Abstract

AbstrakSaat ini semakin berkembangnya penduduk di dunia dan Indonesia yang menjadi vegetarian, dimana hasil survey yang dilakukan oleh American Dietetic Association (ADA) menunjukkan jumlah vegetarian pada tahun 2006, sekitar 4,9 juta (2,3%) penduduk dewasa di Amerika menjadi vegetarian dan sekitar 1,4 % menjadi vegetarian vegan sedangkan di Kanada sekitar 900 orang penduduk dewasanya menjadi vegetarian. Jumlah vegetarian di Indonesia yang terdaftar pada Indonesia Vegetarian Society (IVS) saat berdiri pada tahun 1998 sekitar 5.000 anggota dan meningkat menjadi 60.000 anggota pada tahun 2000.  Sedangkan jumlah IVS di kota Medan pada tahun 2013 sebanyak 2000 orang. Berdasarkan hasil studi pendahuluan yang dilakukan oleh peneliti terhadap 49 orang penganut vegetarian di Maha Vihara Maitreya pada tanggal 26 Oktober 2013, terdapat sekitar 32% mempunyai kadar kolesterol darah diatas normal. Adapun tujuan penelitian ini untuk mengetahui hubungan asupan energi, karbohidrat dan serat dengan  kadar trigliserida dan glukosa darah (KGD)  pada komunitas vegetarian IVS di Maha Vihara Maitreya Cemara Asri Medan tahun 2014. Metode Penelitian ini bersifat Observasional dengan desain cross sectional. Penentuan sampel dilakukan dengan metode purposive sampling, sedangkan untuk menganalisis data dilakukan uji Korelasi Pearson. Dengan mengambil kesimpulan, jika p<0,05 maka Ho ditolak dan jika p>0,05 maka Ho diterima. Hasil penelitian menunjukkan ada hubungan antara asupan energi, karbohidrat dan serat dengan  kadar trigliserida dan glukosa darah (KGD) sampel komunitas vegetarian, dimana hubungan tersebut memiliki keeratan pada tingkat sedang dan kuat. Untuk itu perlu disarankan agar penganut vegetarian tetap menjaga keseimbangan komsumsi antara energi, KH, dan serat.Kata kunci : Asupan zat gizi, KGD, Trigliserida Darah, Vegetarian AbstrakCurrently, there has been a growing number of people in the world and in Indonesia that becomes vegetarian, where the survey conducted by American Dietetic Asscociation (ADA) shows the number of vegetarians in 2006 is around 4,9 billion (2,3%) adult in American becoming vegetarian and  1,4 % becoming vegan vegetarian while in Canada, 900 adult population becomes vegetarian. The number of Vegetarians in Indonesia which is  listed in IVS that was established in 1998  was around 5000 members and increased to 6000 members in 2000 while the number of IVSs in Medan city in 2013 was 2000 people.For the first/preliminary study done by researcher of 49 vegetarians in Maha Vihara Maitreya 26 October 2013, there was 32% of vegetarians having blood cholesterol levels more than normal. The purpose of the research was to know the relationship between energy intake, carbohydrate and fiber with triglycerides and blood glucose levels on vegetarian. This study was an observational method and used cross sectional design. Sample collected used purposive sampling method, while to analyze the data,  Pearson correlation was used. The Conclusion is if p<0,05, then H0 is rejected, and p>0,05 H0 is then accepted. The results showed the correlation between energy intake of carbohydrates and fiber with triglycerides and blood glucose level sample of vegetarian community, where the relation has a closeness to moderate and strong level. For it is suggested that vegetarians need to keep a balance between energy consumption, carbohydrate and fiber.Key word : nutrition intake, blood sugar levels, blood triglycerides levels, vegetarian

Abstract

Vegetarian, vegan and non-vegan, can lower the risk of metabolic syndrome disease caused by central obesity by measuring waist circumference and the general obesity by assessing Body Mass Index (BMI). One of alternative to prevent can be done by changing the pattern of diet habits from omnivores (the consumption of animal products and vegetable and dairy) become vegetarian (vegetable and dairy product consumption). The purpose of this study was to analyze differences in waist circumference and BMI in terms of nutrient intake in the vegetarian community members Indonesia Vegetarian Society (IVS) at the age of 30-58 years in Maha Vihara Maitreya Medan. This study was an observational with cross sectional design. These research subjects are divided into two groups, 42 vegans and 42 non-vegans selected by screening, and then determined by purposive sampling. Nutrient intake data collected by interview using the 24-hour recall, while the antropometry measurement using a measuring tape, scales and microtoise. Analysis were done using Independent T-test. The results showed there’s difference of waist circumference between vegan and non vegan (p = 0.008), but there is no difference of IMT (p = 0105). Statistically,  energy and protein intake was not different (p> 0.05), however, there were differences found in carbohydrate intake (p = 0.001) and total fat (p = 0.005) in the vegan and non vegan. The continue research on the diet of vegan vegetarian adverse event to metabolic syndrome and the characteristics of the food based on local cultural wisdom needs to be done.

Abstract

Pendahuluan; Autisme Atau Autistic Spectrum Disorder (ASD) adalah gangguan perkembangan anak yang gejalanya timbul sebelum berusia tiga tahun, manifestasi klinik autisme merupakan gejala-gejala klinik yang timbul pada penyandang autis. Penyandang autis di Indonesia 80% mengalami keracunan logam berat Pb yang disebabkan polusi. Pb dapat menyebabkan gangguan pada anak-anak seperti  penurunan kecerdasan dan perubahan perilaku. Asupan vitamin A  dan dan C yang cukup  pada penderita penyandang autis karena kadar Pb  yang bersifat Pro-aktif dapat dieliminasi dengan antioksidan. Tujuan; untuk mengetahui hubungan asupan vitamin A dan C dengan kadar timbal (Pb) pada rambut dan manifestasi klinik penyandang autis. Bahan dan Metode;  Penelitian ini bersifat observasional dengan rancangan penelitian cross sectional. Pengambilan sampel dilakukan secara purposive dengan jumlah sampel 63 orang dan analisis data menggunakan uji correlation pearson dan correlation rank spearmen. Hasil; tidak ada hubungan asupan vitamin A dengan kadar Pb pada rambut penyandang autis diperoleh nilai p  (0,394), ada hubungan asupan vitamin C dengan kadar Pb pada rambut penyandang autis diperoleh nilai p (0,004), tidak ada hubungan asupan vitamin A dengan manifestasi klinik penyandang  autis diperoleh nilai p (0,435), ada hubungan asupan vitamin C dengan manifestasi klinik penyandang autis diperoleh nilai p value adalah (0,002). Kesimpulan  Penelitian ini menunjukkan bahwa ada hubungan asupan vitamin C dengan kadar Timbal (Pb) dan manifestasi klinik penyandang autis dan tidak ada hubungan asupan vitamin A dengan kadar Timbal (Pb) dan manifestasi klinik penyandang autis.

Abstract

Failure of stunting in children will produce human resources that cannot compete in the era of globalization, affect work productivity, increase the risk of obesity, and lead to metabolic syndrome. Indonesia has a high incidence of stunting among children under five and school children, including North Sumatra with a prevalence of 42.3%, ranked fourth in the province with a high stunting prevalence. The prevalence of stunting in children aged 5-12 years increases every year. During the growth of very high bone mineralization, low intake of protein, calcium, and zinc influences linear growth. Aged 5-12 years is an opportunity to catch up and improve height. In terms of overcoming the lack of protein, calcium, and zinc intake as well as spurring the growth of schoolchildren, it can be done by giving Lemuru fish nuggets. Fish nugget processing is a simple processing method and has a long shelf life, with storage life in the freezer was 2 weeks. From the results of conseling and training conducted an initial and final knowledge assessment, it is known that initial knowledge is still lacking with an average value of 64.69 after the activity has increased to 83.95. Participants better understand the benefits of local food such as lemuru fish to cope with the stunting situation experienced by their child.

Abstract

The gluten and casein-free (GCF) diet is one alternative ways in handling children with autism spectrum disorders (ASD). The aim of this community service activities was to improve the attitudes, motivations and skills of the mothers in order to be able to prepare GCF diet that are safe for consumption by ASD children. The target participants of this community service activity were 25 mothers of ASD children from the Pondok Peduli Autis Foundation in Medan. Stages of implementation consisted of socializing the activities, pre-test, and counseling on a GFC diet, training and demonstrations on processing of GCF snacks, as well as evaluating activities in the form of a post-test. The GCF products made in the training activities were purple sweet potato pudding, pumpkin pudding, hunkwe pudding, corn bakwan, cassava omelette, cassava pastel, and cassava croquette with vegetables. The average pre-test results on the participants' knowledge about GCF diets was 45.6. After counseling twice by using a "Booklet" tools and training on the processing of GCF products, there was an increase in knowledge to 81.9. Furthermore, after regularly consuming the GCF foods prepared based on this program, more than 50% participants found their autis children improvement in learning concentration and no longer hyperactive.

Abstract

Fish has been widely known for its usage in increasing the growth of children, due to its nutritional contents, such as protein and zinc that can accelerate the increase of children’s heights and weights in the growth period. This community service activity aims to increase fish consumption in elementary school students, especially those suffering from stunting through processing fish into nugget products. The activity carried out was in the form of training on processing fish nuggets using lemuru fish with the addition of durian seed flour to mothers with stunting children at SDN 104255 Paluh Sibaji Village, Pantai Labu District, Deli Serdang Regency. This activity then was continued by offering the students to consume nuggets of lemuru fish durian seeds flour. As a result, the nuggets were considered favorable by the students. The post test involving questions about stunting was conducted to measure the knowledge of each parent in this case. The data showed that parents had high enthusiasm in solving stunting issues due to the increase on average of post test points (8.03), which was two times higher than before (4.81). The outcome of this training was to gain new skills and knowledge to students’ mothers in decreasing stunting cases by serving affordable nutrient-rich food to their children.

Abstract

A balanced menu is a meal menu consisting of rice, animal side dishes, vegetable side dishes, vegetables and fruits in one meal. This community service aims to provide examples of a balanced menu and maintain a balanced diet as an effort to increase endurance in the midst of the Covid 19 pandemic. This activity is carried out through demonstration methods, giving leaflets, and discussions. The activity participants were the elderly at the Veteran ABRI Housing in Medan Estate Deli Serdang Regency with a total of 20 participants. The balanced menu being demonstrated is a simple and elite balanced nutrition menu, which aims to adjust to the economic conditions of the local community. The results of the activity showed an increase in participants' knowledge about a balanced menu. Before the activity the number of participants who had good knowledge was 16% and after the activity there were 62% of participants who had good knowledge.

Abstract

ABSTRAK Latar Belakang: Faktor lingkungan seperti sanitasi dan higiene, sumber air minum, kualitas air minum, dan kepemilikan jamban merupakan faktor tidak langsung penyebab stunting. Penelitian ini bertujuan untuk menganalisis distribusi stunting dan faktor sanitasi lingkungan yang menyebabkan stunting di Kecamatan Silahisabungan Kabupaten Dairi, Sumatera Utara, Indonesia.Metode: Penelitian ini menggunakan desain kasus-kontrol dengan jumlah sampel 176 balita. Pola distribusi stunting dan hubungan karakteristik pasien dengan faktor risiko lingkungan dilakukan dengan menggunakan Sistem Informasi Geografis. Data PHBS dikumpulkan dengan menggunakan kuesioner dan uji laboratorium mikrobiologi untuk mengukur kualitas air. Analisis spasial menggunakan tumpang susun (overlay) rata-rata tetangga terdekat. Hubungan antara karakteristik dan faktor risiko dengan kejadian stunting dianalisis menggunakan chi-square dan regresi logistik.Hasil: Analisis rata-rata tetangga terdekat menunjukkan bahwa indeks tetangga terdekat adalah 0,19 (<1) (Z score -16,72, p-value 0,01). Analisis regresi perangkat lunak GeoDa (p-value 0,76). Terdapat hubungan antara kualitas air bersih dan PHBS (p-value <0,05) dengan stunting. Jamban keluarga dan tempat pembuangan sampah (p value > 0,05) tidak berhubungan dengan stunting. Pola sebaran kasus cenderung mengelompok, dan tidak ditemukan hubungan antara kepadatan penduduk dengan kejadian  stuntingSimpulan: Sebaran menunjukkan pola sebaran kasus cenderung mengelompok. Analisis regresi menggunakan software GeoDa tidak menemukan hubungan antara kepadatan penduduk dengan kejadian stunting. Temuan penelitian ini memberikan pemahaman baru bahwa promosi kesehatan untuk mencegah stunting tidak hanya berfokus pada pemenuhan gizi, tetapi juga Prilaku Hidup Bersih dan Sehat serta kualitas air.Kata kunci: Pola Sebaran, Stunting, Sanitasi  Lingkungan ABSTRACT Background: Stunting is a global problem due to the increasing prevalence and its impact can lead to less competitive human resources, affect work productivity, increase the risk of overweight and obesity, and trigger metabolic syndrome disease. The purpose of the study was to obtain the distribution of stunting and the dominant factors causing stunting in terms of sanitation, namely the quality of clean water, latrine facilities, waste disposal facilities, clean and healthy living behavior.Methods: This study used a case control design with 176 toddlers as the subject. The pattern of stunting distribution and associations of patient characteristics and environmental risk factors with stunting was carried out using a Geographic Information System (GIS) to determine the distribution of cases in each region in Dairi Regency. Spatial analysis used average nearest neighbour, overlay. The association of characteristics and risk factors with the incidence of stunting was analyzed multivariately, using chi square and logistic regression with a 95% confidence degree (α=0.05).Results Average nearest neighbor analysis shows that the nearest neighbor index is 0.19 (<1) (Z score -16.72, p-value 0.01). GeoDa software regression analysis (p-value 0.76). There is a relationship between clean water quality and PHBS (p-value <0.05) and stunting. Family latrines and rubbish dumps (p value > 0.05) were not associated with stunting. The pattern of distribution of cases tends to be clustered, and no relationship was found between population density and the incidence of stuntingConclusion: The distribution shows that the pattern of case distribution tends to be clustered. Regression analysis using GeoDa software did not find a relationship between population density and the incidence of stunting. The quality of clean water containing e coli is the most dominant factor, there is a relationship between PHBS and stunting and there is no relationship between family toilet facilities and waste disposal facilities.Keywords : Distribution Patterns, Stunting, Environmental Sanitation
