Abstract

Histamine is one of the important parameters in determining the quality of fish quality, especially in fishery products that will be exported. This study aims to determine the effect of adding tagalolo leaf water extract on histamine levels and total plate counts in fresh skipjack (Katsuwonus pelamis L). The results showed that tagalolo leaves have the potential to slow down the rate of histamine and bacterial development in fish Keyword: skipjack, histamine, tagalolo leaves, total plate count   Histamin merupakan salah satu parameter penting dalam penentuan kualitas mutu ikan terutama pada produk perikanan yang akan diekspor. Penelitian ini bertujuan untuk mengetahui efek penambahan ekstrak air daun tagalolo terhadap kadar histamin dan angka lempeng total pada ikan cakalang (Katsuwonus pelamis L) segar. Hasil penelitian menunjukkan bahwa daun tagalolo memiliki potensi untuk dapat memperlambat laju perkembangan histamin dan bakteri pada ikan. Abstract

The purpose of this study is to determine the pH level and macro and micronutrient content in the soil of the mangrove forest area in Bunaken Marine Park, Meras Village, Wori District, North Sulawesi Province. Soil samples were collected from both dry soil and waterlogged soil. The samples were then taken to the laboratory for analysis of macro- and micronutrients as well as pH levels. The analysis used includes: Nitrogen (N) analysis following SNI 7763:2018, section 6.6.1; Phosphorus (P) analysis following SNI 7763:2018, section 6.7; Elements K, Ca, Fe, Mg, Cu, Zn, B, Mn, and Mo analyzed using IK-1.13 Method for Determination of Metal Minerals in Food and pH analysis using SNI 01-2891-1992. The research results show that the pH values of dry and waterlogged soil are 6.67 and 6.0, respectively, which are considered good categories. The macro-nutrient analysis results for N, P, K, and Mg are classified as good because they exceed the minimum requirements set by SNI 7763:2024. However, the Ca element is classified as not good as it exceeds the maximum limit specified by SNI 7763:2024. For micro-nutrients, Fe (Iron) content is 13,682 ppm, which falls under the good category since it is below the maximum limit of 15,000 ppm as per SNI 7763:2024. Zn (Zinc) content is 0.4807 ppm, which is also considered good, as it does not exceed the maximum limit of 5,000 ppm as per SNI 7763:2024. Keywords: Meras Mangrove Forest, Nutrients, pH. Abstrak Tujuan dari penelitian ini adalah untuk mengetahui kandungan pH, unsur hara makro dan mikro pada tanah kawasan hutan mangrove taman laut Bunaken desa Meras kecamatan wori propinsi sulawesi utara. Pengambilan sampel tanah diambil pada tanah yang kering dan tanah yang tergenang air. Sampel tanah dibawa ke laboratorium untuk dianalisa unsur hara makro, mikro dan pH. analisa yang digunakan adalah Analisa N dengan SNI 7763:2018 butir 6.6.1. Analisa P dengan SNI 7763:2018 Butir 6.7. unsur K, Ca Fe dan Mg, Cu, Zn, B, Mn dan Mo dengan metode IK-1.13 Penentuan Mineral Logam pada Pangan dan Non Pangan. Dan pH dengan metode SNI 01-2891-1992. Hasil penelitian bahwa nilai pH tanah kering dan tergenang adalah pH 6,67 dan 6,0. Termasuk kategori baik.  Hasil Analisa unsur makro yaitu N, P, K dan Mg adalah adalah katgori baik karena melebihi syarat minimum dari SNI 7763:2024, sedangkan nilai Ca kategori tidak baik karena melebihi batas maksimum SNI 7763:2024.  Unsur mikro Fe adalah 13682 ppm termasuk kategori baik karena mempunyai nilai lebih rendah dari 15.000 ppm sebagai batas maksimum dari SNI 7763:2024. Unsur Zn adalah 0.4807 ppm termasuk kategori baik karena tidak melebihi batas maksimum 5.000 ppm sebagai batas maksimum dari SNI 7763:2024. Kata kunci: Hutan Mangrove Meras, unsur hara, pH

Abstract

Squid (Loligo sp.) has meat that is rich in protein and ink that contains melanoprotein, which is a nutritionally valuable by-product but has not been optimally utilized. This study aimed to analyze the proximate composition (moisture content, ash content, total protein, and total fat) and Total Plate Count (TPC) of fresh squid meat and ink purchased from Bersehati Market, Manado. The study employed a descriptive quantitative method, with proximate and TPC analyses conducted in duplicate using the oven method for moisture content, gravimetric method for ash content, Kjeldahl method for total protein, Soxhlet extraction for total fat, and pour plate method for TPC. The results showed that squid meat had a moisture content of 90.30%, ash content of 1.19%, total protein of 20.05%, and total fat of 0.50%, while squid ink had a moisture content of 83.52%, ash content of 1.69%, total protein of 10.65%, and total fat of 1.66%. Squid meat showed higher moisture content and total protein, whereas squid ink showed higher ash content and total fat. The TPC of squid meat was 1.19 × 10¹ log CFU/mL, while squid ink showed a slightly lower value of 1.09 × 10¹ log CFU/mL, and both squid meat and ink were within the maximum permissible limits of microbial contamination according to the applicable standards. Kata kunci:  ink, loligo, meat, proximate, TPC Cumi-cumi Loligo sp. memiliki daging kaya protein dan tinta yang mengandung melanoprotein sebagai limbah bernilai gizi tinggi namun belum dimanfaatkan optimal. Penelitian ini bertujuan untuk menganalisis kandungan proksimat (kadar air, kadar abu, total protein, total lemak) serta Angka Lempeng Total (ALT) pada daging dan tinta cumi segar yang dibeli dari pasar Bersehati Manado. Metode penelitian yang digunakan adalah deskriptif kuantitatif, pengujian proksimat dan ALT dilakukan dengan dua kali ulangan: kadar air (metode oven), kadar abu (gravimetri), total protein (Kjeldahl), total lemak (Soxhlet), ALT (pour plate). Hasil penelitian menunjukkan bahwa daging cumi memiliki kadar air 90.30%, kadar abu 1.19%, total protein 20.05% dan total lemak 0.50%. Tinta cumi memiliki kadar air 83.52%, kadar abu 1.69%, total protein 10.65% dan total lemak 1.66%. Daging cumi memiliki kadar air dan total protein yang tinggi, dan tinta cumi memiliki kadar abu dan total lemak yang tinggi. ALT daging cumi 1.19x101 log CFU/mL, dan tinta cumi sedikit lebih rendah di 1.09x101 log CFU/mL, daging dan tinta cumi masih memenuhi batas maksimum cemaran mikroba sesuai standar yang berlaku.
