Abstract

Sertifikasi halal merupakan kewajiban hukum bagi pelaku usaha sebagaimana diatur dalam Undang-Undang Nomor 33 Tahun 2014 tentang Jaminan Produk Halal. Namun, tingkat pemahaman pelaku usaha warung makan di Kampus Universitas Lampung terhadap kewajiban ini masih bervariasi. Penelitian ini bertujuan untuk mengkaji sejauh mana literasi pelaku usaha terhadap kewajiban sertifikasi halal dengan menggunakan metode kualitatif dan pendekatan normatif-empiris. Teknik pengumpulan data meliputi observasi, wawancara, kuesioner, dan dokumentasi. Hasil penelitian menunjukan bahwa dari 15 responden hanya 3 responden (20%) yang sudah memiliki sertifikasi halal. Mayoritas pelaku usaha tidak mengetahui adanya regulasi halal tersebut sebanyak 13 responden (87%). Hal ini menggambarkan bahwa rendahnya literasi halal, sebagian besar responden menyampaikan belum ada sosialisasi ataupun keharusan dari pihak kampus untuk bersertifikasi halal, menganggap keterbatasan informasi, persepsi biaya yang tinggi serta kerumitan proses administrasi menjadi faktor hambatan. Oleh karena itu, dibutuhkan edukasi langsung bagi pelaku usaha mikro dan pelaku usaha harus memiliki kesadaran dalam memenuhi regulasi halal. Kata kunci: literasi halal, pelaku usaha, sertifikasi halal, warung makan.

Abstract

Bakpia is a traditional round-shaped pastry filled with mung beans, wrapped in dough, and baked. This study aimed to determine the formulation of wheat flour and kepok banana flour that produced dry bakpia with the best sensory and chemical characteristics. A Completely Randomized Design (CRD) with a single factor was used, involving six formulations of wheat flour and kepok banana flour: P1 (100:0), P2 (90:10), P3 (80:20), P4 (70:30), P5 (60:40), and P6 (50:50), each replicated four times. Sensory evaluations (color, texture, taste, and aroma) and chemical analyses (moisture, ash, protein, fat, carbohydrate, and crude fiber contents) were conducted. The results showed that the P2 formulation (90% wheat flour : 10% kepok banana flour) produced bakpia with the best sensory characteristics, including a slightly dark white color, moderately layered crumbly texture, and a distinctive banana flavor and aroma. The chemical characteristics of the P2 formulation included 11.40% moisture, 2.6% ash, 14.85% protein, 13.02% fat, 58.13% carbohydrate, and 3.13% crude fiber. Keywords: dry bakpia, kepok banana flour, sensory evaluation, chemical analysis

Abstract

UKM Askha Jaya bergerak dibidang industri keripik pisang yang merupakan salah satu oleh-oleh khas lampung. UKM Askha Jaya menggunakan cara konvensional untuk menentukan besaran persediaan. Ketersediaan bahan baku setengah jadi dan harga minyak goreng yang fluktuatif membuat UKM Askha Jaya mengalami kesulitan dalam proses produksi dan memungkinkan tidak dapat memenuhi permintaan pasar. Tujuan penelitian adalah untuk mengetahui proses pengendalian persediaan bahan baku keripik pisang dan minyak goreng yang ada di Askha Jaya berdasarkan kebijakan perusahaan dan metode Economic Order Quantity (EOQ). Penelitian ini menggunakan metode Economic Order Quantity (EOQ), Safety Stock, Reorder Point, dan Total Inventory Cost. Hasil penelitian menunjukkan nilai EOQ keripik pisang sebesar 1.170 kg dengan Total Inventory Cost (TIC) berdasarkan kebijakan Askha Jaya adalah sebesar Rp 130.043.600, sedangkan berdasarkan metode EOQ adalah sebesar Rp 45.811.152. mampu menghemat biaya persediaan sebesar Rp. 84.232.448. Nilai EOQ minyak goreng sebesar 667 liter dengan Total Inventory Cost (TIC) berdasarkan kebijakan Askha Jaya adalah sebesar Rp. 25.306.526, sedangkan berdasarkan metode EOQ adalah sebesar Rp. 23.321.526 mampu menghemat biaya persediaan sebesar Rp. 1.985.064.

Abstract

Digester biogas yang sudah terinstal di Desa Kediri berjumlah lebih kurang 20 buah dengan kapasitas mulai dari 4 m3 - 12 m3. Selain menghasilkan biogas, digester juga menghasilkan sludge. Salah satu cara yang dapat dilakukan agar sludge digester biogas dapat dimanfaatkan sebagai pupuk melalui pengomposan dengan campuran kulit kopi. Tujuan penelitian ini untuk mengetahui 1) Rendemen dan mutu kompos sludge digester biogas yang dicampur kulit kopi; 2) Kelayakan usaha pembuatan kompos sludge digester biogas dengan campuran kulit kopi pada Biogas Square, Desa Kediri. Sludge 1020 kg dicampur dengan kulit kopi 120 kg dan kotoran sapi 210 kg, diatur kelembabanya, ditumpuk selama 60 hari, dan dilakukan pembalikan setiap 1 minggu sekali, diamati perubahan suhu untuk memastikan keberhasilan proses. Setelah proses selesai dilakukan pemanenan kemudian dihitung rendemen dan dianalisis mutunya. Metode analisis yang digunakan yaitu analisis kandungan C-organik, N, P, K dan analisis rendemen untuk mutu kompos dan analisis Kriteria kelayakan finansial berupa NPV, IRR, PP, Net B/C dan BEP. Hasil menunjukan kompos memiliki kandungan C-organik sebesar 11,02 %, N total 1,41%, P total 1,60%, C/N rasio 7,82%, K total 1,18% dan rendemen sebesar 54,15%  dan hasil kriteria kelayakan finansial menunjukan nilai NPV sebesar Rp 68.726.533, nilai IRR sebesar 15%, nilai Net B/C sebesar 1,484, Pay Back Period sebesar 6,196 atau 6 tahun 3 bulan 13 hari. Sementara untuk BEP pada penelitian ini untuk BEP unit yaitu sebesar 5.032 kg kompos dan BEP rupiah sebesar Rp 25.158.694,00.

Abstract

Pupuk bioslurry padat (sludge) luaran digester biogas mempunyai kualitas yang bagus, namun masih kurang menarik bagi petani karena berbentuk curah. Oleh karena itu, perlu dilakukan pelatihan terkait granulasi sludge tersebut menjadi pupuk organik granul (POG). Tujuan jangka panjang pengabdian ini adalah kemandirian pupuk di tingkat petani, melalui kemampuan petani mengolah limbah di sekitarnya menjadi pupuk organik yang lebih praktis. Target khususnya adalah masyarakat mengetahui iptek terkait granulasi pupuk dan mempunyai keterampilan dalam menggranulkan pupuk. Metode yang digunakan adalah : koordinasi tim dosen dengan warga terkait kegiatan pelatihan, penyiapan bahan baku, yaitu sludge dan kompos berbahan baku sludge-kulit kopi, sosialisasi dan diskusi terkait iptek granulasi pupuk, pelatihan pembuatan POG, dan evaluasi kegiatan bersama masyarakat. Pelaksanaan pengabdian diawali dengan koordinasi tim dosen dengan warga terkait pelaksanaan kegiatan, dilanjutkan penyiapan bahan baku dan alat dengan dibantu warga dan mahasiswa, pelaksanaan pelatihan dibantu mahasiswa dengan mengundang aparat pekon dan warga, diakhiri dengan evaluasi bersama warga untuk menentukan keberlanjutan program. Masyarakat sangat tertarik menjadikan pupuk organik ini sebagai salah satu usaha desa, yang ke depannya dapat dikelola BUMDes. Kendala selama pengabdian adalah sulitnya mengumpulkan warga di siang hari karena berbagai kesibukan yang berbeda. Warga di desa biasa berkumpul malam hari jika ada yang akan dibicarakan

Abstract

The sap of old oil palm trunks contains appreciable sugar, but it has not been considered a potential sugar source. This study aimed to find the best method for producing oil palm liquid sugar that complies with the Indonesian National Standard (SNI) The non-factorial experiment was arranged in a Completely   Randomized Block Design (CRBD) with 6 replications. The treatments were a combination of lime-rotary vacuum evaporation (P1), without lime-vacuum rotary evaporation (P2), lime-atmospheric evaporation (P3); without lime-atmospheric evaporation (P4).  The parameters observed were pH, °brix, reducing sugar, color,  aroma, and overall acceptance. The data were subjected to ANOVA to determine the effects of the treatments and then, continued testing using HSD at α 0,05 for means separation.  The best treatment was found on liquid sugar processed using lime, and atmospheric evaporation with brix of 68.75%, pH of 5.4, moisture content of 17.74, ash content of 0.86%, reducing sugar of 44.31%, sensory score of color, aroma, and overall acceptance were f 3.42 (brownies yellow), 4.4 (like), and 4.04 (like).Keywords: lime, liquid sugar, old oil palm trunk, sensory, vacuum rotary evaporator

Abstract

This study aims to determine the effect of carrageenan and gum arabic formulations on chemical properties, level of elasticity, and sensory properties of pumpkin jelly candy and to obtain the right formulation of carrageenan and gum arabic to produce good quality jelly candy. The study was arranged in a Completely Randomized Block Design with a single factor and 4 replications. The treatment was the ratio of carrageenan and gum arabic consisted of 5%:0% (K1), 4%:1% (K2), 3%:2% (K3), 2%:3% (K4), 1%:4 % (K5). The data obtained were analyzed for homogeneity with the Barlett test, ANOVA, and the Tuckey test at the 5% level.  Determination of the best treatment for pumpkin jelly candy was determined by the De Garmo method.  The results showed that the best jelly candy was the K3 treatment (3% carrageenan; 2% gum arabic) which resulted in a texture score of 3.80 (chewy), color with a score of 3.97 (dark yellow), taste with a score of 4.11 (like ), water content of 7.66%, ash content of 0.99%, reducing sugar content of 14.31%, and sucrose content of 27.7%.  Formulation of carrageenan and gum arabic significantly affected the chemical properties, level of elasticity, and sensory properties of pumpkin jelly candy. Keywords: Gum Arabic, Carrageenan, Jelly candy, Pumpkin.

Abstract

Abstract: The dissemination of the bioslurry fertilizer separator and the dissemination of coffee husk-solid bioslurry fertilizer composting aims to introduce about the bioslurry fertilizer separator into solid and liquid phases, and introduce composting of solid bioslurry fertilizer with coffee husks which is proven to produce compost according to SNI. The specific target of this activity is that the community knows, understands, and has the skills to apply the introduced science and technology so that later they will be able to meet the organic fertilizer needs of their land. The methods used are: (1) Dissemination of the activity plan, (2) Providing materials related to science and technology that will be disseminated, (3). Training on the manufacture of solid-liquid bioslurry fertilizer separator and operation of the equipment, (4). Training on making compost from bioslurry solid fertilizer with coffee husks, (5). Evaluation of community activities. The target of this activity is the village community in general, community groups that have biogas digesters, and the Women Farmers Group (KWT). The location of the activity is in Kediri Village, Gadingrejo District, Pringsewu, Lampung. All activities have been carried out according to the method. Village communities as partners contribute in terms of manpower and consumption during the activity. There are almost no significant obstacles in the implementation of this activity. The outputs are a bioslurry fertilizer separator, a 500 liter capacity fertilizer mixer with a 7.5 pk diesel engine, a journal article, a patent article, and an activity videos that can be accessed on Youtube. Abstract

The solid bioslurry fertilizer (sludge) produced by the biogas digester has good quality, but is still less attractive to farmers because it is in bulk form. Therefore, it is necessary to carry out training regarding the granulation of sludge into granular organic fertilizer (POG). The long-term goal of this service is fertilizer independence at the farmer level, through the ability of farmers to process surrounding waste into more practical organic fertilizer. The specific target is that the public knows science and technology related to fertilizer granulation and has skills in granulating fertilizer. The methods used are: coordination of the lecturer team with the community regarding training activities, preparation of raw materials, namely sludge and compost made from sludge-coffee husk, socialization and discussion regarding fertilizer granulation science and technology, training in making POG, and evaluation of activities together with the community. Implementation of service begins with coordinating the lecturer team with the community regarding the implementation of activities, continues with the preparation of raw materials and tools with the assistance of residents and students, implementation of training with assistance from students by inviting pekon officials and the community, ending with an evaluation with the community to determine the sustainability of the program. The community is very interested in creating a village business with this organic fertilizer, which in the future can be managed by BUMDes. An obstacle during community service is the difficulty of gathering residents during the day due to various different activities.

Abstract

The Biogas-based energy security program in Kediri Village, Pringsewu District, Lampung Province, aims to provide awareness and knowledge to villagers about the potential of cow dung to be made into biogas and promote awareness of good environment quality. An evaluation of the sustainability of the program in the community was conducted. The methods that were used in this program are (1) socialization to provide awareness of good environment quality and energy security, (2) digester construction and stove and biogas lamp installation, which was carried out by the community together with certified trainers, (3) creation of a master design of the digester layout to ensure the maximum utilization of the digesters, and (4) evaluation to determine opportunities for program sustainability. Results show that the Biogas-based Energy Security Program has succeeded in making the community aware of and accept and apply the technology of processing cow manure into biogas. Biogas has met 100% of the fuel needs for cooking and electricity of biogas-fed houses. The environment quality has also improved, as shown by clean cages and home environments, and methane emissions have reduced. Over the five-year program, 11 out of 20 planned digesters have been built. The program's future sustainability can be continued by the community, provided that alternative sources of funds that can be pursued by the community are available.
