Abstract

Penelitian dilakukan untuk mengetahui respon penambahan tepung cangkang telur terhadap rasa, aroma, tekstur dan berat kering cookies yang melibatkan 20 panelis tidak bersertifikat. Penelitian ini menggunakan metode Rancangan Acak Lengkap (RAL) yang terdiri dari 4 perlakuan yaitu P0 (0% tepung cangkang telur), P1 (5% tepung cangkang telur), P2 (10% tepung cangkang telur) dan P3 (15% tepung cangkang telur). Data yang diperoleh dianalisis menggunakan Analysis of Variance (ANOVA) dan analisis regresi linear sederhana untuk mengetahui hubungan antara berat basah dan berat kering. Hasil penelitian menunjukkan bahwa panelis menyukai cookies pada perlakuan P0 (0% tepung cangkang telur) dengan rataan hasil penguji rasa 3,60, aroma 3,54 dan tekstur 3,29. Berat basah memiliki hubungan dengan berat kering. Peningkatan 1 gram berat basah dapat menghasilkan nilai berat kering pada cookies yang bervariasi. Semakin tinggi konsentrasi penambahan tepung cangkang telur menyebabkan karakteristik cookies menurun sehingga dibutuhkan konsentrasi yang pas.   Kata kunci: Tepung Cangkang Telur, Organoleptik, Berat Kering, Cookies.

Abstract

The development of digital technology in the Industrial Revolution 4.0 era requires village governments to adapt in data management and public services. However, many villages, including Anjani Village in Suralaga District, East Lombok, still use manual administration systems, resulting in slow, error-prone services and data-driven planning. This activity aims to strengthen digital village governance by optimizing the Village Information System (SID) with a participatory approach involving BAPEDA, village governments, KKN students, and the community. The activity stages include an initial survey, data collection from 17 hamlets, data processing and standardization according to BAPEDA standards, and input into the OpenSID website. The result is a more accurate, structured, and easily accessible village database, thereby increasing service effectiveness, supporting data-driven planning, and encouraging transparency and accountability in village government.
