Abstract

Kopi adalah salah satu minuman yang paling banyak didistribusikan dan dikonsumsi di dunia. Kopi umumnya diseduh dengan air panas, namun seiring dengan berkembangnya industri kopi, proses penyeduhan kopi juga bisa menggunakan air dingin. Teknik seduhan tersebut disebut cold brew. Informasi mengenai karakteristik cold brew masih sedikit, sehingga perlu dilakukan studi terkait karakteristik minuman cold brew khususnya dengan kopi lokal Indonesia. Penelitian ini menggunakan kopi Arabika Menoreh sebagai obyek utama penelitian. Tujuan penelitian ini adalah untuk mengetahui karakteristik fisikokimia dan sensoris kopi Arabika Menoreh dengan teknik seduhan cold brew. Penelitian diawali dengan penyangraian kopi menjadi tiga jenis yaitu light (T = 193 oC, t = 5 menit), medium (T = 208 oC, t = 7 menit), dan dark (T = 223 oC, t = 13 menit). Selanjutnya, kopi digiling menjadi dua jenis ukuran gilingan (medium dan coarse). Pembuatan sampel formulasi minuman cold brew dilakukan dengan waktu ekstraksi 8 jam. Analisis sensoris dilakukan berdasarkan metode SCA. Analisis data sensoris dilakukan untuk menentukan tiga formulasi terbaik sesuai profil sangrai, kemudian dilanjutkan dengan analisis fisikokimia. Sampel cold brew terbaik yang diperoleh dari penelitian ini adalah kopi Arabika Menoreh medium-coarse dengan nilai parameter sensoris tertinggi yaitu aroma, acidity, aftertaste, dan sweetness. Nilai pH, asam klorogenat, dan beberapa asam organik berpengaruh terhadap asiditas (keasaman). Asam laktat berpengaruh terhadap nilai body dan kadar kafein relatif stabil pada masing-masing sampel. Hasil penelitian ini dapat dijadikan sebagai acuan diversifikasi produk kopi Arabika Menoreh.

Abstract

Green grass has several bioactive content as well as the main fiber components of pectin. Green grass cincau are traditionally made for the filling of jelly that is beneficial to the digestion and health. Green grass jelly is easy to in decrease quality caused by internal and external factors. Addition of Hydrocolloidal such as Caragenan is expected to combine with green grass to produce more quality jelly. The aim of this research to know the influence of the Kappa-type Caragenan to the physical and chemical characteristics of green grass jelly. Experimental design in research using complete random design (RAL) with 1 treatment factor. For the addition of Kappa carrageenan, used 0.30%, 0.40%, 0.50% and 0.60%. Physical and chemical characteristics are analyzed, water content, ash content, pH value, crude fiber, antioxidant, syneresis, texture and yield. The result is that more and more the addition of Kappa Caragenan ash content, pH value, crude fiber content, antioxidant values, synergy and texture parameters are increasing in value. As for water content does not show difference and the yield parameter indicates decrease in value.

Abstract

The aims of this research were to determine the effect of lemongrass distillation dregs oleoresin concentration (0 %, 2 %, 4 %, and 6 % b/b) on the active paper packaging characteristics (sensory, water content, thickness, tensile strength, fold endurance and antimicrobial activity), to determine the functional groups of the control and selected active paper packaging, to determine the effect of days of storage (0, 5, 10, 15, and 20 day) on the control and selected active paper packaging characteristics (tensile strength, and fold endurance), and to determine antimicrobial activity of the control and selected active paper packaging during 20 days storage. The result showed that the concentration of lemongrass distillation dregs oleoresin significantly affected the color, overall, tensile strength, fold endurance, and antimicrobial activity while did not significantly affected the flavor, texture, water content, and thickness of the active paper packaging. The addition of lemongrass distillation dregs oleoresin increased the water content, thickness, microbial activity, while decreased the panelists preference, tensile strength and fold endurance of the active paper packaging. The spectrum of functional groups of the active paper packaging showed the presence of chitosan, cellulose, tween 80, and lemongrass oleoresin. The storage days had no significant effect on tensile strength and fold endurance of the control and selected active paper packaging. The control and selected active paper packaging were significantly different at each 5 days storage. However the 20 day of storage showed no significant effect on the antimicrobial activity of the control and selected active paper packaging. ABSTRAKTujuan dari penelitian ini adalah untuk mengetahui pengaruh konsentrasi oleoresin ampas destilasi sereh dapur (0 %, 2 %, 4 %, dan 6 % b/b) terhadap karakteristik kemasan kertas aktif (analisis sensoris, kadar air, ketebalan, ketahanan tarik, ketahanan lipat, dan aktifitas antimikroba), mengetahui gugus fungsi kemasan kertas aktif kontrol dan konsentrasi oleoresin ampas destilasi sereh dapur terpilih, mengetahui pengaruh waktu penyimpanan (0, 5, 10, 15, dan 20 hari) terhadap karakteristik kemasan kertas aktif kontrol dan konsentrasi oleoresin ampas destilasi sereh dapur terpilih (uji ketahanan lipat dan ketahanan tarik), dan mengetahui aktivitas antimikroba kemasan kertas aktif kontrol dan konsentrasi oleoresin ampas destilasi sereh dapur terpilih sebelum dan setelah penyimpanan selama 20 hari. Hasil penelitian menunjukkan bahwa konsentrasi oleoresin berpengaruh nyata terhadap warna, overall (penerimaan keseluruhan), ketahanan tarik, ketahanan lipat, dan aktivitas antimikroba tetapi berpengaruh tidak nyata terhadap aroma, tekstur, kadar air, dan ketebalan kemasan kertas aktif. Penambahan oleoresin ampas destilasi sereh dapur meningkatkan kadar air, ketebalan, dan aktivitas antimikroba serta menurunkan ketahanan tarik, ketahanan lipat, dan penerimaan panelis. Kemasan kertas aktif mengandung gugus fungsi selulosa, kitosan, dan tween 80 serta pada kemasan kertas aktif penambahan oleoresin konsentrasi 2 % terdapat gugus fungsi oleoresin sereh dapur. Waktu penyimpanan tidak berpengaruh secara nyata terhadap ketahanan tarik dan ketahanan lipat kemasan kertas aktif kontrol dan konsentrasi terpilih. Kemasan kertas aktif kontrol dengan kemasan kertas aktif penambahan oleoresin konsentrasi 2 % berbeda nyata di setiap 5 hari penyimpanan. Namun, penyimpanan selama 20 hari tidak berpengaruh secara nyata terhadap aktivitas antimikroba kemasan kertas aktif kontrol dan konsentrasi terpilih.

Abstract

β-Carotene exhibits a wide range of health benefits, but its application in food formulation is very limited because of its instability and susceptibility to degradation. The stability of β-carotene can be improved by incorporation into an oil-in-water (o/w) emulsions. The objective of this research was to characterize β-carotene loaded nanoemulsions prepared with spontaneous emulsification method using ternary food-grade surfactants (Tween 80, Span 40, Span 80) and palm oil or VCO (virgin coconut oil) as oil phase with the surfactant-oil ratio of 4. The physicochemical stability of β-carotene loaded nanoemulsions during simulated digestions, which consist of the mouth, stomach, and intestine phases, was also evaluated using in-vitro digestion model. The results showed that β-carotene loaded nanoemulsions, prepared either using VCO or palm oil as the oil phase, had neutral pH (6.8±0.1), mean particle diameter of 129 -159 nm, showed monomodal particle size distribution with low polydispersity index (PdI) values  (0.214 - 0.266), and were not significantly different in zeta potential values ([-6,59]–[-8,9]). The β-carotene loaded nanoemulsions with VCO as the oil phase had a smaller mean particle diameter than that of palm oil. The physical stability of the β-carotene loaded nanoemulsions against digestive simulation in the mouth, stomach or intestine phases was not influenced by the oil phase type.  Both nanoemulsions were stable against simulated digestion in the mouth and stomach phases. After passing through the intestinal phase, the mean particle diameter increased and the particle size distribution changed from monomodal to bimodal. The β-carotene retention after passing through the mouth, stomach and intestinal phases of the β-carotene loaded nanoemulsion prepared using VCO were not significantly different from the palm oil. ABSTRAKβ-Karoten mempunyai berbagai manfaat kesehatan, namun aplikasinya dalam formulasi pangan sangat terbatas karena tidak stabil dan mudah mengalami degradasi. Stabilitas β-karoten dapat ditingkatkan dengan menggabungkannya dalam sistem penghantaran berbasis emulsi minyak dalam air (o/w). Penelitian ini bertujuan untuk melakukan karakterisasi nanoemulsi β-karoten yang dibuat dengan metode emulsifikasi spontan menggunakan kombinasi tiga surfaktan food grade (Tween 80, Span 40, Span 80), minyak sawit maupun VCO (virgin coconut oil) sebagai fase minyak dengan rasio surfaktan-fase minyak 4.. Penelitian ini juga mengkaji stabilitas fisikokimiawi nanoemulsi β-karoten selama pencernaan di mulut, lambung dan usus dengan menggunakan model digesti in vitro. Hasil penelitian memperlihatkan bahwa nanoemulsi β-karoten yang dibuat dengan fase minyak VCO maupun minyak sawit memiliki pH netral (6,8±0,1), rerata diameter partikel 129–159 nm, distribusi ukuran partikel monomodal dengan nilai indeks polidispersitas (polydispersity index, PdI) rendah (0,214–0,266) dan zeta potensial yang tidak berbeda nyata ([-6,59]–[-8,9]). Nanoemulsi β-karoten dengan fase minyak VCO memiliki rerata diameter partikel yang lebih kecil dibanding minyak sawit sebagai fase minyak. Jenis fase minyak tidak berpengaruh terhadap stabilitas fisik nanoemulsi β-karoten selama simulasi pencernaan di mulut, lambung maupun usus. Nanoemulsi β-karoten dengan fase minyak VCO maupun minyak sawit stabil terhadap pencernaan di mulut maupun lambung. Setelah melewati fase usus, terjadi peningkatan diameter partikel rerata dan perubahan distribusi ukuran partikel dari monomodal menjadi bimodal. Retensi β-karoten dalam nanoemulsi VCO setelah melewati simulasi pencernaan mulut, lambung dilanjutkan fase usus tidak berbeda nyata dengan retensi β-karoten dalam nanoemulsi minyak sawit.

Abstract

CHARACTERIZATION OF ACTIVE PAPER PACKAGING INCOORPORATED WITH OLEORESIN EXTRACTED FROMSOLID WASTE OF PRESSED Curcuma xanthorrhiza Roxb ROOT. Curcuma xanthorrhiza Roxb is the medicinal plant that is widely extracted for instant drinks by herbal industry. In producing this instant Curcuma xanthorrhiza Roxb, solid waste is also produced and then thrown away. The waste actually still contain oleoresin as an active material. In this study, active paper packaging were incorporated with oleoresin extraxted from the waste at 0, 2, 4, and 6% (w/w) level. The aims of this study was to determine the effect of oleoresin concentration on physical, chemical, and antimicrobial activity characteristics of active paper packaging. Based on this research, the incorporation of the oleoresin decreased moisture content, tensile strength, folding endurance and but increased antimicrobial activity of Aspergillus niger.   Keywords: active paper packaging; curcuma xanthorrhiza Roxb.; oleoresin; residue Abstrak Temulawak (Curcuma xanthorrhiza Roxb) adalah tanaman herbal yang lazim diolah industri herbal menjadi minuman instan. Produksi minuman instan temulawak menghasilkan limbah padat berupa ampas yang tidak dimanfaatkan dan biasanya hanya dibuang begitu saja. Padahal ampas temulawak masih mengandung oleoresin yang berperan sebagai senyawa aktif. Penelitian kertas aktif dilakukan dengan menambahkan oleoresin ampas temulawak dengan konsentrasi 0, 2, 4, dan 6% (b/b). Tujuan dari penelitian ini adalah untuk mengetahui pengaruh penambahan oleoresin ampas temulawak terhadap karakter fisikokimia, aktivitas antimikroba dan sensoris pengemas kertas aktif. Dari penelitian ini menunjukkan bahwa penambahan oleoresin ampas temulawak menurunkan kadar air, nilai ketahanan tarik, ketahanan lipat, dan karakter sensori (warna, tekstur dan overall), namun meningkatkan aktivitas antimikroba terhadap Aspergillus niger. Abstract

Tanaman cincau hijau rambat (Cyclea barbata L. Miers) sudah banyak dikenal masyarakat sebagai bahan pembentuk gel dalam pembuatan minuman segar.  Salah satu kelemahan cincau hijau rambat adalah mudah mengalami sineresis.  Penambahan hidrokoloid diharapkan mampu menurunkan nilai sineresis sehingga gel cincau hijau rambat lebih tahan lama. Kappa karagenan merupakan jenis hidrokoloid yang diekstrak dari jenis rumput laut Kappaphycus alverizii yang mampu memberikan peningkatan viskositas dan pembentukan gel.  Tujuan dari penelitian ini adalah untuk mengetahui pengaruh penambahan kappa karagenan terhadap karakteristik fisik dan kimia gel cincau hijau rambat. Pembuatan gel cincau hijau rambat dilakukan dengan menambahkan berbagai konsentrasi kappa karagenan (0,0%; 0,3%; 0,4%; 0,5%; dan 0,6%). Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan satu faktor perlakuan. Data yang diperoleh dianalisis dengan One Way ANOVA, dan jika berbeda nyata maka dilanjutkan dengan uji Duncan Multiple Range Test (DMRT) pada taraf signifikansi α = 5%. Hasil penelitian ini menunjukkan bahwa semakin tinggi konsentrasi kappa karagenan yang ditambahkan maka nilai tekstur, kadar air, kadar abu, pH, serat kasar, dan aktivitas antioksidan meningkat. Sedangkan pada parameter sineresis dan rendemen mengalami penurunan.

Abstract

Strawberry is a popular and nutritious fruit. However, its improper post-harvest handling leads to quality degradation. The aim of this study was to investigate the effects of active paper packaging placements methods on strawberry (Fragaria x ananassa) quality during refrigerated storage. Strawberry quality was determined based on the physical (weight loss, hardness, color), chemical (pH, total titratable acid, total soluble solids and vitamin C content) and microbiological (total plate count) properties. The results of this study indicated that different placement methods of active paper packaging had no significant effect on the physical and chemical qualities; but it did affect the microbiological quality of the strawberries. At the end of the experiment (12 days), the microbial content of C (the bottom and walls), D (covering all surfaces) and E (cut into pieces) samples were significantly lower than the A (without active paper packaging) and B (the bottom) samples. The Total Plate Count (TPC) values of the control and B samples were higher than the maximum acceptable limit of 6 log10 colony-forming units (CFU) g-1, while the other samples remained below the limit. These results indicated that a larger surface area of active paper that had contact with the strawberries provided better protection against microbes. Due to their microbial properties, C, D and E treatments maintained the strawberry quality for up to 12 days, compared with 9 days for control and B treatments. Active paper packaging containing oleoresin from solid waste of pressed Curcuma xanthorrhiza Roxb. can be applied to extend the shelf life of strawberries during refrigerated storage.

Abstract

Penelitian ini bertujuan untuk mengetahui karakteristik sensoris (warna, rasa, aroma, tekstur dan overall) danfisikokimia (kadar air, kadar abu, kuat tarik, aktivitas air (aw), kadar serat pangan) fruit leather pisang tanduk yangdibuat dengan penambahan karagenan serta mengetahui karakteristik sensoris dan fisikokimia fruit leather pisangtanduk yang terpilih. Sering timbul masalah dalam pembuatan fruit leather yaitu masalah plastisitasnya. Olehsebab itu perlu ditambahkan karagenan untuk memperbaiki tekstur fruit leather. Manfaat penelitian yaitumemberikan informasi mengenai peluang buah pisang tanduk untuk dikembangkan sebagai fruit leather danmemberikan informasi serta referensi tentang pengembangan penambahan karagenan pada olahan fruit leather.Bahan yang digunakan dalam penelitian yaitu pisang tanduk, karagenan, sorbitol dan aquades. Rancanganpercobaan dalam penelitian ini adalah Rancangan Acak Lengkap (RAL) dengan satu faktor yaitu konsentrasikaragenan (0,3%, 0,6% dan 0,9%). Hasil penelitian menunjukkan bahwa penambahan karagenan pada fruit leatherpisang tanduk memberikan pengaruh nyata terhadap karakteristik sensoris yaitu tekstur dan overall namun tidakberpengaruh nyata terhadap warna, rasa dan aroma. Berdasarkan analisis fisikokimia, fruit leather pisang tandukdengan penambahan karagenan berpengaruh nyata terhadap kadar air, kadar abu, kuat tarik, aktivitas air (aw) dankadar serat pangan. Fruit leather pisang tanduk yang terpilih berdasarkan hasil analisis sensoris dan fisikokimaadalah dengan penambahan konsentrasi karagenan 0,6%.

Abstract

Tempeh had been recognized worldwide as a superfood. In Pengkok Village, Kedawung Sub-district, Sragen Regency, there were several traditional tempeh producers which supply fresh tempeh around Kedawung Sub-district. Tempeh produced in this area was also used as raw material for brownies production. "BROWNIESTA" is a Small Medium Enterprise (SME) which produces brownies made from tempeh. The demand of tempeh brownies was high, but it was difficult for SME "BROWNIESTA" to fulfill the demand due to the lack number of ovens. In addition, packaging, labels and the quality of the products had been unstable due to limited understanding of Good Manufacturing Practices (GMP) concept in food production. This community service introduced appropriate technology for SME "BROWNIESTA" in the form of: 1) introduction of gas-fired ovens, 2) introduction of packaging and labels and 3) GMP training according to BPOM guidelines. Partners actively participated in providing materials for the introduced oven trials, providing materials and tools for evaluation of product sensory quality improvement and facilitating the implementation of GMP training. Based on the evaluation results, the sensory quality of brownies produced using the introduced oven had increased as indicated by its softer texture and smoother crust that is not caramelized. The product was also packaged properly with product information on the label attached to the packaging. Oven introduction also increased the production capacity up to 150%. SME “BROWNIESTA” implemented better food production practices after completing GMP training. Therefore, it could be concluded that the introduction of appropriate technology in SME "BROWNIESTA" increase the capacity and quality of the tempeh brownies products.
