Abstract

Ginger is a horticultural plant that can be used as a spice or medicine. Slicing is the process of reducing the size by using a knife to get the length of the pieces that are smaller and thinner in a transverse, oblique or parallel direction to the material to be cut. The traditional slicing process is still relatively time consuming so it is not practical and cannot meet the needs. This study aims to design and performance test slicing machine type horizontal for red ginger and elephant ginger. The design is carried out on the hopper component and slicing system. The slicing performance test was carried out at rotational speeds of 46.67 rpm, 56 rpm and 65.33 rpm using 2 and 4 slicing blades with three replications. The results of the design show that the hopper using a clamping system can accommodate 13 kg of ginger. The testing results of the slicing system got the largest machine performance efficiency of 87.4% at rotational speed of 56 rpm with 2 blades with a slicing of 262 kg/hour. This slicing is very large compared to traditional slicing (3 kg/hour) and greater than previous studies with a slicing machine that uses a pressing mechanism (128 kg/hour).

Abstract

Quantity and quality of rice grain can be developed through more efficient and accurate threshing methods based on the measurement of threshing force (TF). This study aimed to investigate the influence of rice varieties and grain position on the panicle on the threshing force (TF) results. Rice grains from several harvested varieties were dried to a moisture content level of 12% and prepared for threshing force (TF) testing. The research design used was a 2-factor completely randomized design with 3 replications. The first factor was rice varieties consisting of 4 levels: Sintanur, Siliwangi, Pajajaran, and Cakrabuana. The second factor was grain position on the panicle, consisting of 3 levels: upper, middle, and basal. Threshing force (TF) values were tested for 12 treatment combinations. The obtained data were analyzed using analysis of variance (ANOVA) followed by Duncan's multiple range test (DMRT) at a significance level of 5%. The results indicated that rice varieties had a highly significant effect on the threshing force (TF). On the other hand, grain position on the panicle had a non-significant effect on the threshing force (TF). The rice variety that produced the highest average threshing force (TF) value was Cakrabuana with 0.51 N, followed by Siliwangi with 0.50 N, Sintanur with 0.43 N, and Pajajaran with 0.35 N. The upper position of the grains on the rice panicle yielded the lowest average threshing force (TF) value of 0.41 N, compared to the middle position with 0.46 N and the basal position with 0.47 N.

Abstract

Postharvest handling of candlenut in the traditional way is less effective and efficient. A worker is only able to break as much as 9–10 kg of candlenut/day and this also causes high work fatigue, besides thas many kernels are broken and destroyed (percentage og intact round kernels is only 40–60 %) so the price of candlenut becomes cheaper. Therefore, a candlenut crushing machine is needed with an optimum rorational speed that able to provide optimal and consistent energy to candlenuts crushing result. The candlenut material was dried at at 90 ˚C for 3 and 4 hours, then put it in ice water at 5 ˚C for 15 minutes. It was drained for 20 minutes and a drop test was carried out to find the optimum energy and rotational speed in cracking the candlenut. The result of rotaional speed are set up on the candlenut shell breking machine. Optimum solving result obtained of 490,5 Joules. Equivalent to candlenut dropped from a height of 5 meters with a rotating speed of 337,88 rpm. Keywords:  Candlenut, Post Harvest, Rotational Speed

Abstract

Indonesia has a lot of diversity, one of which is in food. Carbohydrates are basic food needs that must be met, in Indonesia there is the potential for various alternative foods. One of the alternative food ingredients producing carbohydrates is hotong. Hotong is a plant that is often found in Indonesia but has post-harvest constraints, namely in the sowing process. Therefore, research was conducted to determine the performance of an abrasive roll type grinding machine with the characteristics of hotong seeds. The research was conducted at PT. Daud Teknik Maju Pratama in November 2022. The treatment of hotong seeds that are sprayed as many as three passes with various levels of rpm speed, namely 806, 940, and 1128 rpm and carried out three repetitions at each rpm. The performance test results of the crushing machine showed the highest scattered capacity and shrinkage at a rotating speed of 1128 rpm, the highest yield and effectiveness of skin separation at a speed of 806 rpm, while at the highest polishing quality at a speed of 940 rpm. Rotating speed affects the sowing results, the faster the engine rotation speed, the quality and capacity of the sowing will increase. In addition, the tilt angle of the machine also affects the result of the sowing capacity. The terminal velocity value is influenced by the weight of the hotong seeds, the higher the weight on the sample, the higher the terminal velocity value obtained. Keywords:  Abrasive Roll, Hotong, Polisher.
