Abstract

Kerupuk ikan adalah produk makanan kering yang terbuat dari tepung dengan menambahkan daging ikan, bumbu, dan pengembang. Kerupuk ikan dalam penelitian ini menggunakan daging ikan gabus dan tepung mocaf untuk disubstitusikan dengan ikan tenggiri dan tepung tapioka. Ikan gabus mengandung protein khususnya albumin yang lebih tinggi dibandingkan ikan tenggiri serta kandungan gizi keseluruhan mocaf yang lebih baik dari tapioka. Penelitian ini bertujuan menentukan formulasi serta karakteristik fisik, kimia, dan organoleptik kerupuk ikan sehingga diperoleh kerupuk ikan dengan kadar protein paling tinggi dan disukai konsumen berdasarkan kesukaan keseluruhan. Penelitian ini menggunakan RAL dua faktor formulasi daging ikan dan tepung. Faktor 1 adalah formulasi daging ikan yaitu 400g gabus + 100g tenggiri, 300g gabus + 200g tenggiri, 200g gabus + 300 tenggiri. Faktor 2 adalah formulasi tepung yaitu 40% tapioka + 60% mocaf, 60% tapioka + 40% mocaf, 80% tapioka + 20% mocaf. Pengujian kerupuk ikan gabus - tenggiri substitusi mocaf meliputi uji kimia (kadar air, protein, abu, lemak, dan gula total), uji fisik (volume pengembangan), dan uji organoleptik (warna, rasa, tekstur, dan kesukaan keseluruhan). Hasil terbaik yang memiliki kadar protein paling tinggi berdasarkan nilai kesukaan keseluruhan oleh panelis sebesar 4,23 (disukai) terdapat pada perlakuan formulasi daging ikan (300g ikan gabus + 200g ikan tenggiri) dan formulasi tepung 40% tapioka + 60% mocaf dengan kandungan kadar air 5,08%, protein 8,68%, abu 0,980%, lemak 0,27%, gula total 3,54%, volume pengembangan 176,55% memiliki warna krem kecoklatan, rasa ikan yang gurih, berbentuk utuh, rapi, serta ketebalan rata.

Abstract

Nutrition education is an educational program to increase knowledge and attitudes toward nutrition.Higher nutritional knowledge will affect food consumption attitudes and behaviors. Nutrition educationincludes several activities as part of a two-way communication process for knowledge improvementwhich can help one understand and overcome nutrition problems. This study aims to determine theeffect of nutritional education provision on the enhancement of children's healthy food knowledge andprovide information on the proper and correct consumption of healthy foods in the case of publicelementary school of 16 Purwodadi, Grobogan. In this study, 66 fifth graders were involved asrespondents. The respondents were divided into 2 classes, namely, the education class and the noneducationclass. This research began with a pre-test to collect initial data, followed by provision ofeducation four times over a period of three days for the education class. After 2 months, a post-testwas conducted to collect the final data using online questionnaire. The results showed that theprovision of education did not significantly affect the respondents’ knowledge about healthy food butcould change the consumption behavior for some food. However there was a differences in meanvalue of knowledge after education for some questions. In the true/false questions about junk foods,two results were found to change after giving a nutrition education. Such efforts need to be done toimprove food consumption and consumer behavior along food.Keywords: Nutrition education, fast food, healthy food

Abstract

Kue pukis merupakan kue tradisional Indonesia. Tepung tiwul memiliki potensi untuk dijadikan bahan dalam pembuatan kue yang aman dikonsumsi penderita celiac dan autisme. Bahan baku lokal seperti tepung kacang hijau dan wortel yang kaya akan serat dapat memenuhi kebutuhan serat dalam tubuh. Tujuan dari penelitian ini untuk menentukan karakteristik fisikokimia dan sensori pukis bebas gluten dari tepung tiwul dan tepung kacang hijau dengan penambahan puree wortel serta menentukan formulasi pukis bebas gluten yang paling disukai konsumen. Rancanganlpercobaan menggunakan Rancangan Acak Lengkap (RAL) dengan faktor penambahan puree wortel serta  perbandingan tepung tiwul dan tepung kacang hijau. Hasil penelitian formulasi pukis bebas gluten terbaik berdasarkan kandungan tinggi serat pangan adalah formulasi puree wortel 25% : tepung tiwul 18,75% : tepung kacang hijau 56,25% dengan kadar air 26,75%, kadar abu 1,20%, kadar lemak 15,37%, kadar protein 10,45%, kadar serat pangan 7,94%, kadar karbohidrat by different 46,23% dan kadar β-karoten 10,88 µg/g. Nilai sensoris perlakuan ini yaitu warna 3,33 (warna semakin coklat), flavor tepung tiwul 2,53 (flavor tepung tiwul semakin terasa), flavor tepung kacang hijau 3,10 (flavor tepung kacang hijau semakin terasa), flavor wortel 2,70 (flavor wortel semakin terasa), tekstur empuk 3,63 (tekstur semakin empuk), dan kesukaan keseluruhan 3,73 (pukis disukai secara keseluruhan). Pukis dengan bahan baku tiwul, kacang hijau dan wortel dapat menjadi alternatif makanan tradisional yang memiliki tinggi serat dan beta karoten.

Abstract

Kegiatan Usaha Kecil Menengah pada saat ini memiliki peran strategis dalam perekonomian Indonesia, terutama dalam meningkatkan pendapatan masyarakat. Hal ini terjadi pada usaha home industry bank sampah Handono Mulyo dan Bank sampah Dewaruci yang mengelola sampah menjadi produk yang dapat dimanfaatkan dan memiliki nilai jual, yaitu membuat pupuk kompos padat maupun cair dari sampah organik dan mmbuat berbagai kerajinan asesoris dari sampah anorganik. Hasil kerajinan tersebut dijual dan hasilnya dikelola oleh bank sampah untuk kemudian dapat meningkatkan pendapatan masyarakat. Kegiatan pengabdian ini berusaha untuk memfasilitasi berbagai masalah yang ada pada mitra dan menawarkan berbagai solusi agar kegiatan mitra dapat berkembang serta dapat lebih produktif. Disamping itu dengan adanya pengelolaan sampah maka mitra memiliki keuntungan selain untuk meningkatkan pendapatan masyarakat juga dapat mengelola sampah untuk dapat mengurangi permasalahan sampah di masyarakat.Kata Kunci: Sampah organik, sampah anorganik, pendapatan

Abstract

Rengginang adalah produk makanan tradisional khas Indonesia yang memiliki rasa gurih, tebal dan bentuknya bulat, umumnya dapat dikonsumsi sebagai pendamping hidangan utama di meja makan atau camilan. Rengginang dalam penelitian ini menggunakan beras merah dan pati singkong dengan variasi lama penggorengan minyak terendam. Kombinasi beras merah dan pati singkong menghasilkan rengginang yang memiliki kandungan serat dan volume pengembangan yang baik. Penelitian ini menggunakan rancangan acak lengkap (RAL) faktorial, yaitu persentase beras merah dan pati singkong serta lama waktu penggorengan. Faktor pertama adalah persentase perbandingan beras merah dan pati singkong yaitu 95:5 ; 90:10 ; 85:15. Faktor kedua adalah lama penggorengan rengginang yaitu 15 detik, 20 detik, dan 25 detik. Pengujian meliputi uji kimia (kadar air, abu, serat pangan total, lemak, protein, karbohidrat by difference), uji fisik (volume pengembangan), dan uji organoleptik (warna, rasa gurih, kerenyahan dan kesukaan keseluruhan). Rengginang terbaik memiliki nilai volume pengembangan tertinggi yaitu 137,51% dan kesukaan keseluruhan tertinggi yaitu 4,40 pada perlakuan persentase beras merah 95% dan pati singkong 5% dalam waktu penggorengan 25 detik, memiliki warna merah cerah kecoklatan, dengan rasa yang gurih, tekstur renyah, dan memiliki kadar air 2,24%, kadar abu 0,59%, kadar serat pangan total 10,42%, kadar lemak 12,79%, kadar protein 8,33%, serta kadar karbohidrat by difference 76,05%.

Abstract

Cone es krim merupakan jenis kue berbentuk seperti corong yang digunakan sebagai wadah untuk es krim, dibuat dengan pemangganggan menggunakan ice cone maker berbahan dasar tepung terigu, serta dapat ditambahkan bahan lain sebagai inovasi. Penelitian menggunakan Rancangan Acak Lengkap (RAL) faktorial dua faktor yaitu perbandingan tepung terigu dan tepung ampas tahu ((90:10), (80:20), (70:30)) dan persentase ekstrak umbi bit/100 ml air (30, 40, 50%). Penelitian ini bertujuan untuk menentukan formulasi cone es krim tepung terigu dan tepung ampas tahu dengan penambahan ekstrak umbi bit (Beta vulgaris L.) yang memiliki kadar protein dan betasianin tinggi serta disukai oleh konsumen. Hasil penelitian menunjukkan bahwa kadar protein tertinggi terdapat pada perlakuan perbandingan tepung terigu : tepung ampas tahu (70 : 30) dan persentase ekstrak umbi bit 30% dengan hasil kadar protein 13,55%. Kadar betasianin tertinggi terdapat pada perlakuan perbandingan tepung terigu : tepung ampas tahu (90 : 10) dan persentase ekstrak umbi bit 50% dengan hasil kadar betasianin 0,074 mg/100gr. Perlakuan berdasarkan uji organoleptik yang paling disukai oleh panelis adalah perlakuan perbandingan tepung terigu : tepung ampas tahu (80 : 20) dan persentase ekstrak umbi bit 30% dengan hasil warna 3,53 (agak suka), rasa 3,61 (agak suka), aroma 3,78 (agak suka), kerenyahan 4,32 (suka), dan kesukaan keseluruhan 4,07 (suka).

Abstract

Sticks are delicious, crunchy, savory, long, thin, and brownish yellow snacks with various flavors.  The main ingredients of this product consist of wheat flour, , eggs, garlic, pepper, and salt.  Celery leaves were chosen because they are easy to obtain and to optimize local ingredients. Mung bean (Phaseolus radiates) itself is a vegetable food that is high in protein and fiber where the protein contained is 20-25%. This study aims to determine the effect of sticks mung bean flour and the addition of celery.  The design used was a 2 factor factorial completely randomized design (CRD).  Factor 1 is the ratio of wheat flour : mung bean flour  (75:25, 50:50, 25:75) and factor 2 is the concentration of celery porridge (10%, 20%, 30% in 30 ml of water).  The best results of chemical analysis based on the highest protein content were the ratio of wheat flour : mung bean flour 25:75 with concentration of celery porridge 20% with 2.22% water content, 1.74% ash content, 23.58% fat content, 17.75% protein content, 8.28% crude fiber and 46.41 for carbohydrates by difference, color sensory test value 3.73 (greenish brown), crunchy texture 3.40 (crispy), celery taste 3.60 (taste celery flavor) mung bean taste 2.67 (a bit of green bean flavor), celery aroma 3, 33 (smelling of celery), and 3.27 (preferred) for overall liking. The most preferred formulation of celery sticks by consumers is the comparison of wheat flour : mung bean flour 75:25 with the addition of 10% celery porridge concentration with a value of 3.47 (preferred). Sticks made from green beans and celery can be an alternative food that is high in protein and fiber.

Abstract

Apple is a fruit that turn brown quickly after being cut. One method to maintain the quality of apples cut is coating the fresh-cut apples with an edible coating. Ediblei coatingi is a thini ilayer that can bei eaten and can keep the iquality ofi the icoated material. Thei study aimed toi determinei the effectiveness of edible coating aloe vera (Aloe vera chinensis L.) in inhibit enzymatic browning reaction. The designii wasi usiing icompletely irandomized idesign. The first factor was the citrus species (Citrus aurantifolia, Citrus hystrix DC, Citrus amblycarpa) iand the secondi factori was thei istorage itime (0, 3, 6 day). Edible coating applied to fresh-cut apples and tested for moisture content, total dissolved solids, weight loss, color, overall appearance, vitamin C and total plate count. Thei resultsi ishowed that aloe vera edible coating with citrus extract was not effective in inhibiting the enzymatic reaction of sliced apples. The type of citrus and storage time was affect the effectiveness of aloe vera edible coating. Citrus amblycarpa extract has a lower water content reduction effect with a water content of 54.51% on the 6th day of storage time and has an effect on the total plate count, that Citrus amblycarpa extract has decreased total plate count in day 6th. Citrus aurantifolia extract gives the effect of maintaining brightness compared to other types of citrus, with a brightness value of 58,290 on the 6th day. The type of citrus has no effect on weight loss, total dissolved solids, overall appearance. The length of storage has an effect on the effectiveness of aloe vera edible coating, the longer it is stored, the apples cut will decrease in quality.

Abstract

Tropical almonds (Terminalia catappa L) are food ingredients that can be developed into probiotic drinks like yogurt. The addition of celery leaf extract in to yoghurt can affect the growth of the bacteria. Celery leaf contain natural antimicrobial compounds that can influence bacterial growth. However, celery also contain bioactive compounds that can improve the functional properties of food.  This study aimed to determine the antioxidant activity of tropical almond yogurt with the addition of celery leaves. The research method used was factorial Completely Randomized Design (CRD), with the first factor being the type of starter culture and the second factor the fermentation time (0, 2, 4, 6, 8, 12, and 16h). The starter culture included Lactobacillus bulgaricus (Lb), Streptococcus thermophilus (St), and Lactobacillus bulgaricus - Streptococcus thermophilus (St-Lb). Data analysis used Duncan Multiple Range Test with a significance level of 5%. The results showed that after 16h of fermentation, the total acid-producing bacteria was at 7.47 log CFU/ml. This value met the standard criteria for probiotics products. Antioxidant activity with the highest percentage of inhibition (97.11%) was found in yogurt with a starter type of St-Lb. This product had 7.21 log CFU/ml of total acid-producing bacteria, total phenol content (TPC) of 143.61 mg GAE/ 100 ml, total flavonoids of 281.22 mg QE/g, a total sugar content of 25.76%, and protein content of 13.38%. Tropical almond yoghurt, with the addition of celery leaves, has the potential to be developed as a functional food. Further research need to investigate the functional properties of the yoghurt.

Abstract

The aim of this research is to get the best heating time and the amount of water that must be added in making beet jam which has high antioxidant activity. The experimental design used was a completely randomized design (CRD) factorial of 2 factors with heating duration factor (A1 = 8 minutes, A2 = 10 minutes and A3 = 12 minutes) and the amount of water added (B1 = 8 ml, B2 = 12 ml, B3 = 16ml). The parameters observed included antioxidant activity, water content and hedonic test or preference. The results showed that heating time and the addition of water interacted to influence the antioxidant activity of beet jam. The best treatment is A3B3 treatment (heating time 12 minutes, addition of water 16 ml) produces the most organoleptically preferred jam in terms of flavor and aroma parameters even though in terms of texture it is less preferred.
