Abstract

Background   : The use of banned dyes In making foodin general to give a striking color to food so that it can attract consumers to buy, but the trader was not aware of the dangers of using banned dyes.This is because the level of knowledge and attitudes of food traders are less related to the use offood coloring agents. Objective : Knowing the relationship between the level of knowledge and the attitude of market food vendors to the use of dyes that are prohibited in the Semarang city market. Method : This research is a descriptive analytic study with cross sectional design. Sampling uses cluster techniques to 8 market samples.The collected data are knowledge and attitude data with questionnaire and interview measurement tools.Data on the use of dyesusing the phenylhydrazine method. Results : Traders have knowledge in good categories (87,5%)while traders have the same attitude comparison between those who support and not support (50%)and the results of laboratory tests conducted by the university on August 17 showed negative results on the use of banned dyes but there were 2 markets using dyes that were not prohibited, namelyEritrosin. Conclusion   : All traders do not use dyes that are banned in cenil and putu mayang

Abstract

Background: Metabolic syndrome (MetS) is a risk factors for metabolic disorders such as high levels of triglyceride, blood sugar, blood pressure, central obesity and the low of HDL(NCEP-ATP III criteria). These risk factors are important to detect earlier. The worldwide prevalence of MetS were increased up to 20 – 25% and based on Riskesdas data from 2013 to 2018, the prevalence of MetS component were increased.Objective: To examine the risk of physiology and behavioral factors towards MetS incidents in Tlogosari Kulon PHC area.Method: An observational research with case-control design which involved 50 sampels aged 25 – 65 years in Tlogosari Kulon PHC area. Physiology factors were included gender, age, and genetic history which were collected through interview. Nutritional status based on anthropometric measurement, meanwhile the behavioral factors, including physical activities which were collected using an IPAQ and the knowledge factors were collected through 20 question which were collected by interview. Triglyceride, fasting blood sugar and HDL were measured using a spectrophotometer. Statistical analysis were used Chi-Square and Logistic Regression.Result: The chi-square test showed that there were significant relations between age (95% CI = 1,510 – 21,424; OR = 5,688), nutritional status (95% CI = 1,446 – 17,922; OR = 5,091), genetic history (95% CI = 1,170 – 12,194; OR = 3,778) and physical activity (95% CI = 1,180 – 12,606; OR = 3.857) with MetS incidents (p0,05). The logistic regression test showed that age (95% CI = 1,271 – 33,256; OR = 6,502) and nutritional status (95% CI = 1,038 – 25,957; OR = 5,191) were the most dominant variables toward the MetS incidents. Physiology and behavioral factors were contributed 47,8% to the MetS incidents.Conclusion: Age and nutritional status affect MetS incidents in Tlogosari Kulon PHC area.

Abstract

Background  : Hypercholesterolemia is a condition in which the total blood cholesterol level exceeds the normal value reaching ≥200 mg / dl. To reduce total cholesterol levels can be done by regulating the intake of macro nutrients and micronutrients, one of which is fiber. Polysaccharide food fiber type hemicellulose which is glucomannan contained in aloe vera can reduce total cholesterol levels in the blood. Objective  : To know influence of giving aloe vera pudding on total cholesterol levels of Patients with Hypercholesterolemia Outpatient at Puskesmas Genuk Semarang City.Method  : This research used method quasi experimental with research design control group pre test post test. Taking sample on a random as many as 34 people for 2 groups that is treatment and control. The treatment group was given 100 grams of aloe vera for 14 days. Measurement of total cholesterol levels was carried out before and after the intervention. Fiber and fat intake subject before and during the intervention with 24-hour food recall method, while measurement activity physical use method IPAQ. Analysis statistics use Independent t-test, Paired t-test, and Anovarepeated measure.Result  : There were differences in changes in total cholesterol levels between groupstreatment and control were significant (p = 0.026) and there was a significant decrease in total cholesterol levels (p = 0.009) of -44.70 ± 56.51 in the treatment group given aloe vera pudding. Conclusion  : Giving 100 grams of aloe vera pudding for 14 days could decrease total cholesterol levels of hypercholesterolemia patients of Puskesmas Genuk Semarang City.

Abstract

Background : Health education with the methods in games is more interesting than counseling methods in the classroom.  The using of Quartet card media is the way as an alternative media to give information about the nutrition, which one using the game. Providing nutrition education through quartet card media is expected to increase breakfast habits, breakfast energy and protein intake and nutrition knowledge especially for elementary school.Objectives : To determine the effect of nutrition education on quartet card media on breakfast habits, breakfast energy and protein intake and nutritional knowledge about breakfast in elementary school students. Method : This study used the quasy experiment method with a pre test, post test and control group design. The Sampling was done by randomly to get 26 treatment samples and 26 control samples at the Elementary School in Pedurungan Kidul 01 and 02  Semarang City. The data collected were sample identity card (name, age, gender, parental education, parental work), breakfast habits, breakfast energy and protein intake and nutritional knowledge about breakfast. Data was collected by interview and answering the questionnaire. The results of bivariate analysis using the Paired T-Test, Wilxocon, Independent T-Test and Mann Whitney test.Results : There was an effect of increasing breakfast habits by an average of 1.71 ± 0.58, an increase in the amount of breakfast energy and protein intake and nutritional knowledge in the treatment group and a decrease in breakfast habits by an average of -0.34 ± 0.12 in control group before and after providing nutrition education through quartet card media with a value of p 0.05.Conclusion : Quartet card media about breakfast increases breakfast habits, breakfast energy and protein intake and nutritional knowledge in the treatment group.

Abstract

Results of the monitoring and evaluation of programs comprehensive examination malnutrition children in the city of Semarang, 2014 shows a toddler can not spend PMT, one reason is the toddler suffering from boredom, so that changes in nutritional status and the expected weight gain cannot be achieved is not expected to be achieved so as to consider alternative forms of formulas for children malnutrition. The alternative to the manufacture of food in the form of crackers by using basic ingredients WHO F100 formula with flour substitute pumpkin. Ria and Yuwono study (2016) that cRackers with basic materials modification F100 with pumpkin flour substitution of 10% can be accepted by a toddler. Provide training on making crackers modified F100 with pumpkin flour substitution on energy malnutrition nutrition assistant at Home Nutrition Semarang. The training methods include lectures, practice and assessment discussion participants include taste, aroma, colour and texture Most participants (80%) were able to make modifications crackers F100 pumpkin flour substitution. Acceptance test conducted by the participants of the colour of 3.56, 3.14 aroma, flavour and texture 3,12 3.44.  Crackers modified F100 with pumpkin flour substitution can be used as an alternative food supplement for children with malnutrition.

Abstract

Background: The prevalence of anemia among adolescent girls in Indonesia has increased from 22,7% in 2013 to 32% in 2018. Prevention of anemia can be done by consuming high-iron products such as nuggets with local ingredients of chicken meat, a combination of red beans and chicken liver to meet iron needs. Objective: To determine the effect of the formulation of chicken nuggets combination of red bean and chicken liver on iron content, hardness, and sensory properties. Method: The experimental research design was a completely randomized design with 3 treatments with the ratio of chicken liver, red beans, and chicken meat, namely A(25gr:75gr:100gr); B(50gr:50gr:100gr); C(75gr:25gr:100gr); and control. The data collected were iron levels, hardness levels, hedonic test conducted on 15 moderately trained panelists. Fe data analysis using one way ANOVA with Tuckey, hardness was analyzed by one way ANOVA, and hedonic test using Friedman followed by Mann Whitney. Results: There were significant differences in the formulation of chicken nuggets with a combination of red bean and chicken liver on iron content (p=0,000), organoleptic except for color attributes, and there was no significant difference in texture or hardness (p=0,746). Conclusion: The recommended formula is formula C with a contribution of 35% iron, a hardness of 22,3 m/g/s, and a preference of 3,68 in the like categoryAbstrakLatar belakang: Prevalensi anemia remaja putri di Indonesia mengalami peningkatan dari tahun 2013 sebesar 22,7% hingga tahun 2018 sebesar 32%. Pencegahan anemia dapat dilakukan dengan mengonsumsi produk tinggi zat besi seperti nugget dengan bahan lokal daging ayam kombinasi kacang merah dan hati ayam untuk memenuhi kebutuhan zat besi. Tujuan: Mengetahui pengaruh formulasi nugget ayam kombinasi kacang merah dan hati ayam terhadap kadar zat besi, kekerasan, dan organoleptik. Metode: Desain penelitian eksperimental dengan Rancangan Acak Lengkap 3 perlakuan dengan rasio hati ayam, kacang merah, dan daging ayam yaitu A(25gr:75gr:100gr); B(50gr:50gr:100gr); C(75gr:25gr:100gr); dan kontrol. Data  yang dikumpulkan yaitu kadar zat besi, tingkat kekerasan, uji hedonik yang dilakukan pada 15 panelis agak terlatih. Analisis data Fe menggunakan ANOVA one way dengan uji lanjutan Tuckey. Kekerasandianalisis dengan   ANOVA one way, dan uji hedonik menggunakan Friedman dengan uji lanjut Mann Whitney. Hasil: Terdapat perbedaan nyata formulasi nugget ayam kombinasi kacang merah dan hati ayam terhadap kadar zat besi (p=0,000), organoleptic kecuali atribut warna, dan tidak terdapat perbedaan signifikan terhadap tekstur atau kekerasan (p=0,746). Simpulan: Formula yang direkomendasikan yaitu formula C dengan sumbangan zat besi sebanyak 35%, kekerasan 22,3 m/g/s, dan kesukaan sebesar 3,68 dengan kategori suka.

Abstract

Background: PTM is currently a risk for all people, including the youth group. a trigger factor for the emergence of PTM in adolescents is a sedentary lifestyle and unhealthy eating behavior, namely liking modern foods that are high in fat and low in fiber, lack of fruit and vegetable consumption, lack of activity and exercise, increased stressors and exposure to environmental conditions that are not conducive to health. Posbindu in schools as an effort to monitor and early detect NCD risk factors in students.Objective: To examine risk factors for adolescent NCDs in schools by empowering Peer Counselors through the implementation of Basic Posbindu in schools.Method: This type of cross-sectional research with a survey approach to students at SMAN XI and XV as many as 241 students. Peer counselors who were trained to become Posbindu cadres (63 students) to conduct early detection of NCD risk factors in their friends. PTM Risk Factor Detection usingPTM Risk Factor Monitoring Card includes personal identity, history of non-communicable diseases, behavioral risk factors, and physical examination by peer counselors and officers from the health center. Descriptive analysis was in the form of PTM risk factor proportions.Results: The behavioral risk factors found were a lack of consuming vegetables and fruit 77.4%, consuming excessive sweet food 92.8%, consuming excessive salty food 84.8%, consuming excessive fatty food 5.9%, consuming alcohol 0.5% and smoking habits 5.9% as well as lack of physical activity 69.7%. The proportion of adolescents who are overweight is 36.1%, high blood pressure is 43.0% and high sugar content is 23.0%.Conclusion: Lack of consuming vegetables and fruit, excessively sweet foods, excessively salty foods, lack of physical activity, obesity, high blood pressure, and high sugar levels are risk factors for PTM in adolescents at school. Early Detection of PTM Risk Factors in adolescents based on Posbindu can be done by Peer Counselors in the environment School.
