Abstract

Proses pengolahan yang semakin berkembang dalam bidang pangan, menghasilkan produk produk olahan yang semakin beragam yang banyak beredar dipasaran. Beberapa produk olahan yang sangat digemari oleh konsumen adalah nugget. Nugget adalah produk daging direstrukrisasi dengan adonan dan pelapis untuk mempertahankan kualitasnya. Selain terbuat dari daging maupun ikan, nugget juga dapat terbuat dari bahan non daging (nugget vegetarian) seperti sayuran. Nugget yang terbuat dari sayuran ini juga merupakan salah satu upaya untuk meningkatkan minat para konsumen terutama anak anak yang tidak menyukai sayuran. Selain daripada itu pembuatan nugget adalah salah satu upaya untuk memperpanjang masa simpan daging ayam. Desa Asahduren terletak di Kecamatan Pekutatan yang berjarak 75 km dari ibukota propinsi Bali dengan jumlah penduduk 892 KK yang terdiri dari 1882 orang laki laki dan 1830 orang wanita, dengan mata pencaharian pokok adalah bertani. Salah satu dusun yang terdapat di desa Asahduren adalah Dusun Segah dimana salah satu tempeknya adalah Tri Karya Utama yang mana ibu ibunya tergabung dalam dua kelompok Wanita Tani yaitu KWT Teratai 8 dan KWT Teratai 9. Lokasi dusun terletak berbatasan langsung dengan Hutan Negara dan Perusahan Daerah (Perusda) membuat dusun jauh dari keramaian. Hal ini mengakibatkan kegiatan KWT hanya berkisar seputar dusun dan membantu suami sebagai petani. Tujuan dari kegiatan adalah meningkatkan motivasi kewirausahaan dengan memberikan pelatihan teknologi untuk membuat aneka nugget meliputi proses produksi aneka nugget, sanitasi dan higienis dan pengemasan dan pemasaran, sehingga peserta pelatihan mampu membuat produk aneka nugget dengan baik, dan selanjutnya mangemasnya menjadi produk yang menarik. Abstract

Native chicken farms in Indonesia at this time have experienced very rapid development. One of the poultry that is currently being developed in Indonesia is the Super kampung chicken. The current reality is that the price of commercial feed in the market is felt by farmers to be very expensive, while feed is the largest component in poultry farming, where the cost of feed can reach 60-70% of the total production cost, so it is very important to look for other alternative feeds in the availability of ration feed ingredients. to keep production costs as small as possible without reducing optimum production. The use of sorghum seeds in the ration of super native chicken is (substitute) for corn because its nutritional content is almost the same as corn. The design used in this study was a completely randomized design (CRD) which consisted of 5 treatments and 3 replications. S0 (Control) of chickens that were not given sorghum, S1 of chickens that were fed a diet containing 7.5% sorghum, S2= 15%, S3= 22.5% and S4= 30%. The arrangement of the 3-story cage with a total of 15 plots, each containing 5 chickens, so that 75 chickens were used with a body weight range of 183.2-210.0 g. From the results of the study, the administration of various levels of sorghum did not have a significant effect (P>0.05) on final body weight, weight gain, ration consumption, and ration conversion of super-village chickens aged 3-10 weeks. In the administration of various levels of sorghum at S0 (Control) it was higher than the S1, S2, S3, and S4 treatments on final body weight, weight gain, ration consumption, and ration conversion for super free-range chickens aged 3-10 weeks.

Abstract

Fermented Feed for Cattle Based on Local Resources in the “Lembah telaga” Livestock Farmers Group, Gumantar Village, North Lombok Regency, West Nusa Tenggara Province. Gumantar is a village located in Kayangan District, North Lombok Regency, West Nusa Tenggara Province, Indonesia. This village has agricultural and plantation potential with the main products being rice, corn, peanuts, cashews, coffee, cocoa, coconut, bananas, and other horticultural crops. The problem that is often encountered is the very limited availability of food in the dry season. This makes many breeders sell their livestock at low prices during the dry season. Another problem is farmers' low knowledge of storage and preservation technology for feed ingredients as feed in the dry season. In the rainy season, the available food is quite abundant. Therefore, it is necessary to provide training regarding animal feed storage and preservation technology. One method that is widely used and easy to do is making fermented feed. Fermentation is the process of changing  organic materials into other, more useful materials with the help of microorganisms in a controlled manner. The aim of fermentation is to reduce anti-nutritional substances, increase digestibility, increase shelf life and increase selling value. The final fermentation product contains compounds that are simpler and easier to digest than the source material. After the implementation team provided outreach to partners, knowledge of the types of forage waste for feed increased from 40% to 80%. Increase in forage nutrition (protein) from 6.7% to 16.45%. The results of the activity showed that there was an increase in farmers' ability to make fermented feed, the fermented feed produced could be stored for 6 months and there was an increase in the nutritional value of the feed.
