari manusia, mesin, metode, dan material. Penelitian ini memberikan rekomendasi perbaikan yang meliputi peningkatan kualitas sparepart, pemeliharaan preventif yang lebih ketat, dan pelatihan operator. Diharapkan hasil penelitian ini dapat membantu perusahaan dalam meminimalkan risiko kerusakan mesin, memperpanjang usia pakai mesin, dan meningkatkan efisiensi proses produksi.
