Abstract

Beras merah memiliki berbagai keunggulan dibanding beras putih, memiliki kandungan senyawa flavonoid yang berperan sebagai antioksidan dan beras merah memiliki kandungan serat yang tinggi. Tepung porang merupakan salah satu alternatif bahan makanan yang rendah lemak dan tinggi serat. Tujuan penelitian ini untuk rice paper beras merah dengan substitusi tepung porang. Jenis penelitian ini adalah penelitian deskriptif eksperimental desain. Subjek penelitian ini adalah menggunakan panelis tidak terlatih yang terdiri dari 30 orang awam. Metode pengumpulan data berupa kuesioner uji organoleptik dan uji hedonik. Penelitian ini menggunakan 3 formula yaitu dengan penambahan beras merah, (tepung tapioka dan tepung porang dengan kadar yang berbeda). Pengulangan pada percobaan dilakukan sebanyak dua kali. Metode analisis uji menggunakan proksimat (karbohidrat, protein, lemak, kadar abu, kadar serat, dan kadar air). Metode analisis data menggunakan uji Friedman Test pada keempat indikator antara lain warna, aroma, rasa, dan tekstur menunjukkan hasil nilai signifikansi (p = 0,0001) < α (0,05) menunjukkan semua indikator (warna, aroma, tekstur, dan rasa) memiliki perbedaan nyata. Hasil penelitian menunjukkan bahwa nilai kadar serat rice paper semakin meningkat seiring bertambahnya jumlah tepung porang dalam formulasi rice paper. Kesimpulan penelitian ini adalah rice paper F3 memiliki nilai rata-rata tertinggi (formula yang paling disukai pada panelis masyarakat umum).

Abstract

Anchovy is a food that is widely consumed by the people of Indonesia because it has high quality and affordable prices for the middle and lower economic class. Anchovy as a source of calcium is very good for preventing osteoporosis, the formation and maintenance of bones and teeth, smooth muscle function, and the nervous system. The purpose of this study was to determine the calcium levels of wet anchovies and dried anchovies sold in traditional markets in the city of Bekasi. Determination of calcium content of wet anchovies and dried anchovies can be determined using atomic absorption spectrophotometry (AAS). Data were analyzed using descriptive analysis. The results of the analysis of the highest calcium levels in wet anchovies were 653.05 mg/100g and the lowest was 517.56 mg/100g. The highest calcium level in dried anchovies is 611.02 mg/100g and the lowest is 148.33 mg/100g. These results indicate that there are differences in calcium levels in wet anchovies and dried anchovies. This occurs due to the presence of water content and salt content in anchovy which affects the high and low calcium  results in the analysis.

Abstract

Nicotine is the main chemical substance found in cigarettes and has toxic and addictive properties. Exposure to nicotine in active smokers can cause various health problems, including respiratory and cardiovascular disorders and dependence. The prevalence of active smokers in RT 08 RW 05, Duren Jaya Village, East Bekasi Subdistrict is quite high. However, data on nicotine levels in the bodies of active smokers remain very limited. This study aims to determine the nicotine levels in active smokers in Duren Jaya Village, RT 08 RW 05, Bekasi Timur District, using urine samples. The research method employs a descriptive design with a cross-sectional approach. Urine samples were collected from 30 male active smokers aged over 35 years who had smoked for at least 15 years. Nicotine levels were measured at the Jakarta Regional Health Laboratory using Gas Chromatography-Mass Spectrometry (GC-MS). Data were analyzed descriptively using SPSS version 22. The study included 30 male respondents (100%) with an average age of 41 years. The analysis results showed nicotine levels ranging from 59.908 ng/mLto 459.941 ng/mL, with the majority of respondents falling into the category of active smokers based on the biological threshold for nicotine levels. It can be concluded that the results obtained indicate that these levels correspond to active smokers using light tobacco.

Abstract

Noncommunicable Diseases (NCDs) are a serious threat not only for the elderly but also for the young. Based on a report from the International Diabetes Federation (IDF) by 2022 that 1.57 million of the 8.75 million people living with type 1 diabetes worldwide in 2022 are less than 20 years old. This shows the importance of increasing public awareness about Diabetes Mellitus (DM). This PKM is carried out by providing education about the prevention and dangers of DM, then followed by a Temporary Blood Sugar (TBS) examination in the Jatimekar Bekasi village using brochure media. The increas in participantsÔÇÖs knowledge was carried out by analyzing the pre-test and post-test descriptively. The results of the study showed an increase in public knowledge about DM. this can be seen from the increase in post-test result compared to pre-test scores. GDS examination results include risk characteristics of 86.96% (110-200 mg/dL) and DM 13.04 % (>200 mg/dL). There are 3 counseling participants who suffer from DM and have a history of unhealthy eating patterns and not doing physical activity.
