Abstract

"Suwar-suwir" is an intermediated moisture food commonly produced from traditional fermented cassava and it is very famous in East Java. In some areas "suwar-suwir" is made of fermented breadfruit ("tape sukun"). Suwar-suwir prepared by adding cane sugar to the fermented cassava and heating it, and then dehydrating. The addition of high concentration of cane sugar caused crystallization due to heating, and this influenced the sensory properties of the products. Finding the proper concentration of cane sugar should solve this problem. A Randomized Group Design was determined with a single factor i.e. concentration of cane sugar consist of six levels concentration as follows: 80%, 90%, 100%, 120% and 130%, respectively. The parameters including appearance, hardness, and taste were measured. The research result showed that there was significantly among treatments to all parameters. "Breadfruit Suwar-suwir" contains 100% of cane sugar was the best product.

Abstract

Background: Menopausal symptoms are common problem in menopausal women. The severity of menopausal symptoms is influenced by the interaction of biological, genetic and nutritional factors. Objective: This study aimed to determine correlation between menopausal symptoms and fish consumption of postmenopausal women in the coastal areas.Method: This was a cross-sectional study conducted on 234 postmenopausal women in the coastal areas of Southeast Sulawesi. Severity of menopausal symptoms was assessed using Menopause Rating Scale (MRS). Quantity of fish consumption was calculated using 24-hour recall questionnaires. Frequency of fish consumption was evaluated using Food Frequency Questionnaires (FFQ). Data analysis used Chi-square test with a significance value of p=0.05.Results: The majority of fish consumption was sufficient in quantity (81.6%) and frequency (95.3%). Menopausal symptoms are found to be very mild (14.1%), mild (36.3%), moderate (38.5%), and severe (11.1%). There was a correlation between menopausal symptoms and the quantity of fish consumption (p=0.000), and between menopausal symptoms and the frequency of fish consumption (p=0.000).  Conclusion: There was a correlation between menopausal symptoms and fish consumption of postmenopausal women, both in the quantity and frequency. Therefore, increasing the quantity and frequency of fish consumption will reduce the severity of menopausal symptoms.

Hypertension, commonly known as high blood pressure, is a grave medical condition that serves as a catalyst for the onset of various other ailments, each bearing significant consequences that may ultimately lead to fatality. Unhealthy eating habits, such as consuming foods heavy in sugar, sodium, or saturated fat, are the primary cause of elevated incidences of hypertension. This research aimed to determine the relationship between food consumption patterns in hypertensive patients. This study used a cross-sectional study design conducted on outpatients at the Prambanan Health Center, Prambanan District, Klaten Regency, from December 2022 to February 2023.  The population used in this study were all patients with hypertension in Klaten Regency, which amounted to 2,884 people from January until December 2021. The research sample was taken randomly with a value a of 5%. Based on the sample calculation, the sample size was 339 hypertension sufferers. Data analysis used in this study was univariate and bivariate analysis using the chi-square test with a degree of confidence of 95%. The results of this study indicate that the level of salt, fiber, and fat consumption is not related to sufferer hypertension. Maintaining a nutritious diet and engaging in physical activity as part of a healthy lifestyle may also help lower blood pressure. Abstract

Generation Z, which is synonymous with the internet and cyberspace, also has concern for the environment. This study aims to describe the role of students’ green mindset in protecting nature in their fourth semester. This study uses a qualitative, naturalistic paradigm. Primary data was taken from participatory observations of 107 students in the 2020 and 2021 classes of the Islamic Communication and Broadcasting study program and interviews with 11 of them. The results of this study were: (1) They have a growth mindset to protect nature; (2) The green mindset they have had has been implemented with real behavior, namely holding deliberations with faculty student organizations to protect the surrounding environment, educating elementary school-age children to sort out the trash around them, doing a simple campaign on the social media they have, writing green in online media, and carrying out real actions in the field (planting plant seeds around the faculty and inviting campus residents to collect cooking oil waste). Overall, students' green mindsets should be cultivated by providing a green curriculum with several green courses to manage environmental challenges.
